two days, two dinners.

this whole weekend has been non-stop. i am finally sitting down and relaxing, but i keep thinking about how i have to be back to work in less than 11 hours.

at least i am only working two days this week! yep. monday and tuesday are business as usual, but come wednesday i will be off for the holiday. i think i will be able to make it to wednesday just fine Smile

well, as my title eludes to, i am going to show you a couple dinners!

saturday night, a few of my friends had a thanksgiving get together.  we started off with a variety of cheese and crackers. i am a sucker for the cheese tray.

for the main course, everyone was in charge of a dish.IMG_2662

i was in charge of sweet potatoes and decided to make a candied sweet potato casserole (i loosely followed sabrina’s recipe). this was actually my first time trying sweet potatoes in a sweet setting (rather than savory) and so i wasn’t quite sure what to expect.

my VERY most favorite thanksgiving side: stuffing! (some people call it dressing.. i always call it stuffing even if it wasn’t technically stuffed in the bird!)

a delicious salad with craisins, apples, feta and toasted pecans.. dressed in a poppyseed vinaigrette.

as you can see, the rolls were so big that mine didn’t even fit on my plate!

i wonder who decided traditional thanksgiving dinner would consist of these specific elements. i mean, i know this is NOT what the first thanksgiving feast had.. it would be interesting to find out who decided that green bean casserole, candied sweet potatoes and turkey with stuffing would equal thanksgiving dinner.

although, like i said, this was my very first time trying candied sweet potatoes! and i suppose there are lots of dishes that one person deems “traditional thanksgiving” and the next person wouldn’t think to have it on their table for the holiday.

for instance: i asked marshall if he had any special requests for this thanksgiving (our first as a married couple!)—he said fruit salad. which is, by the way, diced fruit mixed with whipped cream. this is something marshall grew up eating on thanksgiving, but my family never had it. i will be making fruit salad on thursday and it will become a new tradition of my own. i am excited to adopt other traditions that marshall has from his childhood.

anyway.. enough pondering!

onto the next dinner.

tonight  we invited marshall’s family over for dinner since we won’t be able to spend thanksgiving with them. i planned the menu and it consisted of:

  • slow cooked ham
  • danica’s healthy potatoes au gratin
  • romaine & spinach salad with cucumber, bell peppers, carrots and grape tomatoes
  • fresh baked rolls with my mom’s homemade jam
  • pumpkin pie with fresh whipped cream for dessert

i put the ham in my slow cooker on low for seven hours. that’s it. put the ham in, all by itself, turned the slow cooker on and let it do its magic.

if you are curious, i bought a bone-in, partially cooked, butt end ham (sounds freaktastic and i apologize to you vegs that are reading.) i put the ham cross section down and let it cook in its own juices.

when the ham was done, it literally fell off the bone. it was so tender and juicy! special thanks to momma b for the know-how and giving me the ham how-to Smile

these were just rhode’s rolls. i actually attempted to make whole wheat rolls from scratch today. it is a story for another day.. but let’s just say i am glad i had backup rolls on hand!

1. are there any dishes that say “thanksgiving” to you but they may not be traditional for every one else? we always have a bowl of black olives and a bowl of sweet pickles on the thanksgiving dinner table. not sure if this is very common?

We also had an olive/pickle selection at our Thanksgiving dinners… weird. And we also had a fruit salad in whipped cream thing! Our weird, nontraditional dish is a rice dish that cooks up brown and creamy… it was my grandmother’s recipe but I personally have no idea how to make it. I’ll have to ask my sister.

That giant Costco pie makes me smile.

No liquid on the ham huh? That’s interesting to know!

Thank goodness for back up rhodes rolls:) Your candied sweet potatoes look so good.
I think the olives is common but I am not sure about the pickles. We always have funeral potatoes…maybe that is just a Utah thing.
Yay for only two days of work.
I made dinner tonight for family…I am wasted.

I am so excited for Thankgiving! I never did homemade Turkey Day until I started dating Mitch, my family always went to a fancy hotel brunch. So that’s a little out of the ordinary. We have all the traditional stuff, and I love it…I don’t think one thing will be healthy, but it’s just one day! (and when I host it someday, there will be)

wow, you cooked 2 dinners i cooked 1 and i’m exhausted – let me be the sous chef and come cook at my house everyday!! so glad your ham turned out delicious, it looks good too – love the pups and their bones!

We had this thing called “stained glass salad” which is a fruit salad inside red jello. We also did spinach casserole instead of green beans and we did the exact same sweet potato dish with the marshmellows on top. Now that I cook my own dinner, I forgo the traditions and make healthier dishes. I still like to make a ton of desserts though. That’s a tradition I will keep forever!

we always have a relish tray; olives, pickles and then a fresh vegg tray as well. nothing says thanksgiving like stuffing and sweet potato casserole. can’t wait!

well, since I married a kiwi (new zealander) I make lamb for thanksgiving along with turkey and along side of that we make “roasties” (aka raosted root vegetables). Its fun but our table gets bigger and bigger each year with the addition of foods, hehe.

Two amazing looking meals for sure. Your sweet potato casserole =yum! Great job on your first attempt. I love the idea of a pre-thanksgiving, thanksgiving. And whoop whoop to your second dinner too! Entertaining is so much fun. I made brunch yesterday for Bryan, Mandi & Josh. It was simple, but tasty.

Your dinners look delicious!

I’m not sure we have anything that isn’t too traditional for Thanksgiving…turkey, potatoes (mashed and roasted sweet), cranberry sauce, carrots, corn, stuffing (I call it stuffing no matter what, too…we have both stuffing and dressing if you want to get technical), bread, salad, and lots of wine!

The last dinner I prepared was a baked penne for some friends about a month ago…but I’ll be making some appetizer dishes for my mini-HS reunion on Wednesday! I’m really starting to love entertaining. :)

We also have the olives/pickles on the table at our Thanksgiving! I’m glad we’re not the only ones. :) We always have this corn casserole, it’s basically creamed corn with cornbread mix I think? I don’t know, I’m not a big fan. The rest of the family is though!

The last meal I made for others was a couple weeks ago. Unless you count for my boyfriend, in which case…every single day.

Our Thanksgiving is always traditional (food-wise) but my husband’s family always makes pumpkin bisque. It is SO good!!

I’ve seen so many sweet potato dishes lately and it’s making me SO EXCITED for Thanksgiving…they’re hands down my favorite dish of the holiday!! Every year my aunt makes spinach dip in a pumpernickel bread bowl. Ohmygod it’s delicious. Not exactly “Thanksgiving” (and probably one of the most unhealthy things you could ever put in your mouth), but I don’t care. I eat it until I’m about to puke :)

We grew up with food salad, too funny. I thought we were the only ones. Although these days Lori and I make a avocado kale salad of some sort!!

I am getting more excited for thanksgiving now!! I love pumpkin pie…and yes always room dessert. Actually I think I have two stomachs, one just for dessert : )

At my Mom’s Thanksgiving dinner we have a dish that is kind of a tradition from her side of the family (I’m not sure if it’s a French thing or a New England thing) – it’s a meat dressing. It’s ground beef and some kind of sauce, but I’m not sure what! She makes it every year though and only for Thanksgiving or Christmas. I’ll have to ask her for the recipe when I go home this week…

marshall’s “fruit” salad sounds like what my hubby’s family eats = its called ambrosia salad and consists of:

mandarin oranges
coconut flakes
pineapple chunks, maybe its crushed, can’t remember
mini marshmallows
and I think its a coolwhip/whipped cream base

I love it, but my hubby doesn’t heheh. its a nice palate cleanser, just a few bites is enough for me. gotta save room for PIE.

Yep… agreeing with many of the above… the “relish plate” with olives and pickles! And we usually have homemade apple butter for the rolls.

Speaking of rolls – I’m the roll maker in the family. Try this recipe, it works for me every time:

Feel free to sub in whole wheat bread flour (I always use bread flour for this, not just regular all-purpose flour). I also only use 1/4 cup of sugar because I don’t like sweet rolls… and I use real butter instead of margarine. ;)

I think the last time I cooked for anyone other for Dan was probably a work function. Of course i’ll be cooking for everyone on Thanksgiving. And then the soup fest the night before that’s become a tradition.

I don’t think we really have anything that isn’t typical on Thanksgiving table.

Growing up, we had Marshall’s fruit salad from a deli. It’s called Ambrosia and usually has coconut in it. It’s awesome though we didn’t have it at Thanksgiving.

I don’t really get rolls. We never really had them (except for leftover ham sandwiches), and I don’t miss them. Am I a carb bigot? Should I change my blog title?

I’m gonna crave ham sandwiches now.

(PS. We have 1/2 of snow and everything’s shut down. Seattle’s such a wimp.)

ohhh man those sweet potatoes look sooo good!! I am making sweet potato biscuits for Thanksgiving! I prepared pheasant last night for the first time :S. my bf is a big hunter so he brought four breasts home. It tasted a lot like chicken, but had the texture of steak. It was okay. I also made sweet potato chips! They are so so so good. I am dreaming of them this morning :)

My family does olives and pickles, too! We typically do green and black olives, sweet pickles, and then something odd, like pickled peaches or pickled watermelon rind.

Eeee! I just got so excited for Thanksgiving after this! I love incorporating new traditions, too. A couple of years ago, we started doing a craft/art project at Thanksgiving, and it’s one of my favorite parts of the day! Also, bread pudding is always a “must” at our thanksgiving dessert table…I don’t think that’s a common dish for the holiday.

I made pizzas for my friends a few weeks ago, and like you I LOVED it…it fills me with JOY to make and serve food to other people. :-)

YUMM i cant wait to see all of the thanksgiving food in the blog world!!! I am making my homemade cranberry sauce that I made last year it is SO good! it has granny smith apples and orange zest in it! YUM

I prepared a rotissere chicken last night, roasted green beans nad roasted potatoes last night for dinner!!! No turkey until Thursday because then it will just taste SO good!!

Oh and one of my favorite dishes is sweet potatoes w/ marshmellows!!

every holiday dinner at our house includes thick, fluffy bread (white & wheat) that is homemade. most people in my family enjoy it with butter and thick, gooey sweet molasses ontop. just like my great grandma bowman used to eat it! :)

My thanksgivings are never “traditional”. My parents consider themselves “pilgrims” though because they moved here from another countries (albeit in the seventies and on a plane as opposed to a ship). But ever since my mom passed away when I was thirteen, I was always in charge of the turkey and we never used the oven! I always make it on the stove and its always moist and delicious.
Hm…..last thing I made for others was my roommate. I think she likes have a chef as a roommate, I come in handy :)

We always had black olives and sweet pickles (we used to run around with olives on the tips of our fingers). I’m pretty sure my family is the only one that has the tradition of cranberry sherbet and purposely burnt rolls that were thrown across the table when asked for them to be passed.

There is one tradition that my boyfriend and I heavily debate given that all our midwest cultural values are dead on the same except: is stuffing suppose to be made with white bread or corn bread?

Being from Kansas, we’ve always had white bread stuffing, him being from Oklahoma insists on cornbread. I’m making cornbread stuffing for him this week – let’s just say he better put a ring. ;)

My family always has rutabaga on the Thanksgiving table. I have no idea how it started and that is about the only time that I see it, but I love it!

I’m not really into the whole turkey/ham thing that spells Thanksgiving but give me stuffing and cranberry saice and I’m a happy gal! Last yr my family and I went to a seafood.sushi buffet, it was bliss.

It’s been forever since I cooked for people but I need to find an easy dessert to make for Thursday!
