hey guys!
i have had a bit of a hard time focusing on regular exercise and clean eating lately. i think this is due to a few things:
- i felt under the weather last week and workouts were not in the cards.. plus i was super grumpy! hormones? maybe.
- marshall had the whole week off work last week so i decided not going to the gym at all and eating dessert with him was a good idea.. every day.
- the majority of my co-workers had the whole week off last week, so it didn’t feel like a real work week, it felt like it was still the holidays. and i acted like it.
i woke up today refocused and full of good intentions. my stocked pantry and fridge definitely helped fuel the motivation fire. the fact that i will be on the beaches of mexico in less than three weeks is another reason to refocus and get back to regular meals & moves. although, despite the crappy habits as of late, i still feel ready to go as is.
breakfast was enjoyed while watching the snow fall outside. i <3 snow and don’t care what you haters say.. i hope it snows thirteen feet this week!
1 cup plain chobani greek yogurt, the last of my nature’s path ancient grains granola & a dollup of skippy natural peanut butter.
i know i said i need to switch up my breakfasts, but this one is so good and so filling! i am going to aim to have a different breakfast every day this week, though. mark my words!
lunch was eaten while browsing the interwebs. here are a couple things that caught my eye..
these mugs were featured on my owl barn today.
(source.)
um, who doesn’t want to find a cute little animal hiding in their mug?! i need these. at least the owl one, if not all three critters.
(source.)
i also came across this website called blog2print.
so cool.. you can turn your blog into a book! i think this would be a great thing to do. granted, i would probably have to break it into a few books because i have so many posts.. but it would be fun to have meals & moves on hard copy to pass down to my kids. that is, if i ever have them. if not, i can pass the books down to penny and randy.
the website lets you generate what your book would look like. i played around with it and it’s really neat. it does all the work for you! although printing out all of my posts could get really pricey.
i also will be doing this with my things i see photo blog at the end of the year. i can’t wait to have a book of 365 photos from 2011!
where was i? oh, yeah, right.. lunch.
turkey + laughing cow blue cheese + spicy honey mustard + salad greens on whole wheat. and steamed veggies.
sometimes convenience trumps price and i give in and buy the bird’s eye steamfresh veggies. now is one of those times. the bags were on sale the other day for $2 a pop. the bag says it is 4 servings, but in all reality it is two servings.. so $1 for a serving of veggies isn’t bad! not bad at all, when all you have to do is pop the bag into the microwave.
work went by incredibly fast today, and since i was so focused on getting my gallon of water in, i wasn’t too hungry when snack time rolled around. it is amazing what a belly full of water can do for your appetite.
i did eat my snack, of course, because i need to keep that metabolism pumping. (i just typed “pumpkin” three times in a row and had to keep backspacing before i got “pumping” right.. geez!)
two clementines + a muscle milk
more carb heavy than usual since the muscle milk already has carbs.. but i am addicted to clementines! i can’t go a day without eating a few of these little guys. plus, in my opinion, i think carbs from fruit are OK to be a little heavy on. i mean, it’s fruit!
since i haven’t been working out at all lately, i don’t have much of a schedule going on. i was pretty open to any sort of exercise so i just did what i wanted. here are the details:
treadmill.
| time | speed (MPH) | incline (%) |
| 1 min | 6.0 | 0.0 |
| 1 min | 6.5 | 0.0 |
| 1 min | 7.0 | 0.0 |
| 1 min | 6.5 | 0.0 |
| 1 min | 6.0 | 0.0 |
| 90 seconds | 6.5 | 5.0 |
| 30 seconds | 4.0 | 5.0 |

| 1 minute | 6.5 | 0.0 |
| 1 minute | 6.0 | 0.0 |
| 2 minutes | 2.0 | 0.0 |
this is kind of random, but as you can see, i warmed up with 5 minutes of various speeds at no incline, then for 20 minutes i ramped up to 5% incline and did 90 seconds of running/30 seconds of walking fast. i finished up with another 5 minutes no incline (same speeds as the first 5 minutes) and then cooled down for a couple minutes. i went a little over three miles.
i finished my workout with 10 minutes of stretching. getting closer to touching those toes every day!
like i told you guys yesterday, on the menu for tonight’s dinner was chicken enchiladas.
i never follow a recipe for enchiladas, but some of you said you can’t wait for the recipe.. so i will share what i did tonight!
ingredients:
- 16 oz chicken breast tenders
- 1 (10 oz) can rotel
- 1 (7 oz) can diced green chiles
- 2 (10 oz) cans green enchilada sauce
- 1 bunch fresh cilantro, chopped
- 1 cup shredded cheese (monterey jack & cheddar blend)
- 6 whole wheat tortillas
to make them, i first poached the chicken in a bit of low sodium chicken broth. i find that either boiling or poaching chicken (as opposed to baking or pan frying) makes it easier to shred. it retains more moisture.
after the chicken was cooked through, i shredded it and then combined it with the rest of the ingredients (except for the tortillas, of course). i reserved a bit of the cheese and the sauce for the topping.
i filled the tortillas with a bit of the mixture and then tightly rolled each enchilada before placing into an oven safe baking dish.
once they were all rolled up nice and tight, i topped the enchiladas with the remaining cheese and sauce.
i covered the dish with foil and baked at 350 degrees for about 45 minutes. i uncovered them for the tail end of cooking so the cheese could get nice and bubbly.
i had a one enchilada serving and marshall had a two enchilada serving. i topped mine with salsa and oikos greek yogurt.
for a little extra fiber, flavor and fun (and alliteration, apparently) i served the enchiladas with a side of black beans.
i <3 mexican food.
i am slowly but surely getting better at scaling back my recipe sizes. we do like leftovers in our house, but since it is just marshall & i, i try to not cook for a small army. lord knows i grocery shop for a small army…
i made just enough enchiladas for us to eat for dinner and have two leftover portions, one enchilada for me and two enchiladas for the mister.
i am now diligently working on filling out thank you cards. oh, speaking of..
thanks for liking my thank yous!
some of you told me how much you liked my thank you cards after i posted this photo the other day.
we took the photo with the signs on our wedding day. it was actually an accident that we had the signs backwards at first, but it was funny and marshall really wanted to use the mess up photo. my maid of honor, kristen, made the signs for us. i love them!
i wanted the photo transformed into a postcard so i wouldn’t have to deal with envelopes. smart, eh?
lucky for me, i know someone who is in the card bizz. chances are, you do, too! lisa’s mom (from i’m an okie) has a card making business. if you are ever in the market for cards, you need to check her out at winning photography solutions. she does amazing work and her prices are very reasonable! thanks, denise!
welp, this is long, so i will letcha go now. see you tomorrow!
Qs~
1. do you prefer to follow a recipe (whether it be your own or someone else’s) or just make it up as you go?
2. any cool things you have seen in internet land lately that you’d like to share with the class?

I can’t decide if that mug is totally cute or totally creepy with the critters!
I love that you are using the backwards, mistake photo. ha! And I love that you are using Lisa mom to do the postcards!
I like to have a recipe to follow, but will usually tweak it.
We have 1/4″ of snow here. And all the schools and businesses are opening on a delay. LOVE it.
i never use a recipe. i ususally look at 10 recipes and get a “jist” in my mind of what i want to do/use. im always nervous about how it will come out but i havent had any mess ups yet :)
thats cute that you guys had the backwards signs. you two are so out there awesome. im too traditional and boring.. gahhhh!!
I almost never use a recipe! I like to get creative ;)
I WISH I could improvise a recipe! Anytime I try, it comes out terrible. It’s just not in my genes because my mom isn’t the greatest cook…lol. I can follow a recipe and make a change or two here or there and it’ll turn out ok though. My husband on the other hand, can really throw down in the kitchen. He was a souschef in a supernice restaurant for a long time about 10 years ago and learned a lot. He’s TRIED teaching me things, but I think either you can cook or you can’t…lol. I still try anyway though!
Those mugs are SO super cute!! I’m going to have to try out those enchiladas too…YUM!
I love snow too. Although, I have never lived in it. Not sure what I’d think of it if I had to drive it in.
Omg those mugs. I want a bear one.
I made my old livejournal into a PDF file on my computer. So fun to read through.
Thank you cards were the bane of my existence. The post card idea is awesome!
1. I like to start with a recipe and then put my own spin on it.
2. The new Amy Sedaris book looks pretty fabulous.
I’m not sure what’s cuter, those mugs or your thank yous!
i typically kind of do my own thing unless i see something killer and HAVE to make it as-is! also, i tried greek yogurt in lieu of sour cream tonight…amazing. i’m hooked!
I’m with Teri, those mugs might be just slightly scary.
I usually make things up as I go when I’m cooking, but I keep a post-it by my side so I can write stuff down as I go. Or write myself Operation Beautiful notes when my food turns out crappy.
Have a great night, lovely!
All that fantastic info and I want to know is how is the Laughing Cow blue cheese? I haven’t even seen it here yet.
delicious. i am a blue cheese fiend so it really is amazing.. 35 calories and all the flavor.
I LOVE the mugs!! I want the owl one too… soooo cute! And that blog book site kicks serious ass.
Thank you so much for allowing me to do your cards. I am so glad you are pleased with them.
OMG. I need that polar bear mug. Seriously.
Those cards are so cute!
I’ve been eating clementines nonstop lately too; hey, I gotta get that vitamin c ;)!
& I LLLovee enchiladas! Mexican food rules.
I think that mug would FREAK ME OOOUUUT if I didn’t know about it… AND… I want them ALL… so I can serve coffee to guests and freak THEM out!! :D
I rarely follow a recipe, and as much as I make enchiladas, I never make them the same twice!! :) yours look SO good. we’re due for some, I haven’t made them in a few weeks!
I am the worst recipe improviser. I HAVE to follow a recipe.
Love mexican food! Your enchiladas look so good!
I usually follow a recipe but modify it as I go along to make it “mine” :)
I am making these enchiladas soon. The filling looks too delicious!
Those mugs are too cute! I hope you do buy the owl one!!!
LOVE the blog to book!! I would love to do that! I will have to check that out, thank you for sharing that, now why couldn’t I come up up with that idea and make money?!! lol!
Loving this recipe, they look good! My fiance and son love chhix enchiladas and I usually buy them premade at walmart , I should make them homemade, they are so easy!
Have a great day girl! xoxoxo
My friend is turning her blog into a book. She started blogging when her first child was born and now with her second, she wants to make baby books from it. I think that is the best idea!!!!
Mmm, those enchiladas look fantastic. I’m looking for a good enchilada recipe for next weekend.
Have a great day hun!
Those enchiladas make me wanna go buy the ingredients and make the for dinner tonight! I heart mexican food!
Have a great day! :)
Those mugs are cute! I love how pretty and delicious your breakfast looks! I absolutely love how amazing those enchiladas look. Mexican is my favorite type of food and I am always looking for new recipes. I am going to have to make these. So yummy! :)
Glad you’re feeling back on track!! I felt like the gym was already starting to empty out when I went this morning. I guess some resolutions just don’t last….Um your breakfast? I drool. I=super jealous. And those mugs are adorable. I want one with a bulldog in it. Enchiladas make such a fabulous dinner & I LOVE having the leftovers (I think they taste even better).
1. do you prefer to follow a recipe (whether it be your own or someone else’s) or just make it up as you go? I like to do a little of both. Some nights I follow, some nights I just go
Sometimes I follow recipes, sometimes I wing it.
I need to make enchiladas. Those look so so good.
I really love those Thank Yous. Can’t say it enough.
Great job getting back in the swing of things, it can be tough, but once you start you can’t stop :)
Your breakfast looks amazing and I want an owl mug too!
Granted, im fairly new to visiting your blog so if you’ve always done this forgive me..but I LOVE that you’re including your recipes in your post. I am always in a rut with eatting the same ol, same ol’ and you’re giving me options and I LOVE that! Thanks and keep it coming!!
Oh and as for the creature mugs..i dunno..they scare me alil..just a tad creepy in my case but i can see how you would think they are cute. heehee!
Love the thank you cards..we wanted to do that but ended up hiring a pretty bad photographer (that we found out when it was too late)..POOTERS!
Haha, I love that you said ” interwebs” – Meeker and I say that all the time.
Good luck getting back in the groove…I always have the hardest time getting back on track after the vacation. Have a great Tuesday, Love!
Again, love those cards. And love enchiladas. Yum!
I go both ways, sometimes I make my own recipe and sometimes I use someone else’s- I love both blogs & cookbooks, but I always change ’em up in some way!!
Cool things I’ve seen on the internet… hmm. I’m a blog girl! I read lots of blogs. :P
xo
I really need to switch my breakfast up someday…I eat the same thing everyday and I’m kinda bored.
I only use a recipe when I’m baking because I would surely mess it up! When it comes to lunch or dinner though I just make stuff up.
I tend to stray when following a recipe. I like having it in front of me, but I might now like everything I see on it, so I fix it.
I’m in Wyoming and I hope we get 13 feet of snow this week too!
Oh my gosh, I saw some mugs like that at World Market a few weeks ago except they had the print of the animal painted on the outside and the colorful animal sitting on the inside (zebra and a giraffe). I thought they were the absolute cutest!
I love your wavy lunch plate! I prefer to just go with the flow when it comes to dinner recipes, but when it comes to baking, besides making minor substitutions, I NEED a recipe. Otherwise I feel lost! If I was on my own, I wouldn’t have the first clue how much baking soda/powder to combine with the flour.
Haha! After reading your post the other day, I checked out damnyouautocorrect.com! Oh my gosh! Freaking hilarious! Great ab workout!
gah those animal mugs are too much! i would be so surprised if i found that in my cup haha. i like a frame of a recipe but i always change it with my mods! cool internet find: gazelle.com i’ve sold old electronics to them before and made cash money. seriously not spam, i sold an old camera in good condition and other randomness that i don’t use anymore and got like $300.
I blame everything on hormones. :) BTW, that parfait looks amazing.
cutest thank yous, EVER.
i LOVEEEEEEE muscle milk light! i need to get to costco, apparently ;)
xo.
I’m a little embarrassed that I purchased the Nature’s Path granola after seeing it on your blog and totally marfed it down before you did. LOL.
I love to begin with a recipe, but it is very rare that I will follow it. I consider it more of a guideline. One of my favorite things to make is your Turkey Garbanzo Bake…but I use ground chicken…and I make it in a jumbo muffin tin..and top it arrabitta sauce…and, and, and :). I’m making them this week. NOM!
I think I need that fox mug :)
haha, that was my third box! marshall and i both eat a lot of it.
Oh good, that makes me feel better. Costco is a stone’s throw from my crib. You best believe I’m hitting it up this weekend to replenish my stock.
Oh my, I LOVE those teacups! The owl one is incredibly cute.
love your breakfast!! i like having a recipe to fall back on, but i usually tweak it!
Steamfresh veggies save my life on a regular basis!!!
You totally need to get that owl mug.
I rarely follow a recipe exactly, but I am also rarely creative enough to think one up on my own! I’ll only finalize a recipe after tweaking it about 5 times.
i love those mugs, so cute!
I’m a recipe gal. I am not confident in my kitchen abilities to be anything else. That’s ok though.
And I’m so glad the cards turned out and you are happy with them!
I’m pretty much a slave to recipes. They make me feel safe.
those mugs would make a pretty funny april fool’s joke! and my little nieces would love them.
i NEED to follow a recipe…easier and i love to try other people’s ideas. although recipes are no guarantee of a great finished product!
enjoy your snowy weather! great to see someone who embraces winter! :)
I have an Easter mug like that! It has a little chick popping in to say hi once you finish your coffee. It’s my favorite:D
Hey Girl! Love Love Love your blog! It actually has inspired to start Body for Life. I am on Day 2. I love to cook (mostly bake :)) so this is hard to transform some of my old habits. I am now trying to welcome any new healthy ways of cooking. I might the enchiladas but have veggies on the side. Have a great day!
a dollup of skippy natural peanut butter = i see that, nice :)
the mugs are adorable!
and i have seen blog to book sites before. i WILL whenever i am done blogging, whenever that is…have every single post, word, photo catalogued into a book. This has been 1000’s of hours in the making and it’s all digital..I want Skylar to have these pics of her for when she is older and when im 80 i can look back on what i was cooking in my 30s :)
I absolutely love that turn your blog into a book site–thanks!
I prefer to follow a recipe the first time I make a dish thats new to me but then like to add my own spin to it the next time around.
I love the snow too! The Swedish kind of snow though (light+fluffy), not this icy mess that we have in North Carolina right now :)
13 feet of snow??? I think I’d like it more if 1)I had hills to ski/sled and 2) if it didn’t shut down the whole dfw metroplex (people have a hard enough time driving in the rain down here as it is).
I do, however, hope you get a chance to hit the slopes this weekend and come home to a mug of hot cocoa with an owl in it.
omg those mugs are so cute!!!! haha and those enchiladas look so bomb!
