YO. glad you guys liked my wordless wednesday post! it was pretty fun to document the whole day in photos.. plus it made for a super cinchy blog post.. so you may see that more often.
i did have quite a few questions pop up in the comments of the wordless post, so i will answer those in between showing you today’s meals. good plan? let’s go.
marshall & i woke up at 6 AM to do day five of insanity. today’s workout was called “pure cardio” and i liked it the best of all the workouts we have done so far. if you care to follow along in my insanity journey, feel free to click over to my journal-style insanity page. it’s insane.
question: is that a tattoo of randy on marshall’s arm?

yes. yes it is. and it is probably the only tattoo on marshall that i really like. i am not a tattoo person.. but i LOVE his randy tattoo. he doesn’t have one of penny yet.. but her head is so small that when he does decide to get one of her, she won’t take up much space.
breakfast: 4 egg whites + sprinkle of cheese & cinnamon raisin bagel thin + 1 TB mighty maple PB + half a banana.

360 calories, 28g protein, 45g carbs, 11g fat, 7g fiber
a little sprinkle of cheese goes a long way.. this was only about a tablespoon.
i am becoming slightly obsessed with toasted bagel thins. i don’t think that’s a bad thing.
it must have been a rough morning because when i went to the bathroom at work i noticed something in the mirror..
excuse the awkwardness. i had to stand on my tip-toes to be tall enough for the mirror. yeah.. being short is my specialty.
um, my shirt is on inside-out. see the buttons? oh wait, no, you don’t.. they are on the inside of my shirt. oops.
all better. i am challenged.
question: what are those cute tiles with owls on them? okay so that wasn’t the actual question.. but a lot of people mentioned them.
these are actually coasters and a trivet! amanda had them custom made and sent to me. isn’t that SO sweet?!
question: speaking of kitchen items branded with “meals & moves”, where’s my spoon? ![]()
let me explain.. that question is from eden and awhile back she sent me this AWESOME owl meals & moves spoon.

lunch: leftover taco soup.

after lunch i had to run some work errands. i was SERIOUSLY dragging, it was raining and i was FUHREEZING.. and so i stopped at starbucks.
i hate their drip coffee but i had a gift card and so i got an americano with a touch of soy milk. i hope i don’t need an afternoon pick-me-up all the time…
…but i might. these morning workouts are serious business!
question: what does the tattoo on your wrist say?
i know, i just said i wasn’t a tattoo person. and i’m not. i don’t love tattoos. they are fine for other people but i just think they are silly—especially when they are of something that means NOTHING. but when my lab mable died suddenly (struck by a car after my ex boyfriend stole her from my house and i hadn’t seen her for 3 months) i was compelled to get a tattoo of her name. sooo, that’s my tattoo. my friend owns a tattoo shop and did it for free. he’s the nicest. oh and he has a blog, nickphillipstattoos.com.

no. i am from bountiful. but my yoga studio is in sandy! it is about 30 minutes from my house.
today is my FIL’s birthday! we went to sugarhouse barbecue to celebrate.
dinner: chicken breast + indian spiced chickpeas with cauliflower + collard greens that i didn’t eat.
barbecue joints don’t have much in terms of vegetables.. but there was a live band!

and finally.. the question that i got most from yesterday’s photos: WHAT IS THAT PROTEIN MUFFIN RECIPE?
these babies are so good that we’ve gone through two batches since monday night. and yes, there are only two of us living at my house.. no, the dogs have not eaten any muffins. these have been consumed by marshall and myself at a very rapid rate. with stats like these, you can’t feel bad about eating them:
without further ado.. the recipe.
lemon yogurt chiaseed protein muffins.
makes twelve muffins
ingredients:
dry:
- 1 cup whole wheat pastry flour
- 1/2 cup almond meal
- 1/2 cup vanilla protein powder (i used EAS vanilla premium protein)
- 1 T baking powder
- 1 t baking soda
- 1/4 t sea salt
- 2 T chia seeds
wet:
- 3/4 cup plain, nonfat greek yogurt
- 6 oz (one container) lemon chobani yogurt
- 1/4 cup xagave (or alternate sweetener of choice)
- 3 egg whites, beaten
- 2 T unsweetened applesauce
- 2 T fresh lemon juice
- zest of one lemon
- 1 t lemon extract (OPTIONAL—i used it the second time but not the first)
- 1-2 T almond milk, if needed (to make the batter come together)
glaze:
- 1-2 t powdered sugar
- fresh lemon juice as needed
directions:
in one bowl, combine all dry ingredients except the chia seeds.
in another bowl, combine all wet ingredients except the milk.
add the wet to the dry and mix well. add milk if needed. batter should be thick but not dry.
fold in chia seeds.
distribute evenly into 12 muffin cups—i used silicon, but if you don’t have silicon baking cups, make sure you line your tin with paper cups or cooking spray because these bad boys will stick!
bake at 375 degrees for about 20 minutes—until a toothpick comes out clean.
(these have already been glazed)
if you want (and you should!) you can glaze the muffins with a simple mixture of lemon juice and powdered sugar. they don’t need a lot of glaze and it really adds a nice, lemony sweetness.
these muffins don’t taste a bit healthy. not a BIT.
i think marshall ate four the first night i made them. they are SO good. they are light and fluffy and flavorful.

the only thing i don’t understand is why they don’t come to a crown/point and they have flat tops? i messed around with the baking soda and baking powder amounts and nothing seemed to change the tops of the muffins. anyone know how to remedy this?
it doesn’t really matter if they aren’t the prettiest. they will be gone before you can even have time to criticize their appearance! and you can bet that i had a muffin for dessert…

Oh, so I’m not the only one who wears things inside out? I may or may not have put on underwear on inside out before. At least that’s a little less noticeable!
I don’t have any tattoos and I wouldn’t get any for personal reasons. But my husband has one on his back from when he served time for the army in Afghanistan and I DO like the tattoo of Randy. The artist did a good job– the likeness is definitely there!
Favorite muffin is zucchini or almond poppy seed. But I’m snaggin that lemon yogurt chiaseed protein muffin recipe. Looks great!
Yup, have one tattoo on my thumb. I kind of feel the same way about tattoo’s. I think they are beautiful if they are done well.

My favorite muffins would have to be anything involving bran and chunks of stuff! There is an amazing deli right next to campus that sells HUUUGE bran & fruit muffins; I’m a fan.

I LOVE the Randy tattoo- so cute :). And all of your meals & miles goodies (the coasters and the spoon) are awesome. I have embroidered towels that my MIL gave me and they are some of my favorite things. I want a sign or something next for the kitchen. mmmm taco soup (I felt the need to say that again). Thank you for sharing the muffin recipe. My favorite kind of muffin? Probably my vegan pumpkin chocolate chocolate chip muffins (although I made a banging vegan plain chocolate chocolate chip today that I’m sharing soon). Neither Josh nor I have tattoos…but Frank has one :)

I do have one tattoo. It’s a rosary on my foot going up around my ankle. I want to get another one either Mickey Mouse’s (but more like a hidden mickey you’d see at one of the parks) or Mickey Mouse Club ears with Dad in stitch lettering. Either one would be in honor of my dad who passed away at the end of ’09.
I have 6 tattoo’s but really wish I waited until I was older to get them! And I am not prejudice when it comes to muffins .. TOPS. I only eat the tops of muffins. Love em all especially blueberry!
I love blueberry muffins. I don’t have any tattoos, in part because I hate needles but also there’s nothing significant that I want on my body forever. That being said, my boyfriend has tattoos and I’m indifferent to them on other people.

my fave muffin is choco chip. for your recipe above, i was thinking of taking out all things lemon and subbing in choco chips…and a glaze on top, like you suggest.
i do love creative, unique, well-placed tattoos. i have two: a cardinal on my upper thigh, and a boston marathon-themed tat above my left ankle. want two more, just a matter of when. then i’ll stop. i see tattoos as forms of artistic expression. there are some really interesting ones out there!

I think with tattoos it depends what it is, what its meaning is, and where it is for me to find it attractive. I kind of have a thing for forearm tats. On chefs with their sleeves rolled up.

I don’t have any tattoos. I personally don’t really mind them too much. Some tattoos can be sexy depending on what they are and where they are.
I love Marshall’s Randy tattoo! haha. I love tattoos, I am definitely a tattoo girl. I have four (and counting)… my husband only has one but he wants to get more, I definitely approve. But I think it’s a big personal decision and I would never get one I wasn’t 100% sure about!
As for muffins… I love coffee cake/cinnamon muffins. Mmmm :)

Im not big into muffins (weird I know!) but I do really like tattoos (in moderation of course…I dont care for a slew of them on on person). I wouldn’t be opposed to getting a small one, but I wouldnt do it unless I thought of something very meaningful.
The only thing I can think of for why your muffins stayed flat was the use of protein powder. That stuff is pretty dense and when I bake with things I find that usually things don’t rise as much. I don’t know…but like you said who really cares…they look amazing and I am making them this weekend. :)

I used to want a tattoo really bad, but seeing the ones my sisters have gotten (and later regretted) I just haven’t gotten around to it. I wanted to get a bunch of holly leaves and have them on my forearm near my elbow.

Yum, those muffins look so moist! I love dessert muffins more than anything; think chocolate chip, butterscotch, etc. And the muffin top is the best part! They do sell pans so that you can make only the muffin tops but I’ve never bought into it. I don’t think they would be the same. (I’ve now said muffin five times in one comment. I think that’s enough :-))
I’m not a big tattoo person. Like you said, they’re fine on other people but I’ve never felt strongly enough about something to put it on my body permenantly. I’m also afraid of what it might look like when I’m older. A wrinkly tattoo isn’t very appealing, haha.
I like tattoos, if they mean something. My left wrist says “true friendship” and my best friends right wrist says “never ends”. We got them when we were 17 (I’m now 30). I feel kind of silly when people ask what they mean because they were cool when we first got them. Now, I work in HR and I get looks when I explain the meaning. It’s still special to me though. :)
I love those trivets and the wooden spoon. So cool! I can’t wait to try the protein muffin recipe. Baked goods don’t stand a chance of surviving long at my house either.

I don’t have a tattoo. I’m very indecisive and would never be able to pick something.
My fiancé got one last summer. He is not a tattoo person either. He almost passed out 1/2 in and had to drink a juice box to bring the color back to his face. He was able to make it threw, and the tat came out great.
I totally agree that tattoos should mean something or else you may end up regretting them down the line! I’m certain you’ll never regret your Mable tattoo. :)
OMG I love muffins…right now I would pretty much eat anything you put in front of me! I love banana walnut muffins OR Cranberry orange muffins…lemon muffins sound so delicious though!
I do not have tattoos…I totally respect tattoos and acutally find them really cool…but in the jewish religion we aren;t supposed to have any sort of ‘body art’ so I personally would never get one…that one of randy is SO amazing!
Tattoos: Two. I probably would have gotten more if I hadn’t met Dustin and become a not-crazy person. Even though they are hallmarks of bad decisions, I don’t hate ’em now. They remind me of how much I’ve changed.

I love love love lemon poppyseed muffins, but haven`t had one in a long time! I also like any kind of pumpkin muffin..
As for tattoos, I have three. I see the body as a walking scrapbook, so why not? My first one on my lower back was because my best friend wanted to get one with me before I moved, so it was slightly spontaneous. But I always had this obsession with stars, and it was small, so it worked. My second one is a dragon (who gets mistaken for a flower? I don`t get it) on my hip was half because he looked awesome, and because dragons stand for strength and courage. My third (and most recent) is my family tattoo. It is a scotch thistle with the saying `Avise La Fin` around it. It stands for `Consider The End`which is kind of depressing, but I take it as kick arse and take names.. :)

1) I am not a huge muffin person, but if I had to pick one it would be the oat bran muffin from the cafe my family used to go to when I was growing up. They made them fresh every morning and had this ooey gooey cinnimony (I am a bad speller lol) topping with raisins… and I used to hate raisins. Cover anything in sugar saucey stuff and it tastes good, right ?
2) I have two small ones and probably would not get another… Not bc I don’t like them, but bc I’m just not sure what I would get and I wouldn’t want a third one that means nothing. Some people can really rock tats and I think they look attractive and then others… not so much. Totally depends on the person. I think it just depends, but I am not a fan of huge meaningless ones though.

2. I have quite a few tattoos, some big ones across my back and another big one around my leg and then some smaller ones here and there. I like my tattoos. Everything, from the process of getting each one to what each one represents, is special to me. And, my body does not look like anyone else’s! This is a strangely satisfying notion that I never really anticipated before getting tattooed. Like, when I’m trying on swimsuits, I’m not thinking I wish I had more curves here, or that my butt looked better, I’m just thinking yep, this is me! (Does that make any sense? :) )
Must find lemon Chobani! I swear, my local grocery stores are part of a giant conspiracy to keep all new Chobani flavors out of my hands and mouth!
I’m definitely not a tattoo person, mostly because I can barely make any decision in the first place, let alone one that will stay on my body for life. My sister on the other hand has a bunch, one of which is a giant tripped-out, cartoon-y mushroom she got when she was 17. Yeah, she totally regrets that one.
I like poppy seed muffins so much…but not LEMON poppy seed. Just poppy seed.
And I generally like tattoos – I have a few. All covered up – but I love them. They all have a special memory or meaning behind them. :-)
