happy shrove tuesday! i had to google what that actually meant. all i knew for sure is that it is a reason to eat a lot of pancakes. that makes it an awesome holiday.
today was a typical tuesday. i am going to tell you all about it, because it’s been awhile since you’ve seen my WHOLE day. and some of you like that. i am here to please, people.
i have been waking up early so i can enjoy a nice breakfast at home and i am loving my ability to actually wake up to accommodate this routine. maybe one day i will actually be able to wake up early enough to work out in the morning. don’t place your bets just yet, folks, i am not quite there.
this morning’s breakfast was monochromatic. but tasty. my owl made up for the lack of color.. it’s just so fun to eat off.
2 egg whites + 1 whole egg [scrambled] & 2 slices of spelt toast + organic PB + sliced banana.
i loved the sweet and savory going on here. i couldn’t decide between the two, so i did both. i ate all the eggs first and then ate the toast.
<insert a bunch of work here..it was a busy day!>
i had leftovers for lunch.. as usual. i have been a bad blogger and have been eating out of the tupperware every single day. it’s good for saving dishes, bad for food photography. so, instead of showing you leftovers, i will show you the initial dish i ate last night!
black bean tofu + snap peas + broccoli + brown basmati rice.
yes, i eventually got off the couch yesterday and made dinner. it was all for marshall’s sake. i would have been happy eating cereal for dinner, but he wanted “a real dinner”. hmph!
this was delicious and i will be making it again. maybe i will actually document the process and tell you guys how to make it sometime. but not this time.. i was too lazy last night.
SNACK!
braeburns are real good right now. the question is: are they ever NOT good? i love braeburn apples.
i also inhaled 1/2 cup greek yogurt + 1/4 cup love crunch granola upon walking in the door from work. no photo, it was gone in a snap. i love apples, but they aren’t so filling.
i didn’t work out yesterday. truth be told, my tendonitis is coming back in my ankles. running on sunday really did a number on them because i got up to 10 MPH and my feet thumping on the treadmill hurt real bad. guess it’s time for new running shoes. i wanted to run today but played it safe and did the elliptical. i don’t like it, but it’s low impact and my motto in my older age is “better safe than sorry”.
speaking of my old age motto, here’s a fun fact! yesterday marked four years since i broke my humerus snowboarding!
my old motto was “go big or go home” and i chucked myself off a 65 foot jump, only to overshoot the landing and end up in the ER. i went big.. and then i went home.. after a pit stop and 8 day stay at the hospital. now i am better safe than sorry. and i am a robot. and i am OK with that.
anyway, my workout was 30 minutes of intervals on the elliptical:

steak + roasted fingerling potatoes + steamed cauliflower & broccoli.
sometimes the simplest meals taste the best. i seasoned the steaks and cooked them in my panini press (multifunctional, folks!). i tossed the potatoes in a bit of olive oil and seasoning, then roasted them at 425 degrees for about 40 minutes. i steamed the veggies. dinner was served, as my mom would say, lickety split! whatever that means.
i picked a bag of these potatoes up at costco. i love everything about fingerling potatoes! it’s fun to say “fingerling”, they are fun to eat and, best yet, there were PURPLE ones in the bag!
so pretty.
after dinner, my dad came over and helped us hang our new pot rack.
I LOVE IT!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
and now i want dessert.
since i am way behind, how about i answer #9 of the 30 day never ending challenge?

things i want to see in my future:
- 2 kids
- some sort of degree in nutrition
- a two level house with:
- a big kitchen with an island
- a living room that hooks right onto the kitchen with no walls separating the rooms
- a basement with a green bay packers man cave so the cheese head doesn’t have to be on the mantle
- a lucrative blogging career so i don’t have to work full time at an office
- lots of trips to various parts of the world
- more dogs
- my own coffee shop slash doggie daycare
- cereal and ice cream
is that too much to ask?

O yea I’ve stayed in the hospital! I had an almost IDENTICAL injury! I think I was there for about three days.
I wish I was doing something cool like snowboarding (or at least fighting off some ninja or saving a baby). I was in a car accident. I hit a telephone pole head on. I have five screws in my bone. I’m pretty sure I beep in those security check points! Sometimes I dont but sometimes I do, its weird. anyhow…..we’ll have our little doggie/daycare cafe as bonafide blog celebs in no time!
i’m a pretty cautious skier these days after 6+ weeks on crutches last year, so i hear ya on toning it down on the slopes. so not worth it. that sounds like a miserable injury. ugh!
congrats on the new pot rack! i feel like it adds a sophistication/ super homey feel to any kitchen. i dig.
my only hospital stay occurred by accident after a really bad experience out. let’s leave it at that. but i did get out after only a few hours, and was pretty okay 24 hours later. woo? and as for my future, i see myself writing, and hopefully making enough money to pay my rent and have a little fun too. the two are not certainly connected, but so long as i’m doing both i’ll be pretty pleased :)
I love your cyborg arm. :) One thing I see in my future is a successful massage therapy practice (and if the blog ends up doing well, I wouldn’t mind that either ;) ).

You can totally wake up and work out in the morning. Just do it. If you tell yourself you can’t, well then you can’t. Just do it girl. Think of all the free time you’ll have after work to focus on other things :)

I was in the hospital last year for a week with my ulercative colitis. It was AWFUL!
Ive been in the hospital for a elbow injury. I’ve broken it twice. Nice, eh? And I am pretty sure my future looks like yours. Except, I want twins and I would love a flower shop with a cafe/bakery. Can it go next door to your doggie daycare?

I have been in the hospital…actually many times! Boo! But the worst was when I was 13 years old and was in and out of the hospital for 3 months! I had meningitis…it was scary scary. Fourtunately I was too young to actually realize how sick I really was. Also thankfully it was bacterial and not viral so I was able to have IV antibotics. But it was a long road and I spent many many weeks in Austin Children’s hospital.
Fun fact: Jason actually uses Secret deodorant. It really is strong enough for a man! I’m sure he’d love that I’m telling you this.
Um, I kind of want all the same things that you do. Fortunately, I’ve never been in the hospital. And maybe a baby in the future? But not yet!

i had purple potatoes yesterday! they were so good.
i’ve only stayed overnight in a hospital once, and it was for some serious stomach pains, they made me drink some nasty stuff that numbed my whole tongue, mouth and throat, and i was freaking out because it felt like i couldn’t swallow. then they wouldn’t release me even when i was better. it was brutal!
in my future i see a successful career, getting married one day and having a couple kids, and buying a house.

I once had to go to the hospital for severe stomach pains that wouldn’t go away for two days straight. I couldn’t even sleep because lying down was too excruciating. I had to sleep sitting up in a hunched over position. It was weird. They never figured out what was wrong. Pretty sure that’s the only thing I’ve ever personally been there for though so I’ll take it. I can’t imagine going through your visits…yikes.

I’ve NEVER stayed in a hospital overnight. Lucky me, I guess.
One thing I want to see in my future is definitely kids – maybe 2…or 3….or 5 :D.
I can’t believe you had to wait so long for surgery! I seriously lucked out with mine. I had my accident on a Friday afternoon, and the surgeon (who happens to specialize in elbows) was on call Saturday morning. Because my bones were in pieces they had to operate right away though because they weren’t attached to my blood supply. The longer they waited, the less likely they would have been able to save them.

okay first i have never seen purple potatoes! that’s amazing!
secondly, and sorry, but men being handy is a total turn on!! my dh can’t change a lightbulb (no seriously) this is about as much as i get but i’ll take it: my husband topped off my windshield wiper fluid and i was like oh, yeah, baby! and he was like, “i didn’t know wiper fluid could do that to you!” ha ha like i said, take what you can get!

One thing about your future that I was overjoyed to see was a choice for a degree. How many times have we gone through the list finding classes/degree ideas?!? (And I’m pretty sure I brought nutrition up in there somewhere, didn’t I?) Also, I laughed about getting the cheesehead off the mantle. It could be worse… Eric’s boss hunts and has huge moose and elk heads all around his house! Finally, hospital stays. Hmmm. For me, only babies. For Lucy and Sofi… too much time. :( For Eric, even more… 6 weeks! Bleh. After all of that experience, I could never be a nurse, but I love those that can do it.

I stayed in the hospital when I was born…but that’s it! In my future: kiddos, our own business, a fabulous house with a swimming pool, volunteering on various continents, blissful family life :)
When I was 11, I was in a bicycle accident. I flipped over my handle bars going down a steep hill. My head hit the concrete and I was knocked out for a day or so. I woke up in the hospital. It was pretty scary. I stayed in the hospital for a week. Glad we both made it through our accidents relatively unharmed.
Yay for the new pot rack – looks great! I love your future goals! I want 1 or 2 kids fo sho. Hospital stay? thankfully none that long – just 2 days for sinus surgery back in 1999!

I am in love with your hanging pot rack. I just bought my first set of pots ‘n pans with help from Danica and I so wish I could hang them ?! Since I have a small kitch, I used cardboard (classy) between them for now so they don’t get all scratched up. My kingdom for a hanging pot rack!!
I have only stayed in the hosp once and it was for two night when I had my spinal fusion surgery. It was scary, so B stayed with me both nights. Love him.

Yes to the hospital thing – 3 months at Boston Children’s when I born 13 weeks undercooked, two 1 week stints for stomach infections, kidney stones. Blah.
