- where i live: I live in Columbus, Ohio with my husband, Brady. We are expecting our first baby in April!

- my move: I love to run for exercise. I was in the middle of training for the Columbus marathon when I found out we were going to have a baby! I ended up running the half marathon at 4 months pregnant. Hopefully next full I will be able to do the full – at least the half! :) I attached a picture of us headed out the door on the day of the race.
- my meal: One of my favorite meals or foods is: salmon salads! I love salmon! Here is the recipe for my pumpkin butter pom salmon:
POM Pumpkin Butter Salmon
- 1/3 c. POM arils, crushed with back of a spoon
- 3 tbsp. balsamic vinegar
- 3 tbsp. pumpkin butter
- 1 tbsp. pure maple syrup
- salt and pepper
I coated the salmon and threw it in the oven for 15-20 minutes at 450.
The salad included:
- organic spring mix
- organic baby spinach
- 1/2 chopped pear
- 1/3 c. POM arils
- 1/4 c. crumbled feta
- a handful of toasted walnuts
So good!!







I would NEVER have thought to add pumpkin to salmon, but what a great idea! Esp with the syrup- I bet that is seriously amazing.
Good for you running a race at 4-months!
