hello! i have had a busy, fun filled weekend and am just now sitting down for some blog time. in order to stream line things, i think it’s time for a top ten things from the weekend.
one.
staying out past midnight on friday night. these days, that never happens! i met some friends at a dive bar for karaoke
two.
the re-discovery of my love for english muffins with cream cheese and homemade raspberry jam! i learned this from one of my ex-boyfriends. the only thing i got out of the relationship was the knowledge of how delicious the combo is and seasons 1 and 2 of OZ on DVD. needless to say, i am glad that relationship didn’t pan out.
i paired it with 3 egg whites and 1 whole egg for yesterday’s breakfast and have been obsessed with the flavor combination since. in fact, i am munching on a toasted double fiber english muffin slathered in philly cream cheese and momma b’s raspberry jam this very SECOND. obsessed.
three.
i went snowboarding at the canyons yesterday with my friend j5. we had no idea that it was going to be a blizzard! no complaints, though. we happily rode all day in lots of fresh powder while it dumped snow all day.
gotta love random blizzards!
four.
impromptu double date dinner parties! my friends jessica and simon just moved into a new place and i wanted to check it out. they were gracious enough to make marshall & i some deeelicious chicken + broccoli + squash pasta for dinner.
this was so good! i have no idea how simon made it, but i think i need to convince him to make me dinner more often.
five.
marshall making fun of people everywhere. he always calls out people who hold up their alcoholic beverages in photos. ever since he pointed it out to me, i have noticed it more and more. and we aren’t talking about people randomly holding their drinks in photos—that is bound to happen. we are talking about the people who aim to make their drink the focal point of the photo. start watching for it.. you will laugh. i promise.
six.
making homemade ice cream for my VERY FIRST TIME IN MY LIFE!
after dinner, we busted out the ice cream maker that marshall gave me for christmas. it was still it the box so it was super simple to transport to jessica’s house. i used the recipe for vanilla oreo ice cream from the ben & jerry’s book that teri sent me.
aside from basically tripling the amount of vanilla it called for, we followed the recipe to a T.

okay, the photos do NOT do this stuff justice. we were all astonished at how flipping amazing the ice cream tasted. and more astonished that we made it ourselves. so impressed. let’s not talk about how we devoured a half gallon of ice cream between four people.. k?
seven.

lemon and black cherry chobani! AH. i have been on the lookout for the new flavors since the new year. BEYOND EXCITED. FYI—he got them at the target in centerville.

bargains!
i went to target to get groceries for the week and snagged three super cute sweaters for work.. all on clearance! the stripey on and the blue one were $4.50 a piece and the gray cowl neck one was $12. cha ching!
ten.
the packers making it into the superbowl! can i get a wooflippinghoo???
clearly, we are all excited in our house. it is also clear who is in control of the leather couch.. muddy paw prints galore. i am such a pushover.
there you have it.. my top ten from the weekend.
wondering what the other ten in my title is referring to? well, according to my new challenge, the second topic to discuss is “where you would like to be in ten years.”
hum. that’s a toughie. you know, i have NEVER been one of those life plan type of people. when i graduated high school, if you asked me where i wanted to be in ten years, i would have given you a blank, clueless stare.. because i had zero direction. zero aspirations. zero goals. i just played it by ear. ten years later, i am happily married. i own my own house. i have two dogs who i love more than life. i have a solid career in an industry that i didn’t even know existed until i randomly fell upon the position. and guess what? NONE of it was expected. i think playing it by ear worked out pretty well for me.
so, now that i have to think of where i would like to be in ten more years, i kind of have that same blank, clueless stare going on. i think not having a set plan works in my favor, because whatever happens happens and i don’t have specific expectations. BUT.. for the sake of answering the question, i do have a few things in mind that i can list.
in ten years…
- i will be 37 (yikes!)
- i would like to have two kids.
- i would like to have professional training in both fitness and nutrition and acquire certifications in both fields.
- i want marshall to go to school, graduate and be doing something he loves and is passionate about.
- i want to still live in/around salt lake city.. i don’t think i would be OK moving far away from my mom! ha.
- i want to have traveled to greece, somewhere in asia and figure out how to get into canada.. and go there.
that’s it. i am not setting the bar too high. i will roll with the punches and live life as it comes.. but those are just a few things i see in my future.

i am excited that so many of you want to take on the challenge as well. some of you asked if i would care.. my answer is no way! go for it. the more the merrier, please tackle the challenge yourself.
oh, and apparently the challenge is a 30 day challenge where you tackle a topic a day.. but in case you didn’t notice, i don’t post EVERY day. so, instead, i am tackling a topic every time i post. this works better with my schedule.
okkkkay, i am out of here. off to enjoy the evening with my happy husband—yay, packers!

1) Yes I was obsessed with making homemade protein ice cream in the ice cream maker last summer. My favorite flavors have to be Mint Chocolate Chip, and Cappuccino Chip
2) In 10 years.. gosh, so many things.. but I would like to be a C-level executive, have my faith restored in men (hehe, or in other words have a fantastic relationship), be more involved in charity work, and have completed yoga teacher training.. ok random things but ah well :-)
ooo mind sharing some recipes for protein ice cream?
Of course! There are a few more specific in my Fitness Recipes section.. but the base was just 1.5 cups unsweetened Almond Milk + 1/2 scoop Protein Powder (I used an Ice Cream Sandwich flavor) + 1/4 tsp Xanthan Gum + whatever else you want to add for flavor.. just blend for a minute then into the ice cream maker!

Lactose intolerance be DAMNED… I wish I could eat your ice cream and that black cherry yogurt!!! Favorite ice cream flavor – Toss up between peanut butter and vanilla bean. I have a very hard time thinking in terms of 10 years. 10 years from now I’ll be 38. I’d like to have a house by then, maybe a kid, and be a successful massage therapist… maybe even have been certified as a yoga instructor. And that’s about all my little brain can manage. :)
Randall doesn’t look too happy about their win. It’s ok, he feels my pain for the Bears loss.
I hate when people do that with their drinks (although I was totally guulty of it back in college) the only thing worse than that is when guys do the finger guns pointing at you ala Isaac from the Love Boat. Ugh.
I’m still having issues figuring out what I am doing in the next 3 months so 10 yrs is out of the question. All I know is that I will be 41 and I am NOT a fan of that.
I live in Wisconsin and think I am the only one NOT rooting for the packers :)! haha but I am secretly happy for them. Ive never made homemade ice cream but have been meaning to do it, banana icecream? yum. In 10 years I want to be happily married and have my own interior design firm. Dream big!!
I made homemade ice cream a couple of months ago. It was just plain vanilla but vanilla is my favorite because you can add whatever you want to it!
In ten years I hope to have my career path figured out. I have no clue what direction I’m going which is scary but I know I will eventually find the right direction.
those are some great goals for the next 10 years. I think I am about the same. I’ll be 37 almost 38, eek! Would like twins (one birth for two babies- my kind of deal, haha). I would like my husband to be successful in his career with all his hard training and work. And I’d like to be in New Zealand.

Yay Ben & Jerrys! Also, I’m really excited now to see a black cherry Chobani flavor, I can’t wait to try it. In 10 years, I’ll be 31 and would like to be married & have started a family. I want to be a dietitian and maybe a yoga teacher as well. I also want to have run a marathon. It’s weird to think of 10 years in the future!
I’m so jealous of your time on the mountain – I wish I lived closer! The 10 year goals scare me! I suck at that. I guess I can say that I hope i’m happily married with a larger family (i.e. at least one baby!) and I hope to be at a smaller consulting firm and/or some kind of party planner (on the side for fun!).

In ten years, I’m going to be really, really old. Like half a century old. I hope I’ll continue to mellow out and take time to smell the roses. Compared to 10 years ago, I have a much better work/life balance and focus much more on enjoying life and the “little” things (which really are the big things!), but I know I can improve a lot… The toddler will be a teenager (yikes!), and the teenager will be approaching 30. Wow! Anyway, I hope I’ll be able to handle whatever life throws at me and be older AND wiser! :)

Hooray for your homemade ice cream!!! I want to bathe in that right now…I’m so serious. It looks unbelievable. My dad used to make homemade ice cream every weekend when I was little during the summer and there is nothing better.

i’ve made homemade ice cream before, but i used one of those balls that you have to shake and throw around to mix up the ice cream. (i probably didn’t describe that very well, but it’s cool).

Your ice cream has me salivating over here! I have made my own ice cream before, but just coconut milk ice cream in my Vita Mix. I either freeze the coconut milk in ice cube trays the night before for whatever flavor I’m making, or I use frozen fruit with the liquidy coconut milk. I love it though. :)
i would not feel okay with being far from deej at all! it would break my heart haha for real.

10 years from now…I also want two kids. Maybe 3, depending on how the first 2 go. I want to be back in Salt Lake City or getting close to going back. (Wow, never thought I’d say that!) I want to have Rob’s law school debt paid off. And I want to have my Les Mills Body Flow certification. Hopefully that happens in the next few years, not 10 years though. :)

The only time I’ve made ice cream from scratch was back in high school chemistry, but that looks delicious!

When I was younger I made homemade ice cream in a coffee can. You know, you roll it around on the floor for like an hour with ice and rock salt? The bomb.com! ;)

In ten years I want to be 9.5 years into my happy marriage, hopefully with a kiddo or two, owning a home, and be an executive at some sort for a nonprofit. Ha, not too specific, right? And we all know how G-d laughs when we plan, so we’ll see!
MMmm your ice cream looks fabulous! The first time I made homemade ice cream was in kindergarten — we put the mixture in old (clean) baby food jars, then in coffee cans packed with ice and sat and rolled them with our feet. Funny that I can still remember it vividly! I totally got one of the target sweaters last week for $9 and went back today and got a bright purple w/stripes for $4.50…I was so pumped!! :)
