hello! hope you all enjoyed your weekends. those sneaky sundays sure do fly by faster than i’d like them to!
well, i don’t want to jinx it by typing it out.. but i think it is safe to say that the utah heat is finally here. after a huge snow storm less than 2 weeks ago, it was a scorching 90 degrees here in salt lake city today. oh, utah. you’re weird.
glad you all enjoyed the pooch pics from my last post! and if you didn’t enjoy them.. well, stop reading now, because there are more in this post ;)
i woke up this morning and did what any normal human being does.. make coffee and pancakes. it is pancake sunday, after all.
i used allie’s low carb pancake recipe with my own subtractions and additions:
- 2 tb bob’s red mill coconut flour
- 2 egg whites + 1 whole egg
- 1 tb vanilla whey protein powder
- 1/2 tsp baking powder
- 2 tsp wholesome organics zero sugar substitue
- pinch of salt
- splash of water
i topped the flapjacks with nature’s hollow sugar free syrup.
oh.. and what’s that there on top? ![]()
why yes! that IS the very first successful over easy egg i’ve ever made in my life! thankyouverymuch.

with extra egg and syrup: 300 calories, 11g fat, 27g carbs, 27g protein
so dang good.
i went on a run around noon. um. 84 degrees and running? yeah. not a good idea. it was the sweatiest run ever. ever.
a word about workout clothes. i’ve never worked out at the gym without a shirt on. but running is a different story. people don’t stare. and it was a flipping scorcher out there so i went in just my sports bra. radom dude pulls up to a stop sign and i am running in front of his truck and he shouts out the window, “you look great!” sometimes i would consider this some sort of meathead thing to do, but he had a girl in the passenger seat and so i really just took it as an awesome compliment! i’m fairly certain it put an extra skip in my step. i think random compliments should happen more often.
anyway, when i run outside i just pick a set amount of time and split it in half. so today i picked 30 minutes.. split that in half and that’s 15 minutes. i run 15 minutes in one direction, turn around, and make damn sure i make it back to my house in 15 minutes. great system, right? and then to measure my distance, i drive the route in my car later on and then double that number (for there and back). wooo! great run, HOT run.
i will spare you any self portraits of my hot mess of a self, but i will tell you my stats: 3.5 miles, 30 min, max HR 178, ave HR 160, calories burned 267.
i had a quick snack before heading downtown..

we headed downtown, stopped by kristen & rory’s house and then walked with the dogs to the city center to check out the gay pride festival.
i love seeing all the dogs out and about in the warm weather!

stoked that they supply my favorite greek yogurt! it will be delivered to my door weekly for cheaper than it costs at whole foods! stellar.
after a couple of hours we were done for. it was hot!! we packed up the pups and headed to btown to eat at the parents’.
we stopped by the house to check out the ceiling! look how awesome it turned out.. just needs some paint:

momma b was stoked to show me all the pots of flowers she planted! we are having the wedding rehearsal dinner at her house so she planted a bunch of purple and yellow flowers :)
my mom made an awesome dinner!

after dinner we went to the park where our friends were playing volleyball. i happened to be wearing a dress so i just watched. which is probably for the better because i would have ended up with a broken nose. i am SO not athletically inclined! instead, i messed around with my camera until the sun went down…

and then i went to marshall’s and baked!
momma b gave me some super ripe bananas so i decided to whip up a batch of banana muffins. (click for recipe)
tip: use a potato masher to mash your bananas!
vegan muffin batter mania!
i didn’t have any mix-ins so i decided to fill them with some of this goodness:![]()
simply fill the muffin cups 1/3 of the way, add a teaspoon of dark chocolate dreams..
then top each cup with enough batter to fill it 2/3 the way full!
bake for about 25 minutes and you are good to go.
vegan dark chocolate peanut butter filled cinnamon banana muffins.
that’s a mouthful.
these are delicious. these are horrible for you, by no means healthy, but still delicious. the vegans are raving about them this very minute.
wow.. it’s way past my bedtime!

1. do you plan your runs by time or by distance? i almost always plan by time and figure out the distance later. if i am on the treadmill, i pick a set amount of time and then whatever the distance ends up as.. so be it!
2. are you good at sports? what sports do you like to play? i suck at sports (snowboarding aside.. that i am good at) but team sports? i am horrible. i always give my mom grief for not putting me in soccer or softball as a kid. i always dreaded team sports in gym class! but i always loved the days we would do circuit training. go figure ;)

Oh man. I like seeing pictures of you hot self.
I’ve never been great at sports…not terrible but mostly just mediocre. I ran track a few years, played on the tennis team a year and did cheerleading a year b4 I got kicked off the squad. He he!! I just did my first taekwondo tournament and got my butt kicked in sparring but it was FUN!
When I run (which is rare) I pick a distance if it’s outside or a time on the tready.
84 is nothing. it was 114 here. 30 more degrees and we were out at high noon on our last AZ family walk. oh the joy to be almost outta this state!
i run by both. when training for a race, sometimes just an hour, and how far i get, i get. sometimes i want to do 4 miles and see how long it takes me.

I am jealous of your warm weather! LOVE your dress too! I am absolutely awful at sports involving balls, throwing and catching aren’t my thing at all. On the treadmill, I do time, but outside, I do distance, I just realized!

Wow those muffins look pretty damn good! When I was running I’d just plan the route but if I had a time limit I’d go by time. I love sport I don’t play any team games now but I used to work at a YMCA centre and loved playing football and basketball with the kids.
By the way did you ever receive the giveaway I sent? Averie and Kari got theirs but I haven’t seen it on here so I’m livid if you never got it I sent it back in April! x x

I just tried the Justins maple last week and it’s incredible. So much to the fact that I think I’m dipping into the jar a little too much. I was cleaning out my cabinets yesterday and realized I have a ton of different choco nut butter to use. These muffins would be a fabulous way to use some of them. I didn’t get to play too many sports when I was growing up, but I did play tennis. I was pretty good. Still love it now too!
Utah weather blows my mind!! I can’t believe it was snowing last week and now it’s super hot and humid! How are you all not sick all the time with all the temp changes? :)
Sounds like a perfect weekend. When I didn’t have my Garmin, I use to run around the neighborhood and then take my car out to see my mileage. Eventually, I just new the routes and the distance but I would get bored with the same routes.
I’d like to think I’m pretty good. I use to play every sport in the book, but my main one was softball. Haven’t played in over 5 years though so I’m sure its not so pretty anymore! ;)

Hey girl. What a beautiful day with lots of time outdoors. That is so cool that you’re going to have Oikos DELIVERED! I need to find a service like that :) . Josh and I totally ran during the hotest art of the day yesterday too- whoops. Your moms flowers look gorgeous and I want her whole bowl of fruit salad.

I hate running outside in the heat and humidity. The humidity really kills me so I feel your pain and I was there yesterday running 16 miles in both conditions in Northern VA. Anyway, I am now a distance runner. I enjoy it more because I don’t have to be as fast. As for your questions about sports, nope I can completely suck unless you count Wii bowling. ha ha BTW, those cupcakes look utterly delicious but dangerous if they were in my line of site. Nothing like chocolate and peanutbutter combination!!
OMG amazing idea with the DCD inside the muffins! i have 3 containers or PB loco and I didn’t know what to do with it because to be honest I love my PB straight up just peanuts and salt, but I won a giveaway a while back with 3 PB locos!! this is a FAB idea!! i bet I could make some rockin granola too…you just got me thinking that I could use it in baked goods!! not to mention I want them. NOW
wowwza thats a hot run!!! i sometimes love runningi n the heat, but it stinks because i never end up going as far as I set out to run because its just so dang hot! when I run, it totally depends, I have run for distance before but most of the time its running for time BUT if I run for 30 minutes and hit 3.17 miles I will always run to a rounded distance like 3.25–yes call me wierd but thats how I roll!!

I always track my runs by mileage, only because my pace is always different. Some days I run really slowly, and other days I run as if I’m in a race. But I like the idea of going by time, especially now that I’m working my way back into running after an injury. :D

Okay, so my favourite doggie picture in this post goes to Randy with his amazingly long tongue hanging out of his mouth. Erm, that’s assuming you care about my favourite pooch pics ;) I will have to start just taking random pictures of dogs on the street when I move away from Archie – I’ll be going through withdrawal!
And I would have to beg to differ – there is something veryvery healthy about banana vegan muffins with oozy chocolate peanut butter inside. You can’t deny your tastebuds some of that goodness!!
1. I do the same exact thing as you. No fancy loops or routes. I just find a trail, run for half my planned time (or until I feel like I’ve had enough) then turn around and run back. I don’t even measure my distance anymore as I’m a pretty consistent 10 min/mi runner. I just wear my heart rate monitor to make sure I’m working hard enough (or not too hard!)
2. I’ve never played sports in my life. Ha! That would be a death wish.

The other day I was out for a bike ride and I passed a car that an older couple was driving and the woman yelled “you’re beautiful” hah which was totally random and wierd because I definitely DO NOT look beautiful when I’m working out!
I always go by distance when I run/bike and try to have a target time for the workout.
I’ve played sports my whole life. I started playing soccer when I was 9 and played through my senior year of high school. I picked up cycling my junior year of high school and am going to race in college! LOVE SPORTS haha.

have you ever heard of mapmyrun.com? it’s a neat site where you can track your run with out having to waste gas tracking your run! it will show you the mileage, you just plot your path on the interactive map. pretty cool.
My mom used to make pot roast with potatoes and carrots all the time! It was sooooooo delicious!! I need to request that next time I go home!! :) And those muffins look fabulous, Janetha! :)
This vegan is definitely raving about it. I’ve got a few ripe bananas myself, so I may be making these in the next day or two. I’ll let you know if I do.

2) I suck at team sports too. I used to be good at Rounders (google it!) when I was younger and field hockey but I never carried anything on. Gah. I WISH I played soccer with all my heart!
if there was ever an anti-jock, it’d be me. i don’t play sports, i hate working out, i don’t enjoy watching them – but i do like the food at concession stands!

I hate running in the heat. (I’m from Southern California and it’s almost always HOT) but I also hate waking up early to run so I end up going in the evenings before the sun goes down. Or the treadmill.
I love when people have motivating things to say when you’re running. Every now and then someone will holla at me and it’s usually nice. I’d take it as a compliment!

I set my runs by time. Ideally, I’d love to run 3 miles in 30 minutes and that’s what I’ve been aiming for. Sometimes I’ll notice that I’m SO close to 3 miles so I’ll run an additional 3-5 minutes to make it 3 miles.
I suck at sports. I played baseball with Andy and his friends once and made a huge ass of myself. That was fun.
When I run at lunchtime during the week it’s a fixed loop I do. I work on my speed for that. When I get the opportunity to do long runs on the weekends I focus on distance.
Enjoying your blog here from Calgary but haven’t popped a comment before. You do a great job and your dogs are very sweet! Excited for your wedding…they are a lot of fun (and a lot of stress) to plan!
When it comes to running outside, I usually time it, come home and look it up on gmaps pedometer to find the distance/calories. But lately I have a favorite route and I know that it’s 5.2(not just 5, “5.2” lol) miles and it takee me about an hour.
As for sports, I’m best at racquet sports (tennis, squash and badminton) but can pick other ones up pretty well. But when playing sports I just like being “safe”, so the threat of “ball to the head” or other injuries in softball and soccer have me avoiding those sports unless a spare is needed on my husband’s teams.
I got hit in the face with a tennis ball last year and it didn’t leave a bruise or anything. Now that’s my kind of sport! :0)
I would always guess that you are good at sports. I’m surprised you don’t think you are. I guess it makes sense though. I consider myself athletic when in my best shape but have nowhere near enough hand/eye/foot coordination to do any sort of sport well.
The festival looks like a great way to spend the day. I love little outings like that. And how cool to be a place supporting people no matter their life choices. Having a gay brother really makes me appreciate that more.

I often go by time, just because I feel like I have to plan my night/days down to the second, but when I was training for the 5k I was really going by distance. I use Google maps to figure out distances, though I’m usually always running the same 3.6 mile route.

I definitely do my runs by distance. Back in pre-garmin and Nike+ times I went by distance and just estimated 10 min miles.
Well I was a swimmer all my life so I like to think I’m decent at that! I also love baseball.
Healthy doesn’t mean low calories, so those muffins could be considered “healthy” if they’re all natural or something, right :)

Funny you ask about time v distance. I always do distance. Except today..I just got back from a run based on time! Went to a fitness class, and wanted more afterward, so I just ran around the neighborhoods for 35 minutes.

Have you ever used http://www.mapmyrun.com? It’s a lifesaver. It means you DON’T have to measure the distance in your car, you can just map it online! It’s awesome, esp. for running on vacation or something where you don’t know a route.
I’m not TERRIBLE at sports, but I’m not the allstar. I’m not terribly corrdinated, so soccer and tennis and baseball aren’t my talent areas, but I love them. They’re so fun! I just get embarrassed when I miss the ball. Haha!
I’m more into compact sports, like martial arts and playing defense in soccer and other sports where being stocky helps. I feel like I would be great at girls’ football. :p
I HATE volleyball with a passion though. I can’t redeem myself in any way playing that sport.

I love the heat! I live in SC, though, so its been hot here for a good while already. To the point where you can’t really be outside between 12-3 in the afternoon! Love it.
I always plan my runs my distance… its just more rewarding to me: if I can run faster, I can get done faster!! Win, win situation. The only sport I’m really good at it is horseback riding… though I wasn’t a bad gymnast!

I always plan runs by time and, yeah… no team sports for me. I played tee ball for a total of 45 minutes when I was about 5. And then I played lacrosse in high school for one season. But I was no good. I am a solo-sport girl- running and martial arts!!

Your over easy egg is beautiful! Unfortunately, the running compliments are few and far between here in the city and the catcalls are frequent. I’m so tired of kissing sounds, “hey babies” and up-down looks with “damn, nice body.” The funny thing is, I think I look disgusting when I run, but I am curvy, and tight running clothes generally…acknowledge that. Ugh. Glad you got a nice compliment!

FYI, when I measure my pb, I put the pb jar on the scale then zero it out. That way whatever is on the spoon is also counted. It’s more accurate than the other way around like you did it in the last post. Just a helpful hint! Oh and its also nice if you just want to grab some on a spoon and eat it plain!
I’m the total opposite – I run for distance and end up with whatever time i end up with. I want those muffins.
SWOON. Fried eggs + pancakes have my heart FOREVER!
