do you like squash?
growing up, i HATED squash. yellow, acorn, butternut and, yep, spaghetti.
i also hated zucchini, tomatoes, mushrooms and mustard.. but that is beside the point. i always thought spaghetti squash looked so.. so.. stringy. and, well, squashy. no thanks!
as my taste buds matured, i started eating all of the aforementioned foods and i actually grew ridiculously fond of spaghetti squash. the taste and texture combined are like no other food out there. additionally, it is inexpensive, healthy, low calorie and easy to cook.
i am not ashamed to say that one of the reasons i love spaghetti squash so much is how much of it i can eat for minimal calories. i am a volume eater, so when i can have 2 cups of spaghetti squash for less than 100 calories rather than a half cup of cooked whole wheat spaghetti (also around 100 calories)—it’s a no brainer for me. more bang for my calorie buck. sheesh, give me four cups of squash! okay, no, that would be a tad too filling, even for me.
i have been asked several times how to cook a spaghetti squash. i have to let you in on my secret: i microwave it. yep. call me lazy, but that’s just the only method i have ever known.
i know that you can boil it, steam it, bake it or roast it.. but i nuke it. i learned this from momma b. growing up, there were a few things she always cooked in the microwave: scrambled eggs, hot cocoa, corn on the cob, sweet and sour meatballs and spaghetti squash (am i missing anything, mom?)
today, because it is tuesday and i love alliteration, i am going to give you a step-by-step tutorial of my method to cook spaghetti squash.
first, pick out a squash. it looks like this:
next, grab a really big knife and your muscles. or your husband’s muscles. whack that bad boy in half!
long ways or wide ways.. any way will do.
i usually do it long ways, but that’s because i am a creature of habit. in all honesty, chopping it wide ways (is that even the right term? you know what i mean) is probably easier to do.
moving on.
you can opt to scrape the seeds out before cooking or after cooking. it’s really up to you. i prefer to scoop them out before cooking because it’s a little easier to do while the squash is hard (TWSS.) this time, i scraped the seeds out of one half before and the other half after just for kicks.
now, grab your saran wrap.
lay out a nice long sheet and put one squash inside down on the wrap.
pull the plastic over the outside of the squash.
cut your wrap and seal up all the edges.
repeat with the other half, then place both halves in the microwave.
the time it will take to cook the squash will depend on the size. i always start with ten minutes and go from there.
after ten minutes, check the squash by sticking a fork into the edge of the flesh near the skin. if it is tender, it is done. this squash was on the large side, so i ended up cooking it for a total of 12 minutes 30 seconds.
if you choose to eat your squash immediately, you can unwrap each half right away. alternately, you can transfer the squash from the microwave to the fridge to use when you want. right now, one half is still in my fridge in the saran wrap.
i used the other half immediately. careful if you are unwrapping it hot out of the microwave—it will be HOT and STEAMY!
to remove the flesh from the skin, it’s easiest to use a fork. once the squash is cooked, it easily shreds off the skin.
shred, shred, shred…
…until it’s scraped clean.
just one half of this squash produced three servings—one serving being one cup (or 150 grams).
tons of squash in less than 15 minutes!
once you have the squash prepared, you can use it in so many ways! the possibilities are endless and because of the mild flavor, you can really use it as a blank canvas.
here a few of my favorite ways to use spaghetti squash:
- straight up with salt & pepper
- mixed with cottage cheese & ranch seasoning
- to bulk up a casserole
- instead of spaghetti noodles—topped with marinara or another pasta sauce
- in my “faux lasagna” as seen here
- as the noodles in an asian dish with peanut sauce (SO GOOD)
- in a stir fry—which is what i did tonight!
i made a clean-out-the-fridge stir fry tonight. it turned out delicious! do you spy the spaghetti squash?
clean-out-the-fridge stir fry.
serves four, body for life friendly!
ingredients:
- 1 lb 99% lean ground turkey breast
- 1 small onion, diced
- 1 T toasted sesame oil
- 2 T minced garlic (or 2-3 cloves.. i used the jarred stuff)
- 1 large bunch of bok choy, chopped roughly (yield ~2 cups)
- 10 stalks of asparagus, chopped into 1/2 inch pieces
- 1-2 T low sodium soy sauce (to taste)
- 1 can of sliced water chestnuts
- 1 cup of cooked spaghetti squash
- red pepper flakes (if you like it hot!)
- 1 cup cooked long grain brown rice (yield 4 servings—1/2 cup uncooked)
directions:
1. cook you rice according to package directions.
2. meanwhile, spray a wok (or large skillet) with cooking spray and heat over medium-high heat. add turkey and onion to wok. brown turkey until cooked through, remove from wok and set aside.
3. return wok or skillet to stovetop and heat over medium-high heat. add sesame oil and garlic to wok and stir continuously for one minute.
4. add bok choy, asparagus and soy sauce to wok. stir fry for 4 or 5 minutes, until vegetables begin to soften (but you want to keep them a bit crisp).
5. add water chestnuts and spaghetti squash to wok. stir continuously until heated through. add red pepper flakes and more soy sauce if desired.
6. serve a quarter of the stir fry mixture with a quarter cup of cooked rice.

I love spaghetti squash.. it’s the only type I’ve cooked myself. I always bake it whole and then cut it. Way easier to cut that way, but it takes an hour to bake so I have to plan ahead.

I know you’re a volume eater so things like spagh squash are right up your alley. Not sure if you’ve ever spiralized zucchini but honestly, I prefer it to reg pasta, ANY DAY. Not just for the volume eating part, but that’s a nice bonus…but just not having all that gluten in my belly, it’s a plant, it’s easy. But I digress. I can see you really loving zucchini noodles. Scott knocked them til he tried them and now, a convert.
I love making things in the micro. I have umpteen dessert recipes and nobake this or that that’s micro friendly. You could use a double boiler, but why?!

This post makes me even more devastated that we don’t have spaghetti squash in Australia. I have looked everywhere and googled the hell out of it, but alas… I love pasta so much but can’t eat it on a competition diet – spaghetti squash would solve all my problems!
I feel you Tara. Seriously. I found it once in Perth (you’re originally from Perth, I see from your blog – hello!), at Cannington Fresh. However, being from the US originally, I was so disappointed when I checked out and it cost $11!!!! I used to buy 2 for $1 at my local farmers market in Michigan. Not only that, it didn’t taste like spaghetti squash should. I don’t think think they’ve perfected the art yet, but considering we didn’t have kale hardly anywhere just a few years ago and now I find it everywhere, I have faith that it will come!!
Ooo… love the idea to try it in an Asian dish. I’ve only doen the whole Italian flavored thing. I have one sitting in my fridge right now so I’m goign to have to try this tomorrow! :) Yay! When it comes to the microwave, growing up my dad haaaaated using microwave so I wasn’t use to using it growing up. I don’t usually use the microwave for that reason, unless I’m really in a pinch.
I tried spaghetti squash for the first time 2 days ago! I baked it (I’m not really skilled with the microwave and I only use it to warm things up) and then ate it with bolognese sauce and cottage cheese. 3 servings out of half? I ate a half all by myself, haha … but to be fair, I think it was a rather small squash? I can’t wait until our own squashes grow (my father planted them on my request, despite having never eaten it, haha)!
My favourite type of squash is definitely zucchini, though. I eat a ton of it – I use it in stir fries, I make noodles from it and I use it in egg omelettes.
haha yeah i think that whole serving size is just a suggestion. i totally eat a half of a squash at once. not this one, though, it was giant.

This is how I do mine too. Microwaving plastic wrap on my food for that long just scares me.

That is a great tip about the plastic wrap. I’ve had one too many explosions in the microwave by just placing a piece of saran wrap over a the squash in a bowl. Yeah, apparently it explodes that way.
i LOVE spaghetti squash! We have a plant this year, so I have been eating spaghetti squash like crazy. I usually bake it for 30 minutes on 350 degrees, but microwaving it seems easy! I am a total volume eater as well, so I’d rather have the squash than spaghetti any day!
I’ve made spaghetti squash twice since Friday already and already bought another one for this week =) I JUST figured out I could microwave it last week, instead of baking it like I had been! So much more convenient. And I can’t wait to try to it with your recipe!

Maybe I’m strange- I totally ate spaghetti squash IN my oatmeal this morning. Cooked spaghetti squash+raw oats+water+cooking. Then I added cinnamon and vanilla, topped with almond butter and jam. I’ve been shredding up a carrot and adding it into my AM oatmeal for an extra dose of veg, but the delightful stringiness of spaghetti squash was the PERFECT addition to my morning grub!
what timing! i had spaghetti squash last night- so yes, i like it. though i must confess, my heart goes to acorn squash. first- it’s adorable. second, with veggies and maple-y sausage (real, turkey, or soy), ah. delectable. my heart goes pitty-pat just thinking about it.
microwave foods. um. erm. no. i don’t even use it for popcorn. i use it as a timer, and to heat up lean pockets on those complete “eh” days.
i adore spaghetti squash and always cook it in the microwave…but it’s always in a dish! the wrapped ones look so much easier :) and i absolutely adore butternut squash and acorn squash – heaven!

I’ve tried spaghetti squash before and I just didn’t like it. I should give it another chance since your dinner looks delicious! I never knew you could cook it in the microwave! So cool! I really like butternut squash especially roasted butternut squash soup. Yum! :)

Love spaghetti squash. I always just bake mine, but I need to try microwaving. So much faster. I pretty much like all squashes I’ve discovered. Can’t wait to start making butternut squash soups for winter.
I love squash of any kind – especially butternut, kabocha, acorn and delicata (can’t narrow to one!) I have always used the microwave but mainly just to soften the squash to cut it easier (poke holes in it with a knife). I love the flavor of them in the oven especially when the edges get all caramelized.
Interestingly today is National Acorn Squash day! I will have to get some and roast – sprinkled with cinnamon, light butter and caramel stevia – yum! (yeah I know, you hate stevia!)
I have a spaghetti squash and may attempt to cook it totally in microwave since it doesn’t need to caramelize. I must try it with cottage cheese since it’s one of my favorite foods.

What a great tutorial! I never thought to microwave squash, but for this stir fry application it totally makes sense. I hope this method works for butternut squash. As for the microwave, that’s how I’ve always cooked my corn. I just wrap the cob in wax paper and microwave for 3 minutes.

I think we disliked the same things growing up. Now that I’m an adult, I still hate mushrooms and most squashes, but acorn/butternut/spaghetti are okay. I’ve always done my squash in the oven, but I might just try your method!

I don’t microwave things ever since I read about how the microwave alters a food’s molecules… that’s just weird! Are you at all worried about what leaches off the plastic wrap when it’s heated?
I have never really thought about it, to tell you the truth! I have eaten food cooked in saran wrap in the microwave my whole life, and my mom has ever since the microwave was invented, so I never really worried about it. Now you have me wanting to Google.. haha
i might die without a microwave. i use it for everything. egg whites, squash, steamable veggies, soup, oatmeal, etc. literally my life wouldn’t be complete without it.

Squash: Butternut is my favorite. It’s almost time to make butternut soup!
Microwave: The only thing I actually cook in it is bacon. Two pieces of turkey bacon = 2 minutes to crispy perfection. Other than that, it is solely for popcorn and reheating purposes.
Oh yes–bacon! That was another one we always cooked in the microwave growing up!

I love spaghetti squash but only discovered it in the past few years. I think the favorite way I ever had it was served with some healthier eggplant lasagna my father in law made. delish!!

But this looks even better! I need to read these things before I make my weekly trip to the grocery store… I guess I’ll just have to go back. I find that if you cut it the other way (the short way) the strands are longer. They seem to grow round and round the smaller diameter of the squash. Just a weird observation.

Girl I totally microwave my spag squash too! Except I don’t cut it first. I stab it like a potato a few times and pop it into the micro and rotate it every 3-4 min (for a total of about 12 min), then cut in half (so easy to cut then), scoop the innards, then get the spaghetti’s. Easy as can be.
I’m a volume eater too…the more the bettah!
