hey everyone! wow, i really love the feedback that my last post generated. THANK YOU for all your input!!! seriously! it sounds like a lot of you are in the same boat as me.  i am sometimes skeptical about posting things like that, but in the end, it is always a good idea. i feel a lot better just putting it all out there. good talk.

i was so tired today. it may or may not have something to do with the fact that i stayed up til midnight last night watching iron chef: battle prosciutto until midnight.  what can i say? i am a sucker for chef michael symon. with that said, the creative juices just aren’t flowing for tonight’s post.  SO.. i am going to quickly breeze through the meals & moves and call it a night because i have a husband and two pups to hang out with.

breakfast: mixed fruit + egg white scramble with mushrooms, onions & spinach (plus salsa) + coffee @ 8 AM.

~270 calories, 25g protein, 46g carbs, 2g fat

you know the drill.. i go to breakfast at the original pancake house every monday for a work meeting. it gets old.

lunch: lots of steamed broccoli + 1/2 cup diced chicken breast + 1/2 cup cottage cheese + a few leftover noodles & sauce (from dinner last night) @ 12 PM.

glamorous lunch atmosphere, i know. the good news is i hit a half gallon of water consumption by lunchtime. go me.

~275 calories, 35g protein, 25g carbs, 4g fat

you know what is crazy? if you drink enough water you aren’t as hungry. okay, that’s not crazy. that’s nothing new. but i hadn’t been drinking enough water and i was always ravenous by the time i got off work.  well, i drank enough water today and by the time 4 PM rolled around, i wasn’t even a little bit hungry! so.. i took an hour and whitened my teeth before having my pre-workout snack.

snack: pineapple chobani + 3/4 cup kashi puffs @ 5 PM.

with the cereal: 215 calories, 15g protein, 32g carbs, 3g fat

i usually only eat plain greek yogurt, but every once in awhile i have to have a pineapple or a mango—these flavors are so dang good and i love the 2% fat. extra creamy. i added the kashi after the photo for added texture and crunch.

i headed up to my mom’s house for my workout. she had some ultrasound something or other done to her heart today and i wanted to check up on her. she was safe and sound in her bed when i got there.. the testing made her really sleepy because they had to knock her out and shove some tube down her throat. pleasant, right? anyway.. just want to thank everyone for the continuing thoughts and prayers for momma b. we definitely feel the love and we will let you know when we hear more about what’s going on!

i decided to get some weight lifting in and did a body for life style lower body workout. here are the deets, for those who are interested.. the rest column is what i did between sets (ab work).

dinner: feta + sun dried tomato stuffed chicken & fingerling potatoes & asparagus @ 8 PM.

~425 calories, 40g protein, 40g carbs, 8g fat

i stuffed the chicken with fat free feta and julienned sun dried tomatoes (packed in oil) and then seasoned the outside with salt, pepper and TJ’s 21 seasoning salute. i seared the chicken on each side for a couple minutes before baking it at 350 degrees for about 25 minutes.

for the potatoes, i simply seasoned them with salt & pepper and roasted them for about 35 minutes at 425 degrees. i topped them with a couple tablespoons of greek yogurt after the photo.

this dinner was soo delicious. and soo healthy. i sure am glad i know how to cook, otherwise this healthy eating thing would be a bore.

marshall and i had a pushup competition just now. i had to take a break from typing this post so i could compete. FYI.

pretty sure i will have greek yogurt & a vitatop as soon as the jazz game is over.. there are only a few seconds left and we are one point ahead! EEK! nail biter!

sorry for the “just the facts” boring post.. sometimes ya gotta!

Poor Mama B! A tube down the throat doesn’t sound pleasant at all but anything works if it gets her better, right?

I haven’t been drinking as much water as I usually do and today finally got back to normal. And you know what, not as hungry as I have been the past few weeks. Funny how something like water intake can have such a huge impact on your hunger.I made stuffed chicken this week with feta cheese but have never kicked it up a notch with sun dried tomatoes, I must try that sometime–thanks!

Favorite chef? One word: Rocco. Second word: Raaaaaawr!

So weird, I had a VERY similar dinner! Asparagus, sweet potato, and chicken breasts stuffed with goat cheese, roasted red peppers and asparagus. Love your purple potatoes, colors in food make is so much more fun!

Everytime I see you make stuffed chicken breasts, I want to try it! I am intimidated.

PS. I make Ben & Jerrys vanilla bean ice cream using the cookbook and it’s been super tough not to down the entire batch I made. I cut back on the fat using half & half instead of whipping cream and non fat milk and it’s still so good!

I love corn dogs. I know they are horrible, yet, what is good for you on a stick? :)

As far as favorite chefs on TV, I love Giada DeLaurentis probably because I’m 1/2 Italian and love Italian food! But the chefs I most admire would be Alice Waters and the immortal Juila Child.

I think that stuffed chicken will be incorporated into my meals rotation! So easy and it has all of my favourite flavours. I have a hard time eating meat [for various reasons] so anything that gets me to put it into my diet is good!
oh and I also love Michael Symon. awww. I don’t blame you for staying up late. ;)
as for food-on-a-stick… well, I’m from Minnesota and at the state fair they put everything on sticks. It’s so strange! I’m fond of the giant plain dill pickles on a stick. Easier to eat that way, at least!

Blogging works wonder, doesn’t it? I felt like crap before, and after blogging I felt tons better. It’s therapeutic.
I’m glad your mom is getting a good rest. I hope to hear good news soon! We all need some good news right now…and somehow I know she’ll be fine! :-)

Answers: My favorite thing to eat on a stick is popsicles and my favorite celebrity chef is Jamie Oliver or Dave Lieberman. What I can say, I like a good looking man that can cook! ;)

Glad to hear your Mom is doing well. I’m sure all of the testing is completely exhausting. I love your bfast out once a week :) Mandi & I go out once a week to a working breakfast and we almost always go to the same place (which I know you can guess what it is) and we love it. Dinner looks just perfect. Stuffed chicken is so fancy ;). And now I want fingerling potatoes. I’m not sure what my favorite food on a stick is?? I might be boring and say Popsicles.

Caramel apples, but only if they have chocolate AND caramel. And candy. And sprinkles. So basically, lots of junk surrounding an apple on a stick. There’s a stand at the Washington Square Park street fair on Sundays that sells chocolate-covered pineapple with sprinkles on a stick too. Soo good!

I am addicted to the food channel. It’s hard to say who my favorite chef is. I’d probably have to say Paula Deen or Rachael Ray. I’m a little partial to Paula Deen because last summer I was lucky enough to eat at her restaurant in Savannah. That was some of the best food I’d ever eaten! However, there are others that I love to watch, as well.
I could only think of three things to eat on a stick…..lollipops, corn dogs and caramel apples. Out of those three I’d have to pick caramel apples. I’m not too fond of corn dogs and I can’t remember the last time I ate a lollipop.
The meals you make are always amazing. I really want to try that chicken pot pie you made. Thanks for always sharing your great recipes.

Just read your last post. I’m so glad you posted that! I’m down with the honesty and I’ve been feeling SO many of those same thoughts lately so that was super helpful. I feel inspired to clean up MY act already. You’re the best!

You’re also the best cook. Your meals are always impressive, holy wow. Maybe you should teach cooking lessons. I pretty much need that stuffed chicken. Like now.

I love Chef Michael Symon! But, I also LOVE Curtis Stone. :) He was on Iron Chef once too…Oh, and I like Alex Guarneschelli (or however the crap you spell her name).

I noticed you got the new pack of contigos from costco too! That green one in the picture happens to be my very favorite of them all. So far. I begged my husband for weeks to let me buy the new water bottles. ha ha ha.

Food on a stick: strawberries and marshmallows and cinnamon bears kabob style. On a stick because after being skewered, they head for the chocolate fountain. :)

I mean… I never eat any of those things. ever.

i love your posts where you totally break down what you’re eating, how you cooked/prepared it, and then how many grams of each thing are in it. (you did that in yesterday’s post. i know it’s a lot of work for you but i do love it and it is really helpful.) i have never counted any of those things. never knew how many grams i was supposed to be getting of protein, fiber, etc. i loathe the thought of counting calories and don’t care one bit about that, just try to eat a variety of healthy things. but i really am a carb lover and could go without meat. i love how you really motivate me with the pumping up the protein. i have made great progress! and even though you think some things are common sense, like giving a description of something you assume everyone will already know, there is always going to be someone out there (probably me!) who has no idea what you’re talking about it’s new to me so i love the explanations. there’s nothing dumb about it! lastly, i ate my grapefruit like an orange the other day!!! i’m never going back to cutting it! duh! i have ALWAYS done that and it’s 1. annoying and 2. wastes so much fruit!! thanks for the tip! i was a cutter but now i’m a peeler! :) have a great day!

I have to agree when things get a little out of whack come back to our BFL roots and it all starts to feel SO much better!
