hey again! two in a day. who am i? well, this morning’s post wasn’t very verbose.. so i have to get my fill of rambling in tonight, right? of course, right.

another monday morning.. another sales meeting meal at the original pancake house.

today i went with egg whites for protein..

and oatmeal for carbs, topped with cinnamon, bananas and skim milk.

i am going to show you today’s lunch, and you can basically expect me to eat the same thing every day this week.. so get a good look, i will only show you once!

toasted onion bagel + low sodium turkey + hot & sweet mustard + spinach + cucumbers… and grapes.

we bought a case of them from costco yesterday and i am not exaggerating when i say it is 3/4 of the way gone. yum.

today was my second-to-last insanity workout! i have nothing else to say about it.. but i wanted to throw that out there. i am real excited to be done.

i will be sure to recap the whole experience when i am done. i know that you can’t wait.

marshall’s mom is in town from iowa! she just got here saturday and is leaving tomorrow, so it’s a quick trip.  luckily she was able to come over for dinner tonight.

on the menu: greek!

when i was menu planning for this week, i was looking back on old posts of mine and came across the time when i made greek salads.  they were so quick and easy.. plus really tasty.. so onto the week’s meal plan they went!

you can see the recipes and step by step directions on this post. i decided to do a salad bar style meal so we could all pick and choose the items we wanted.

all the necessary components! red leaf lettuce, grape tomatoes, fat free feta, marinated artichoke hearts, kalamata olives, cucumbers and red onions.

i used stone ground dijon mustard in the dressing this time around. it looked nice with the mustard seeds and it also added a punch!

marshall made some roasted baby potatoes in our clay roaster. he tossed them with olive oil, minced garlic and trader joe’s 21 seasoning salute before popping them into the oven at 400 degrees for about 45 minutes.

they were perfectly seasoned. good job, marshall.

i whipped up some tzatziki to go with the potatoes. again, recipe and tutorial can be found here.

we also grilled some chicken souvlaki and veggie skewers.

the veggies weren’t quite done as quick as the chicken, so we left them on to cook and went about fixing our salads.

clearly, i went heavy on the toppings.

the chicken was tender and flavorful! i only marinated it for about 30 minutes… next time i am going to marinate it overnight. can’t wait to see how that tastes.

Love burnt veggie! Well, not that burned! Have you ever grilled pumpkin?! It’s sooo good.

Many kitchen snafus- tonight’s ‘pancakes’ became sweet protein scrambled eggs and they were disgusting. gahgh.

Anyways, I just had to say: NO WONDER I had a klutzy morning!!

Today I had my cereal to go and while getting in the car, it tipped on the roof and spilled all down my businessy outfit, my purse, my computer, my change of clothes for later in the day… and then the bowl (a FAVORITE of ours – we only have 2) shattered on the street!!!

I was technically outside, but since it has to do with breakfast I think I fit into the Kitchen Klutz category.

Thank goodness Nicole was there to give me an orange and clean up after me, because I had to get to work!

I will never “go raw” cause I have an love affair with toast and anything burnt. I was born to love the grill. Veggies taste so much better when I get all pyro on them.

And you know me, I invented klutziness. I’m surprised I havent walked off a cliff yet…

an entire glass jar of caramel sauce fell out of my cupboards, glass shattered everywhere, and was basked in the sticky goo of caramel. *freaking nightmare*. I blogged about it about 6 mos ago.

no kitchen disasters apart from dropping stuff. our favourite family one is the time my mom made choco chip cookies…but forgot the choco chips! not a disaster, but pretty boring cookies!

I have kitchen mess-ups all the time! My most memorable one was the time a spaghetti squash exploded in my microwave. I didn’t poke enough holes in it before attempting to cook it and the bottom blew right off the squash and made a huge mess! It scared me when it happened because the explosion was so loud and I was standing right there. Next time I tried to cook a spaghetti squash in the microwave I poked a TON of holes in it!

I love getting oatmeal out at restaurants. Its always so creamy and I dont have to clean the pan ;). What a perfect dinner. I can’t wait to get my feta on post baby. And roasted potatoes? Amazing! Grapes are SO good….but I never buy them. I have 0 control around grapes. Favorite veggie to grill? Eggplant!

All of that food looks fabulous! Guess what?! I finally got TJ 21 Seasoning Salute!! I tried it on veggies but I am really excited to try it on potatoes! You were definitely right about it, it tastes great! :)

This past weekend I decided to bake muffins for father’s day. I was gathering all my ingredients, pulling things out of the cabinet, when I mistakenly grabbed a half opened bag of quinoa and managed to spill most of it all over my kitchen! Ugh what a mess. Those little guys got everywhere. I’m still finding some throughout the apartment, haha.

Oh, yumm, that salad looks delicious! I bought artichoke hearts this week and can’t wait to through them on a salad. My favorite grilled veggie would have to be… corn! Does that count, lol? Grilled bell peppers are also pretty good.

I’ve had so many kitchen mishaps… I don’t even want to go into it! They stress me out. Cooking is so hit or miss for me–it either turns out really good or really bad!

By far my worst kitchen klutz moment was when I was grinding coffee and the lid slipped off, auto shut-off malfunctioned, and I ended up having to get finger surgery. fun fun fun (I’m an idiot). The doc and nurses were like WTF…funny, because I went to work that morning and almost didn’t even go to the doctor to get it checked out. My coworkers made me go to the work nurse ha.

When I opened the grill to cook a few weeks ago, there was a random piece of burnt chicken just sitting there. Apparently, Sam forgot about it and put the grill cover with the chicken still sitting there! haha Yum!

hhahahahaah, that’s funny you should say that re: the grapes! I’ve been on a grape machine, specifically from Sam’s Club (Walmart’s version of Costco). I bought 2 clear cases and am almost thru one of them. They are so sweet and I’m loving it!!!

The worst thing about metal skewers is forgetting that the handles are hot and burning the crap out of your (my) fingers.

I do that far more often than I should be comfortable admitting.

I usually forget to turn off the gas on our grill – I hate when that happens!

I could do kabobs every day in the summer and not get sick of them – it definitely helps to marinate the meat overnight though – I think the meat turns out more tender.

My biggest kitchen klutz mishap happened with a batch of brownies. I had all the dry ingredients in my kitchenaid mixing bowl, but the mixer wasn’t plugged in. I had turned the mixer up to high and forgot to turn it back down, so when I plugged it in, there was an enormous BROWNIE EXPLOSION. I was still finding cocoa powder in crevices months later.

I put a pizza stone in the oven once… turned out it wasn’t a pizza stone, it was a plastic cutting board. Using pliers to wrench the melted plastic out of the oven with my dad= priceless.

That is my absolute perfect meal right there. I ADORE greek food. Greek salad = fav. Tzaziki = fav. Chicken and veg grilled skewers = fav. Everything is SO right about that meal. In fact, you just reminded me that we had a greek festival in town this past weekend that I did NOT end up going to… and now I’m kicking myself. Really hard.

Love love LOVE your Greek feast! We live in a neighborhood that used to be predominantly Greek, so you can find at least one restaurant every block or two. My favorites lately have fresh grilled seafood and salads! And wine, of course…

HA I’ve had way too many kitchen mishaps to count… most of them involve burns or melting spatulas into baked goods. Whoops.

oh i love greek food! i’m coming over…ok it might be cold when i get there. we grilled bottom round kebabs and squash tonight so i’m a happy girl. kitchen mishap: last year, when i forgot to put the lid on the vitamix and chocolate chia shot up onto the ceiling and i found chia seeds in my hair for 3 days. clearly, not caffeinated that morning.
