garbanzo bean turkey bake.
this is the best accident i’ve made up in a long time!
ingredients:
- 20 ounces lean ground turkey
- 1 (14.5 oz) can garbanzo beans
- 1 cup diced roasted red peppers
- 1 medium diced onion
- 1.5 cups chunky salsa
- 1 package knorr vegetable recipe mix
- 2 cups chopped spinach
- 3/4 cup old fashioned oats
- copious amounts of reduced sugar ketchup. i like heinz.
directions:
1. throw all ingredients into a bowl:
2. mix it up with your hands. or a spoon. whatever. BUT.. if you use your hands, make sure to remove any fancy rings before doing so.
3. spread into a 8”x11” pan, or something close to that size. it doesn’t really matter.
4. it’s probably a good idea to bathe the top of the mixture in reduced sugar ketchup. do it.
5. bake at 350 degrees for 45 minutes. more or less, depending on your pan size.
yum.
6. serve it.
this recipe makes 6 servings, but they are only 255 calorie servings.. so go ahead and serve yourself seconds. or thirds.
delicious. and nutritious!

Holy mother of all beans…I have a HUGE tin of chickpeas in the pantry and ground turkey in my freezer – I know what I’m making for dinner tonight! :) Thanks Janetha!

oooo you have the silverware I like- with the bubble look :) so cute!
It is in the oven as I type – I can’t wait for dinner tonight!!! Unfortunately I only just found out that I was on my list little squirt of ketchup. :( Oh well! It still looks scrumptious…!!
just FYI…im making this tonight!
I just wanted to say that I’m making this again and I am SO GLAD you wrote that about making sure to take off your rings beforehand. I nearly forgot!! Good tip! :) XOXO
Wow, I tried this and I loved it. Glad I finally remembered where I found this recipe – searching copious amounts of reduced sugar ketchup did the trick – because I want to post on my blog. Thanks for this!!
You are now famous on my site – http://haveyougainedweight.blogspot.com/p/recipes.html
I just want to say “thank you!” for coming up with this casserole of NOM! I make this all of the time (and have been for months now), but change up just a few things. Because I have issues with portion control, I bake this bad boy in jumbo muffin tins (I actually do this with a lot of things…baked spagetti, casseroles of other sorts, etc).
I just came here to make my grocery list and wanted to let you know how much I enjoy your recipe :)
DELICIOUS! It was super easy to make too!
YAY glad you enjoyed it!
Perfect dinner on a chilly night! Loved it & will be making it again soon.
I just discovered your blog last night because of your guest post on Carrotsncake!! I’ve only read a few of your posts so far but can already tell I’ll be a loyal follower!! Right now, I’m going through your recipes and flagging the ones I want to try out. And, this one is at the top on the list.
I wish I didn’t have to work today so that I could sit and browse through your site allllll day long!!
Hey! I know this post is hella old, but do you think you could substitute something else for the oats?
Thanks :)
You could just omit them!
