banana muffins.

these are vegan. the dudes love them!

ingredients:

  • 1 cup all purpose flour
  • 1 cup whole wheat pastry flour
  • 1 Tb baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup granular sugar
  • 1/2 cup brown sugar
  • 1/3 cup canola oil
  • 4 mashed bananas
  • 1 Tb vanilla
  • 1/4 cup water
  • filling of choice. examples: chocolate chips, blueberries, cranberries, peanut butter chips, etc.
  • optional: nuts

directions:

  1. mix flours, baking powder, salt and cinnamon in a bowl, set aside
  2. mix sugars, banana, oil, water and vanilla in a bowl until smooth

3. add flours mixture to the wet ingredients, mix well

4. stir in filling and/or nuts

5. fill lined muffin tins until they are almost full to the top

6. bake at 350 degrees for 25 minutes, edges will be golden brown

Oh my gosh have you ever added peanut butter or peanut butter chips??? I’m really tempted to make these tonight. Thanjavur the recipe!
