it must be waffle wednesday because i read several delicious waffle posts today:
- the revival of waffle wednesday on the great balancing act.
- blackberry cobbler waffles on how sweet it is.
- gluten free toasted coconut waffles with maple cream on joy the baker.
- chocolate chip waffles on two peas & their pod.
- buttermilk waffles on live & love to eat.
i need to bring waffle wednesday back into my life.. along with the celebration of national food holidays. i have really let that go by the wayside! i used to be so dedicated.
there you go, random thoughts from yours truly.
speaking of national food holidays, today just so happened to be national eat what you want day. isn’t that every day? it is for me.. well, actually, no.. if i ate EXACTLY what i wanted, i would be in chicago eating french toast at the bongo room. we can’t all be that lucky every day. but i did eat several things that i wanted.. and they were good! let me show you.
breakfast: protein oats.
don’t let the elaborate peanut butter drizzle fool you, this was nothing fancy. just 1/3 cup oats cooked in water until they tripled in size, then i added cinnamon, vanilla and a scoop of EAS premium vanilla protein powder. drizzled with kirkland organic peanut butter for ultimate yum-factor.
lunch: mexican wrap.
i used the leftover seasoned ground turkey from last night’s taco salad to create a simple wrap. in addition to the ground turkey, this had mashed avocado, salsa and spinach.
simple, but good.
kombucha for drinking, because kombucha is delicious. and i wanted it. so i had it.
snack: alliebar + chobani.
two more things i wanted to eat. a lot of you asked about the alliebar. these delicious bars are made by allie at live laugh eat. the recipe is top secret.. but i convinced her to mail me some in exchange for penny. she is really fond of penny and i figured it was a fair trade. i am not sure if she needs another dog, but maybe you can convince her to send you some for a fair price.
i had a busy afternoon! i had an appointment to get spray tanned. yes, i get spray tanned before i go on trips where the sun is shining and my skin is showing. i like to look tan just as much as the next gal, but i think faux is the way to go. why? well i think tanning beds are whack. they are expensive because in order to achieve a tan you have to go multiple times.. and they also give you skin cancer. well, they can, and that is enough of a reason for me to stay away from them. i did a lot of tanning bed tanning in my younger years and i wish i hadn’t because of the long term effects it can lead to. oh well, too late now, right? now i stick to the spray tan. that’s my story.
i ran a few other errands to pick up a few things for my upcoming trip (i leave friday morning) and i also stopped by the fish market to snag some scottish salmon for dinner.
i have been wanting to make this recipe ever since i saw it!
dinner: apricot dijon glazed salmon + brown rice + broccoli.
i snagged the salmon recipe from emily.. she always has awesome recipes. the fresh scottish salmon was melt-in-your-mouth tender. the sweet, tangy mustard apricot glaze was the perfect subtle addition to the fish.
i spruced the rice up a bit with some dijon mustard and garlic salt. it turned out real creamy and tasty!
this meal couldn’t have been simpler. i love how quick fish cooks.
i am glad that what i should eat and what i want to eat are one and the same. i wasn’t always a lover of healthy food.. but now i truly can say that i prefer broiled salmon and steamed broccoli to fried fish and chips. healthy eating is a whole lot easier when you want to eat what’s on the menu! i make sure that every time i eat, i am eating the food because i want to, not because i think i should. if you get into that mentality, you will have a lot easier of a time with healthy eating. find the meals that you LOVE and eat those.. don’t eat something that you don’t like the taste of just because you think you need to. i promise you can find something that is both healthy AND appealing to your taste buds.
and that’s that.
we just finished eating and now i am going to head up to my mom’s for a few. gotta go! have a good one.

I’ve never spray-tanned. I should do it! I’m pretty darn pasty.
ugh i know, i have to get up at 6 and that is like pulling teeth. how do people just bounce out of bed in the morning?!
I wear my workout clothes to bed. If I have to change before my morning workout it isn’t going to happen :)
I eat more of what I think I “should” but these are also the things that I want. Eating healthy food gives me the fuel that I need to get through my day and also makes me FEEL AWESOME rather than bloated, weighed down, tired, etc. when putting junk in my mouth. I used to be a tanaholic. I had a problem. lol. Daily tanning=no bueno, especially when you come from a family with a history of melanoma. I am 10 days away from being tanning bed free for a year! :)

I cannot seem to find Citrus flavored Kombucha. It’s my second favorite flavor after Passionberry, I think.
i have never tried or SEEN passionberry! what?! this is crazy. and citrus is my favorite, i hope you find it sooon! props on never ever tanning. that’s awesome.
hmmm, interesting topic. i find myself learning to crave healthier foods very often, but sometimes i want pizza. and ice cream. and not-so-good-for-me foods. and that’s okay, so long as i don’t eat it all day, every day. i’ve also trained myself to like some healthier versions of things, like un-fried chicken parm… but sometimes, i need a boatload of french fries. give and take, right?
definitely! i still make room for the ice cream and the less healthy foods, because let’s face it.. sometimes i want those, too!

I find I crave what I eat. So, I might have to initially make myself eat what I “should”, but after awhile, that’s also what I want to eat.
And, I’m totally with you on the tanning! IMO tanning beds are the equivalent of cigarettes. Pay money for cancer? No thanks. I’m a little vain though, so I’ll definitely hit up the spray tan before an event ;-)
No shame in wanting to look tan! I burn naturally, so spray tanning is where it’s at.
I mostly eat what I want…I try not to eat what I don’t like. I don’t see the point, because I’ll end up having indigestion anyway. That said, I do love “healthy” foods like fruits and vegetables. :-)

I only used a tanning bed before Mexico, my mom bought me minutes for Christmas, otherwise I have never used a tanning bed, and probably won’t again. It was just so that I had a nice base layer because i have never been to mexico before and didnt want to look like a lobster
I haven’t tried spray tanning before though, my mom isn’t too “hip” with all the tanning lingo and what the haps are with that situation, so that is why i got minutes for the tanning bed. lol It’s the thought that counts though right.
that was nice of her–definitely the thought that counts. i find that if i spray tan before a trip.. i don’t burn! i did that before mexico and it worked like a charm.
I will have to try that before my next hot vacay! would definitely save a lot of trips to the tanning salon.
oh man that fish looks so awesome, and I would have never thought to add dijon to my rice, but it totally makes sense now! :-)

I have a very pale (think translucent) coloring and if I spray tan for some reason I turn a weird color. I have found that tanning in a bed is the only way I get a natural color. I know many might not agree with me, but I do not have a problem with tanning. I mean I dont do alot of the things I would like because I am being “heatlhy” so if this is the one thing I do, then so be it! :D
different strokes for different folks! i don’t agree with you but i also don’t judge you! i know a few people who have died from skin cancer and i have VERY fair skin.. so i steer clear.
TOTALLY with you on the tanning beds! Used them as a teenager but LOVE spray tans now.
I usually just eat what I’m craving – and I have been massively craving salmon lately! This looks crazzygood! And dijony rice? FOOD CRUSH.
i went multiple times a month for years! i am glad i know better now. marshall may call me a oompa loompa after one or two bad spray tans.. but that’s better than the alternative.

omg i went to bongo room like a month ago and was BLOWN away…like seriously. i wanted the french toast there, but i got the shrimp benedict instead…it was a great decision, but i wish i had chosen the toast! or pancakes! man i love breakfast.
ps. if you ever need a dog sitter, just call on me! I would be happy to fly out and hang out with your puppies….i need a dog asap. I think I am annoying peter b/c every time i see a dog on the street I “awe” and make a huge commotion lmao….

I used to go to tanning beds all the time in college and looking back, dumb move on my part due to the whole cancer thing. I’ve done spray tanning but wasn’t a huge fan since mine flaked off after a few days, gross.

You got me craving Kombucha like a mad woman.
I used to tan so insanely (naturally, not in a tanning bed, but equally cancerous) that once my cousin was looking for me on the beach and she passed right by me because she thought that I was a black girl. True story.
I was read the riot act by a dermatologist in dental school= she said that I should put sunscreen on every single day- even when it’s raining. I really listened. And I do that to this day. I read an analogy that you’re supposed to pretend you’re a vampire and that any LIGHT (not just direct sunlight, but indirect LIGHT) can kill you.
Do I eat what I really love? Not always. Sometimes it’s a means to an end. Other times I’m smacking my lips in disbelief how something is so wonderful. Not gonna lie: I don’t love Hugh Jasses (unless it’s smothered in huge quantities of avocado and an amazing protein) but I do eat them because they are good for me and they are refreshing. I make them as tasty as I can, but I’d rather be eating a burrito.

Tough question for me to answer. It is much easier for me to make healthier choices when I want to and not because I HAVE to (when competing). Does that even make sense? I guess maybe I am a bit of a rebel. However… I always try to make everything healthier for my family whether it be cookies, cakes, or dinners so that if I have one I can feel like I was bad, but I really wasn’t. I have yet to find a way to make broccoli and fish seem bad… do you think I have issues? I swear I wasn’t always so rebellious. LOLOLOL
Point is, I generally will CHOOSE a healthy item over a non healthy item. There. Gosh.
Tanning… guilty as charged. I steered clear of it for a very long time (almost 2 years) but its free with my gym membership so I have found myself going a couple of times a week. I do love spray tans though. They are just a little too pricey to do once a week. And I feel like I look better when I have some color. That and my husband pointed out to me that I was, and I do quote “THE. WHITEST. HE. HAS. EVER. SEEN. ME” when he came home from a deployment as he turned me to look at me from all sides. Yeah… started back up. Sigh.
I also love that what I want to eat and what I love to eat are one and the same for the most part. It’s so great when your taste palate changes to crave healthy foods!
What a yummy way to spruce up the rice. I love that! Do you think that adding the protein powder to your oatmeal gives it a weird taste/texture? I’ve had bad experiences with it in the past, but I would love to be able to do it.
I have experimented with LOTS of kinds of powder and some are straight up funky. They either get rubbery or curdle up when it hits the oatmeal. I have found that the best is EAS premium protein which is a blend of soy, whey and casein. It is a science for sure!
I’ve never really been a fan of unhealthy foods – my mom used to force me to eat because all I wanted was fruits & vegetables. What I do have to regulate is my macro ratios because given the choice I’d eat nothing but kabocha & watermelon! I know I feel better when I eat protein so I find things I can tolerate (chicken, Greek yogurt, fish). I also have to make sure I eat fats, too. I guess it’s a good problem!
Speaking of faux tans – my palms are so orange from squash – I look like I’ve been applying fake tan! :)

I eat a mixture of what I want and what I think I should eat. Most of the time, those two match up, but not all the time.
I usually eat what I want, but most of the time it’s the same as what I “should”. So it all works out. I also used to tan way too often, but now that I am a bit older and know how dangerous tanning beds are, I won’t use them! I really do miss having a nice tan, plus it was always so relaxing to me. I haven’t used a real tanning bed in several years and I will never use one again.

I’m scarred of tanning beds. I did it once when I was like 16 and I looked like a less slutty version of Snooki. Plus cancer and all that stuff weirds me out. And a bed that is not bouncy is NOT a bed!

I have a tendency to obsess and ONLY eat “healthy” foods; once a food gets on my “bad” list, I tend to ban it despite how much I may love how it tastes; right now I am trying to work on not labeling foods, and therefore, incorporating both healthy and not so healthy- but tasty- foods into my diet.
I’m kind of ashamed to admit I also have a tanning addiction. I know it’s SO bad and want to quit; perhaps I should try the spray tan thing; I’ve only had a few, but I liked how they looked, so I’m not sure why I didn’t do it more.

I’m like you in that what I want to eat is what I should eat. I think our bodies get used to certain types of foods and when we eat something we normally don’t eat, our bodies respond with a huge, “WHAT THE FUCK IS THIS SHIT LADY?!” It’s fun to surprise it every now and then though.
Ohmygosh that salmon looks delicious! I would eat salmon every day of my life if I could. This was definitely a delicious day of food!
I’ve never seen/tried Kombucha, I don’t even know if you can get it in New Zealand, I’ve never seen it in stores. I’m so intrigued to try it!

i eat the healthy foods that i want. i won’t eat a food just because it’s healthy if i don’t like it. bigger question: the tanning. i’ll fully confess…i go once a week because i hate being pale. i also use lancome bronzer on my face. i would love to try a spray tan (new experience!) but the ones i’ve seen are super $$…and yes, i do feel guilt over the tanning bed…obviously, the pros outweigh the cons in my mind!

I tan. In a bed. I like it. Calculated risk. Wrinkles, cancer vs. happiness, good mood. I will take the later and do. Not for everyone, but for me, it’s the right choice. Fake/spray tanning is not for me. At all. The smell, the color, the flake off. nope.

I try to just eat what I want. I find that if I try to restrict I get overwhelmed and hungry so much more than if I just eat what I really am craving. I guess that’s intuitive eating. I’m not really sure, I never really understood that.

i used to eat only what i thought was good for me, but i never realized the importance of portion control with it. now i eat what i want and what i want is good for me, but i do it all with a sense of knowing how much is a good amount!
i used to tan, but not anymore. there’s just something about the fact that it makes you smell weird that freaks me out!
I am so against tanning beds. I would never lay in one. I am a huge fan of spray tans! I used to do the Mystic but I hated it and it smells awful. Now, I’m an airbrush tan girl! I think it comes out so much better and when someone is actually spraying you, the tan is even. I love that! :) I am totally getting spray tanned for my wedding! :)

I used to fake bake to death. And then lay out. I looooove being tan. The summer my boyfriend met me, he’d tease me for looking like “a racial slur.” His words, not mine haha. I just think I look better with a deep tan! I’ve stopped going to beds completely, but I will admit to laying out in the summer. I wear sunscreen, though!
I would love to get a spray tan — I’m also not a fan of the tanning beds and such.
For the most part I eat what I “should” which is also what I want — but sometimes I need to remind myself that there are certain foods that I want but will make my stomach feel horrible (most dairy foods and greasy/oily foods too)

I am the palest of the pale, so I don’t even try to tan. If I got in a tanning bed, I could probably stay for 2 minutes. Not my jam & I kind of like the pale n’ freckly look I’ve got going on!
should vs. want is so tough! i try to eat as much as i “should” as often as i can so that i’m able to treat myself to “wants” every now and then. although, sometimes the two do overlap which is just loverly. :) ugh, tanning beds are SO bad for you!! i’m with you, i did a lot of tanning beds in high school before dances/vacations/what not and now i’m really wishing i hadn’t. i think the spray tan is a great alternative for our pale tails.

umm tanning beds…NO never…well thats a lie–in college I tanned…alot about once a month my friends and I would buy a week pass to the tanning place and go 7 days straight every month. It was about 12 dollars and on our budget it ROCKED, but then I started discovering I was lying down slowly allowing myself to get skin cancer, so I stopped cold turkey and have no re-visited in about 3 years…I do the mystic thing or just buy the tinted lotions but I am much more a fan of healthy skin and living until im very old than dying early from sitting in the tanning bed
1. Yep, what I want is usually what is best for me. I love the way I feel/am fueled by the food that is the best for me; I love eating foods that make me feel my best. Win, win! And I do want chocolate or coconut milk ice cream quite often, but when I save it for occasional treats it is so much better and more special!
2. Thankfully, tanning beds always seemed super unsanitary to me, so I never tried! My complexion gets a little olive-y (italian blood!) when I’m out in the sun. I don’t burn, so I often neglect sunscreen, which is not so good, probably. I do try to eat foods with lots of antioxidants, selenium, lycopene, omega 3 fats, and drink green tea (egcg), which help protect from some sun sensitivity. It’s a good excuse to eat a lot of goji berries in the summer, at least.
I am 100% against tanning beds, always have been. I used them for 2 weeks in college and even that was stupid and I knew better. Since then I’ve discovered skin cancer runs on my mom’s side of the family. Mom and grandmother both had it.
Usually what I want and what I should eat are about the same. But I don’t deprive myself of things I want if they aren’t particularly healthy if they are in moderation.
Your meals look so good! Sometimes I always think that I should spruce up my meals rather then eat the same thing over and over, but sometimes I still always crave oats and protein powder so I always end up eating the same.

I am so anti-tanning it’s ridiculous. I did skin cancer research, however, so I’ve seen a lot of nasty cases, including my 32 year old coworker who developed melanoma & had to undergo surgery to remove it all. Ugly stuff, trust me!
I have learned to like things I ‘should’ not all of them but many. In regard to tanning beds I used to love love them. But after having “suspect” moles removed I stick to self tanner and occassional sunbath
no tanning beds for me. i used to do use them more in college but they’re just so bad i cant do it. spray tanning on the other hand is awesome! i dont do it that much..just before major events like my wedding! the day after i was spray tanned i went to a yoga class and my tan was coming off on the towels! i was sooo scared i was gonna be streaky for my wedding but it was ok :)
Mmmm, I make this recipe all the time, but with chicken! Sometimes I use fig preserves instead of apricot, or I will often also use the combo of maple + stone ground mustard. Sooo easy!
