fried fish + cookie crazed.

well, just as i expected, i slept through my alarm this morning. marshall got up around 6:05 and i glanced at my phone lazily.. then immediately JOLTED out of bed and proceeded to get ready faster than i ever have in my life.

i peed, brushed my teeth, showered, washed and dried my hair, got dressed, and did my make up in 25 minutes flat! i even managed to pack a yogurt bowl for breakfast (chobani, banana, and granola) and fortunately my lunch (enchiladas) was already packed.  i was out the door by 6:40—which is actually earlier than the days i wake up on time! i was so speedy that i even had time to stop for coffee, which was nice, because i didn’t make it at home before darting out the door.

my workout today was the first day of week 8 of jamie eason’s live fit trainer.  it was a biceps/triceps/abs/cardio day and, let me tell you, it was tough.  but in a good way.  i will be talking a about the program and my thoughts in depth later this week.

marshall wanted fish for dinner (it is still so weird to type that since he used to despise fish!) so i picked up some fresh corvina from the fish market after work.

i had cookies to bake, so i was quick about making dinner.

i quartered some baby red potatoes and tossed them in olive oil and trader joe’s 21 seasoning salute, then placed them in a clay pot with a few sprigs of thyme. i put them in the oven at 450 degrees to cook while i handled the fish.

i sliced the fish into 1” strips, coated them in an egg wash, and then rolled them in paremsean herb panko bread crumbs.  i fried the strips in a buttered cast iron skillet for about a minute on each side. i transferred the skillet to a 350 degree oven for about 10 minutes until the fish was cooked through.

i steamed some asparagus and whipped up a batch of my version of tartar sauce while the fish and potatoes were finishing in the ovens.  the tartar sauce was 1/ 3 cup 2% plain chobani, 1 tsp dried dill, a dash of garlic powder, a sprinkle of sea salt, and a squirt of lemon.

and relatively healthy, despite the fact that i flash-fried the fish in butter. sometimes there is just no substitute for butter. it helps achieve a crispy and flavorful fish stick.

and then it was time for dessert.

when it comes to dessert, ice cream always holds the #1 spot in my heart (and my mouth)… but cookies are a close second.   i will choose a warm cookie with a tall glass of milk over cake every day of the week.

it’s no secret that i have been a cookie monster lately. in the past week and a half i have whipped up three batches of cookies: buttery brown sugar pecan, chewy pumpkin chocolate chip, and chewy lemon. all three cookies were nothing short of amazing.

i was recently sent some christmas themed baking chips from oh! nuts*. they told me to bake with the items i received. of course my mind immediately went to cookies.

flourless sunflower seed cookies
makes about 32 cookies, adapted from a PB cookie recipe i had in my brain from many years ago.

ingredients:

  • 1 cup smooth sunbutter (or any brand of sunflower seed butter)
  • 3/4 cup sugar (you would probably be safe using one of or a combination of evaporated cane juice, white sugar, or brown sugar)
  • 1 large egg, slightly beaten
  • 1 tsp vanilla bean paste or extract
  • 1/2 tsp baking soda
  • 2/3 cup candy coated chocolate covered sunflower seeds (bonus points for christmas colored!)

directions:

  1. preheat oven to 350 degrees (f).
  2. in a mixing bowl, cream together sunbutter, sugar, egg, vanilla, and baking soda.
  3. fold in sunflower seeds.
  4. roll dough into balls that are a little smaller than tablespoon-sized and place 2” apart on a cookie sheet lined with a baking mat, parchment paper, or cooking spray.
  5. press each cookie gently with a fork in a criss-cross manner.
  6. bake for 9-10 minutes.
  7. let cool on baking sheet for 2 minutes before transferring to a cooling rack. make sure you let cookies cool completely or they will crumble. (yes, i know from experience because i couldn’t wait.. and yes, that’s how the cookie crumbles!)
  8. devour the cookies once they’re cool. store remaining cookies in an airtight container to preserve softness and freshness.

these cookies are on the small side, so it’s definitely okay to eat three. with milk, of course.

Ooh I’ll have to give this to a friend whose daughter is severely allergic to peanuts and tree nuts. But she can have sunflower seeds so I gave her some Sunbutter to try and she loved it. She was in tears since it’s the closest to peanut butter has to eat! She will love these!

I love tilapia, cod, mahi mahi, orange roughy and other white fish. I don’t love salmon, it’s ok. I hate catfish, even though it’s a big commodity in my state (and a few famous places for fried catfish that everyone loves, except me). I love all fish grilled or baked. And I’m really gonna have to up the ante so I can get more of the Trader Joes 21 seasoning! I asked my Coworker to bring me some from Atlanta and I love it! They need to sell it in 32 ounce jars!!!!

I grew up in FL so I am definitely a fan of fish but only indulge in fried fish every now and then. However, if it was semi good for you, I would indulge in it all the time because there’s nothing like fried fish, especially cajun spiced catfish–yum!

I am staring the 12 week trainer this week. Baahhh I am nervous! I am SUCH a wimp, and I feel like a total dork when I try to lift weights at the gym. My husband is doing it with me, so hopefully that will help. Thanks for the inspiration!

I love fish! One of my favorites. I love your idea of tarter sauce, I’m going to need to try that! I like the classic chocolate chip cookie or oatmeal. Anything with nut butter is also welcome in my tummy :)

We are big fish eaters here – We live on the West Coast of FL & we fish so any time my Husband/Dad go out fishing we usually end up eating fish for at least 2 days. We just finished the freezer full that we had from a fishing trip over the summer. We mostly eat saltwater fish like snapper, grouper, or trout. Over the summer we had mahi mahi because we caught a few on our trip. (I’ve never heard of corvina, is it farm raised?).

I used to love fish before I became a vegetarian. There’s something about the texture that didn’t creep me out as much as chicken/other meats.

I love most fish.. Hate salmon though. I love coating a light flavored fish in lemon and some Parmesan and baking it .. Soooooo good, so easy!

Does cookie dough count? I could eat my weight in cookie dough if someone let me :)

Ah, cookies. I have to be careful when I bake cookies, because I can easily eat a whole batch in a day, just grabbing one or two every time I walk by the kitchen. I’m going to be baking this week…starting, of course, with cookies!

I love fish! I have a hard time cooking the frozen fish filets to actually taste good..I might try your version tonight, especially with the homemade tartar sauce.
Favorite cookies?! Too many to chose…either a good cinnamon raisin oatmeal or basic chocolate chip..yum!

Your dinner looks like it could be in a restaurant! Delicious! I was never a big fan of fish but a couple of weeks ago I went to an event at the Bonefish Grill and I tried a ton of different fish. I’m actually open to eating it now as long as it’s cooked well. :)

I love all fish as sashimi! But cooked, I love crustaceans a lot more than fish. I don’t like white fishies, like haddock, cod, etc. But I love salmon and swordfish. I could eat me some lobsters, crabs, octopus, and squid all day long, though! :-)

As for cookies, WholeFoods makes these cookies that have white chocolate, macadamia nuts, and toffee in them. They are ridiculously delicious!

Nothing makes me happier than a barely seared tuna steak. I love fish and am happy that the bf actually enjoy it as much if not more than I do.

My favorite cookie is a snickerdoodle. I have a cookie contest coming up in Jan at work and will likely be testing a bunch of different kinds to find the most crowd-pleasing type. ;)

1. I love fish. 99% of the time it’s what I order on a restaurant menu. However, the only fish we regularly cook at home is wild salmon (though when Whole Foods has turbot on sale, I jump on it!)

2. Cookies.. ahh. I love them all. I have to go with either chocolate chip or oatmeal raisin though! Flourless cookies are AWESOME. I can’t make them though- I have no self-control with cookies in the house!

Hmmm…never heard of corvina?!?!?! i am definitely a seafood/fish person. I lived on the north shore of Massachusetts growing up. For awhile I would eat steamed clams nonstop. I’ve been pretty much vegetarian/occasional vegan these past years but I still crave fish/seafood!

As for cookies…I love those chewy lemon ones and ginger crisps. Oatmeal raisin is always a great standby too. Oh and thin mints, samoas..okay I’ll stop there. Ice cream always comes first though (:

It’s really popular on the west coast–I know it lives in the Pacific (but probably elsewhere, too)–it is white, flaky, and delicious!

Your husband is a lucky dude! He just tells you what he’s hungry for and you whip it up to a perfection.

Although I will say that I wish my fiance would tell me what he wants to eat instead of always saying ‘I don’t care’.
