try something new: make biscotti.

my longtime friend, sarah matheny of peas and thank you, recently published her second cookbook.

that’s right.. second! her first one is one of my favorites and i know that more peas, thank you is going to be just as big of a hit. i am so proud of her!

the latest cookbook is full of life musings, fun family stories, and–of course–mouthwatering meatless recipes. while i am not vegan nor vegetarian, i have found that all of her recipes are right up my alley. meatless meals are fun for everyone. plus, meat biscotti would be weird, right?

i am thrilled to be participating in mama pea’s virtual book tour today. i selected a recipe from the book to feature here on meals & moves: almond raisin biscotti.

now, going into this i was a little nervous. i have never baked biscotti because it’s a wee bit intimidating. you have to bake it twice and, i dunno, it just seems extra fancy. well, i have news for you.. baking biscotti is basically like baking cookies. easy peasy.

almond raisin biscotti

prep time: 15 minutes; bake time: 40 minutes
yield: 
 24 cookies

ingredients:

  • 1 cup all purpose flour
  • 1/2 cup whole wheat pastry flour
  • 2/3 cup pure cane sugar
  • 1 TB cornmeal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp aniseed (i omitted)
  • 1/2 tsp cinnamon (i did a full teaspoon)
  • 1/4 cup vegan margarine or coconut oil (i used earth balance)
  • 1/3 cup unsweetened applesauce (i ended up using about 1/2 cup)
  • 2/3 cup roasted almonds, chopped
  • 1/4 cup raisins (i omitted.. i don’t love raisins)

directions:

  1. preheat oven to 325* F. line a baking sheet with a parchment paper or cooking spray.
  2. combine flours, sugar, cornmeal, baking powder, salt, and spices in a bowl.
  3. cut in margarine or coconut oil using a pastry blender OR pulse in a food processor.
  4. stir in applesauce until dough forms. fold in almonds and raisins.
  5. shape dough into a log and place on baking sheet. bake for 30 minutes or until log is firm and has started to brown.
  6. allow log to cool for several minutes and then slice diagonally into 1/2″ thick cookies.
  7. gently place cookies on one cut side down on baking sheet and bake for an additional five minutes. flip the cookies and bake for five minutes more. store in an airtight container.

soo.. my tweaks to the recipe.. i left out the aniseed because i didn’t want to buy it for only 1/4 tsp. i left out the raisins because they aren’t my favorite. and the added applesauce? well.. i didn’t know what else to do because i needed moisture. after mixing the 1/3 cup called for in, my “dough” looked like this:

i added a bit more applesauce, and i was ready to roll. literally! the dough formed and i was able to roll it into a log. the only problem was, because i am a biscotti newbie, i wasn’t sure how long, wide, or flat the log was supposed to be. i just guessed!

i was a little off–i was only able to get twenty 1/2″ cookies out of my log.. but they ended up a little longer than the photo in the book. it all worked out.

these biscotti cookies were super simple and i can’t wait to enjoy them with my coffee this week!

I’ve always wanted to make eclairs at home but i have this need for all my baked goods to be shows toppers and I just don’t think I can pull it off. I took dry cookies to a party once and I’m still bothered by it..

Scones definitely intimidate me. I love them, but I always fear that they’ll turn out dry if I make them at home.

Biscotti – never made, bread (that isn’t a “quick” bread like banana) – never made, meat – never made. Now for that last one, I’m vegetarian (have been for 11+ years) and I always say if I marry a man who’s a meat eater the only time he’s ever getting it is if he cooks it for himself or orders it out at dinner. I’ve NEVER cooked meat and have NO idea how!

I am totally intimidated by making home-made nut butters… I know, but really, I’m just convinced the nuts will somehow destroy my Cuisinart and I’m afraid to try!

bread!! i want to make my own bread so bad, but it scares me! i don’t know if it’s the yeast, and the rising, and i also know i am an extremely impatient person when it comes to baking and cooking. (guilty of opening the oven 10+ times to check on what i’m cooking)

i have found some simple recipes (mama pea has a few herself i’ve eyed) but i have just not taken that leap yet!

Congrats on conquering biscotti! I made some over Christmas and was surprised how easy it was.

The thing I am MOST intimidated by is french macrons. They freak me out but I am so fascinated by them! I planned to make them for my birthday but my oven is a little wonky so waiting until I move.

P.S. Cannot wait to read the new Peas book! I am addicted to the first one.

This is so dumb but a whole roast chicken. Dumb because it isn’t even that hard, but I always bail and just buy them pre-roasted and warm from the grocery store. Somehow I’m convinced mine wouldn’t be better, and the pre-made ones are so cheap. I bet mine would be better though :)

i’m intimidated by most things in the kitchen so i don’t know how to choose just one! for some reason DONUTS just popped into my head. i don’t think i’ve ever wanted to make them at home (even though my mom did growing up and i never liked hers!). but this book looks beautiful and i’d definitely love to check it out!

Anything with Fillo dough. I’ve bought it… TWICE. In fact I just threw both of them out because they expired, which means that twice now I have intended to make something with it. I’m not sure what because it obviously did not happen ;)

Ugh so many (including biscotti). Anything that requires a floured working space and the capacity to roll dough into an even thickness. Cinnamon buns. Sushi. Things with whipped peaks. Going to go retreat into a ball of shame and failure now.

Hmmm so many things. An intimidating desert for me is tiramisu. As for meals it would be any expensive cuts of meats or seafood like crab legs or lobster for fear I’d mess it up and waste the money.

I’ve seen a lot of people in the blog world (including Mama Pea) do a sourdough starter, and I LOVE sourdough bread. However, the process seems so time intensive and you have to watchdo carefully…I just haven’t mustered the courage.

anything involving meringue. which i I realize is kind of wimpy. it’s one of my only baking aversions, but anytime there’s a recipe involving it I steer clear.
