i always wondered why hamburger helper’s mascot was a three-fingered glove man.
maybe because he is lending a helping hand? but why only three fingers? last time i checked, the majority of humans had four fingers. to be honest, he kinda creeps me out. i don’t think i would want his three-fingered helping hand to have any part in making my dinner.
anyway, creepy mascot aside, i tried to see which version of hamburger helper the recipe i am going to share with you compared to. i quickly found that there were at least four (of their 40 flavors) that were basically the same thing: beef pasta, salisbury steak, creamy stroganoff, and cheesy beef pasta. i mean, i am sure they all have different ingredients, but i am almost certain they all taste the same. they are all described as “pasta & hearty sauce”—and that’s definitely what my recipe is.
but healthy.
servings: 4
total time: 30 minutes
ingredients:
- 3 cloves garlic, peeled & minced (or 1 T jarred)
- 1 leek, diced
- 8 oz mushrooms, diced
- 12 oz ground beef (i used top sirloin)
- 1 T dried oregano
- 1 T dried parsley
- 1/2 t sea salt
- 1/2 t black pepper
- 6 oz elbow macaroni
- 2 cups low sodium beef broth
- 1 cup water
- 1 T cornstarch + 2 T water, mixed
- 1/2 cup nutritional yeast
- 1 cup plain nonfat chobani greek yogurt
- hot sauce and additional yogurt, for garnish (optional)
directions:
- heat a large, deep skillet over medium-high heat and coat with cooking spray. add garlic and sauté for a minute or two.
- dice the leek and mushrooms.
- add these veggies to the skillet and sauté for a few minutes.
- if you are grinding your own beef, do this now. i use my food processor to grind my own beef.
- add the ground beef, oreganoa, parsley, salt, and pepper to the skillet and sauté until it is cooked through.
- add noodles, broth, and water to the skillet. turn heat to high and bring to a boil.
- once it is boiling, cover the skillet and reduce heat to low. simmer until noodles are cooked through, about 8 minutes.
- pour the cornstarch+water mixture into the skillet and stir to combine.
- add nutritional yeast and stir to combine.
- add yogurt and stir to combine.
- if necessary, simmer on low until any remaining liquid absorbs.
- serve immediately, garnishing with additional yogurt and hot sauce, if desired.

Funny, I just made Toly a healthy Hamburger Helper meal the other night. I don’t think I’ve ever actual eaten Hamburger Helper so I’m not sure if it tasted like the “real” thing but he did enjoy it.
we still make Hamburger helper from time to time….as a matter of fact, I think there may be a box in the pantry ;)
I want to try this but I was wondering how to get rid of all that sodium! seems like a lot??? I know the box is probably worse but I try to watch it :) Great recipe!
Just don’t add the salt, or as much salt. You could omit the salt in the recipe all together. Actually, I don’t even like salt that much but add it only because others prefer it.

I’m wondering- I know it would cut into how nutritious this is, but there’s no way I will get my fiance to eat anything involving yogurt. Could you swap in sour cream instead? (It’s killing me to even TYPE that, but unless I’m making this for just myself, I’d have to find a substitute!)
Yes! Sour cream would work for sure. HOWEVER.. if you use the yogurt and don’t tell him, I 100% guarantee you he will think it is sour cream. In fact, you should try it and tell us what happens :)
I like the sound of that! I’ve been nervous about sneak attacks ever since he caught me sneaking cauliflower into the macaroni and cheese.

Hooray, I havent seen meal makeovers in awhile and so happy you put this one up! I love your version and of course, love the Chobani addition. I never dined on Hamburger Helper growing up but had it ALOT in college, But anytime I think of “the hand” I think of an ex who told me he was going to make me dinner and I got all excited….until I realized it was HH. And homeboy forgot the friggin milk so the cheese sauce was watery, it was nasty.
Oh man that looks so good! I have tried making over Fettucine Alfredo but have failed miserably every time. Its my all time fav dish but so heavy with pretty fat-intense ingredients.

I totally forgot about hamburger helper…we used to have it once in a blue moon in our household as kids. My mom was more of a ‘Shake n Bake’ fan. Ever have that???

We never really had Hamburger Helper when I was growing up, which is odd, because that was all the rage in the 80s. We did get a lot of deliveries from the Schwan’s man though (not sure if you had that in your part of the country).
The sound of this dinner doesn’t really appeal to me- but I’ll trust you that it’s good, and I’ll try it out. I know my husband would love it- it reminds me of something he calls “American Chop Suey.” (Something he had all the time growing up, but I had never heard of)
I love HH. It’s also my boyfriend’s favorite meal so I’ll have to make this for him. Yep..he’s pretty easy to please! :)

This is a really relatable meal makeover for a lot of people, I think. When I was first out on my own and cooking in my kitchen, I used to use HH a lot. Now I never make it but I’m sure this version would taste delish.
I love that you use leeks in it, too. I always forget to buy and cook with leeks but they are one of my favorites!

i cannot tell you how much hamburger helper my mother fed us growing up. i think that is where my hatred for ground beef began and stemmed out from there. this, however, looks delicious! i will definitely have to try it (subbing out the beef for seitan, of course)!
I don’t recall ever having HH though I’m sure??? my mom would have made it for us???? Looks so yummy though- been seeing pasta dishes all over instagam (aka my new form of blog reading/blogging) and I’ve got a mean craving for some saucy pasta now. I might get down with my bad self this week and make yours.

Four out of the ten or so time I’ve had hamburger helper I have been sick. Maybe it was just a coincedence. I’m definitely gonna try this though, just because not everything in it comes from a box! Why don’t they have chobani in Canada? :(

Ok…this is simmering on our stove right now. I’ve never cooked with nutritional yeast before, and am not going to tell the hubs that it’s in the recipe…at least not the first time I make it. (Though he’s a pretty adventurous eater…) Anyway, thanks for creating/posting it!!!

What is nutritional yeast? Is this the same as yeast used in baking bread?
I don’t believe I’ve ever heard of it. Someone did mention to substitue cheese for it. Please advise……..thank you
