it’s zucchini season. i don’t have a garden, but i have friends with gardens. thanks to these friends, i have received green beans, squash, tomatoes, and big, huge zucchinis!
i also have friends with yogurt. thanks to chobani, i recently received a shipment of their new 16-oz sized containers of yogurt.

these new containers are so handy because they come with a plastic lid so you can either use a little or use a lot. i like using chobani for baked goods, but didn’t always want to use precisely 6 ounces of yogurt (which is the standard container size.) these re-sealable 16 oz tubs are perfect for all kitchen creations!
however, since marshall is a chobani monster and eats the goodness straight up, most of these big tubs of yogurt were gone within a week of receiving them. i wasn’t able to experiment in the kitchen with most of the flavors, but i did manage to salvage some of the vanilla chocolate chunk for a tasty recipe i created last night!

the vanilla chocolate chunk was previously only available in the chobani champions line—which is geared toward children—but i buy and eat the champions flavors all the time! it’s not just for kids. when i saw the large container of vanilla chocolate chunk, i was super excited. i knew this flavor had to be incorporated into some type of baked good! i love cooking with chobani—it’s so simple to sub into any recipe!
(image from chobani.com)
the possibilities are endless with this stuff. because i had these big zucchinis on hand (and because marshall hates zucchini so i knew i wasn’t about to sneak them into any of our dinners) i decided to use the chobani to make a batch of healthy, chocolaty zucchini muffins.

[pinit] prep time: 5 minutes bake time: 20-25 minutes yield: 16 muffins or 32 mini muffins
this recipe will make 16 regular-sized muffins or 32 miniature muffins. or you can do what i did and make some of each size!
ingredients:
- 1 cup oat flour (simply grind old fashioned rolled oats in the vitamix/food processor)
- 1/2 cup coconut flour (i use bob’s red mill)
- 1/2 cup almond flour/meal (i use trader joe’s, but it’s easy to make your own in the vitamix/food processor)
- 3/4 cup xylitol (or equivalent using sweetener of choice)
- 1/4 cup dark cocoa powder (you can use regular, but i am obsessed with the hershey’s special dark!)
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup chobani vanilla chocolate chunk greek yogurt
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1 cup shredded zucchini (loosely packed)
- 1/2 T vanilla extract
*clearly i had a lot to say about the ingredients.. don’t mind all those (notes in parentheses.) directions:
- preheat oven to 350 degrees (F).
- combine flours, sweetener, cocoa, baking soda, baking powder, and salt in one bowl and mix well.
- in another bowl, combine remaining ingredients and mix well.
- spoon batter into muffin tins—either use silicone tins or metal tins sprayed with cooking spray.
- bake muffins for 20-25 minutes, test with a toothpick and make sure it comes out clean before removing muffins from the oven.
- let cool completely before removing from tins.
- enjoy!
*note: this recipe would also be great using a loaf pan to make bread, but you would have to increase the baking time (my guess is to about 40-45 minutes depending on the size of the loaves.)
the regular-sized ones (pictured above) are delicious.. but i am such a sucker for all things mini, they are so fun to eat!

nutrition info per miniature muffin (double for regular-sized):

oh, and remember how i told you marshall hates zucchini? he absolutely loved these muffins. that should tell you how tasty they really are.

i gave a few away to both momma b and kerryne–they loved ’em and couldn’t believe they were healthy. they legit taste like chocolate cake. go make these.. you won’t be sorry. in fact, you may want to make a double batch… i could even loan you some zucchini. i have some to spare.
chobani wants to share the big tub love and has offered to give one of you a shipment of their new 16 oz containers in the various flavors. i will choose a random comment from this post on tuesday, september 4th!

*i received the chobani used in this recipe free of charge and no compensation was provided. however, i spend hundreds of my own dollars on chobani regularly. it’s just that good.

Vanilla chocolate chunk, what a genius concept.
Yay chobani! Those muffins look delicious!
I’ve got to hide the millions of gifted tomatoes and zucchini we get in food for my fiancee too. This recipe seems like a definite winner. Good job Janetha!!
I’d love to try the chocolate.
They look delicious!
I am so NOT a fan of yogurt. Except for Chobani. I don’t know why, but I’ll eat that stuff right up. It’s delicious. It’s also my two year old daughter’s favorite yogurt. She loves the Honey Nana Champions. :)
The Champions flavors are so good!
The chocolate chunk yogurt sounds amazing!
I love using greek yogurt in baking! I use it in cornmuffins a lot to make the texture a little softer.
Chobani is an awesome company. Not only do they make products that are healthy and great-tasting, but they also champion so many great events such as the Olympics. Thank you Janetha for featuring them on your blog and for spreading the word about such great products.
Yes! Thank you for chiming in about your respect for the company. Fun to hear your thoughts! We entered a football pool at the doggy daycare the other day. Thought of you :)
I love the vanilla chocolate chunk–I buy it in the champions line and eat it for dessert. I love how it is sort of fluffy like whipped cream. I need to make these muffins ASAP!
I know exactly what you mean about the fluffiness! So good!
Those muffins look great! I have some vanilla chocolate chunk in my fridge right now and I love it.
I am making these right now. I have all the ingredients, except the Chobani so I will have to use Greek yogurt. I wish they sold Chobani here in Edmonton but only in Toronto so far here in Canada. I’ve asked a couple of the large chains about getting it in. Fingers crossed. Off to bake!!!
Let me know how you like them!
I have yet to try the vanilla chocolate chunk! That needs to change! The muffins look delicious!
We, too, have been getting the most ginormous zucchinis at the Farmer’s Market! This looks divine and I wonder if I could make them vegan! :)
I love the Vanilla Chocolate Chunk! And this recipe looks delicious too!
I love baking with Chobani! Recently made blueberry oatmeal muffins with plain chobani, they were sooo moist. (I hate that word too, but it’s the only way!)
OH MY YUM!!!
And I seriously love those folks at Chobani!
Oh! Those look delicious. I will have to try making those muffins
Yummm!!! i love greek yogurt – especially the pomegranate flavored chobani!
Y.U.M. – gotta give these a shot! Love subbing Greek yogurt into recipes!
I wish I could get Chobani somewhere around here! Especially that chocolate chunk variety…sounds amazing.
Those look so good! I keep stalking my local Target because they are the only store I can find the Chocolate Chunk flavor right now!
Yum. Chobani. :)
Cant wait to try this recipe!
I LOVE baking with and snacking on Chobani! Hands down my favorite yogurt! The ingredients in your muffins look right up my alley…will definitely be giving these a try.
I would love all this yogurt!
i haven’t found the vanilla choc chunk here in Iowa yet. I would love to try it!
Yum! I am the worst baker in the world.
PS I tried Chobani for the first time a few days ago and I thought of you.
<3
These look really freakin’ good!
Those look amazing.
I really hope Chobani comes up to Canada too. It’s my favorite yogurt in the world and it sucks I can’t have any!!
I adore cooking with greek yogurt. Chobani is fabulous. I love the orange flavor in the champions line, it’s so addicting! I bet it would be good in lemon muffins, you’re making me hungry janetha!
Mmmm I bet you are right!
I’d love to bake some muffins once I get power back from hurricane isaac..
We too spend a ton on chobani- love their products. The muffins look amazing too bad I haven’t seen the chocolate flavor at all in my area.
Chocolate & zucchini is such a great combo!!!! Love these.
I think the new bigger containers would be super cost effective for me since a mere 6oz of Chobani doesn’t go very far in my household…
Great idea. I saw the vanilla chocolate chunk yogurt in the big container at my store too. I’m waiting for those Flips.
ooo me too!
wow, these look delish!
I’ve never tried Chobani, but I really want to!!
I don’t think we have Chobani in the UK – I’ve never noticed it in the supermarket. Loving the conversion/substitution chart and the muffin recipe. Time to get baking!!!
if canadians can play along, i’m IN for trying to win the chobani! if not, well….nice work on the muffins! i feel like i want to bake something this weekend – that almost never happens, so i better hop to it!
They sure can play along! Got you in the running! xoxo
