friends! i finally managed to get the dogs off of me and opened up my laptop.. all because i wanted to show you last night’s home cooked extravaganza.

i told you guys that i was going to try my hand at scratch-made calzones.. using yeast.. and i don’t do yeast. yeast and i had a bad experience awhile back and i haven’t tried to reconcile our relationship. until last night.

my sister, marisa, made some white pizza dough using a recipe from the back of the pizza yeast packet.

i used biz’s recipe for no-rise pizza dough and made some whole wheat dough with my food processor.

  • 2 cups + 3/4 cup whole wheat flour
  • 1 tsp salt
  • 1 packet dry yeast
  • 1 cup warm water
  • 1 TB olive oil

i was so surprised how simple it was to make the dough! i may become a yeast user just yet. after preparing the dough, we got all the ingredients for the inside of the calzones ready.

once all the ingredients were prepped, my sister in law, lindsay, took all the orders.

it was fun because everyone was able to create their own custom calzones and i was the short order chef.

because my hands were covered in flour, the whole calzone making process didn’t end up getting caught on film! but i will tell you how to do it. first, i took a clump of dough and rolled it in a bit of flour before rolling it out with a rolling pin into a circle about 7” in diameter.

next, i prepared each and every custom order calzone with love. i combined the requested ingredients in a small bowl with the requested sauce and mixed well. then i placed the filling on one half of the circle of dough and used a calzone press to clamp the dough together. you don’t need a calzone pres—you could simply crimp the edges with a fork– but it definitely made for better looking calzones.

lindsay used a brush to cover each calzone with an egg white wash (for a crisper crust) and all calzones went on a baking sheet that had been sprayed with olive oil. the pizza was for my niece, she couldn’t get into the whole calzone thing.

the calzones baked for about 15-17 minutes in a 400 degree oven. it is best to use the bottom rack of your oven so the underside of the calzones gets nice and crisp.

i had two calzones: one with the pesto sauce and one with the tomato pizza sauce.. both in whole wheat crust with all the fillings—even all 3 cheeses.

the crust was perfectly crisp! i am so proud of my yeast success. the filling was pretty amazing, too.

i am just going to go ahead and toot my own horn, because everyone loved these. marshall told me i can go ahead and put them into regular dinner rotation.

the wonderful katie sent us these personalized ice cream bowls a couple weeks ago—such a nice surprise! i love them. and i really love how BIG they are!! thanks, katie!

once the ice cream was done churning, i transferred it into ametal bowl and threw it into the freezer so it could firm up a bit. when it was nice and ready, we pulled the bowl out and gave the WHOLE bowl to izzy.

haha. in her dreams. two quarts of ice cream was probably a little much for an almost five-year-old.. but it was the perfect amount for the whole fam to have some.

I was waiting to see how you would keep all the orders straight after the calzones were sealed – carve initials into the dough, numbers??? Okaye, how’d you do it? They looked great!

I would go with marinara, roasted bell pepper, sun dried tomatoes, basil, caramelized onions, mushrooms, and mozzarella! :) I love Scrabble!

Well Christine I (momma b) was the official “keep the calzones straight” person – glad janetha gave me a challenging chore! Just a piece of paper, pen and a delightful diagram kept things in the right order.

These were SPECTACULAR! so flavorful, just the right crunch on the outside and a burst of flavor from the filling, boy can this girl cook!!

The ice cream – oh the ice cream AND toppings…..I managed to have a fair bit of chocolate topping syrup with mine and it was sooo good!

Oo and if you haven’t been to Costco in a while, mine was carrying a new hummus by Fountain of Health. It was caramelized onion hummus. BEYOND AWESOME.

Trust me I have! It is the very best hummus I have ever had. Just about every flavor they have is great. Fountain of Health Hummus is the top of the line. I like their Roasted Red Pepper hummus. Yummm..

Dang, I can’t remember the last time I had a calzone! I love ultra veggie-loaded ones – broccoli, spinach, shrooms, olives…yum! And rummikub is such a great board game, but taboo and battle of the sexes are my fave games of all time!

I love this post. It sounds like an absolutely perfect evening with the family. To-order calzones is a great idea for a big group! I’d definitely go Greek with the calzone. Chunky seasoned veggies with oodles of feta, chicken and spinach :)

I am so nervous to try yeast, but this seems easy and like something my boyfriend would love! His could have chicken, cheese, and pasta sauce while mine would have black beans, spinach, and pesto!

I loooooovvvveee Rummikub!!! We play it every night with my little bro (he’s a freshman at BYU) :) And my “toppings” in a calzone would be pizza sauce, spinach, chicken, artichokes, and lots of strong-flavored cheeses. Plus extra oregano and basil….mmmmmm. Nice work, lady- they look rockin’!!

Your calzones look delicious! I suppose mine would include tomatoes, olives, onions, mushrooms and peppers with lots of cheese. My boyfriend is a board game fanatic – we have soo many complicated ones, but I have to say my favorites are the classic simple types like scrabble, monopoly…and I like apples to apples. Glad you are enjoying time with your family!

That first picture of me is way too close… it shows my wrinkles! (But my eyes are open!) It was so much fun to be home and get to enjoy some of your specialty cooking. You really should open “Janetha’s Place!” And you did not “let” me win… I won fair and square. ;) Miss you already!

What a fun night! Great job with the calzones – toot that horn all you want – you’re awesome!
My fave calzone fillings: sauce, mushrooms, peppers, onions, cheese, and maybe some artichoke hearts too, now that you’ve got me thinking about ’em.
And where did you get the recipe for that Vanilla ice cream? I’ve been wanting to use my ice cream maker but have been too lazy to look up recipes :)

Sounds like such a fun night! I love making calzones, but sometimes my dough comes out weird. I’m still a yeast newbie!
Rummikub is so much fun. My grandma has crazy competitions with all of her friends and the loser has to buy lunch for the other women. It’s so funny! :]

Wow do those ever look good. I’ve always wanted to try my hand at calzones. I’d load mine with lots of sauce, shrooms, spinach, peppers, sun dried tomatoes, mozza, feta and maybe even some goat cheese.
