protein pancakes or waffles.

this recipe can be made as pancakes or waffles. the measurements below make three servings for me. they freeze well, but if i don’t want to make the whole batch then i just make 1/3 of the recipe. enjoy!

ingredients:

  • 1 cup uncooked old fashioned oats
  • 1 cup fat free cottage cheese
  • 6 egg whites or 1 cup liquid egg whites
  • 1 scoop vanilla protein powder (one that is around 25g of protein per scoop)*
  • 1 TB vanilla extract
  • 1/2-1 TB cinnamon (depending on your palate)
  • sweetener, if desired. i don’t use this because i add my sweet stuff on top.

*you can omit this and the recipe will still turn out perfectly.

directions:

  1. blend all ingredients together in a blender or magic bullet.
  2. let batter sit for five minutes.
  3. cook on waffle iron or in griddle for pancakes as you would any other waffle or pancake.
  4. top with whatever you’d like!

i like using nut butter as a topping to get a little healthy fat involved in the recipe because on their own, the ratios are 50% protein, 40% carbs and 10% fat. these are good hot OR cold, when i was in school i was known to carry them around in my purse to eat between classes!!

nutrition stats without any topping (whole recipe): 734 calories, 90g protein, 69g carbs, 8g fat

(1/3 of recipe): 245 calories, 30g protein, 23g carbs, 3g fat

Mmmm Janetha! I don’t know if I told you but there is a waffle iron for student use every morning at breakfast in the dining hall. I will definitely be bringing a big batch to make and take back to my room with me. I have yet to make waffles from the blogosphere yet!

Holy crap Janetha, this is like the best pancake I’ve ever had! It’s so freaking delicious. Not like “i’m on a diet and have lost all sense of deliciousness and have managed to convince myself that plain nonfat greek yogurt tastes better than ice cream” but like “omg these pancakes are so good that I would eat them every morning for the rest of my life diet or not and be happy!” THANK YOU for bringing these into my life.

think they can be made with greek yogurt instead of cottage cheese? or would they not hold up as well?

Made a double batch of these last night and froze them. Had our first serving this morning straight outta the freezer. I warmed them in the microwave first and then popped them in the toaster over to just crisp the outside a little. They were a HIT with the boyfriend! I love them!! Thanks for sharing the recipe!

I’ve been making these for years & everyone thinks I’m crazy. I do the same thing as a grad student…carry a bag in my backpack w/ protein waffles. So convenient & tasty! I can’t even eat regular waffles anymore…they just aren’t as good :)

I just made these waffles for breakfast this morning, and they were fantastic! I topped them with peanut butter, mango, and banana, and drizzled the tiniest bit of maple syrup on top. They’re sooooo much better than regular waffles! I didn’t get that heavy, tired feeling that I normally get from waffles, and they were delicious! I also love that they’re high in protein – I’m always looking for ways to add some extra protein to my breakfast. I’ll definitely be making these again soon. Thank you so much for the recipe!

I loooove these and literally eat them 5x a week! I cook up a batch at night (I follow your recipe and just make 3 big pancakes so 1 pancake is a serving) and put them into individual bags and take a bag to work with me so I can eat one for breakfast. I always add a tablespoon of jam too, for some sweetness. What kind of protein powder do you use that has 25g per scoop? The most I can find is 18g. I have only tried Designer Whey and the 360 brand (from Whole Foods I think).

EAS has 27 or 23 depending on the blend you get, Olympian Labs pea protein has 23, Plant Fusion has 21 :)

These pancakes were the best protein pancakes I’ve ever tried to make… I’m also doing Jamie’s LiveFit trainer and am currently in Week 4… I have been looking for a substitute for eating egg whites for breakfast… I’ll get some almond butter or PB2 this weekend to top… Today I topped mine with two packets of Truvia and 1/2 cup of unsweetened applesauce…so good… Oh, and instead of 1 cup of oats I used about 3/4 cup oat flour….Will be eating these cakes most mornings now. Thanks
