pancake purist.

in meals

breakfast food is my favorite genre of food.  is that the right term? genre? sure.. i am going with it.

i could eat breakfast for, well, breakfast. and lunch. and dinner. and a midnight snack. it’s just the best.

one of my favorite breakfasty things to eat is pancakes.  thin ones, fluffy ones, plain ones, topped ones.. i love pancakes.

guess who doesn’t love them?

my husband.

guess who had to work yesterday?

my husband.

guess who made pancakes for breakfast because she had the day off and the house to herself?

this girl.

saturday morning, i whipped up a personal sized batch of my favorite protein pancakes.

i have tried lots of protein pancake recipes, but this is my favorite:

  • 1/2 cup oats
  • 1/2 cup cottage cheese
  • 1/2 cup eggbeaters (or egg whites)
  • 1/2 tsp vanilla bean paste
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder

simply blend all ingredients and cook on a 350° griddle. simple!

this recipe is for one serving and is 275 calories before toppings.

whenever i am cooking pancakes, i spend the whole time thinking about what toppings to put on them.

some of my favorite topping combos are:

  • peanut butter & raspberry jam
  • maple almond butter & bananas
  • strawberries & powdered sugar

…to name a few.

but sometimes.. just sometimes.. i have to be a pancake purist.

what’s a pancake purist, you ask?

plain pancakes topped with two things: butter & syrup.

IMG_8726

yesterday was one of those times.

IMG_8727IMG_8728IMG_8732IMG_8731

side note: i am in love with my new mini boat from crate+barrel!

IMG_8737

it makes pouring more syrup on as you go such a breeze..

IMG_8736IMG_8735

oh man. what is it about the combination of butter and syrup?! match made in breakfast heaven.

what are you waiting for? go make some pancakes.

Q~

what goes on your pancakes?

I’m a big fan of mixing bananas and cacao nibs in the batter, then topping with coconut and any kind of nut butter. That’s my current favorite way to eat pancakes. :)

maria @ Chasing the Now February 27, 2011 at 5:27 am

The photos on this post are awesome, Janetha. And now I’m feeling inspired to make pancakes!

Gabriela @ Une Vie Saine February 27, 2011 at 5:40 am

My favorite pancake topper is I Can’t Believe It’s Not Butter Spray. Seriously. Growing up, my grandparents would make us pancakes for breakfast every time we were at their house, and they ALWAYS gave us spray butter to top them with. I love the stuff now because it’s got so many memories attached to it…even if I did spray until the top of my pancake was covered in bright yellow chemical liquid :)

lindsay February 27, 2011 at 5:43 am

i like them naked. hehe! that way you can dip them into anything. Melted almond butter, yogurt, jam, etc.
Pancake purist at heart here!

inmytummy February 27, 2011 at 5:44 am

I honestly like sugar free syrup on them. It’s one of the few splenda filled things that I still eat but I like the way it tastes. Regular syrup is too thick for me.

janetha February 28, 2011 at 12:47 pm

yep, this was sugar free. that is like the ONLY sugar free thing i like. syrup and ketchup.

Erica February 27, 2011 at 5:59 am

Those look perfect. You know I’m a breakfast freak as well :) What goes on my pancakes? Syrup or syrup and berries- SO good!. Enjoy your Sunday

Susan February 27, 2011 at 6:04 am

1) I use the exact same recipe. Love.
2) I’m sure we’ve discussed this before, but butter + syrup (table, not maple) are my favourite pancake/waffle toppings too. Boring, maybe. But it’s a classic combo for a reason!
3) Growing up, I also loved molasses on my pancakes.
4) HOW DOES MARSHALL NOT LIKE PANCAKES???
5) I had a dream last night that we were on a road trip together.
6) Heart you!

janetha February 28, 2011 at 12:48 pm

1. it is the simplest one. and the best! 2. agree. this was table syrup. sugar free, in fact. 3. i need to try that! i haven’t used molasses as a topper, only a cookie ingredient. 4. i am still waiting to hear the results from the insane asylum. 5. can we make that dream a reality? please? 6. likewise! love you!

Matt @ The Athlete's Plate February 27, 2011 at 6:05 am

PB and banana all the way ;)

McIntosh February 27, 2011 at 6:22 am

Breakfast for every meal…..love it. Especially cereal combos.

My mom always made crepes from scratch, rolled one up and poured Karo light syrup on it or sometimes jam in the middle. I didn’t even know there was another “pancake” type until my friend’s mom pulled out Bisquick at a sleepover and made a stack of small pancakes. Just not the same…

Marisa @ Loser for Life February 27, 2011 at 6:23 am

I have that recipe, too and they are great pancakes!!! I’m with you…nothing better than butter and syrup!

Jessy (squeezetheday) February 27, 2011 at 6:26 am

Ever since I was a little girl, pancakes have been one of my favourite things in the world. (Although here we make crêpes instead of American thick pancakes.) I always had them with hazelnut chocolate spread. Chocolate+fruit is obviously another super yummy combination, but I only had those a few times when I ate crepes in a restaurant. Now I make thick pancakes (similar recipe to yours) and I usually top them with blueberries and quark; well, I actually put layers of quark+blueberries between pancakes, so it’s more like a cake. :D I’d really like to try them with syrup once, though! I assume that’s maple syrup?

kristine February 27, 2011 at 6:34 am

i’m a syrup girl. and i was going to have a spinach smoothie for breakfast but now i just want those pancakes!!!!!!!!!!

Meg February 27, 2011 at 6:37 am

How can you NOT love pancakes?! He’s crazy, clearly…haha! I agree, nothing’s better (and easier!) than maple and butter…yes ma’am!

Efka February 27, 2011 at 7:15 am

I love them with honey or with sugar sprinkles

Jenny February 27, 2011 at 7:18 am

Those pancakes look delicious!! I love adding blueberries, chocolate chips, and then drizzle with maple syrup. Yum! :D

Ashley @ 365 things February 27, 2011 at 7:29 am

Any mixture of pb banana and syrup

:)

Teri [a foodie stays fit] February 27, 2011 at 7:29 am

I’m really intrigued by your recipe since it has cottage cheese – I’ve never seen that. I’d buy cottage cheese and then have to eat pancakes everyday until it was gone because heaven knows I won’t eat it plain! :)

Your little syrup thingy is so cute!

I like butter on my pancakes with just a teeensy amount of pure maple syrup. I never liked syrup on my pancakes or waffles growing up – just butter.

Jess (In My Healthy Opinion) February 27, 2011 at 7:34 am

I love the mini boat too! I also really like powdered sugar on pancakes, plus agave or a little bit of maple syrup, and some fruit. I’ve never been a big syrup lover, but I like agave because it’s a lot lighter. Your pancakes look amazing though — beautiful pictures!! How can Marshall not like them?! :)

Tina @ Faith Fitness Fun February 27, 2011 at 8:02 am

I love pb + a bit of syrup together. Had some this morning actually. :D

And those pictures look so great!

Heather February 27, 2011 at 8:04 am

i’m a purist too…the only thing that changes that is my mom’s homemade applesauce with butter on top!

Erika February 27, 2011 at 8:07 am

Oh my gosh, those pancakes look delicious! Almost like something out of those fancy shmancy food magazines. You should definitely try uploading one of them to Foodgawker.com
Glad you had a wonderful pancakes breakfast Janetha. Have a great Sunday! :]

Evan Thomas February 27, 2011 at 8:41 am

That syrup boat is really cute. I want to pour it straight into my mouth.

movesnmunchies February 27, 2011 at 8:54 am

these look decadent! i LOVE Pancakes- ultimate comfort food!

edenseats February 27, 2011 at 8:59 am

i often use greek yogurt instead of cottage cheese depending whats on sale that week! (frugal, I know).
Lately I’ve been loving pancakes with mandarin oranges and strawberries.I had it at some joint in LA and now I’m addicted.

Callie @ Callieflower Kitchen February 27, 2011 at 9:10 am

I like my pancakes best with just butter, but sometimes I go for maple syrup too :)

katshealthcorner February 27, 2011 at 9:34 am

I absolutely love pancakes!!! These sound divine! :D

Erica D February 27, 2011 at 9:44 am

I dig peanut butter and fruit, with a dollop of yogurt and drizzle of syrup! But I always like them better when they’re made for me ;)

Allison @ Food For Healing February 27, 2011 at 9:48 am

i absolutely LOVE pancakes, i haven’t had any since in Mexico, and there i topped mine with just cinnamon and sugar, it was freakin good, never thought of that combo before. I normally just added maple syrup

Salah February 27, 2011 at 10:05 am

I’ll put almost anything on my pancakes lol, eggies, sausage, syprup, a little butter…but mostly I’ll do some form of nut butter coconut and honey :-) mmmmm

melissadishes February 27, 2011 at 10:35 am

I like my pancakes plain or just with fruit and a little SF syrup.

I’m weird, I cannot stand the smell of syrup, especially the real deal!

sarahsouth February 27, 2011 at 11:47 am

those look so great! what kind of oats do you use (quick oats?) also, there is no flour in these? just wanted to be sure!
love,
teri’s friend in winston-salem :)

janetha February 28, 2011 at 12:41 pm

oh and P.S. i am glad you read my blog! i am jealous you get to hang with teri z.

janetha February 28, 2011 at 12:44 pm

i use slow cooking (old fashioned) oats, but i am sure any would do!

Paige is Running Around Normal February 27, 2011 at 12:23 pm

Whoa. I just ate lunch and am full, but somehow I want pancakes. Yum!!!

Tamizn February 27, 2011 at 1:01 pm

Ooooooooo those pancakes look melt in the mouth delicious! x x

Kelly February 27, 2011 at 2:23 pm

I only like butter on my pancakes. No syrup, no fruit, no nut butter…I am a plain jane pancake kinda girl!

Tay February 27, 2011 at 3:36 pm

mmmmmm pancakes!! I love jam and cream cheese on mine. With syrup of course.

cbrady3 February 27, 2011 at 3:49 pm

Beautiful Pictures! I tend to do cinnamon greek yogurt, strawberries, and peanut flour sauce. But sometimes simple is better! those look incredible!

1970kikiproject February 27, 2011 at 5:36 pm

i’m getting so many good ideas for pancake toppers! great question, j!
growing up, i thought that pancakes were a SUPPER food, not breakfast because that’s when my mom served them (and one of my fave suppers, they were)!
are you watching the oscars?! have a great eve!

Katie February 27, 2011 at 5:54 pm

Love your little syrup boat!!

Also, my scuzzband doesn’t like pancakes either – AND he works on Saturday mornings, so it’s the perfect time for me to whip up a batch of the fluffy goodness. I like to top mine with PB and agave.

BroccoliHut February 27, 2011 at 6:36 pm

Ooh! Loving that mini boat! C+B just might be getting a visit from this girl…
I like to put syrup and nuts on my pancakes, and I usually mix the fruit into the batter itself:)

Naomi(onefitfoodie) February 27, 2011 at 6:43 pm

ahh you may hate me but I am not a HUGE fan of pancakes. I think its because I have this OCD thing about having hot foods like really really hot. and pancakes get cold pretty fast…any tips??! those look SO SO SO good!!! i definately want to try that recipe, its delicious, healthy and right up my alley!

last time I made pancakes I heated up some frozen fruit, so it got all hot and syrupy and poured that on top…oh it was good!

janetha February 28, 2011 at 12:40 pm

i got nothin’. my pancakes were luke warm after the photo shoot.. that hot fruit idea is a good one, though! they do stay a lot warmer now that i use a griddle instead of a frying pan, because i can cook them all at ONCE.. but still, photo sesh? yeah.. they cool off.

Karen February 27, 2011 at 7:19 pm

Love those pancakes!! I like fresh fruit on my pancakes – usually strawberries, blueberries or bananas. Sometimes I have butter and syrup but not often.

Runeatrepeat February 27, 2011 at 9:11 pm

I love pancakes! Luckily, Ben made me a batch yesterday post-run.
Not-so-luckily, I’m sure they were cooked in extra butter and had 6 extra eggs inside.
Oh well, they were dee-lish!

Kristie February 27, 2011 at 9:18 pm

Pancake stack perfection. Mmm. I think I’m overdue for a pancake breakfast!
I usually eat my pancakes with banana slices, plain yogurt, and syrup. Sometimes I get really crazy and eat them with jam.

Mac February 27, 2011 at 10:51 pm

Peanut butter and syrup! Best combo ever!

kissmybroccoli February 28, 2011 at 6:51 am

Love love LOVE pancakes…well, any breakfast food actually, but pancakes are at the top, followed closely by oats! I have topped my cakes with just about everything under the sun: nut butters, coconut cream, cream cheese, syrup, greek yogurt…the list goes on and on! I guess it just depends on the mood I’m in. I’m not much for butter on pancakes, but sometimes it is nice to just go plain Jane with some pure maple syrup!! Mmm!

Christin@purplebirdblog February 28, 2011 at 8:49 am

I like to spread peanut butter on them and then drizzle over the maple syrup… oh yes.

Steph February 28, 2011 at 9:10 am

yay for vanilla bean paste!!!

livinlifeinlouie February 28, 2011 at 1:23 pm

I love peanut butter and banana on mine! or agave nectar too. Yours look delicious!
