dave’s vegan tacos.

i am trying to get my vegan friend, dave, to post a monthly guest post with one of his recipes. he is an amazing cook, he’s funny, he’s handsome, and he has a lot to offer blog world!

for now, i will have to steal his recipes that he makes in my kitchen and then blog about them.. recipe thievery at its best, i tell you.

dave’s vegan tacos.
makes a whole bunch of delicious tacos with leftovers if you don’t eat them all.

ingredients:

  • some olive oil, plus some more for frying tortillas
  • 5 portobello mushrooms
  • 2 T (give or take) ground cumin
  • 2 T (give or take) chili powder
  • 1/2 t smoked paprika
  • 1/2 t ground fennel
  • 1/2 t ground sea salt
  • 1 whole onion
  • 2 green bell peppers
  • 1, 2, or even 3 jalapeños
  • 4 tomatoes
  • 15 oz can black beans, drained
  • corn tortillas
  • smashed avocado or guacamole

directions:

  1. heat a few tablespoons of oil in a large skillet over medium-high heat.
  2. dice portobellos and add to skillet with cumin and chile powder. sauté for five or ten minutes.
  3. add fennel, smoked paprika, and salt. stir to combine and let sauté while you chop your onion and peppers.
  4. peel and dice onion, dice green bell peppers, and dice jalapeño(s).  add them to the skillet.
  5. saute until onions and peppers soften.. probably 10 minutes or so.
  6. meanwhile, dice the tomatoes and then add them to the skillet.
  7. let the mixture cook for awhile. give it a taste and add more cumin and chile if needed. heck, add more paprika, fennel, or salt if you want to, too.
  8. stir beans into taco mixture at the very end.
  9. for the tortillas—lightly fry each side of each tortilla in a small amount of piping hot olive oil.
  10. fill each tortilla with some of the taco “meat” and avocado/guacamole.
  11. enjoy!

these are ridiculously delicious. marshall LOVES them and he hates mushrooms. i LOVE them and i am typically a protein whore. vegan or not, you will LOVE these.

in other news…

  • i worked out this morning! yay for morning workouts. they need to happen more often.
  • i have plans tonight, that’s why i worked out this morning. my friend danny is in town from chicago and we are hanging out and eating hawaiian haystacks and banana bread.
  • the winner of the mason jar cookie company giveaway is jessica @ healthy dairyland. congrats!
  • i am having a white elephant party on saturday and just locked down the menu.. now i have to get busy at the grocery store and in the kitchen! here it is:
    • appetizers: meat & cheese tray, veggies, pita chips, tortilla chips, salsa, guacamole, and hummus.
    • main dishes: vegan chili, vegan cornbread muffins, turkey minestrone soup, and cheesy breadsticks.
    • desserts: mint chip brownies, vegan snickerdoodles, and pumpkin cheesecake.

pretty simple menu.. but it will still involve some effort on my end!

oh Such a good recipe!! We do homemade fajitas a lot but this is a really fun new twist I will have to try! I am very intrigued by your vegan chili! Will you post the recipe?? :)

I love substituting mushrooms for meat in dishes! The mushrooms give the same meaty texture, but in a much healthier format!

I absolutely LOVE mushrooms and think this recipe looks fantastic! Thanks for sharing (and thanks to handsome Dave too- I love a vegan man!) I am strongly considering making this for dinner, but I have everything at home except avocado, and have already promised myself that I would not grocery shop again until the weekend. I will definitely be making it after that, though!

i KNEW it was shrooms! even as an omnivore i’d eat these happily :) yum! in other news, i DID workout this morning i did two 4 minute tabata drills, 10mins of intervals on the ole stationary bike and some ab work for 5 minutes with a stability ball. now i’m off to go get three fillings from the dentist —->it’s totally because i’m just too sweet! cavities are wrecking me and THIS is what i do on my vacation day?! uh. adult errands suck.

FENNEL…I would never even think to add that to tacos! Brilliant! Thinking I may try these out on my meat-eating family sometime soon!

Hooray for morning workouts…I was only successful at prying my a$$ out of bed ONCE before work this week! Ended up working out after I got off from a 10 hour shift twice…at 8:30 at night! Ugh, one of these days I’ll learn my lesson!
