okay. answer time.
today is national white chocolate cheesecake day!
was that your first guess? oh, it was?! good job!
today is also oreo’s 100th birthday!
i bet that was your second guess, right?
you know what all of this means?
it’s time for a celebration!!

in honor of national white chocolate cheesecake day and oreo’s birthday, i decided to combine the two so you could celebrate with a party… in your mouth.

makes 12 individual cheesecakes
prep time: 10 minutes; bake time: 30 minutes; cooling time: at least 2 hours
adapted from my white chocolate cheesecakes

ingredients:
- 12 oreo cookies
- 8 oz plain cream cheese, softened
- 4 oz plain greek yogurt, such as chobani
- 3 oz white chocolate (chips or baking chocolate)
- 3 TB salted butter
- 1/2 T cornstarch
- 1/2 T vanilla bean paste or extract
- 1 large egg
- 12 miniature oreos for topping (optional)
directions:
- preheat oven to 325 degrees.
- line a muffin tin with 12 liners. place an oreo in each liner.
- combine cream cheese and yogurt in a mixing bowl and mix on high for about two minutes, until light and fluffy.
- meanwhile, melt white chocolate and butter together in a small bowl. heat in the microwave at 50% power for 30-second increments, stirring after each increment. you could also do this using a double boiler, but i am lazy.
- pour white chocolate mixture into mixing bowl and mix on high for one minute. mixture will be a bit thinner.
- turn mixing speed to low and add the corn starch, vanilla, and egg one at a time, mixing well between each one. mixture will be thin enough for pouring.
- pour mixture over oreos, distributing all of the batter evenly. *see optional remark in #10
- bake at 325 degrees for 30 minutes.
- remove cheesecakes from oven, let cool for about 15 minutes and then transfer to refrigerator for at least two hours before eating.
- optional: you can place a mini oreo on each cheesecake either prior to baking or immediately after baking. see photos below to see both variations. you can also leave this part off.. it’s totally up to you!

if you bake the cheesecakes and want to add the mini oreos after, simply insert an oreo into each cheesecake immediately after you pull them out of the oven:

this is a cute way to get a little more oreo love into your cheesecake. totally optional, totally encouraged! either way, they will still be tasty. and there will be that whole, big oreo at the bottom.

by the way.. this recipe is easy to double. that’s what i did tonight because i wanted enough to take to work. my co-workers are gonna love me.

I made these last night and could not wait to try one for dessert tonight. And it was absolutely fantastic! I had some mini oreos, but not enough to top all of them, so instead I crushed up some of the extra regular-size oreos and sprinkled them on the tops before I put them in the oven. Amazing!!! And with some calculations I figured out that they are 194 calories each. Not too bad for such a decadent dessert! Thanks so much for this recipe, I know I will make it often! :D
