hello! i’m home! i am sure it seems like i was never gone since i had a slew of pre-written posts published while i was away.. but for me, it feels like i was gone for ages. i was so happy to sleep in my bed last night and cuddle up with these two furry faces:

i will recap my mexico trip later, right now i am trying to readjust to normal life. first and foremost with a delicious, fresh dinner!

tonight we had huge cobb salads. marshall’s request, but i couldn’t have come up with a better option. the salads contained a bed of romaine lettuce and were piled high with hard boiled egg, grilled chicken, black forest ham, cucumbers, bell peppers, grape tomatoes, avocados, black olives, and shredded cheese. SO GOOD.

(side note, if you are wondering why my photos are so horrible, it is because my DSLR broke in mexico. i don’t want to talk about it now. maybe later.)
wonder why i am so enthusiastic about a cobb salad? well, let me tell you.
yesterday was spent traveling for the majority of the day. we left our resort around 2 PM manzanillo time, got to LAX at 5 PM california time, and then got to SLC at 11 PM utah time. it wouldn’t have been so bad had i oh, i don’t know, eaten a meal. but that wasn’t in the cards for me, i had a bit of bad luck. you see, i ate breakfast at the resort for the sixth day in a row (ugh…) and i literally couldn’t stomach eating there again for lunch, so i decided i would eat on the flight.
the only problem? the flight was out of all the fresh food options by the time they reached our row.. which was the second to last on the plane. instead, i selected the “mediterranean tapas box” which included food should taste good chips, hummus, green olives, almonds, and dried apricots. it wasn’t ideal, but it did the trick to tide me over. i ate everything except the almonds. we had a 3 hour layover at LAX so i knew i could get some real food there. or so i thought.
we got to LAX, went through customs, re-checked our bags, and found our connecting flight’s terminal. it turns out we had to take a shuttle bus to the terminal. it was in some weird, random part of the airport that apparently wasn’t accessible by foot. while walking to the shuttle pickup, we passed a chilis and a burger king. neither of these sounded super appealing, so we decided to see what there was to offer near our gate. we hopped on the shuttle bus and headed to our terminal. i took a look around.. it was a small area with a handful of gates.. a set of restrooms.. a drinking fountain.. pay phones.. and vending machines. what was missing? food. real, actual food.
i was already hungry and ornery and was probably being really dramatic, but i honestly almost cried because i just wanted something to eat. it’s strange, that usually doesn’t happen to me, i can usually wait to eat with no problem. but i had such a headache and the thought of consuming another prepackaged snack-something made me want to scream. however, that was my only option, so i downed a luna bar, a few fruit leathers, the bag of almonds and bag of pretzels i had from the previous flight, and a bottle of water.
i didn’t feel any better.
momma b was nice enough to pick us up from the airport and take us home. she also nabbed some milk and apples from the store since i knew we were out and it was already almost midnight. when we got home, i realized there wasn’t anything to eat. i had cleaned out the fridge before our trip and we didn’t have a single vegetable let alone components to make a proper meal. i checked the cupboards for vegetable soup–no luck. so i did what any normal ravenous, jet-lagged person would do: went on a carb bender.
i had two bowls of cereal, two pieces of butter toast with jam, an apple with peanut butter, and a few handfuls of granola.
i didn’t feel any better. but at least i was full. i vowed to stock up on fresh food as soon as i possibly could.
and that, my friends, is the long, drawn out story behind why i am so enthusiastic about the cobb salad mentioned above.
i kept my promise to myself and spent over three hours at four stores today, buying the supplies needed to return back to normal life. okay, so maybe that visit to pier one imports wasn’t a necessity, but i was in the area…
anyway, i walked up and down every single aisle of costco and target. i had made a list beforehand, but i definitely didn’t stick to it. i went over the usual weekly budget, but i was in the stock up zone! i was definitely on a mission. i had a little left over spending money that we didn’t use on the trip, so i figured i may as well use the money for my “back to normal life” shopping spree.
i am a total lurker and a creep and love to see what people stock their kitchens with, so i decided to give you a peek at what i bought today.
produce:

- bell peppers
- celery
- spinach
- bananas
- apples
- an onion
- avocados
- leeks
- grape tomatoes
- mushrooms
- blueberries
- cucumbers
- broccoli
- lettuce
protein & dairy:

- chicken breasts
- top sirloin steak (making a crock pot beef & broccoli this week!)

- cottage cheese

- chobani – plain & flavored (couldn’t resist getting a few flavors from target at full price since costco doesn’t stock it anymore)
- fage – flavored (from costco.. wish chobani was still in costco!)
- cream cheese (strawberry and spinach artichoke)
- almond milk
- skim milk (i like to alternate between almond milk and cow’s milk.. marshall drinks vitamin D milk that is delivered by the local dairy)
everything else:

- coffee beans
- beef broth (for the crock pot recipe i mentioned)
- olive oil
- applesauce
- chili beans
- amy’s vegetable soup (4 cans–it’s our favorite canned veggie soup!)
- ginger in a tube
- olives
- vanilla bean ice cream
- bagels (parmesan & cinnamon raisin)
- chili seasoning packet (can you tell we are having chili this week?)
- bread
- quinoa
- angel hair pasta
- salad dressing
- POM juice
non-food necessities:

- metamucil.. i have never used it but i have pooped one time in the past week. i am desperate. TMI? hey, i’m honest.
- vinegar–we use this in our laundry.. it ALWAYS gets rid of funky smells on workout gear! just add it to the slot where you usually pour the bleach or fabric softener.
- fitmixer BCAAs (a little bird told me they won’t be in costco much longer so i bought two)
- laundry detergent
- this dryer bar that was on clearance and looked interesting.. it sticks on the inside of your dryer and apparently makes your clothes super fresh? we shall see.
- lint rollers
- q-tips
- baking cups for more protein cheesecake
- nude nail polish–okay, not a necessity but i have been wanting to try it. i am trying to be a girl.
- face wash
- workout pants–again, not a necessity but it was an impulse buy. champion had “short” length fitted pants and i tried them on.. they were the perfect length and only $20. if you knew how hard it was for me to find the right length of pants, you’d understand.
one more impulse buy…

this memory foam bath mat.. i have one already and wanted another one. it was only $13 at costco, totally worth the money.

go buy one!
so.. that’s that. on the food front, life is back to normal. i haven’t fully adjusted back to normal life, though.. i decided grocery shopping was more important than hitting the gym, reading blogs, cleaning house, or unpacking my suitcase. one thing at a time!
back to the grind tomorrow, man.. i bet once i am back at my desk that whole “normal life” thing will kick right in.

Also, I tried to make your protein cheesecakes and didn’t use a muffin liner. Umm, bad idea. They still taste good though, the part that wasn’t stuck to the pan!

Yes! That is the color! Good eye. It’s the first bottle of nail polish I have bought in over a decade.. for real.
And yes, liners are key, or silicone tins. Sorry they were a mess!!
I spotted that too. It’s a good color! I’ve gotten lots of compliments, I also like to layer Essie’s chunky pink glitter on top!
Welcome home! It’s so nice to get away but there’s nothing better than sleeping in your own bed after being gone for so long. I would have done the same thing and stocked up on fresh food.

Glad you made it back home! :) So glad you pointed out the ginger in a tube! I have bought the cilantro in a tube but never the ginger. That has got to be a time saver–for some reason peeling and grating or chopping ginger seems like the biggest chore to me. lol.
Dude. Tell me about it. Just thinking about peeling the wonky ginger knobs makes me cringe.
Ready for TMI? I am always constipated and uncomfortable. But I discovered if I have one tablespoon of Chia seeds and one tablespoon of ground flax every day, things are regular. I would try that instead of Metamucil. Can’t wait to hear your recap!

Haha I just had one a day, the same as I always do, it was a good chance to knock out some of the topics I had been wanting to post but always had current events to talk about!
Ugh that’s the WORST! I’ve been traveling a lot lately (just got back from Buenos Aires and I’m headed to Cape Town on Wednesday!!) And I hate when I forget or run out of time to pick something healthy up before I leave. Some airports are getting better but most of them have horrible food options!

LAX has shit options. I had a similar issue when we came back from Europe. We live an hour away so usually it’s not an issue but we got stuck waiting for some kids’ parents to pick them up. I was not happy.
I keep thinking Andy and I need to renew our Costco membership simply for the produce and yogurt options. (Do you buy a lot of produce from Costco?)
I have metamucil from my gastro. She gave me samples of the orange. Not in love with the taste but it helps. As does Miralax if you’re desperate.
Yes! Yes yes yes our Costco membership is so worth it. We pay $100 a year for the executive one, but that just means we get a bigger percentage back from all our purchases.. so at the end of the year we get a check that’s 2% of all our purchases or something like that. Our check last year was around $130, so the membership paid for itself.
Anyway, today I bought spinach, blueberries, celery, bell peppers, cucumbers, and broccoli from there. Some stuff I can’t buy there because we don’t go through it fast enough to buy bulk amounts (like mushrooms and onions and apples) but for what we can buy, it’s so cheap. Like that bag of celery–the equivalent of maybe 3 bunches I would say? It was $3. Anyway, I will shut up now.
I stood there debating between metamucil and miralax! i hope this works.
Gah! I become a raging lunatic if I’m hungry…and I hate traveling because I’m never in the mood for the food I pack and I hate paying for the crap available in the airports! I guess its a good thing I don’t travel regularly…
I absolutely love grocery shopping – it is the perfect retail therapy for me and I’m thinking I need to go check out Costco! We just moved from WI where I never saw one and now we have one down the street…

Welcome back!!! Hope you had a nice time away. I can totally sympathise with you on the flight and food situation. I was flying from new york back to australia through LAX. We got stuck on the runway at jfk in new york for 6 hours?!?!?! I hadn’t eaten cuz I was rushing to get there on time…and being a cheap flight all they had was pretzels and such. Missed my original connecting flight and was put on another plane. But had to wait several hours…at night…when all the food shops were shut. I actually did cry! But i got food on the plane and eventually made it home safe and sound.

I absolutely understand your no-real-food in the airport story. I seem to end up feeling that way every time I’m traveling. I’m usually super laid back, but that’s enough to put even me over the edge.
As for your groceries? I’m pretty sure I bought nearly the exact same Costco loot today. Except my Costco still has Chobani? Wonder why yours doesn’t?

As wonderful as vacations are, it always does feel wonderful to get back to normal life. That stinks that you had such a crappy time on the way home! At least it makes you appreciate the day-to-day parts of life, right? And by “day-to-day parts” I mostly mean food :-)

Janetha, I feel your pain I have terrible pooping issues myself and have been going through tons of testing like u. The one thing I’ve found thats amazing for me i get at Whole foods is Superseed. As long as I do 1 scoop a day I’m fine and can go almost everyday but if I forget to take it I’m all stopped up again. It doesn’t bloat me up like the Citrucell and metamucil did either. Good luck its worth a shot.

In my clothes drawers, keep one for hair static, keep skeets away in the summer, 2 in the dryer (or 3 or 4) the dryer bar doesn’t stay stuck and falls off all the time.. Idk why that just really annoyed me.

I totally understand the pain of finding pants that fit! I actually found a pair at Costco last time I was there that are perfect!
I eat a ton of produce every day, so when we travel internationally, I almost always pack little packs of prunes. Lots and lots of prunes. We went to Italy last year and while the food was fantastic, I was clearly not getting nearly enough fiber.
TMI? I just wrote about my issues too. I’ve tried metamucil, felt bloated, and I like benefiber better. For me, I suffer from Hashimoto’s Disease which slows everything down to a the speed of molasses. So I totally feel your pain. I took those senna pills for way too long and have the lazy gut thing too as a result. My natural doc has me on magnisium to help teach my intestines to work again and to get me off the senna. That and we’re doing a massive allergy test to see if my body is resistant to any foods that cause my body to stop eliminating. I did want to echo that that bath mat is the BEST thing out there and a total steal for that price. It dries really quickly, keeps the feet warm in the winter, and never looks matted down.

Welcome back! Just so you don’t feel alone, I will share my ‘I wish I had food story’. After not having breakfast in Paris, we waited 2 hours in the airport because we were extra early/ I couldn’t pay $15 for a sandwich so we got on our plane back to London. We received a bag of cookies and water. From there we waited in the same terminal we arrived in for over an HOUR to get thru security..not customs. Now running late and having to catch a shuttle to our gate we had to rush by all the fancy shops and FOOD. When we got to our gate, Ben went to get food only to have their card machines down. So, no food until the plane was in the air. I thought I was going to die!

welcome back! sounds like my return from like every trip i take hahaha. i just started packing more food than i think i need and clean undies in case i hit some snags along the way. it’s also part of our tradition to hit the grocery store on the way home from the airport no matter the hour! we have had a picnic in the parking lot at 1am no joke. i’m happy you are stocked up again, it’s really nice to return to normal after being away for a few days. i like the routine!

SO sorry to hear about the food episode–I would’ve cried, if that makes you feel any better ;) I HATE being hungry and having no options. That salad was well deserved!
I know all about being constipated. I’ve never done metamucil or anything. One time I tried some milk of magnesia but I don’t know nothing was effective. I’ve been trying to add more flax and whole grains to my meals. And plenty of fats.
As for your carb-fest upon return. That is nothing. When I got back from a very long trip late at night (like 1 am in the morning), my roommate and I ordered in an extra large pizza and burgers and hunkered down with that. Demolished the whole thing. And while we waited for the order to arrive , we demolished chips, swedish fish, and anything that was a starch or sugar :)

What a disappointment/random bad luck about your hunger pains! Don’t you always have some kind of bad luck at airports? I can completely relate to being sick of resort food. Everything is always so rich/oily that it’s no fun to stomach. Sigh, the drawbacks to vacationing. ;)

I dont think you were being dramatic at all, I would have flipped out and/or cried at that point as well. Once I was at the Phoenix airport around 8pm and everything in my terminal was closed. WTF, it was only 8pm. What made it worse was that I was on a red eye that night so I wouldnt eat anything until the morning. I thought I was going to gnaw off my hand.
Happy you are back at home with the pups and a plethora of food, big frickin bummer about the camera though.
Welcome back! I hope you had a great time! And on that TMI issue- have you tried green smoothies with spinach or kale? I know it sounds gross, but it’s actually not that bad if you mix it with apple, lemon and coconut water…it gets things moving no problem :)
Doesn’t sound gross at all! I have been drinking them for years. I like mine with almond milk, blueberries, protein powder and flax. Unfortunately, I have a defective colon and they can’t figure out the issue, so no green smoothie can help :(

Welcome back home! There’s nothing like getting back home and eating a nice big salad, especially if there is limited veg options when traveling. Tastes so good! Hope your camera gets fixed, that’s no fun =/ Do you have a basset hound? So cute! We have one as well from the basset rescue :)
Yes! Randy, he will be 7 this year :) He was my husband’s pup before we started dating. It’s comical because my dad’s name is also Randy.. you can imagine the confusion that goes on when we all get together and ask Randy the dog if he needs to go potty ;) So great that you rescued one! I sure love hound dogs.
Glad you made it home in one piece! I would have cried it I were you. There’s nothing worse than being helpless and hungry with no good food options. I always carry bars or nuts and fruit or whatever with me on plane trips “just in case”- but, I hope to never have to resort to them! I’m sure you will appreciate all of your veggie-filled fresh meals this week even more.
We have the same bath mat (actually two of them- a small and a big one) in our bathroom. Our dogs definitely think that the mats are their beds- they’ll be all moved around and bunched up by one of them in the morning that jumped ship from the bed.
And- I LOVE seeing other people’s grocery buys!! YES!
Haha.. I love how dogs just think they own everything.

Welcome home! I feel your pain about missed meals while flying. I get horribly grumpy and evil if I miss a meal. When my husband and I travel we always pack lots of emergency snacks to keep me happy!
