marshall worked three hours from home today, so he was up at an abnormally early hour. i decided to get up a tad early, too, and had plenty of time to spare. i decided to make a “weekend breakfast,” as i call them. one that takes a bit more time that blending a protein shake and darting out the door—something i typically do EVERY work day morning.
my plan? a protein waffle!
i dusted off the ol’ waffle maker (no, literally, it was on top of my fridge and i hadn’t used it in so long that it had collected dust!) and whipped up a single serving batch of my favorite protein waffle (or pancake) batter:
- 3 egg whites
- 1/3 cup old fashioned oats
- 1/3 cup low fat cottage cheese
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
(blended in my vitamix)
i sprayed the iron with olive oil and cooked the waffle as i usually would, but when the waffle iron beeped to tell me it was done, this happened:
blast!!! i have no idea how that happened. i did nothing different—maybe my waffle iron was revolting because i have been neglecting it for so long?
i still had time to spare, so i decided to give it another go. i had my heart SET on a protein waffle or pancake. since my waffle attempt was a flop, i decided to go the pancake route. i never mess up pancakes!
i usually cook my protein pancakes on a griddle, but i didn’t want to take the time to get it out, plug it in, let it heat up.. you get it. instead, i decided to use one of our cast iron skillets to make one BIG protein pancake. we have a full set of cast iron skillets that marshall’s grandpa gave us—they are awesome and have years upon years of use. nicely seasoned!
i sprayed the skillet with olive oil, let it heat up while i whipped up another batch of batter and then poured the batter into the skillet.
after all the bubbles had popped (that is when you know it’s time to flip the flapjack) i grabbed a spatula and tried to flip—um, yeah, tried.
failed. what?!
the pancake was STUCK to the skillet. it was a total mess. i don’t know what i did wrong! i greased the skillet, i cooked it long enough before flipping, yet still—foiled.
by this time, it was almost time to leave for work. so much for getting up early to enjoy a leisure breakfast, right? i resorted to plan C, which was an egg white sandwich. that is one thing i knew for sure i wouldn’t screw up. although, i’d never had a pancake disaster before, so i wouldn’t put it past me to not screw up the sandwich.
i grabbed a smaller skillet and cooked three egg whites to perfection. they didn’t stick. they didn’t fall apart. thank goodness—if they had, i might have had a serious breakfast breakdown!
i toasted a whole wheat bagel thin, topped it with a wedge of laughing cow cheese, piled my perfect egg whites on top and added some ketchup.
finally, an edible breakfast.
which, by the way, i had to eat the majority of in the car.. since i was late for work.
i was annoyed at first, but let’s face it–shit happens! i was already laughing by the time i got to my office.
but i still really want a waffle.

1. any kitchen mishaps to share with the class? i am notorious for dropping whole containers of things on the kitchen floor: jar of pickles (smelly), costco-sized container of blueberries (huge pain to clean up), entire vitamix full of protein shake (uhh..)—just call me butterfingers!
2. waffles or pancakes? i am NOT picky. i like them both so much! but if i had to pick, i’d say waffles because i love how they crisp up so nicely on the outside and, because of their structure, you get some bites that are thicker than others.

Ha ha ha ha ha… are you sure you weren’t peeking through my window and writing my life here? I seriously do this on a daily basis. I have fantastic plans and am so excited to eat a certain thing and I screw it up somehow. Story. of. my. life! Glad I am not alone! I love pancakes or waffles. I am not picky either! Sad to say (and embarrassing to admit) that I have forgotten (more than once) to put the top on my Vitamix and had it set to the max limit. Not a pretty sight. I hate when something I am craving gets ruined and I don’t have time to try it again!

Your stickage issues in the cast iron is my experience w/ pancakes 95% of the time i attempt them. So i just dont really anymore!
you just reminded me that i have that caramel and haven’t used it yet! haha. i hope i don’t drop it…
ughhhhhh mornings like that drive me nuts. (well, all mornings drive me nuts. I am not a morning person!!!!) I would have given up! Good for you pulling through!
I love waffles. I need to invent a gf protein waffle! Until then, I eat Vans gf freezer waffles with pb. yumzilla.
Breakfast is just one of those meals that you can’t settle for anything less than amazing. I would try 100 times until I got it just the way I wanted it. Glad you finally got a winner.
Im pretty much obsessed with any starchy breakfast but I love a good waffle because it has built in syrup catchers! haha a good waffle topped with greek yogurt, peanut butter, berries and a bunch of syrup! oh man that sounds like heaven right now!
I did a post a few weeks ago about my total salmon salad kitchen failure. It looked pretty but tasted disgusting! oh well, live and learn :-)

Omgosh! I had a recent kitchen fail – some cornbread made in my cast iron that was just ok (too moist, despite extra cooking time), and then yesterday when I went to eat a piece it tasted very very weird – not like it had gone bad, but like something nonedible had been spilled on it. I had to throw it out and I’m afraid to taste any of the other pieces :(
I think I prefer waffles, because I love how the little pockets hold the syrup or whatever toppings. But pancakes are definitely simpler/easier to make.

Yeah….I once exploded ramen noodles and glass all over my kitchen because I didn’t have any clean pots and somehow got it into my head that it would be safe to just cook them in a Pyrex measuring cup directly on the stovetop. I do dumb things when I’m really hungry.
Pancakes! I don’t like the texture of waffles – they’re too crunchy for breakfast!
waffles for me! I like when the peanut butter and syrup gets into the holes and creates this little pocket of yummy.
I have had many mishaps with the pancake experiment, and most of the time they end up too gooey and stick the pan. I love waffles because they are crispy and easier to dip in yogurt or syrup.

Kitchen fail! Hahaha…. I had an epic one. As a teen I worked at an ice cream store. One evening I was cleaning up and was waiting for the ice cream machine to finish up its cleaning cycle. A bucket was on the edge of the machine collecting all the ‘reject’ ice cream… Aaaand I hear a splat. Yup the bucket fell down, spilling soft serve eeeeverywhere. So I had to get past it to get the mop. Easy. One graceful balletrina-esque leap over the puddle of ice cream… I landed juuuust on the outer edge, slipped and fell backwards right into the middle of the soft serve. WIN!
If you’re going to have a kitchen fail day might as well go the whole way right?!

Oh this makes me feel a lot better about my frequent kitchen mishaps. I could write 30 pages about how bad I am at cooking.
Also pancakes. I love pancakes so much. My boyfriend makes the most delicious chocolate chip pancakes for me when I have a bad day at work. Yum.

What perfect timing! I made your protein pancake recipie on Sunday and was blown away by how delicous (spelling?) and pancake-y they were!! So naturally, I had them for breakfast today too! I whipped up one serving in my magic bullet and used a non stick pan and served with a touch of peanut butter. Thank you for sharing this wonderful recipe!
The protein oatmeal however, was a major fail. Whats your secret to non-rubbery oat/protein goodness?
I have noticed that you have to add the powder at the end and using a powder that is not whey-based (it curdles). The trick is for sure the protein powder! Trial and error.
Glad you finally ended up with a tasty breakfast! That egg sandwich sounds like the bomb! :) My last kitchen mishap was dropping a container of blueberries on the floor. My smoke alarm also goes off everytime I use the oven even if it isn’t smoking or anything. lol. So annoying! I usually roll with pancakes!

Oh I have a major kitchen fail.
I wanted to try a recipe for what I THOUGHT would be yummy protein cookies. I followed a recipe that called for a ton of expensive protein powder and some other pricey ingredients. It was a huge recipe (like 3 dozen) AND they were disgusting.
I was proud to waste all the protein powder so I choked one down as a pre workout snack every morning until most of them were gone.
I have SO done that. But I tossed them. You are a champ!!
Mmmm, I’d have to say I’m a waffle person :) Pancakes always fill me up in that “feel sick” kind of way, even if I don’t have a large portion. Waffles however, just make me feel good. And I’ve done that with my waffle maker too – it’s such a pain in the butt when that happens!
And kitchen mishaps…the first time I dealt with a whole chicken and I tried to take out the innards – I went in the neck hole. I was thinking, man this is really, really difficult! I couldn’t get my tongs in there or my hand and I definitely couldn’t get any of that crap out…I didn’t even think to flip the bird upside down to see the other *ahem* hole. When I finally did look, everything was falling out of the 2nd hole because I was poking at it from the neck hole :) Learning opportunity, for sure.
Haha–talk about a hands on lesson!!
What.a.morning! That’s rough (wow, well, you know, for our lives here in North American when we can choose breakfast foods!) when you have your heart set on something to eat and it doesn’t work! Definitely make those waffles on the weekend, and way to attempt it on a work day! ;)
For me, it’s a bit of a toss up, but waffles always seem extra special and “fancy” to me. For some reason mine often turn out disastrous, both pancakes and waffles, but it’s weird yours did when you didn’t change anything!

I often don’t screw the lid back on my container of fish oils properly…. it always seems to be a completely full container which I drop all over the floor. It doesn’t help that my cat has a fish oil fetish (seriously – he knows when they are in my pocket and tries to steal them and run away with them) so I have to madly scramble to pick them all up as he tries to chew them all!
Oh my gosh–I can relate! Actually, I have left lids not tight on so many things that my 2011 new years resolution was to close things tightly. True story!

i would choose waffles over pancakes but i’d get them in a restaurant so that i wouldn’t have to cook them up. but my mom makes pretty darn good blueberry pancakes!…
best kitchen drop: full bottle of premium designer water – > glass and water EVERYWHERE. at least it was water and not a sticky liquid!
I had a major fail trying to make a protein powder based pancake – they burn REALLY easily (before they bubble, which I know now). I usually choose pancakes though because grabbing a skillet is quicker than getting out the waffle iron.
Oh no!
I am notorious for either a. not greasing the pan, or b. dropping things. At work, if something falls, guaranteed someone is going to say “Kristin!” or everyone will look at me. Even if it wasn’t me! ha.

Sorry that you had a kitchen mishap! It’s too funny though because I had a dinner disaster the other night! I followed a recipe exactly for a nacho casserole and instead of a casserole, it was a gross nacho soup! Ick!

Hahaa aw man…those mornings are no fun. Glad eggs saved the day! I don’t have as many issues with sticking…instead I turn on the wrong burner 50% of the time and wonder why my frigging pancakes aren’t cooking…
i can’t even tell you how many pancake fails i have had. i do recall one time i even threw the spatula i was so upset. the doting fiance though will always eat my messes though. even the half cooked ones because i got too impatient.
So, I’m secretly happy I’m not the only one who had a pancake fail yesterday. Mine wouldn’t cook on the inside! I even put them in the toaster oven and they just became a flat pile of even hotter mush. I still ate them though. Generally I can eat most mishaps if I cover them in enough peanut butter syrup ;)

one morning i was so tired that i forgot to put a lid on the vita mix and ended up covered in chocolate and chia seeds (yep in my huge hair). nate came home and there was a gross looking mess on the ceiling but i couldn’t reach it to clean it up! he laughed but doesn’t let me forget that one :) i like pancakes but i’ve def had some episodes where the batter was too wet and did that sticky bit on the pan like in your photo. it was unedible (i even tried to eat it haha). i got really annoyed because nothing is worse than wanting something really badly and then effing it up several times. girl just wants to eat something!

Pancakes always stick to our castiron pans-even through they are well seasoned. So, we bought a non-stick pan/skillet and now we get perfect pancakes every time.
I mess up Green Monsters constantly. I am a green monster failure.
I really shouldn’t have been so lazy hauled out the nonstick griddle–lesson learned!
OMG, I’ve had so many kitchen mishaps – too many to count. However I did get the brilliant idea to use my super expensive baking stone on my gas grill to make grilled pizza.
I heated up my grill, went back into the house to get all my ingredients, and when I came back, the grill was up to 650 and my baking stone was cracked into three pieces. My husband came out to the deck just in time to see me whip the broken pieces into the backyard I was so pissed!
Now I just use .44 unglazed quarry tiles and it works great!

MAN what a terrible start to the day, but hey, a egg sammy is the best! Lets see, I have spilled rice all over our kitchen floor, literally have forgotten to put the lid on the blender (not pretty!!)…put aluminum in the microwave without even blinking, thank god my boyfriends kids were there! and a funny one….I was wearing socks and thought it would be fun to show off, so I was like, “look! I can touch my toes!” so a high kick I perform and land FLAT on my ass…the shame and embarrassment. Tears in my eyes though from laughing so hard with embarrassment! Makes life fun….right?? :)
I have done all three of those things! The foil in the microwave is sparky and scary!

Ugh, I hate it when I have grand pans and they don’t pan out. Usually happens when I try a new cookie recipe and forget that I live at 7,000ft above sea level.
I’m like you, I love waffles and pancakes both so much, but I think waffles have a slight edge with that crispy exterior.

I exploded a blender recently, and nearly died. It was pretty crazy. Pretty much any time I am in the kitchen I break a glass. I am a spazz and a klutz, and the two together can be disastrous!
I’ve DEFINITELY had a few of those breakfast FAILS before..especially when making up my own pancake or waffle recipes. Ha, and why is it the mornings you have extra time..you are always late!!…at least I always am too!
Hahahah… i might be butterfingers @2.. Joe always jokes and says “yeah there’s XX (whatever I spilled) on the ceiling”…then one time, I actually got something on the ceiling. I tried to catch a glass and somehow it spun around and flicked some of my protein shake on the ceiling. Not fun to clean painted plaster. Tile floor, much easier.
1 – Kitchen mishap: I was baking some killer choclate peanut butter cupcakes the other night. SO I decided to try making brownie cookies. Yeah, they needed some major work. That was after the flour puff cloud that floated through the air. Should have used the splash guard huh?!
2. I love pancakes and waffles but I think I may lean toward the waffles..until I go to Babycakes and get red velvet pancakes!
My kitchen mishaps usually involve me trying to make protein cake late at night, resulting in an inedible mess.
I also have been unsuccessful at making protein fluff…rar!

my worst was a shattered bottle of balsamic vinegar on a tile floor (it is nearly impossible to make the smell go away!). it literally brought me to tears…and stained the grout! :(
i think i’m a pancake kinda girl. that fluffiness is hard to beat with a waffle ;)

PLENTY of mishaps in my kitchen… one recently involved me accidently dropping a (hot) baked potato right in a saucepan on the stove that had this perfect balsamic glaze goin’ to town. Needless to say, the hot balsamic glaze was ALL over the place. It was a pain to clean up too because it cooked onto the hot stove. Grr.
I’m totally with you on the pancakes vs. waffles. I’m all about both pancakes AND waffles, but waffles slightly win.
i once dropped an entire bag of CHIA SEEDS on teh ground…omg never ever do that if you can avoid it those are the worst to clean up!!! they bounce all over the place and then for the next month, chia seeds were popping up all over the place! it was a disaster to say the least…well at least you made a yummy looking bagelwich!!
i cannot imagine that mess.
