football food.

things i have not done today:

  • changed out of my pajamas
  • set foot, or even LOOKED, outside
  • eaten a vegetable
  • exercised
  • taken my vitamins
  • consumed any water

not to worry, i HAVE brushed my teeth, washed my face, eaten 4 bowls of cereal, a piece of PB & jam toast, taken two naps, drank a glass of OJ and cuddled with my dogs more than ever. i took a 2 hour nap with randy as my pillow. he is such a good sport.

i had really good intentions of working out, running errands and cleaning house today. seeing as how it is already 3 o’clock and i am still in my pajamas (and just polished off another bowl of kashi golean), i probably won’t do any of that. and that’s ok.

last night was the packers game! can you hear the enthusiasm in my voice? i am really trying to get excited about football.. but it bores me so much that i just can’t get behind it. a least my flower vase can.

what i can get behind is football snacks! marshall decided to invite some football fans to watch the game, so i happily prepared a spread of food.

i first want to share with you my recipe for buffalo chicken dip, which is 100% inspired by jessica’s dip.

ingredients:

  • 2 boneless skinless chicken breast halves, boiled & shredded
  • 2/3 cup chobani plain greek yogurt
  • 8 oz neufchatel cheese (can sub cream cheese)
  • 3 TB low fat mayo (can omit if you want—it adds tanginess)
  • 1/4-1/3 cup frank’s red hot wing sauce
  • 3 TB organic ranch seasoning
  • 1/4 cup bleu cheese or gorgonzola crumbles
  • handful of shredded cheddar & monterey jack cheeses (optional)
  • dippers (chips, veggies, bread)

directions:

boil and shred your chicken, then place in a medium sized bowl.

add your yogurt, nuefchatel, mayo, ranch and bleu cheese/gorgonzola. mix well.IMG_6011

add your hot sauce (as much as desired—taste as you go) and mix well. layer into a small baking dish. this one is 5” x 7”.

if you want, top with shredded cheese.

bake at 350 degrees for about 20 minutes, until cheese is bubbly and dip is warm through.

serve with dippers of choice and enjoy!

the ranch dip is simple: the remaining packet of ranch dip that i used for the buffalo chicken dip + a cup of sour cream.

marshall only invited a few people to watch the game, so i am really proud of myself for NOT over-doing the amount of food. probably for the first time in my entire life, actually.

they were winning at half time and that made for happy football fans! i made a build-your-own panini bar.

we finished up the game – well, the football fans did. i stayed in the kitchen. i don’t understand how my friend amber can be so into football. really.

well, the good news is that the packers WON, so i have another week of a happy husband.

Do I have to pick just one beer??? I love craft beers and Belgians. A few of my favorites include Leffe, Tripel Karmeliet, Delirium Noel, Rare Vos… and so many more :)

What a cool name of a beer! My favorites are Long Trail Blackberry Wheat & Magic Hat #9, both are local vermont beers. We got my dad a brewing kit for Christmas, so his beer is fermenting back home in our basement for now. I can’t wait to try it!

I love dips. I wish I was over your house last night :) The guac looks amazing! As does your buffalo chicken dip. You’re too funny about football. I do love it. I’m watching my pats now (fingers crossed that they win!!). I’m glad your Sunday has been relaxing. My day has been a little go go go. I cleaned this morning then Josh & I took the Frankster for a walk. The afternoon has been filled with work- blah.

not really a HUGE beer fan but I do love Ithaca Apricot wheat!! Ithaca is where I went to college and they have a brew house and brew their own it is SO SO SO good!!! sweet and tangy and doesnt even taste like beer (probably why I like it!)

i love lazy days that I get nothing done that I had planned—seriously, its the best!!!

yeah i had every intention of working out today but instead craved sweet potato, banana and oatmeal all day long. it was a carb fest and i loved it. my hubs was happy the steelers won (my future home!!) so it was a peaceful day in the delicate place (tee-hee).

That panini bar is GENIUS! I love it! When I do cooking parties for kids, we sometimes do quesadilla bars.

I cant drink lately because of liver issues, but you know that vanilla basil beer thingy from food buzz? yea, i like that!

I dont know squat as far as football! I really dont know how you do it with marshall being such a die hard fan. I think i hate football so much because the football lovers at the gym turn all the tvs to the SAME espn coverage! They cant have one tv, they must have like seven!

If I had to pick a favorite…root beer included??? I kid, but really I am pulling the boyfriends leg to do a root beer brew. If I had to pick good old beer favorite, I’d probably pick Shiner Bock (it’s been one of longstanding favorites). Their brewery is on my to-visit list.

No beer at ALL for me. I remember when I was younger people always said I’d acquire a taste for it. After SEVERAL tries, I gave up. I never got used to the way it tastes. Blech!

I’m not rooting for any of the teams since the two I was pulling for lost. What’s cool is the superbowl will be just 45 minutes away from where we live! It will be CRAZY that week!

Football bores me too. I try to stay interested for Andy’s sake but meh. He is a Chargers fan but my dad is a Packers fan.

That buffalo dip and the make-your-own-panini bar looks like so much fun. We have a griddler but we rarely bring it out since we have NO counter space. :(

1. In Canada we have a beer called Rickard’s White that I LOVE. Comparable to Blue Moon in the States. There’s a microbrewery in my hometown that makes a pretty darn good blueberry ale that I love as well. You clearly know I’m a beer gal ;)

Hahaha, I spent most of yesterday in my pajamas. No shame in that! I use my dog as a pillow sometimes too, he’s just so soft and warm.

Football… I think I love it because I used to be a cheerleader and I kind of just like dressing up. And the food. And the yelling. My favorite NFL team is the Colts, but that’s just because of Payton Manning. ;)

i only get into football for super bowl and grey cup (canadian football league version of super bowl). and i don’t care who wins, just want to see good football!
don’t drink beer…but i’ve had a hankering to make beer bread the last few days. can i buy JUST one bottle of beer?!

That buffalo chicken dip looks amazing! I have always wanted to make it but I never have gotten around to doing so. I love how all of the food looks for your football party! I am not rooting for any team because sadly, my team has already lost, the Philadelphia Eagles. Maybe next year? :)

I know what you mean about over doing it with food, I do that too when having people over, I get it from my mom, she cooks for an army when having guests over or holidays, I blame her ! : p

Mike is a BEARS fan so this should be a fun Sunday ahead, lol, ahhhhhhhhhhhhh I so do not want to be home if the bears lose , I really dont get into football but I do support the bears, just for Mike : )

I’m definitely not a big football fan but my Dad is, I had to watch every game while growing up. Luckily my husband doesn’t like football either so we watch a movie or play phase 10 together on football nights. That guacamole looks delicious though!

Sometimes you need days like that..doing.nothing. And eating cereal :) Its good for the heart and soul, trust me. I love blue moon + a slice of orange! There are a ton of belgian beers that I fell in love with but hard to come by here in the US.. but I love my blue moon

I’m not a football fan :/ So I have no clue what’s even going on.

And I’m not much of a beer fan either – if I do drink beer then I’ll get a Corona or something similar. Nothing exciting.
