hey everyone! hope your week has started off on the right foot. i know mine has been a tad rocky due to situations at the office, but for the most part my monday was tolerable.
let’s rewind (i totally just typed fast forward.. maybe i am subconsciously wishing for the weekend already??) though, to sunday~ there was a lot that went on that i want to share with you guys!
i started off my morning at 9:30 with 10 minutes of plyometrics for my wakeup call challenge! it was a great way to get the blood flowing first thing after waking up.
marshall was kind enough to capture the situation on camera ;) i promise, i look ridiculous when doing this. photos will prove it:
after my plyo, i drank a good amount of water and took about an hour to fully wake up and develop an appetite before making a late breakfast.
i was going to make a batch of protein pancakes in honor of pancake sunday, but i was not feeling the pancake vibe so i decided to take a pancake hiatus. hiatuses are totally allowed, right HEABs?
instead i went with an egg white scramble + laughing cow & ketchup with a jonagold apple on the side. and, of course, an EXTRA large mug of coffee.
“i thought i ordered the LARGE cappuccino.” name that movie!!
after breakfast i took care of some blog business and i lounged around with marshall & the pups. loungin’. that is what sundays are for!
i eventually managed to head out to the gym for my lower body workout. i really wanted to target my glutes in this workout so i did a bunch of extra work for my booty! it is definitely feelin’ it today! DOMS in the tush is basically amazing.
- 5 minute treadmill warmup / walking @ 3.5 MPH on 15% incline

- walking weighted reverse lunges: 3 sets of the aerobics room length (about 20 lunges) holding 10# plate in each hand
- laying bridge w/ feet on bench: 2 sets of 10 (both feet), 2 sets of 10 (left leg) 2 sets of 10 (right leg)
- leg press: 3 sets until failure @ 160# (legs set high to target glutes)
the end! well, i did finish with some stretching. about 5 minutes worth.
this workout took 50 minutes all together.
MY. BUTT. IS. SORE.
not sure which exercise it was that made the DOMS set in so bad.. but i haven’t been able to get my glutes sore in ages so i am stoked.
when i got home from the gym it was time to do my physical therapy exercises & contrast bath.. uhhh.. NOT so fun!
i had to fill two tubs of water: one super hot and one icy cold. 3 minutes in hot, 2 minutes in cold, repeat 4 times.
it was ridiculous. but i am sure it helped! the purpose is to let your veins open up and relax when my ankles are in the hot water, and then when i put them into the cold water the veins constrict and all the bad stuff is flushed out of them. or so the paper my doc gave me says. i am sure there is a lot more behind the method to this madness, but i am not a physical therapist.. so i will just do as i am told!
while going from hot to cold to hot to cold, i enjoyed this post workout smoothie:
- 1 serving tera’s whey blueberry protein powder
- 1/2 cup silk almond milk
- 1 small banana
- ice
- splash of water
deeeelicious!
sunday afternoon i worked on an easy italian pasta salad that i would be taking to my sister in law’s birthday celebration later that night.
first i combined black olives, grape tomatoes and diced cucumber.
next i blanched some carrots, zucchini and yellow squash.
meanwhile, i had some tricolor pasta boiling. i drained the pasta and cooled it off with some cold water.
then i mixed it all together with some italian dressing that was bottled locally at granato’s, a delicious deli here in town.
and last, but certainly not least.. i added copious amounts of parmigiano-reggiano cheese!
marshall ended up eating a few bowlfuls of this before we even left to the party! it was definitely a winner of a pasta salad.
it was off to btown for the family birthday celebration~ the birthday girl had requested i prepare grilled portobello mushroom sandwiches. i had purchased all the necessities over the course of the weekend in order to make the delicious sandwiches! i had to call 4 different bakeries before finding the foccacia bread i needed!
to make things easier, i typed up these sandwich order forms for everyone to fill out. we also had chicken on the menu because not everyone is in love with the fungus among us.
fun fact! when i was a kid, i had a restaurant called “janetha’s place”. i would write up menus and hand them out to my family and the neighbor kids. then i would demand they place an order so i could make them food. this is what the menu above reminded me of :)
fixings and condiments included a spinach artichoke spread, roasted red peppers, grilled red onions, mozzarella cheese, pepperjack cheese, garlic aioli, pesto, dijon mustard, mayo, yellow mustard, salt and pepper.
grillin’.
it was quite a calamity getting everyone’s order just right.. but with the help of everyone we were able to bust out all 12 orders! and the end result was nothing short of amazing.
you bet i ate this whole sandwich. i opted for both chicken AND portobello. gotta get my protein in somehow! i know foccacia is not exactly BFL-approved, but this was definitely considered “clean eating” in every other aspect of the sandwich. i skipped the aioli and topped mine with pesto and dijon mustard.
everyone had homemade strawberry shortcake for dessert, we even let linds blow some candles out before slicing the angel food cake. my niece helped her make a wish :)
instead of strawberry shortcake, i opted to eat my weight in watermelon. mmmm.

MONDAY!
this will be brief. promise.

meal 1 was predictable and i didn’t even take my camera. it was eggbeaters and oatmeal at the original pancake house for my sales meeting meal. no surprises there.
meal 2 was a little more exciting, but not much. veggies+grilled chicken & portobello mushroom cap+hummus @ 1:00 PM
i like to utilize leftovers. the sauce on top of the chicken was simply ketchup+mustard+a dab of water. very low calorie and flavorful!
i worked my life away and before i knew it i had been at the office for nearly 10 hours. oops. i had not even had an afternoon snack! i decided to have something super light because i was about to hit the gym for my cardio session.. and i will definitely barf if i try to do cardio after eating!
meal 3: kashi bar @ 5:00
i get a lot of questions about my tattoo. it says “mable” which is the name of my yellow lab who was hit by a car and died in 2007. she was definitely the love of my life and i miss her dearly. ironically, i do NOT like tattoos. but when she died, i felt compelled to get this one. it’s the only one i have. i mean, marshall has enough tattoos for the both of us.
today was a HIIT day and i did it on the elliptical. as much as i want to run, my ankles hurt really bad.
my physical therapist had instucted me to “get warm” before working out, so i did an easy 5 minute warmup before the HIIT, followed by a 5 minute cool down for a total of 30 minutes all together.
i did my increasing speed + resistance elliptical HIIT routine (click the link for the details). total time=30 minutes, total distance=3.2 miles, calories burned=241, max HR=176, average HR=144. lower average due to the warmup/cooldown. i was hovering around 158-165 BPM during the HIIT.
i wanted quick & easy (TWSS) when it came to dinner.. so i whipped up something simple. this was definitely more of a “constructing” dinner, not “cooking”.
meal 4: fettuccini alfredo with veggies & chicken meatballs @ 7:00 PM
not the prettiest, but THIS. WAS. AMAZING.
i finally found some carba nada pasta locally! for all you utahns, i found it at “the store”. you know, the grocery store that is called “the store”. it is on 62nd south and highland drive.
AMAZING stats:
i used 1 cup of the pasta for my dinner~ which means only about 100 calories and 16g carbs!
for the “alfredo”, i simply mixed 2 laughing cow wedges + 1/8 cup silk almond milk in a saucepan with salt, pepper and dried italian spices.
make sure to heat the sauce on low so the milk doesn’t scorch! i did add a little cornstarch (mixed with water) to thicken the sauce.
i steamed some normandy style veggies and then threw it all together:
i topped it with 4 spinach & fontina chicken meatballs for some added protein. voilà!
total dish = 315 calories, 10g fat, 25g carbs & 29g protein.
awesome stats, right?!
now i am just doing some blog stuff. i added a whole bunch of new “moves” pages so check that section out!
i just snacked on a handful of PB&A mix from trader joe’s:
i love this mix and make sure to stock up on a few bags any time i am near a trader joe’s. it is seriously the best! like a PB&J in nut form :)
i will be having some protein ice cream before bed, since i just froze a new batch of bananas last night. but i want to get this published so pretend i showed it to you guys, k?

1. what was your favorite thing to “play” as a kid? my restaurant-“janetha’s place”-was definitely my favorite thing. i loved to take everyone’s order and fix them food. it makes a lot of sense though, since i still have a passion for it. the runner up would have been playing “school”.. and of course i was ALWAYS the teacher. i LOVED playing “school”! “house”~ not so much.

Haha, I used to like to play “Eat N Park,” which was a casual restaurant in Pittsburgh my family visited on a weekly basis (mostly for their amazing smiley cookies). My sisters and I also liked playing grocery store (where I was the produce) and office.
No tattoos for me!
I have DOMS in the tush and legs right now and it does feel great but not so much when you have a crapload of housecleaning to get done! lol
I have two tats: a big sun (is that total early 90s or what?!) and my hubby’s name in cursive. My plan is to get the sun covered with a cool, colorful Asian floral design one of these days. I figure if it’s there, might as well be beautiful to look at! Thanks for sharing the story about yours. I wondered the significance of “Mable”. That’s a beautiful tribute. I can imagine myself doing something like that for my dog Remy when he passes on.

No tattoos for me, but for a while there I seriously considered getting a small one on my ankle. My problem is that I can’t ever make up my mind about anything so I decided to forgo it. I think it was just a brief rebellious phase anyway. :)
I also played restaurant and teacher a lot when I was younger! My friend had a really big room so we’d set up “tables” and just pretend there were people eating…we’d take turns playing waitress and cook..heheheh…
We loved playing school, too! I have 2 brothers tho so we usually ended up playing boys games!

I have three tattoos. My first I got the day after I turned 18, and it is my zodiac sign- Leo. It signifies a lot, because I am a leo to a tee! My second I got for my dad on father’s day. It is a song from our favorite 70’s punk band, The Ramones. It says “I’m not afraid of life”. I think it is a great motto to have! And third, the word “Strength” on my ribs, the closest I could get to my heart. It symobolizes all I have been through, and all I will go through in my life.

I hate to say this but for my tendonitis to feel better I took an entire WEEK off of exercies. Not even the elliptical, not even walking. When I put my new orthodics in and did an Insaniy workout again I was pain free. Just my two cents :) You know I love you!

My tramp stamp which consists of my Libra sign and 5 stars for each member of my family, a Dallas Cowboys star on my rigt wrist (Got this while in Dallas after a game :) My Kanji on my upper back/shoulder which means Serenity and Tranquility, and last but definitely not least….kissy lips on my bum with the date of my surgery. My friends raised 5 grand to help with medical expenses, and I got this to remember the amazing thing that they did for me :) The lips are ACTUALLY my lips! I kissed my own butt!!!

favorite thing I played as a kid was STORE!! my friends and I would findt hings around the house and set up our own store, then we went to eachother stations and used fake money to buy them!! i loved that game…also OFFICE was a big fun game too! my mom had a fake phone, some order forms, pens, office supples and we pretended we were secretarys! haah looking back it was so fun!

speaking of tattoos, i was watching “true life: i hate my tattoos” the other day and one guy had about the same amount of tattoos as marshall. he was getting them lasered off because he couldn’t get a decent job with all of them showing. so i was wondering, does marshall find that to be a problem? personally, i don’t really think the amount of tattoos that you have should say anything about your abilities, but a lot of employers don’t agree. so! just wondering :)

I would eat at Janetha’s restaurant any day! We play restaurant a lot here, but our menus are not so formal. Actually, they have no words, just pictures, and I’m not so great a drawing a bowl of oats. Which I am about to eat.
I have no tattoos, but I have nothing against them. I think Pea Daddy would have a heart attack, but how cute would a little pea pod be with all of our family’s initials on each pea? I think if the book does well, I have to do it. Now where would I put it?
1. HA, I shouldn’t even talk about this in public! I used to play Laura Ingells Wilder, specifically Laura traveling West in the covered wagons. And aparently I thought covered wagons were hot……. So I would turn off the fans, put on at least 4 layers of long-sleeved shirts and long skirts, and get into the bed under 2-3 quilts. Then I would sit there and sweat and almost die of heat and sort through a big box of beads!!
2. I have two (both are tiny). One is a star on my left hipbone, which comes from the book “The Star Bellied Sneetches.” The other is a tramp stamp. It’s a bow to remember running (and finishing) my first half marathon.
OMG! You are my twin. We had a covered porch on the second story of our house in upsate new york and I would make oatmeal and tell the rest of my family I had to practice “for life on the prarie” and I would go eat in below zero temps also layered in clothes. I also made my mother sew me a bonnet for bed time!! Love it!
I have a sea horse on my foot and it’s significance is “I was once 18 and lived only in the moment”.
I also have a cross on my lower back. I love it. My brother and I have matching ones that we got together after we reconciled our differences. It stands for the forgiveness my faith represents.

I LOVE when my but gets sore. It rarely happens so when it does you know the workout was a goody. I hate when my hams get sore though. And they always do. It’s so annoying.
Those portabella burgers look really tasty. I haven’t had one in so long. Now I need to remedy that.
1. I loved to play restaurant, but not as the cook as the waitress!!! Which totally matches my personality because I don’t really like to cook, but I love to TALK! I also really liked playing house at school because we played in the trees and used the roots to make our houses and rooms. It was actually pretty neat and swiss family robinsonish…just on the ground.
2. I do have a tatoo. My tatoo is of a sea turtle and waves in the crappily named tramp stamp location. I got it when I was 18 and I had moved to Hawaii for my first year of college and it symbalized me taking it slow and making my own way. Plus I am a total animal/ocean LOVER!!! I just discovered Sunday (how dumb am I) that I have decorated (the little I’ve done) our house in an underwater ocean animal theme. Seems icky, but done very tastefully in a Potterybarn-esque way.
Dude. I have DOMs in the glutes right now. HURTS to sit! Now if only I could get DOMS in my quads and triceps. That would be lovely.

My favorite thing to play when I was a kid was bank – I had an awesome stamp set and my brother and I would go to town stamping our certification on our “bank documents.” :)

I had two favorite games to play as a kid: library and rock star. For library, I would take a bunch of books off of my shelves and stack them. I would then write down the isb numbers and make slips of papers. My stuffed animals always checked out lots of Berenstain Bears books. Rock Star involved me and a friend getting dressed up and then performing. We typically rocked out to songs from Jem. :)

I have a tattoo of a sunflower on my hip. I LOVE it so much for many reasons, but here are just a few: Andrew designed it and I got it about 8 months after we started dating, sunflowers were the flowers in our wedding!! :) I want to get more flowers on my hips and have a whole garden, hehe!

Also, good work on the morning work-out!! You will be a morning work-outter in NO time! I’m sure of it. I started small JUST like that. A jog around the block was my “morning workout” for almost a year. :-) Now I’m full fledged.
1. I used to pretend I was a Librarian and I had people come check books out of my enormous home library. My mom was a teachers so we had thousands. I had taken an inventory and cataloged each book, and I actually kept track of all the ins and outs. My dad had a stamp made for that said my name and had LIBRARIAN in big capital letters. Such a nerd.
2. I have 4 tatoos. I love them all. 3 stars on my foot that represent some friendships, a ichthus fish on my hip (the Jesus fish), a cross on the left side of my ribs (also Christian) and my husband’s initials on my butt…haha, that last one was a dare I did a few days before my wedding. I TOTALLY DO NOT regret it. It may be my favorite.
I love your tattoo! I had been wondering what it meant and I am so happy it has a “doggy” significance. I am a big animal lover and I love how you guys really include your dogs in your life because so many people just have them in the yard (in Australia anyway….it may get too cold over there???) and don’t pay them much attention at all….which breaks my heart. I have 4 chinese characters tattooed down my spine….the first 2 say “Jack” and the next 2 say “Max”…..these are the names of my 2 Jack Russell dogs who I love like nothing else in the world. They are my first dogs (I always only had cats before) and I could never imagine loving something/someone as much as I love them! PS: I love reading your blog everyday! :-)
