one pot wonder.

HAPPY BIRTHDAY DANICA AND KACY AND BESS!

today was ridiculously busy and long at work. longer than randy the basset hound.. and he is looooong.

consequently, this post is gonna be snappy.

furthermore, my spacebar keeps sticking. that’s what i get for taking my laptop into the kitchen while cooking. doh.

image_thumb11

i had a three hour long meeting this morning and i was in charge of grabbing bagels for the group.

IMG_6317

i obliged, but not without snagging a spinach, mushroom and egg white bagel sandwich for my own breakfast. i am all about bagels, but i gotta balance it out with some protein.

IMG_6319

after my meeting, i had to get right to work on some important tasks. before i knew it, it was ONE O’CLOCK.. well past my lunchtime. i had a sudden pang in my stomach and looked at the clock.. i was surprised to see it was already so late in the day.

enter: late lunch.

tuna salad sandwich + veggies.

IMG_6321

this is what goes into my tuna salad: one packet of tuna (100 cals, 20g protein), 1 TB low fat mayo, 1-2 TB fat free plain greek yogurt, two diced dill pickles, squirt of mustard.

IMG_6323

i usually like to add celery to the tuna salad, but i didn’t today. i did pair it with another green veggie: lettuce. then sandwiched it between two slices of whole wheat bread.

veggies on the side. steamfresh to the rescue.

IMG_6324

i ended up working a nine hour day and the only snack i had on hand was this new to me ready to drink protein shake:

IMG_6339

i took one swig and gagged. not a good flavor, folks. i didn’t drink it. DON’T BUY IT! well, unless you are into nasty tasting stuff. then you should for sure buy it.

instead, i got home and ate two of teri’s healthy pumpkin cookies (i made a batch last night.)

then it was straight to the gym for this little number…

i came home and didn’t want to make a big production out of dinner since it was almost 8 PM. marshall said he wanted something with chicken and rice. i had a big ol’ bag of lemons. so, i perused the interwebs and found a few recipes for lemon chicken and rice.  i loosely followed them to make a one pot wonder of my own.

IMG_6425

i went ahead and made a recipe page for this deliciousness.. click here for the recipe. bonus: it is totally body for life friendly!

yum.

here are the nutritionals:

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
keeping my word to post all of my outfits this week, i took more photos of what i wore today:
IMG_6336
sorry for the horribly blurry photo.  it is just not convenient to take full length shots anywhere i am. the photo above was taken at work.. yes we have a random weight room that never gets used. i need to get a mirror mounted on my wall at home soon.
IMG_6337
the details:
  • sundress: forever 21 ($25)
  • black camisole: victoria’s secret (3 for $30)
  • cardigan: nordstrom ($30)
  • opaque tights: forever 21 ($4)
  • slouchy suede boots: roxy ($60)
i usually wear this dress in the summer without a cardigan or tights, but it is easily converted into a winter wearable piece.. i do this same thing with all my sundresses. such a good money saver!
well.. it is ten o’clock. yikes. good night!
Qs~
1. what is the last food/drink you tried and hated? that EAS vanilla cream protein shake above was disGUSTing.
2. what is the busiest day of the week for you? tuesday or thursday for me. it’s a toss up.
purplebirdblog January 18, 2011 at 10:10 pm
Great minds… I made a post last week titled “one pan wonder.” ;)
1. I had a bite of the roommate’s brownies the other day and hated it… I’m not sure what the deal was but it was just not that great.
2. Monday is definitely the busiest. Work all day, school all night.
Amanda (Two Boos Who Eat) January 18, 2011 at 10:10 pm
I got a sample of that protein drink after a racr and didn’t like either. Blech!
Love the outfit today! Very cute!
kissmybroccoli January 18, 2011 at 10:41 pm
That chicken and rice looks great! Last drink I had that I hated was (don’t kill me) kombucha. It was the GT Multi Green. I had like 5 sips and couldn’t take anymore, but I did recently discover the Cosmic Cranberry and I love it!
My busiest days at the hospital are usually Fridays. We get a lot of patients added on to the schedule before the weekend hits!
janetha January 19, 2011 at 10:41 am
haha i won’t kill you ;) cosmic cranberry is my favorite flavor!
kissmybroccoli January 18, 2011 at 10:41 pm
Oh and I LOVE your boots!
Ashley January 18, 2011 at 10:43 pm
Beer. Ron insists I try his fancy beers. Bleck.
paijery January 18, 2011 at 10:45 pm
You are so cute!! Love the outfit!
happytalesblog January 18, 2011 at 11:09 pm
I LOOOVE your outfit today!!! That dress and those BOOTS are adorable!!! You are so fun!
Deb (Smoothie Girl Eats Too) January 18, 2011 at 11:12 pm
OK super cute outfit. And the timing is amazing. I haven’t read hardly any blogs in weeks now but I came up with this idea to take a photo of myself in this new outfit I got. I had it all planned out- where to take the photo etc and then I saw Amanda posted something of FB about you doing a “what I wore” post= what are the odds of that?!?!?!?!?! I had no idea people were doing this at all!!! Why can I never, ever appear original= grrr! ;-)
edenseats January 18, 2011 at 11:26 pm
Deb, I always feel unoriginal. but imitation is the highest form of flattery ;)
janetha January 19, 2011 at 10:42 am
you are original. we are just on the same wave length :)
edenseats January 18, 2011 at 11:25 pm
How do you manage to have such a cool grin while you take those “what I wore” photos? I always look like a doofus when I take pics of myself in the mirror.
Hmmm….I tried a new brand of greek yogurt which was disappointing. It was like, watery! I’m used to super thick yogurt I guess!
And Tuesdays are my craziest day too! I actually prefer mondays, even though people notoriously hate them.
Sara @ Nourish and Flourish January 18, 2011 at 11:28 pm
I love the sun dress outfit–a perfect way to squeeze a splash of summer into dreary winter days!
Oh my goodness, pre-made protein drinks are TERRIBLE! I used to drink Muscle Milk Light, and then one day a lightbulb went on and I read the ingredients…No bueno. I’d much rather drink milk, or eat yogurt or cottage cheese. Thanks for the advice though…I will definitely steer clear of Mypolex!
Your one pot chicken dinner looks delicious and comforting. Marshall is a lucky man to have you making him such awesome meals. :-)
maria @ Chasing the Now January 19, 2011 at 1:15 am
I screwed up a Green Monster earlier this week because I was out of milk. I added water instead, but it just didn’t work. Gag.
Erica January 19, 2011 at 4:02 am
Gotta love those go go go days! Looks like you did an awesome job with your meal planning so you were properly fueled through it all(minus the yucky shake ;)). ! I haven’t had a bagel in a long while, now I’m craving one ;) And I’m a huge fan of the one pot meal- totally perfect for busy nights and so comforting.
1. what is the last food/drink you tried and hated? I don’t like mushrooms and I tried to like them a while back…yah, didn’t work ;)
2. what is the busiest day of the week for you? hmmmmmm usually Tuesdays but yesterday was slow
Cathy K January 19, 2011 at 4:06 am
super cute outfit! love the sundress. love forever 21…but the closest one is an hour away from me! boo hoo.
my busiest day is fridays, i guess. full day at work, errands before the weekend, social time. all fun, though!
i LOVE myoplex shakes (powder) – but i add just enough water to make it like a bowl of icing. have never tried a shake – don’t think i’d like it, either. i’ll take your word for it!
nice work on whipping up your own supper creation!
Blog is the New Black January 19, 2011 at 4:18 am
Longer than the basset hound- hehehe!
Matt @ The Kitchen of a Runner January 19, 2011 at 4:31 am
I can’t remember the last thing that made me gag. I don’t eat crappy food ;)
Jessica @ How Sweet January 19, 2011 at 4:36 am
That picture of you is just SO cute!
Lauren January 19, 2011 at 4:39 am
There is a guy at work who drinks that protein shake every day. He seems to like it and wants me to try it but I haven’t yet. I think I trust your judgement more than his. ;) I’ll steer clear. :) Thanks for the heads up.
Again my dear, you are looking fab! Love you!
My busiest day always depends on my schedule. It’s never consistent which I kind of like.
katie January 19, 2011 at 4:41 am
The bagel breakfast sandwich looks so good! I love the comment you made about a long day, and longer than your dog, lol, your so funny!
Good for you getting an awesome workout on , I need to do some HIIT tonight ; )
I love seeing your putfits, its fun to see other peoples style, love the boots!
Have a great day : ) xoxo
Katie January 19, 2011 at 4:51 am
I might try your version of tuna salad. Sometimes tuna makes me want to gag, but I think that was from when I tried BFL the first time and ate tuna wraps all of the time, without any mixings to make a salad. It was just straight canned tuna. Ick. The pickles and celery sound good. I love crunch.
Worst drink I’ve had lately: Muscle Milk Light Vanilla. It tasted like jank. However, I did have a Myoplex Lite Chocolate yesterday after work before I worked out, and it was good!
lindsay January 19, 2011 at 5:00 am
Now, I wish I could sport leggings. Darn it! Love the out fit. I agree, that vanilla cream was not the best. I tried a banana cream flavor the other day….GROSSE! I’m stickin’ to chocolate and vanilla for now.
:)
Eates-a-lot January 19, 2011 at 5:13 am
Hey Girl!
Listen – I was just recently in NYC and I had this awesome breakfast I wanted to tell you about.. i had scrambled egg whites with spinich goat cheese and tomatos. OMG. it was sooooo good. Totally thought of you. So if you haven’t tried it – might be an option for a different breakfast!
Loved the outfit today!
janetha January 19, 2011 at 10:42 am
mmm that sounds like a heavenly egg creation!
Allison @ Food For Healing January 19, 2011 at 5:38 am
cute clothes! love it!
the worst drink, since i havent reattempted it yet because i’m scared, it kamucha (spelling?) its interesting.. kinda nauseating.. not really sure. lol
busiest at work it probably towards the end of the week when everything has to be done for the weekend. uhg so stressful.
Heather January 19, 2011 at 5:53 am
OMG, you look so cute! Love the look!
Busiest day of the week has to be Monday. I teach and my husband has soccer so we’re always juggling schedules. :)
rachel January 19, 2011 at 6:05 am
ah i like your treadmill workout – think i’ll be trying that one out although I may die by the 10th minute.
Katy (The Singing Runner) January 19, 2011 at 6:25 am
I can’t remember the name of it, but it was an energy bar that they gave us after the Disney 1/2 Marathon. I had one bite and almost gagged. I have a few of them in my pantry, so I’m debating if it was just because I really didn’t want to eat at that moment!
Sarah (Running To Slow Things Down) January 19, 2011 at 6:50 am
I love your black camisole! Very cute. :D
I’m the same way with carbs. Love ’em, but they need to be paired with protein. Your egg sandwich looks fabulous! :D
brandi January 19, 2011 at 7:32 am
Mondays or Tuesdays are usually the busiest.
I love your outfit! I think I’m going to post mine, too. I need help.
Katie January 19, 2011 at 8:16 am
I LOVE that dress! I think you and I have similar clothing styles.
Hmm, the last drink I remember HATING was Skinny Water, which I was sent to review. It literally tasted like pure syrup, and even diluting it 5:1 with water, it was still NARSTY.
Friday or Saturday are busiest for me, since I usually have to work a double.
withasideofhope January 19, 2011 at 8:37 am
Your dinner looks incredible! I have been looking for a healthy recipe like that for a while. I am totally going to make this!
I love your outfit! It’s super cute! :)
Kathie @ Frugal, Fit and Fabulous January 19, 2011 at 8:51 am
I tried those Myoplex’s once…YUCK, YUCK, BARF!!! I always keep some protein powder handy in my desk drawer for moments like these.
lowandbhold January 19, 2011 at 9:05 am
Thanks for the b-day wishes love!
Your one-dish wonder looks terrific! I love lemon-flavored anything.
Not sure what the last gross thing I tried was… Hmmm…. nothing is coming to me. That’s a good thing I suppose!
My busiest days vary. Busiest workout day is thursday, but my weekends actually tend to be busiest as I jam pack them full of obligations. Today will be pretty busy too.
Hope you got some sleep and today is less hectic!
Sarah January 19, 2011 at 9:07 am
i made a salad the other day and i’ve had these sunflower seeds sitting in my pantry forever, so i threw them on. bad idea. they must have been too old and it ruined my salad. :( i had to go buy lunch. grr.
thedelicateplace January 19, 2011 at 9:11 am
3 hour meeting? gag. i’m kinda zoned out after 1.5hr…it’s my max! last food i gagged on was prob a gluten free ginger cookie. it had a metallic/soapy aftertaste. NEXT! my busiest day is def mon or tuesday. the beginning of my weeks are always front loaded because some of the molecular techniques i do take 3 days to complete before i get the experimental result. then it’s data crunching time. meh.
Heather @ Heather's Dish January 19, 2011 at 9:18 am
I absolutely hate kombucha. There, I said it! Tastes like dirty wine to me…
Maren January 19, 2011 at 9:22 am
Actually, I tried the banana myoplex shake = BARF. It was awful, but I thoroughly enjoyed the vanilla one! I absolutely LOVE it actually!! haha that’s funny that you hated it so much!!
Tomorrow is going to be my busiest day!
Bess January 19, 2011 at 9:55 am
Thank you so so so so sooooo much for the birthday shoutout…you rule :) That bagel sandwich looks deeeelicious by the way…I want it right now.
Dawn (HealthySDLiving) January 19, 2011 at 10:13 am
I love your outfit! I really need to do a better job of working with my summer clothes in the winter – I’m sure I convert so many things with sweaters and cardigans!
Freckled Foodie January 19, 2011 at 10:21 am
totally cute outfit!!
melissadishes January 19, 2011 at 11:19 am
I honestly can’t remember the last thing I ate that didn’t taste good. We haven’t been out to eat much lately or tried new things.
Fridays are always the busiest day of the week here, they are more like most people’s mondays.
Salah January 19, 2011 at 11:42 am
I love einsteins, and your outfit :-)
MelissaNibbles January 19, 2011 at 11:51 am
Super cute outfit and I’ve been loving all your meals lately!
Tamizn January 19, 2011 at 12:55 pm
Other than today everyday is busy for me my world is one big ball of busy! Cute outfit x x
Gabriela @ Une Vie Saine January 19, 2011 at 2:39 pm
This semester Tuesdays are going to KILL me. Class STRAIGHT from 12:30-6:15, no breaks. Is it bad that what I’m most worried about is how I’m going to snack??
Laura (starloz) January 19, 2011 at 3:26 pm
i always wear my clothes all year round. i’m not limiting my wardrobe because of the season.
Stephanie Berg January 19, 2011 at 3:40 pm
This has absolutely nothing to do with your post today (which was great), but I just had to tell you…….I am ADDICTED to the ancient grains granola you told us about. I like it with the vanilla chai Carbmasters yogurt (kroger brand). The yogurt has like 1o g. protein, 3 g. sugar, and only 60 calories. LOVE! Thanks for introducing me :)
thetwentyfifthyear January 19, 2011 at 3:57 pm
You know what the worst thing is about that shake? It’s the one they hand out in EVERY swag bag I have ever gotten for a race. Barf.
Love the slouchy boots! And the random weight room. It’s the little things, my friend.
Mary (A Merry Life) January 19, 2011 at 4:25 pm
I love that outfit! So cute! :)
