a few things:

1. thank goodness for facebook. otherwise, i am not quite sure how married couples would get by.

phew. good thing they let me know. and side note– i have almost been married a whole year?! what the. (oh, and liz, i owe you a poke. always.)

2. i absolutely love the smell of bengay.

it’s okay to judge me.

am i the only one? i have really sore knees lately (like REALLY, REALLY sore.. that is a story for another day) so i have been slathering this stuff all over my knees. constantly.

i used it a lot growing up—whenever i had growing pains. which, let’s face it, was not very often.. since i only grew to be 5’1”.  but yeah. bengay? love it. marshall tried to get me to buy the kind that has a vanishing scent. not only was it more expensive—it doesn’t have the glorious bengay smell that i love so much! psh. i went with the extra strength.

4. i have two overripe bananas just begging to be used before i go out of town.

i thought about making these. or maybe this. but i will most likely make a batch of these.. because they seem like the best protein-packed portable option for a road snack.

5. i have some friends in the cheese business.

specifically, the feta business. thanks, emily,for sending me WAY MORE FETA CHEESE than i know what to do with. see those two big blocks? let me give you an iPhone comparison so you can see how large and in charge these blocks of feta really are.

it’s okay to gasp or say “WTF?” out loud. i did. but don’t worry.. i fully intend on using up all this feta.  it is more delicious than any other feta i have tasted. no, really. euphrates knows what’s up in the fine cheese department.

so.. ever since we received this cheese last saturday, we have been incorporating feta into every dinner.  don’t think tonight was any different.

the panini that dreams are made of.

makes four sandwiches

i was going to call this “feta and grilled chicken panini with balsamic marinated tomatoes and fresh basil spread”… but that seemed a little long.

ingredients:

  • four hunks of ciabatta bread.. or another bread of your choice.. but i highly suggest ciabatta! (about 5” x 3” each.. give or take)
  • two (6 oz) boneless skinless chicken breasts
  • 2 vine ripe tomatoes
  • 1/2-1 cup balsamic vinegar
  • 4 oz crumbled feta
  • salt & pepper
  • olive oil for brushing
  • fresh basil spread:
    • 2 cups fresh basil
    • 2 TB extra virgin olive oil
    • 1 clove minced garlic
    • splash of water
    • salt & pepper

directions:

start by marinating the tomatoes.  slice them into 1/4” slices and place the slices in a shallow bowl.  cover with balsamic vinegar and sprinkle with salt & pepper.  put the lid on the bowl and shake, shake, shake.  set the tomatoes aside and let them marinate until you need them.

brush the chicken breasts with olive oil and sprinkle with salt & pepper.  grill slowly over medium heat so the chicken stays moist (ugh, hate that word.)  let the chicken rest for 10 minutes before cutting into it.  once it has rested, slice it into very thin pieces.

while the chicken is cooking, make the fresh basil spread.

i would call this “pesto”, but it is not the same consistency as pesto.. nor does it have the exact flavor of pesto.. so “fresh basil spread” it is!

to do this, combine the basil, olive oil, garlic, a sprinkle of salt & pepper and a splash of water in a food processor or blender. alternately, you could use an immersion blender if it’s all you have.  blend the ingredients until they become a thick liquid.  you may need to add more water.  just add a bit at a time, as needed, until you have the right consistency.

time to assemble!

slice your ciabatta bread in half.  slather some fresh basil spread on each side.  pile on an ounce of feta and a few slices of balsamic marinated tomato on one side.

on the other side, pile a fourth of the chicken pieces.

i poured the balsamic vinegar from the tomatoes over my chicken as a last minute idea.. it was a very good idea.

spray a panini press (or grill pan) with oil and place a sandwich (you can probably do two at a time) in the press.

press down firmly and let cook for 5-7 minutes.

remove from press, slice in half (diagonally, of course) and enjoy!

oh my gosh.. i “mmmmmm-ed” and “yummmmmm-ed” through this entire sandwich! the feta melted into soft interior of the ciabatta bread and the outside of the sandwich was perfectly crisp.  the salty cheese balanced out the tangy tomatoes perfectly. the fresh basil spread was the perfect finishing touch to round out all the flavors of the panini. i seriously think i will have dreams about this sandwich.

That sandwich looks SO good. I’ll have to try it. I like to do ham or pastrami with sauerkraut and muenster cheese in ours.

I also like the smell of Bengay. I love the smell of forests and rain, but I also like the smell of (get ready, because this is weird) diesel fuel. It reminds me of my dad. He worked for the Northern Pacific railroad and I often walked over to the depot after school to see him. The place reeked from all the trains. To this day, when I smell diesel fuel I think of my dad. I totally believe that our memories are strongly wired to smells.

True story, every time I catch with my grandma after running, she asked if I used any Ben Gay when I got home. “Helps with any pain” she says.

That does look a dream sandwich, I love all the layers of flavor!

Obviously, I’ll be making this sandwich. One day you have to try a toasted tomato sandwich with ripe tomatoes sprinkled with s+p and mayo on each piece of bread…although I fear you may have an aversion to mayo…

hahah. I don’t have facebook…well I sort of do but I don’t use it. How will I ever know when my anniversary is? Scary! I left bananas go bad so I can make banana treats :) In fact…I have two I’m making go bad right now. I dream of feta right now. And goat cheese. Two of the first things I’m eating post baby. That sandwich looks kick butt. I like caprese type paninis. I used to loveeeeeeeee the smell of gasoline as a kid (maybe that explains a lot? ;)

Wow girl we dream in the same color…that truly is the sandwich of my dreams (one of my fave restaurants makes something similar but with balsamic mushrooms too). I LOVE the way the balsamic soaks into the ciabatta.

I also love the smell of BenGay and pipe tobacco. Reminds me of my grandpa :)

She’s the pokemaster! I cannot keep up. You are not gross. You are amazing. Why haven’t I made a dessert panini before?! I have made a PBJ one.. but now I am pondering up brioche paninis topped with vanilla bean ice cream. Thank you. Oh–and Justin’s Chocolate Hazelnut Butter is vegan and tastes a lot like Nutella (otally just typed Butella) although I am sure you would be best just making your own.. you’re a natural ;)

That’s good to know that FB will remind you of your wedding anniversary. At least I’ll have a back-up reminder aside from my calendar…ha ha!

I have been thinking of a kitchen tool to buy with the gift cards we got as wedding gifts, I think I want a panini sandwich machine now. Your paninis look so good :)

Oh…dream panini would be roasted eggplant + pesto + melted cheese. I had it during our honeymoon and I loved it so much.

Also, I overheard someone at Disneyland say they had peanut butter an jelly pizza at Goofy’s kitchen…so I think I want to make a panini version of that pizza.

that smell reminds me of my grandpa – he would wake up each morning and apply the icy hot, then bandage his knees and then, for added support, wrap duct tape around them! :)

… and I am really happy Jason likes the smell too (or doesn’t mind it), because I always smell like it.

Yum! That sandwich looks so good. I love feta (and I think I have that exact panini press). I think my favorite sandiwch would be mozzarella, tomatoes, and pesto, grilled.
It’s not a (very) strange smell, but I love the smell of freshly cut grass. Also, the smell of the beach, or ocean. Not conventionally pleasant, but the beach is my favorite place, so it makes me happy.

panini: mushrooms and veggies and lots of types of mustards would be in there!
smells: ummm…can’t say i’m with you on the bengay. but i love strong magic markers and rubber cement glue! :)

um, i love bengay! my dad used to rub it on his back before and after workouts growing up. i also love the way people smell when they come in from playing golf or working outside (no BO though) – because my dad used to smell like that when he came in from golf and even though we said we didn’t like it, i did :)

I NEED that sandwich. NOW. Yours about sums up THE perfect panini. I might through on a few sundried tomatoes (as if fresh aren’t enough!) and this amazing artichoke caponata spread from a local gourmet grocery store turns sandwiches into paradise in your mouth.

OH and strange smells…you know that diaper rash cream, Penaten in the blue flat container? Or maybe you don’t…but that smell reminds me of childhood! I don’t think I was especially prone to diaper rash or anything, it just happens to bring back happy kid time memories. Haha.

Ooh that is the sandwich of my dreams — the only thing it is missing (which I LOVE) are caramelized onions and swap the feta for blue cheese. YUM.

I love the smell of Bengay! My dad used to put it on his knees when I was younger and I used to love the smell and I still do! I also love Vick’s Vapo-Rub smell.

That sandwich looks ah-maz-ing! I am definitely going to recreate that in my own kitchen. The panini of my dreams would include carmelized bananas and peanut butter. I love how those flavors melt together when they’re warm!

One weird smell that I really love is the smell of a damp, dark basement. There is just something comforting about that smell. It’s totally weird but I dont’ care :-)

Which are like the Mama Pea oat things, only minus the stevia and protein—but I think a little apple sauce for moisture would allow the protein in without needing to go the stevia route. I know there’s nothing necessarily *wrong* with stevia, but if you can get all the sweetness from fruit, why not do it? And these cookies are fab: the only cookies *ever* that I could have just one of, and not be fantasising about them for the next 6 hours. :D

I would have added a sliver of sliced fuji apple to that sandwich and left off the tomatoes – while I love tomatoey things, I just can’t do raw tomatoes for some reason!

I’m fairly famous amongst my group of friends for ONLY liking strange smells. I love the smell of skunk and horse manure, and most perfumes give me bad headaches. The one perfume I can wear smells almost exactly like a vodka gimlet!

I’ve never even tried Bengay. Now I want to! and I want feta! I hope they don’t smell the same though.

That sandwich! Andy and I have a panini press but I hate cleaning it so I rarely take it out. Now I think I will!

I love the smell of Disneyland water. It’s a distinct scent and reminds me of Pirates of the Caribbean. I’m weird.

I had growing pains too – maybe Bengay (or IcyHot in my case) was the universally prescribed med? The smell has never bothered me, and I’d even use it now if I remembered to buy it at the store!
