it’s been a VERY uneventful beginning to 2012. come on in and join my boring day!

we watched the packers beat the lions. even randy was decked out in his packers gear.. even though he was too hungover to watch the game. please keep your eyes off his man bits.

i spent a good hour browsing bikinis online. mexico is coming up and i haven’t purchased a new bikini in over two years. i owe it to myself after all this hard work in the gym, right? i ordered a few…

i am one of those online shopping addicts.. especially when free shipping is involved. plus, i like trying things on at my house, not at a store. i will end up returning two of the three, but i like to have options.

i caught up on my google reader. i now know what everyone did in 2011 and what they plan to do in 2012. it’s actually really inspiring and motivating to read what people are aiming for this year. go team go.

i took down the few christmas decorations we had up. since we didn’t have any ornaments adorning the tree, it was actually a really easy, speedy clean up job. we just have to haul the tree to the recycling bin tomorrow and that’s that! maybe we won’t put christmas ornaments on the tree ever again…

i spent a good hour organizing my pinterest boards to make them easier to navigate when i want to find a recipe. i split my recipe boards into sweet and savory. i need to remember to look back on things after i pin them so i can actually make them! i want to try to make at least one new recipe a week. i am not making a resolution out of it.. it’s just something i want to do.

a few of the recipes on the top of my “to make” list are:

as i mentioned in my last post, i had pork in the crock pot for our carnitas tacos we had for dinner tonight. we usually eat around 7:30 PM, but since nothing was going on and the pork was ready, we ate dinner at the early hour of 5:30!

a few of you asked me to share my carnitas recipe. well, hmm, i had never made carnitas until today. i didn’t really even make them, either. i used a pouch of sauce and spruced it up a bit with some spices.

i found this frontera garlicky carnitas slow cook sauce at harmons yesterday. i bought a few different sauces because they were on sale for 3 for $5.

to make the carnitas, i diced about 1.75 lb pork shoulder into large chunks and browned each side in olive oil quickly–under a minute on each side. i transferred the pork to my crock pot along with a diced red onion and the slow cook sauce. seven hours later, i shredded the pork with two forks and seasoned it with garlic powder, salt, and a bit of cumin.

i think the extra spices were a must, as the slow cook sauce alone was a tad bland. however, the meat came out incredibly tender and was perfect for our tacos!

i prepped a few items to complete our meal.

taco toppings included avocado, cilantro, tomato, cheese, and chobani.

i recently came across these organic brown rice bowls at costco. the rice comes fully cooked! you just heat the bowl in the microwave for 90 seconds.

i also warmed a can of black beans on the stove.

i fried some yellow corn tortillas in olive oil for marshall. he declared them soggy and fried a new batch himself. hey, i never said i was perfect.

this bowl definitely rivaled chipotle’s carnitas burrito bowl.

there is a ton of leftover meat, so i will probably use it for a mexican casserole later this week. it may not be snowing outside, but it’s definitely casserole season.

and now.. i am back on the internet. geez, i have spent WAY too much time online today! and the only time i have stepped outside was to take out the trash. the gym was closed today so i didn’t even work out.  luckily we are getting out of the house soon.  we are going to see the girl with the dragon tattoo in about an hour. i haven’t read the book (um, yeah, i am not a big bookworm if you didn’t notice) so i don’t have any expectations. hope it’s a good flick!

I went to the supermarket so that I could make my traditional new year’s day meal of corn bread, black eyed peas, greens and chili. I dragged my bf to see The Girl with the Dragon Tattoo (I read it, he didn’t) and he loved it. Hope you do, too!!

Answers to your Q’s: just before I read this post I was on PB Fingers site. And, today Norm (husband) and I took our Boston Terrier puppy Wilbur to a local state park and hit a hiking trail for almost three miles. We all loved it!

I’ve been shopping online tonight too. I much prefer it over the stores.

I just went to the gym and Target today (Target was dead and I didn’t really want to go for once, but we needed cat food).

Hope you enjoyed the movie! I read the books and am probably going to see the movie next weekend. I saw the Swedish version and it was excellent.

Love that blue bikini, the back is super cute!!! I made it out for a walk with the dog and to Whole Foods for spaghetti dinner ingredients, haha that was about it :) Ah well, New Years Day = free pass for laziness in my opinion. I have all year to be productive after today! ;)

Happy New Year Janetha! I got a couple of those Frontera grill packs from my brother – can’t wait to try them. That’s what I miss most about working in Chicago – I used to go to Frontera Grill every other week for lunch – so fricken good!

I was just on chicagotribune.com to check out the weather forecast for the week. I spent the day at my Momma’s house celebrating a belated Christmas with her and my sisters family – so much fun!

That’s a great idea to organize your Pinterest recipe boards into sweet and savory! (My husband HATES the word savory, so of course I like to use it early and often, LOL). Those savory tacos fixins look delicious, especially in those cute glass bowls!

Slow cook carnitas sauce? I NEED THAT. I totally just used my crock pot today to make chicken for the first time and it was so easy! I need to get some yummy sauces (or make some I guess) to make more things that are as amazing as that looks.

My husband and I spent New Year’s Day just chilling out at home. We went out for breakfast and played tennis (and got incredibly sunburnt!!) but that was about it. Nice and relaxing :)

I’m visiting my in-laws in UT, and went to my first rodeo on New Year’s eve. It did my east coast heart good to see so many cute chitlins decked out in cowboy/girl hats and boots. I couldn’t quite shake the feeling that I had been plopped into some John Wayne western :-)

Those carnitas look so good! We do a similar dinner with chicken and salsa in the crockpot. I also bookmark recipes on Pinterest, but I often forget to try them out. I’ve just been browsing google reader, if that counts as a website. Today I went to brunch, to Griffith Park to play bocce and ladder ball, and then to the beach for a bonfire.

I ended up celebrating the new years by doing a polar bear plunge in coney island with a few friends. Prepping my blog post soon about it. But I love the start on the year wearing a swimsuit in the winter it’s a reminder yes it will be swimsuit season soon (ok a few months away in the northeast).

I drove back from va beach and came back and hung out with Barbara and her family.. Tried to unplug for the day.. I hate being constantly stuck on my phone/laptop.

I love the bathing suits! I can’t wait to see my progress after inanity. I think after those two months we may switch between insanity asylum and lifting weights.. I plan to be in the best shape of my life this year and remain that way for many many years!

On New Years day, we took a family photo. Kardashian dressed up style. Haha! Packed, watched some football, found the HGTV Dream home, then went to the airport to fly home. Pretty regular day, nothing fancy. Oh and I put xmas decorations away too. My mini tree is easy to take down too :)

oh the blue suit is SO cute! I am a sucker for cute backs on shirts/dresses/etc.

I am on the third book in the series of The Girl with the Dragon Tattoo and I love them. My husband hadn’t read them and we went opening night. We both loved it! There’s one change in it that was a little disappointing but for the most part it was awesome! I love having a movie with a very powerful female presence ;) Hope you enjoy it!
