YO! another monday down in the books.
how was your monday? mine consisted of meetings from 7 AM to 11 AM. i am not exaggerating! luckily, one of those meetings was held at the original pancake house.. if you are a long-time reader, you know i go there every monday for a meeting.
i got my usual egg whites + oatmeal.. i got a little wild today and threw some bananas on top.
lunch came in the form of leftovers. i have eaten leftovers for lunch every work day for the whole month of february, aside from one day when marshall brought me lunch. that is why you haven’t really seen a lot of breakfasts & lunches. they are booo-ring.
minestrone soup + a whole wheat roll.
soup is always better the second time around. something about flavors melding. i am going to track down momma b’s minestrone soup recipe and post it sometime or another. promise.
because i am on a roll, i may as well show you my snack.
greek yogurt + mighty maple peanut butter + nature’s path ancient grains granola.
after work it was straight home to pound out a workout before sitting on the couch, because i know i wouldn’t have got up. i was beat!
i have been hooked on the bodyrock.tv workouts lately. if i am not doing HIIT at the gym, i am doing these workouts in my spare bedroom!
i started with zuzana’s standard warmup, then i did the trainer who shagged me workout.
HOLY. COW.
it was a 300 rep workout where you time yourself and then when you revisit it, you try to do it faster. you can find the outline of the workout on the bodyrock.tv website. it requires NO equipment, which i love!
i did the whole workout in 26:08.
and then i died.
i came back to life to make dinner.
HOT POCKETS!
wait. no. not those kind. i made my own.
i used to LOVE hot pockets and would eat them almost every day after school. my two favorite kinds were the broccoli, chicken & cheddar and the pepperoni pizza. i decided to make a healthier version for dinner tonight.
first, i sautéed some bell pepper & onion and sliced some olives.
oh.. and i finally found a reason to use this spice from my spice rack! ha.
i heated a pita pocket for 12 seconds in the microwave. no more, no less. then, I sliced off the tip. (TWSS.)
ready to be stuffed! (TWSS again)![]()
marshall & i filled our pitas with pizza sauce, mozzarella cheese, the pepper+ onion mix and black olives. i put turkey pepperoni in mine.. but marshall called me out and said that turkey pepperoni is really processed. we are trying to eat less processed foods these days. however, making our own hot pockets at home is a whole hell of a lot better than eating the frozen version, which is absurdly processed. eh.. pick your battles?
i put the pockets on a baking sheet and then baked them at 375 for about 5-7 minutes, just until the cheese was melty on the inside. then, i took them out of the oven and topped them with more sauce and cheese, then put them back in to broil until the cheese was melted on top.
sounds like a process, but it was super easy.
we ate our hot pockets with salad.
i promise you one thing: this was WAY better than the “real” hot pockets. if that’s what you want to refer to them as. however, these were way more real.
and way delicious.
marshall even had two.
these were SO easy and i am already dreaming up other variations of hot pockets. because we are trying to cut out the processed foods, i want to make my own dough from scratch sometime soon. however, the whole wheat pitas i used are great in a pinch. i bought them at sunflower market and they don’t have any crap in them.

for those who have asked, i haven’t forgotten about the 30 day challenge. i just have a lot of things to blog about and would rather save those topics for days that i have nothing to say. this post is already SO long as it is, no need to make it even longer with a topic from the list. plus i have a killer paper cut on my right index finger and typing is a real pain. literally. i will eventually complete all 30 topics. slowly but surely!
well, i have to go bake something. tomorrow happens to be national peanut butter lovers day and it wouldn’t be right to not take something to the office in celebration of this glorious holiday.
also, i will have a recipe for peanut butter chocolate protein cereal tomorrow, so stay tuned. i made it tonight and it’s already almost gone…

these hot pockets are such a neat idea! i am all about recreating amy’s frozen pizza bites. i was seriously addicted as a child/ adolescent and i’m not over it yet. hmph!
i am all about yoga classes in-studio, but every once in awhile will do a yogadownload or something. it’s not bad when i can set up a little playlist and listen to music while a strange voice is telling me to hold yoga poses. yeah, it’s funny.
Is it totally immature of me that I kind of think the word “hot pocket” is kinda kinky? ok sorry I just typed that….
Anyhow, I pretty much try to make all foods from scratch. Like that time I made fortune cookies. Although I’ll still do takeout when I’m lazy ;)
I work out at the gym. I like my home being “homey”. Plus, I splurge a little on my gym so I might as well go. And their showers are way cleaner and nicer than mine and their hairdryers are those super expensive ones I could NEVER afford. Hmm…come to think of it, I don’t remember the last time I showered at home. And yes, I’ve gone to the gyms a few times JUST to shower.
Homemade hot pockets are a great idea! My husband still eats them, so he might love these. Thanks for the inspiration to reinvent ny hub’s favorite junk food, lol.
That is genious. Looks sooo good!! I used to eat lean pockets for dinner almost every night!! My sister would always sing, “diarrhea pocket!!!” (Jim Gaffigan had a stand-up about hot pockets=hilarious). Anyway, now that I look back, I can’t believe I ate those!!! I’m definitely a gym rat during the winter, but summer, fall, and spring, I love to run outside as much as I can!!
sooo…i think i’m probably the only person who’s visited bodyrock.tv and can’t figure it out…do you have to have a membership of sorts? or just watch a video? i like working out at home, and would love to try this!

You don’t have to have a membership, the workouts are free. They post a new workout every other day and an “exercise challenge” every other day. They have one rest day a week. They also randomly post recipes and stories about people who follow their workouts (referred to as “bodyrockers”). There are SO many workouts on the site, you can just browse through them until you find one you like. I don’t have a dip station at home, so I try to find workouts that only use the equipment I have. I use a kettlebell instead of a sandbag and the only other equipment they use a lot is a jumprope and an interval timer, which I have.
The one I link to on my post doesn’t require ANY equipment, so I would say it is a good one to start with. I have had to search through the workouts to find ones that I could do without any equipment.. I really want to buy a dip station, though! The workouts are all less than 30 minutes, typically are 15-20 minutes.. but they are a better workout than a 60 min total body workout at the gym. One that I loved and left me sore for a week was the “Born This Way” workout–look it up!

i did one bodyrock workout last week and am still recovering! i was thinking out doing the new one tomorrow. i workout at home and at the gym almost the same. it is sort of hard at home though cause i usually have my three boys jumping around and doing it with me, which is sort of hard in my tiny house! my youngest likes to sit on my face when i am laying on the floor, he thinks it’s the funniest thing ever. so mostly i like working out at the gym for sanity’s sake :)

I love going to the gym (once I get there) because the environment gets me moving, also if Im slacking, there are others around who are kicking butt- so I should too. Lately, I dont have much time so working out at home works better.
I totally did that workout today to!! I really am liking bodyrock.tv. it has a cross fit feel and honestly that totally kicked my but! you beat me! I did it in 32:29 but I had to change double diapers. before I started the side crunches. It was SO fun!!

I am all about saving time on things like canned beans or artichoke hearts. I buy them pre made.
Things I make..chili, soup, desserts, stuff like that.
The challenge, glad it’s not dead. I have done a half dozen of the items. It’s been fun but I think I *may* be done, not sure yet tho :)
oh wow, love the hotpocket idea!! just gave me an idea for lunches, we’re always looking for healthy lunches and we’re getting sick of wraps! i was thinking we could pre-make the stuffing, stuff it into the pita the morning of and then just nuke/bake it when we’re ready to eat it. thanks for the great idea!
I love this idea!! :D The one frozen food I always wanted to make myself was pot pies, to be like those Marie Callendar’s versions, but then I found out what’s in them to make them so delicious (i.e. lots of butter, etc) and I kinda lost the urge. :P
all of the Kashi frozen dinners, are amazing and I want to make them. Especially the lemon coconut one.

I work out at home a lot because I like quick dvds like Physique 57 or Core Fusion. They’re a completely different workout than lifting…they’re harder!!

Those hot pockets look DELISH! My ex’s brother used to eat hot pockets everyday because he is a vegetarian who doesn’t eat vegetables. I would never be able to get him to eat a homemade one though. Oh well, more for me!

i work out at home/in a gym – our condo building has a gym, so i use that. it’s got everything i need and no commute time!

I make frozen pizzas, I make whole wheat pizza dough in the bread maker I toss in a baked sweet potato in the machine too for extra fiber! I roll my dough into 4 personal pizzas top with homemade sauce and cheese then bake just until the cheese is melted and the dough is set but not browned. Then cool and freeze. Then whenever we want pizza we can top with whatever toppings we want and toss back in the oven for 15-20.
I also make and freeze stuffed peppers and hot pockets too!
WOw, I believe you! Your version of Hot Pockets looks soooooo much better! :) I hardly EVER buy frozen pizza anymore. It’s just too simple to make my own and I can’t eat mozzarella cheese so not many frozen pizza’s come without it.

I rely on frozen meals sometimes (amy’s burritos what what), but I don’t actually crave them when I do have the time and manpower to actually cook. I think this might make me a non-foodie, but I’m happy with salads, sandwiches, and oats!

We often make pita pizzas with all the stuff you made the pockets with. They are SO EASY and really good! We just broil them. Mmm it’s 7am and I want one now. :0)

This morning I was short on time so I only did 30 reps of each exercise (same bodyrock workout you did) in 13 mins. You should try the 400 rep workout from about 2 weeks ago. It was killer and awesome! It took me 68 mins to finish it. A definite winner to me :)
i work out at home! bought myself a treadmill and have weights so i’m all set. haven’t been to a gym in 2 years and i use to think i’d never live without it, and i’m in better shape than i was when i DID go. bodyrock is freaking SWEEET those workouts are awesomee

that’s what i have been doing. i only have an interval timer (it was sent to me for review over a year ago,w hat a coincidence that they use it!) and then i sub my kettlebell when they use the sand bag. i REALLY want a dip station, though!

Lately I’ve been working out at home more too. I used to love going to the gym, specifically the classes at the gym, but for a while now I haven’t been into them. To supplement I’ve been using workout DVDs, mostly Jillian Michaels or Core Fusion, but I have one from Jackie Warner too. I’ve got to look into more of her DVDs and now bodyrock.tv. It’s so important to keep the workouts fresh to avoid boredom, haha!

I love the idea of homemade hot pockets! like calzones!! I totally want to make homemade pizza dough, thats a goal of mine, but as you know anything with baking involved especially yeast…scares me! But i want to do it! I know its delicioous and will turn out just fine!
I have to say I love working out at a gym. Not beacuse its a gym and I need to be there, but beacuse seeing others around me give me a little extra motivation. I have taken workouts like the bodyrock workouts into the studio at my gym…even just being in the studio out of my bedroom gives me that extra umpf I sometimes need! BUT I will always workout at home if I need to or simply just want to!
In the summer I also love working out at the track doings sprints and all sorts of fun things!
That’s such a great idea to make hot pockets from scratch. I never buy hot pockets from the store but remember relying on them a little too much in college when I didn’t have time to cook.

I love the bodyrock.tv workouts!!! I have been doing them on and off for over a year and they seem to be all the rage now! I forget how in the heck I actually found my first bodyrock youtube vid in the first place (it was before I read blogs, the horror) but I totally thought it was an adult film bahaha. Zuzana has a freaking amazing bod. I want her abs but I like ice cream too much.
I work out at the gym, only because that’s where my trainer is, and I am his willing slave.
So the first thought that came to mind is “I’d eat your hot pocket any day…” and then I typed that out and realized what a filthy euphemism that sounds like… and then I decided to type it anyway.
I used to love hot pockets too! I’d love to recreate Dr. Praeger’s burgers or Amy’s Indian burritos.
Also, I work out at the gym. I love the motivation and access to equipment!
