last night, marshall & i went up to my mom & dad’s to prepare and devour a delicious meal.
i will spare you lots of wordy details and hop (yes, like the easter bunny) straight to the food photos.
the easter dinner menu:
- grilled mahi rubbed with garlic peppercorn seasoning
- asparagus spears
- mixed green salad with raspberry vinaigrette
- baked chipotle sweet potato fries + baked garlic parmesan sweet potato wedges
- deviled eggs
- carrot cake
you all know the story behind the fish. i unwrapped it, covered it in olive oil and rubbed it with garlic peppercorn love.
i turned the fish over to my dad and he grilled it to perfection.
we served it with peach mango salsa (from costco).
momma b was in charge of the salad. it had spinach, yellow and red bell peppers, cucumbers, slivered almonds, dried cranberries and a whole lot of love.
i made the deviled eggs—an easter favorite! i healthied them up a bit this time around. first i peeled the eggs, sliced them in half and put the yolks into a bowl, setting aside the whites.
i mixed the yolks with a small spoonful of low fat mayo, a big spoonful of fat free plain greek yogurt, a squirt of mustard, a heavy shake of mustard powder and some fresh ground salt and pepper.
i filled the whites with the yolk mixture and finished them off with a sprinkle of paprika.
the asparagus is pretty self explanatory.. although marshall and my mom did let it get a little oversteamed. when this happens, marshall and i refer to it as “asparaGOO” because it gets a little slimy and gooey.

my plate..a little of everything.
i need to make deviled eggs more than once a year! this bite (and yes i ate it all in one bite) may have been the highlight of the meal!
while the deviled egg may have been the highlight of the meal, the highlight of the whole day was the dessert. hands down. no doubt about it.

side note.. i just read last year’s easter recap and it was a whole lot of fun. it was also eerily similar to this year. i coincidentally had the SAME breakfast two easters in a row (protein pancakes) and i did an insanity workout last easter, too! even though i wasn’t even doing the insanity challenge—i just randomly did one. weird. and both easters ended with a carrot cake coma. moving on.
we i used this same recipe again. um. yeah. it was just as good this year! if not better.. actually.. no wonder it has a 5 star review! i will be posting a recipe tutorial this week.. but here are a few photos of the carrot cake shenanigans.
it was literally plate-licking good!!
after we had all eaten our fair share of cake, it was a battle to the finish line as we all took more forkfuls straight from the serving dish.
oh man. i love carrot cake.
by the way, i went home with a giant headache. i took an ibuprofen 800 before leaving my mom’s because my head hurt so bad! then i woke up today with a sugar hangover. yes, folks, it’s true.. they are possible. i had never had one until recently (the day after my ice cream social).. and now i am finding if i eat a whole bunch of sugar i feel like absolute garbage right after and the next day.
but that doesn’t mean i am going to stop eating ice cream and carrot cake. i will just have to keep an ibuprofen 800 with me at all times.

I love runny yolks but hate cooked ones. It’s a texture thing, and taste, and smell. They’re just bad all around in my book, but to each their own :-)

Yes — I can eat bowls and bowls of cereal and not feel satisfied at all. And I’ll eat ice cream long after my stomach is ready to explode. It is just so good.
Eating the carrot cake straight from the serving plate — our family would totally do that too. We’d each have a piece and then all stand around and pick at the rest of it.

I completely agree that ice cream and cereal are foods I can always eat more of. Coincidentally, they’re both my go-to snack- especially after dinner.

1. I am never too full for chocolate.
2. I really DON’T like egg yolks and never have! My mom used to make eggs over easy and I’d eat all the white and leave the yolk, so scared to get too close with my fork and it would explode. Needless to say, I never cared for deviled eggs. But to each their own!

Ice Cream is my drug of choice! Sometimes I crave something hot, like a brownie, topped with ice cream (like homestyle vanilla on top, or perhaps a flavor that compliments the brownie or hot cake). I’m drooling.

I do like the yolks. Mostly in egg salad or deviled eggs. Something about mustard that makes yolks even better.

Yolks rock my world. I made deviled eggs yesterday and I kinda want to make more, why dont I make them that often? Oh, maybe because I could eat like 6 eggs in one sitting that way and still be hungry. Add that to my list of foods I could eat if I am full along with chips + salsa. Oh man, rubbing anything in garlic makes me drool. This is why I’m not big on the whole Twilight saga. Too many vampires and I’m a certified garlic whore.
I like yolks but not in hardboiled eggs. yolks are the secret ingredient to REALLY delicious ice cream.

I like crumbling up egg yolks in my salads. It’s weird, but when I mix everything together they add a creamy consistency kind of like avocado.

I used to eat around egg yolks when I was growing up..havent eaten eggs in years and in hard boiled eggs, I used them as golf balls. I chucked them right out the window. Not my thing…haha!

I love egg yolks AND egg whites, but egg yolks are far more flavorful!
As for the other question, the answer is desserts in general. Most of the time I’m already stuffed from dinner but I still need to have a little bit of the sweet stuff afterwards! :]

I can eat a LOT of carrot cake. I can also eat a lot of noodles, like the asian-style ones. And don’t even start me with a tub of coconut milk ice cream… it will be gone before you know it!
Egg yolks > Egg whites. LOVE the yolks- taste and nutrition! They’ve got so many healthy vitamins and minerals its ridiculous :)

I had a serious sugar hangover yesterday since I gave it up for Lent and ate cupcakes for breakfast and lunch on Sunday! I made carrot cake too and ALMOST chose that recipe – will definitely try it next time.
I can always always always eat more chocolate. I’m pretty sure I could just keep eating until I explode.
And I like yolks, but for some reason I just don’t like them runny as much as I used to. Now I’d rather break the yolk a little bit when frying them so they’re still dark yellow, but more solid.
What a deliciously colorful meal! And I love the term asparaGOO…that is the perfect description. I’m going to start using that.
throw a couple spoonfuls of hummus into that deviled egg mix sometime- its DELICIOUS and adds a tad more protein. :)

I love egg yolk’s! One of my go too meals is some brown rice, topped with steamed asparagus with fried egg (runny yolk necessary) over the top. It would not be the same without the yolk!
