you guys. i am so tired. i did the insanity fit test along with the first workout of month #2 of insanity today. let me just tell you—that hour-long max interval workout was definitely the hardest and most intense workout of my life. of my life. not joking.
i will touch more on insanity in another post. right now i want to talk about food. barbecued food, to be exact. this weekend i had the pleasure of attending not one, but two delicious BBQs!
saturday.
we went to kristen & rory’s house saturday night. the evening started with a plethora of dips! hummus, queso, salsa, artichoke jalapeño.. you get the idea. and plenty of vehicles to eat the dips with. veggies, pita chips, baguette slices, tortilla chips, kettle chips.. um, i think that’s it.
we grilled some ono, pineapple, squash and zucchini.

it is SO good.
kristen was grilling some mac & cheese stuffed hot dogs and they were exploding on her! she had to proceed with caution.
yes, that’s right.. i sai mac & cheese stuffed hot dogs. actual noodles. and cheese. inside the dogs.
i actually hate hot dogs, but for some reason love these. what can i say? i am a sucker for anything with cheese.

the ono turned out perfect. i am so glad marshall likes to eat fish now! we can’t get enough.
sunday.
for mother’s day, momma b requested a good, old-fashioned BBQ. burgers and chicken. oh.. and carrot cake.
my sister in law, linds, prepped the condiments. such a good helper.
my dad was manning the grill. garlic burgers and chicken breasts.
there was salad. there is always salad.
there was fruit. there was SO. MUCH. FRUIT.
there was cheese. swiss and cheddar.
there was a brother. and a nephew.
condiments included tomatoes, pickles, onions and avocado. (oh, and mayo, mustard, ketchup.. you get it.)
burgers. i picked one with cheddar. because cheddar is better. actually, i like both.. but rhyming is fun.
there were sweet potato fries and parmesan wedges.

it was stacked suuuper high.
i thought it was in my best interest to cut this baby in half.

after dinner, my mom got to work on frosting the carrot cake. i made the cake as per her request. you can’t turn a mother’s request down on mother’s day! but i was so exhausted from my insanity workout that i made her do the frosting.
she is a pretty good cake froster, actually, so it’s best that she did it.
i didn’t have any carrot cake. after the easter carrot cake coma, i think i will be staying away from suuuuper sugary desserts for awhile. instead, i ate my weight in fruit. but what would a food blog be without some cross section shots of delicious, scratch-made carrot cake? here you go.
after dessert, there was some mother’s day gift giving and receiving.

well, that sums up my weekend of BBQ extravaganzas. i have to go to bed. right now. i don’t even have any energy to think of any witty questions for you to answer. such is life.
