BBQ times two.

in meals

you guys. i am so tired. i did the insanity fit test along with the first workout of month #2 of insanity today. let me just tell you—that hour-long max interval workout was definitely the hardest and most intense workout of my life. of my life. not joking.

i will touch more on insanity in another post. right now i want to talk about food. barbecued food, to be exact.  this weekend i had the pleasure of attending not one, but two delicious BBQs!

saturday.

we went to kristen & rory’s house saturday night.  the evening started with a plethora of dips! hummus, queso, salsa, artichoke jalapeño.. you get the idea. and plenty of vehicles to eat the dips with. veggies, pita chips, baguette slices, tortilla chips, kettle chips.. um, i think that’s it.

IMG_2621

we grilled some ono, pineapple, squash and zucchini.

prepping..

IMG_2618IMG_2620

grilling..

IMG_2623

chilling..

IMG_2642IMG_2627IMG_2630IMG_2631

pretty sure nothing beats grilled pineapple.

IMG_2634

it is SO good.

IMG_2636

kristen was grilling some mac & cheese stuffed hot dogs and they were exploding on her! she had to proceed with caution.

IMG_2639

yes, that’s right.. i sai mac & cheese stuffed hot dogs. actual noodles. and cheese. inside the dogs.

IMG_2647

i actually hate hot dogs, but for some reason love these. what can i say? i am a sucker for anything with cheese.

my plate of grilled goodness (and salad).

IMG_2655

the ono turned out perfect. i am so glad marshall likes to eat fish now! we can’t get enough.

IMG_2658

sunday.

for mother’s day, momma b requested a good, old-fashioned BBQ.  burgers and chicken. oh.. and carrot cake.

my sister in law, linds, prepped the condiments. such a good helper.

IMG_2660

my dad was manning the grill.  garlic burgers and chicken breasts.

IMG_2662IMG_2663

there was salad. there is always salad.

IMG_2665

there was fruit. there was SO. MUCH. FRUIT.

IMG_2666

there was cheese. swiss and cheddar.

IMG_2669

there was a brother. and a nephew.

IMG_2671

condiments included tomatoes, pickles, onions and avocado.  (oh, and mayo, mustard, ketchup.. you get it.)

IMG_2673

burgers. i picked one with cheddar. because cheddar is better. actually, i like both.. but rhyming is fun.

IMG_2674

there were sweet potato fries and parmesan wedges.

IMG_2675

here’s my burger before the burger. as you can see, i am a condiment whore.

IMG_2677

it was stacked suuuper high.

IMG_2678

i thought it was in my best interest to cut this baby in half.

IMG_2679

cheers to a good burger!

IMG_2682

after dinner, my mom got to work on frosting the carrot cake. i made the cake as per her request.  you can’t turn a mother’s request down on mother’s day! but i was so exhausted from my insanity workout that i made her do the frosting.

IMG_2684

she is a pretty good cake froster, actually, so it’s best that she did it.

IMG_2687

i didn’t have any carrot cake. after the easter carrot cake coma, i think i will be staying away from suuuuper sugary desserts for awhile. instead, i ate my weight in fruit.  but what would a food blog be without some cross section shots of delicious, scratch-made carrot cake? here you go.

IMG_2698IMG_2700

after dessert, there was some mother’s day gift giving and receiving.

IMG_2692

my dad and his mom, my grandma.

IMG_2694

and i also forced marshall to take a photo with me. because he hates cameras.

take one.

IMG_2690

take two.

IMG_2691

he’s a keeper.

well, that sums up my weekend of BBQ extravaganzas. i have to go to bed. right now. i don’t even have any energy to think of any witty questions for you to answer. such is life.

good night!

Beautiful earrings on you! I used to have some big dangly white ones like that- I think they were a size 2? One of them flew out of my ear shortly after taking my motorcycle helmet off one day, and part broke off when it hit the ground. :( I know, I know, I shouldn’t wear earrings like that with an mc helmet, but I did it all the time and never had a problem. :P

janetha May 9, 2011 at 9:46 am

Thanks! My friend made them, she has a ton of cute stuff at: http://www.etsy.com/shop/Tifthapeach

edenseats May 8, 2011 at 11:19 pm

I’m scared of this insanity! I told you, your gonna be ripped in Palm Springs and thus accentuating my flab. Its ok, I’ll still love you.

Burgers are my comfort food. My mom and I used to get burgers from like the greasiest burger joint in LA every time I went to the doctor. You know, to keep me balanced incase the doctor told me I was too healthy.

megan @ the oatmeal diaries May 9, 2011 at 12:48 am

Family BBQs are the best! And so is carrot cake… oh my goodness how did you resist that gloriousness?! My mom makes the most amazing carrot cake each year for Easter and I always overdose too =P

MelissaNibbles May 9, 2011 at 1:31 am

Looks like a fun bbq and fun weekend!

Christie May 9, 2011 at 2:59 am

What a great weekend! You are amazing for resisting the carrot cake…I have no control whatsoever over my sweet tooth.

That grilled pineapple looks sooo good!

1970kikiproject May 9, 2011 at 3:17 am

what a totally fun weekend (well, the insanity part doesn’t sound that fun, but way to go on completing it!!).
so glad you had family time yesterday…that carrot cake is amazing. love the photos of y’all…i laugh seeing your dad at the bbq: i think all dads have the same facial expression when at the grill (slightly wary, slightly proud).
have a great monday!

Lauren May 9, 2011 at 4:02 am

What a great weekend full of amazing BBQ’s! I love grilled fish but haven’t seen much Ono around here. I do love that one though.
I bet your mom had the best day with all of you. And how sweet of you to make her favorite cake. Carrot cake is definitely my favorite too and there is NO WAY IN HELL I would ever be able to turn down a piece of your amazing carrot cake. :)

lindsay May 9, 2011 at 4:05 am

thats why they names it insanity, right? at least it lives up to its name. haha. Love the family pic and of course you and marshall!

Erica May 9, 2011 at 4:26 am

hooray for bbqs! Just the best. I can’t agree more- grilled pineapple is ridiculous good. And mac & cheese stuffed hot dogs? Craziness. Your cake looks yummy :) And the pictures of you and the man are so cute. Hope your week is fantastic Janetha

cleaneatingchelsey May 9, 2011 at 4:32 am

Insanity scares me! I can’t wait for the post about it!

Lee May 9, 2011 at 4:55 am

I can’t get over the mac and cheese stuffed hot dogs! How did they even do that? My mind can’t process.

Allison @ Runs A Latte May 9, 2011 at 5:00 am

You and Marshall are adorable! I can totally see that look on his face – that “i hate the camera” face.

Oh man, the carrot cake again! You’re killing me!

Must try grilled pineapple. It looked a-mazing! I guess I need a grill first…

withasideofhope May 9, 2011 at 5:03 am

What a fun weekend! All of that food looks great! :) I’ve never had grilled pineapple before! I’m looking forward to grilling that and perhaps peaches? I’ve heard they are good grilled too! :)

That carrot cake looks amazing! Send some to me in PA? Haha! Yum! :)

Hollie @ Lolzthatswim(andRun) May 9, 2011 at 5:19 am

Grilled pineapple is my favorite. You are totally right and that nothing beats it. EVER.

Lettuce Choose Healthy May 9, 2011 at 5:47 am

what a fun day! grilled pineapple is soooo good! Have you grilled peaches? .. allllllmost as good as grilled pineapple

janetha May 9, 2011 at 9:47 am

I think grilled peaches are even better! But that is because peaches are my favorite fruit. Cannot wait for peach season!

Holly May 9, 2011 at 6:09 am

Those burgers + carrot cake = I can’t think of a better way to spend the day!

I really like the last few pics of you and Marshall — you two are so sweet together.

Heather May 9, 2011 at 6:11 am

OMG, your nephew is too cute. Baller.

Michelle May 9, 2011 at 6:39 am

Yum, it looks like you ate very well this weekend. I love how you topped your burger. I am a condiment whore too!

Good luck with Insanity. Can’t wait to hear more :-)

Salah May 9, 2011 at 6:54 am

those burgers look so fresh and yummy!! Insanity is soooooo intense, but totally worth it! :-)

Errign May 9, 2011 at 7:26 am

I am jealous of your feasts – those burgers & grilled fish & pineapple look baller!

Aw, love everything! I have to try grilled pineapple – that sounds fantastic!

glidingcalm May 9, 2011 at 8:37 am

carrot caaaaaaaaaaaaaaaaaaaaaaaaaaaaake. I want!

Paige is Running Around Normal May 9, 2011 at 8:51 am

I quit Insanity before month 2…but now I kinda want to start back up!!

fittingbackin May 9, 2011 at 8:52 am

Fun! I loved your ‘french fry’ plate – the variety makes it so fun, and the burgers look awesome, too. Mac & cheese stuffed hot dogs?! wow.

Katherine: Unemployed May 9, 2011 at 9:20 am

those are basically my favorite veggies/fruits to grill! they look so good. Do you know if indoor grills work? (like a foreman or something? I don’t have a grill or a pannini press or anything but I’m thinking about getting one!)

janetha May 9, 2011 at 9:47 am

I am SURE it would work! That’s a great idea for the times I don’t want to go to the trouble of uncovering the grill.

Megan May 9, 2011 at 9:34 am

Girl, when I started month 2 of Insanity, I did the fit test on a separate day- there was no way I was doubling up on that workout! You are way tougher than me! Looks like a great weekend- I can’t wait til it’s nice enough on the weekend to start grilling here.

Krista May 9, 2011 at 9:54 am

Must you torture me with those dang carrot cake shots?! I’m trying to do body for life here :P still need to make yours…I’m thinking carrot cake freeday extravaganza this weekend.

Annette @EnjoyYourHealthyLife May 9, 2011 at 10:07 am

mmmm grilled pineapple is the bomb diggity!! I love that stuff. I had carrot cake for mother’s day too–but only a few bites, so no headache for me. wheeeee :) I like rhyming too. ha!

p.s. your fam looks fun! loved bbqs with fam +friends

Gina May 9, 2011 at 10:08 am

That cake looks outstanding. Drool.

Rose May 9, 2011 at 10:41 am

Grilled pineapple sounds awesome.

My mom was grilling carrots last night. She says it’s crazy good. I’m looking forward to testing it out.

Gillian May 9, 2011 at 11:01 am

Umm barbecue heaven! I’m also a condiment whore. Did someone make those macaroni hot dogs or buy them?! Insane!!

Also- do you get your hair coloured? You have THE perfect blonde! Take me to your hairdresser!

janetha May 9, 2011 at 12:39 pm

I get it highlighted, yes! Thank you!

Crystal May 9, 2011 at 11:15 am

Whoa- talk about a burger! I don’t eat meat, but the burger BEFORE the burger, yum! I love avocado- and I feel like I’m a loser for never having grilled pineapple before.. Seriously that looks amazing.

emily (a nutritionist eats) May 9, 2011 at 12:04 pm

Emily May 9, 2011 at 12:27 pm

I’m interested to hear your final thoughts on insanity when all is said and done. I kinda want to try it.

What a great day! And yes, LOVE grilled pineapple! Grilled peaches too, with (coconut milk) ice cream… mmm.

Heather (Where's the Beach) May 9, 2011 at 1:03 pm

I love cooking out with family and friends. I don’t think you can have too many bbqs! And now I wish I would have put pineapple on the grocery list. Love grilled pineapple. Such a tasty treat.

Janetha, AMEN!!!!!! Damn I did the phase 2 workout 1 a week ago and it seriously kicked my ass. The funy thing is though I sweat like a pig, I wasnt as sore as i thought i’d be….until recovery day!!!! HAHA After thursday, I was SO SORE my buddy and i went on a 2 day insanity break. FAIL i know, i know but it was too much. Can’t wait to see what you have to say about Insanity. It is definitely the most exciting, exhilirating, difficult workout program that I’ve ever done.

The hardest part is finishing Phase 2 I think!! AHHH My insanity buddy is always thinking about quitting now, so I view each day we complete as a victory! Hope you guys are doing much better than we are! :)

BBQ looks amazing. I have pineapple on the menu tonight thanks to your inspiration. :)

janetha May 9, 2011 at 2:57 pm

The Sometimes Healthy Girl May 9, 2011 at 4:42 pm

Yum – grilled pineapple is the absolutely BEST! You made me want to go home and use my little foreman grill :-). I live in NYC so I can’t use a REAL one :-)

Heather @ Get Healthy With Heather May 9, 2011 at 5:14 pm

BBQs are the bomb!

Pure2raw twins May 9, 2011 at 5:35 pm

julie May 9, 2011 at 6:07 pm

kissmybroccoli May 10, 2011 at 4:01 pm

We did a barbecue for Mother’s Day too! Burgers, baked potato salad, steamed asparagus, corn on the cob, and a GINORMOUS fruit salad! Mmm, I’m making myself hungry just thinking about it!

I’m a condiment whore as well…gotta stack it up right, ya know? Nothin’s better than a burg with some fresh sliced avocado!
