hey, friends! how was your monday? jam packed with awesome? hope so.
mine wasn’t bad, especially for a monday. pretty low key and drama free.. i’ll take it!
i decided to document all of today’s eats after receiving several requests for me to do it more often. i’ll try to do it weekly, but no promises!
monday mornings are tough because i have to be to work at 7 AM. i am not a morning person, so it’s tough for me to make it on time ANY day of the week, but mondays are especially rough. i packed my lunch on sunday night and made sure to have easily accessible snacks so i could get out the door on time today. i made it to work at 7:01… dangit, maybe i will be more punctual next week.
i am officially one week into my fitmixer bootcamp. i have been doing well with eating six times a day, but i haven’t been doing great at eating 1300-1400 calories daily. monday and tuesday i was able to hit the numbers, but wednesday and thursday i was around 1500. friday and saturday were over 2000 calories because i was out having fun and living life.. that’s just how it goes. sunday i was able to stay within my calorie goals because i didn’t wake up until 1:30 in the afternoon.
anyway, i am not stressing about calories much. i am just focusing on eating every three-ish hours and making sure to get a decent amount of protein. i am also focusing on getting 5-6 workouts in a week. last week i worked out every day except sunday. i am definitely happy with the way my first week of bootcamp went. i am excited for the next 11 weeks—the workouts are fun and new. that’s the main reason i signed up for the bootcamp—to get fresh ideas!
rambling complete! onto today’s meals & moves.
breakfast: chocolate protein shake @ 8:00 AM.

yes, it’s chocolate. i know, it’s green! spinach is the culprit. i have had a protein shake every work day morning for the past two months or more. they are just too convenient and quick for me NOT to have. plus, they’re tasty. this one had two cups of almond coconut milk, a scoop of plant fusion vanilla bean protein powder, ~3 cups of spinach, 1 TB cocoa powder, ice, vanilla bean paste, xanthan gum, and guar gum.
snack: carrots & hummus @ 11 AM.
okay, this is not the most environmentally friendly snack, but i am a sucker for convenience. i hope elise doesn’t kill me. i bought single-serving carrots and hummus at costco. this is SUCH a simple snack and it’s so quick to grab from the fridge in the morning.
lunch: chicken, asparagus, and spinach basil couscous salad @ 1:30 PM.
i only had ONE serving of the spinach basil couscous salad leftover because marshall liked it a lot and ate most of it last night. luckily i have lots of the pearl couscous left so i will be making another batch soon! i had leftover asparagus from last night’s dinner so i ate that (cold) with the leftover couscous salad and a serving of chicken breast strips. the chicken was just the pre-cooked kind from costco. again, i am a sucker for convenience!
snack: lemon blueberry protein scone @ 4:30 PM.

i usually snack my FACE OFF after work. it’s purely out of boredom and habit. i am really concentrating on eating a sensible snack between the time i get off work and the time i eat dinner. it’s usually a snack PLUS handfuls of nuts, granola, cereal, crackers, or whatever else is close by. it’s stupid and needs to stop. that’s all there is to it. this bootcamp has definitely made me aware that all my extra, unnecessary calories are consumed after work and before dinner. noted.
to pass the time between getting home and working out, i decided to bake! i haven’t baked in awhile and i have been wanting to try my hand at protein scones. these were SO good. 192 calories and 14g protein per scone.. recipe coming soon!

oh. my. freaking. crap. this workout was TOUGH. in a good way. it was called hell in a handbasket and i know why. my arms are still jello-like. head over to the GPP site to see my numbers in the comments.

drink: fresh juice @ 6:30 PM.

i came home to some fresh juice that marshall made for me. he is the absolute best! this had kale, spinach, pineapple, celery, and apple. it was just what i needed after a tough workout.
dinner: huevos rancheros @ 8:30 PM.

this dinner is always pretty time consuming to make, but it is WELL WORTH the time! so good! this was a corn tortilla layered with black beans, chobani plain yogurt, avocado, ranchero sauce, an over-easy egg, pico de gallo, and white cheddar. breakfast for dinner perfection on a plate.

the good part is we have plenty of ranchero sauce leftover, so the next time we want this meal it will be quick and easy!
i haven’t had my sixth meal yet, but i already know it will be another one of those lemon blueberry protein scones. they are delicious!
i tallied everything in myfitnesspal.com for the day and came up with the following totals:
- 1,615 calories
- 189g carbs
- 53g fat
- 121g protein
maybe high on the fat scale, but i am not too worried about it. there was quite a bit of good fat in there from avocado, olive oil, and butter–oh, wait.
i also drank a gallon of water, drank a serving of fitmixer aminos, took a multivitamin, and had a calcium disc. i have quit taking all other supplements—this happened awhile back and i don’t think i ever mentioned it. i stopped taking supplements because of my GI issues. i wanted to see if certain ones were bothering my gut. i didn’t find that they were, but i also haven’t gotten back into the habit of taking them again. i don’t view this as a bad thing—clearly i can live without supplements—but i probably should start taking some of them again. namely fish oil and vitamin C, i know i could use more of those two in particular.

I need to remember to make huevos rancheros! I love eggs and beans. It’s good comfort food.
I buy those mini hummus containers too. It’s just so easy to grab and go. I’m all about that these days.
My favorite snack is almonds and berries OR cucumbers or fruit (pineapple, melon, apples, or pears) with Tajin.
I take these multivitamins that my mom sends me from some weird company. All I know is that they are 3-5 vitamins a pack (AM and PM) and they make my hair and nails grow like CRAZY. So, I guess they work.
I never think to make huevos rancheros, which I should because I love eggs and I love Mexican food.
Yum! :) I want your dinner and protein scones! lol. Can’t wait to see the recipe for those babies. One of my favorite quick snacks is a chunky peanut butter Think Thin bar. I have also been loving making chocolate pb banana protein smoothies from that recipe you posted a while back! Right now I have been taking BCAA in pill form, a women’s multivitamin, Adora calcium discs, and the fitmixer aminos in fruit punch! I ran out of my fish oil so I need to restock that!
i take a multi + calcium. in gummy candy form, of course!
My favorite quick snack is also hummus and carrots/cucumbers. I also have a trail mix on hand(actually in my purse) in little 100 calorie containers(only one a day LOL). Or an apple.
I take a multi, calcium, b12, omega 3, vit D3 and an iron pill.
I need to try smoothies with xanthan gum! Everyones smoothies look way thicker with it. Jealous.
My favorite go-to snack are bars (convenience factor), fruit or nuts paired with chobani, or a simple protein shake.
I only take a multi vitamin right now but am looking to expand on that. Keeping it simple is the best for me.

I’ve actually don’t snack much in the afternoon. I work out in the morning and we eat dinner like the elderly (at 6), so generally, I’m good with a cup of tea and maybe a few almonds and/or fresh veggies if I’m peckish.
As for supps, I’m taking a bunch now–mulitvitamin, iron, vit. C, Omega 3s. I have definitely noticed a difference in how I feel!

i take a multi vitamin, calcium chew, and flaxseed oil pill. that’s it! :)
My Fav snack right now is Triscuts (no sugar) and Tillamook cheese. Gotta have the medium cheddar. If I’m feeling real froggy, I’ll cut up some turkey slices and get nuts.
Speaking of nuts. Gotta have me some cashews.
my fave quick snack is hummus. It’s just so easy. :) I also like peanut butter as a snack but only if it’s crunchy.
I take a few things daily: Liquid Vitamin D3, liquid B-Total (various B vitamins but mainly for B12), prenatal vitamin, Mega Flora probiotic and then milk thistle every few days. :) It’s become a routine and I kind of love taking them. Random.
Snacks include…Paleo protein pancakes with blueberries, Paleo pumpkin bars with gluten free chocolate chips, coco almond butter with apples and strawberries, nuts (cashews, almonds, walnuts, dried blueberries, dried cranberries, gluten free chocolate chip trail mix)
Lots of water and black coffee too.
Oooo… glad I don’t feel left out on the snacking status anymore. Come 3p and I’m all over the snacking because of tired of being at work, bored, and who knows what other reason i can come up with.

The nosy girl in me loves these posts :)! Apples & almonds are my go-to quick snack! Although even quicker are snack bars: today’s pick is a Think Thin bar…hopefully the taste is as great as the stats!

I can completely relate to the mid-afternoon munchies dilemma. It happens nearly every day and needs to stop. I’m not worried about the extra calories, but know that I could be making more nutritious choices! Planning is definitely key.
My favorite quick (healthy) snack is a coconut flour pumpkin protein microwave cake topped with peanut butter. I also love Luna bars, but I’ve been trying not to rely on them so often (they’re so damn good though!).
I take two supplements: a fish oil/vitamin D pill (when I remember) and gummy bear vitamins (I *always* remember). :-D
So apparently my reading skills were lacking here… First ideas that you’ll post eats once a week I promise and I thought wow that’s not like janetha. Then I was reading about your smoothie and I read it had vanilla ice cream (it was ice, vanilla…) and I was like odd for breakfast – ahh it’s 2:39 that’s my problem!
Anyway my favorite snack is a green monster pop. Imams green monster smoothies and freeze them in Popsicle molds – healthy, fast and delicious!
My favourite snack is definitely fruit, especially during the summer when there’s so much variety! So excited for berries and peaches to come into season.
I used to take a multivitamin, a vitamin c, vitamin d and calcium but I’ve been slacking lately. I definitely need to get back on that though! I’ve also been toying with the idea of taking glucosamine, especially with the knee and ankle and arch problems I’ve been having lately.
I can’t wait for the scone recipe! I love scones, but I try to stay away from them – they’re not usually so healthy. Your dinned looks fantastic too! I need to try that soon.

I think your fat intake is insanely low :) I would add more (nut butter, add olive oil on salad, etc). But I’m a firm believer in an abundance of fats.
I love tortillas. The corn ones are so small though I always have to eat at least 3 :)
No fruit in the shake? And a whole 2 cups of milk? Interesting.
And snacks. I snack alot, especially at night (majar monster at night). Yogurt with fruit and nuts, trail mixes, dark chocolate, fruit and nut butter, cheese and crackers, hummus , etc.
Snacks, unfortunately more often than not, end up being whatever is in my house. Yesterday it was tortilla chips… If I’m really good at planning, I aim to grab fruit or a low-sugar protein bar. :) I normally take TONS of supplements due to various health issues but keep forgetting to fill up my lovely day-by-day pill dispenser. This was a good reminder!

I have a hard time controlling my snacking when I get home too. I often end up eating a bunch of snacks and then dinner and it’s like I’ve eaten two dinners by the time I’m done.
I take these gummy vitamins. I bought some the other day and left them in my car and when I got home and took them out of the bag, they’d melted into one huge gummy vitamin. Argh.

i take a giant handful of supplements every day. i probably should reassess and drop some of them, but for now i take: a multi, fish oil, magnesium, calcium/magnesium/zinc, vitamin d, pantothenic acid, b-6, 2 different probiotics, milk thistle. gah. it’s a lot.

Um, it’s hard to eat less than 1400 calories, but somehow I did it all last week and plan to continue to do so! (It’s much easier to me to eat like 1800.. it takes no thought!)
I take Green Tea extract, a mutli, CLA, some kind of adrenal thing, and Maca. I just kind of hope that they actually do something good.
I’ve been thinking of doing a post on my vitamins, because I never used to take them and it’s not hard to remember once you do it for a few weeks. I take a multi, vitamin C, and calcium every morning. I just recently added B12 once a week too.
I have the same after work/before dinner grazing habit. It was worse when I lived with my parents because their pantry is so stocked with snacks!
Those scones look SO good!! I am definitely looking forward to the recipe!! My usual snacks consist of either some almonds (I’m LOVING the cocoa roasted right now), some cheese and fruit, or hummus and a small pita. I haven’t had the carrot-hummus combo in awhile though – I definitely need to remember to grab some carrots next week!

Greek yogurt with berries or granola is a favorite snack of mine! I also love apple slices with either string cheese or almonds!

I love eating often–it is how I live well and eat healthy. I love snacks that combine a veg + protein + complex carb. I like Greek yogurt + almonds or spinach + hummus on toast. Yumm!

oh man i snack like a crazy person too. i try to get ahold of it but havent succeeded yet haha maybe someday. i love greek yogurts, pb, and recently have been hard boiling eggs just so i dont only snack on carbs.
right now im taking mostly pregnancy vitamin stuff so nothing exciting but i do love my fitmixer aminos before workouts!

Hah. I can relate to the snack your face off after work. When I was working, I had that habit and it was the hardest to get out of! I think it was a naughty way of blowing of steam/relaxing. Sometimes I find myself doing it after a long day of classes or a big test.
My favorite quick snack is probably a banana and pb or a protein shake. I’m the worst about taking supplements, but recently I’ve been pretty consistent taking CLA and calcium-magnesium (magnesium is a great muscle relaxant! so it seems to help my muscles recover better) and BCAA. As soon as I finish the one I have (just bought it) I think I’ll try fitmixer! Looked for them at costco a while ago, but didn’t see them. :(
I want that dinner!! Normally I take zero supplements, but right now I take a Pre-natal vitamin… For obvious reasons. Once I don’t need to anymore, i’ll be back to taking nothing extra.

I mindlessly snack after dinner and I’ve really been trying to reign it in, too. I generally make dinner right when I get home from work (which usually means sitting down to eat around 7:15-7:30) and then I snack if I’m just sitting around afterward- tracking calories definitely helps curb that, though! :) I take a vitamin B and D supplement and nothing else- I know that I’m deficient in B otherwise (I’m on BC and it depletes your levels) and D has really helped keep me from getting sick! I think I’m good on everything else since I have a pretty varied diet.
huevos rancheros = hands down my favorite meal
Probiotics + B complex are the vitamins I take daily–I should be better about taking my fish oil, though.

Lately I’ve been craving a banana and peanut butter as a snack like no other. I also love me some carrots and hummus!
I go through phases with vitamins…right now I’m down to fish oil, sometimes Vitamin D and B, and sometimes a multivitamin.
My doctor has me on a liquid fish oil in the AM for my stomach. It’s one of the best things for an angry gut. It’s only a tsp and it’s tastes like nothing…not like gross fish in a bottle.
My favorite quick snack is a microwave muffin which may not be super quick but I’ve really got them down, I can whip one up pretty fast. I usually take them with me when I’m out so it feels more convenient when I just pull a muffin out of my purse like magic.

we used to take a lot but now we just mainly take L-glutamine, vita-D, zinc, and probiotic.

My favourite mid-morning or afternoon snack lately has been a quick protein muffin cooked in the microwave – I’ve been experimenting with different flavour combos like cardamom, carob and orange blossom water.
