hey, friends! thanks for the sweet comments regarding my efforts for marshall’s birthday week. and for those of you who asked to marry me, well, the answer is yes. as long as we can have peaches and ice cream at the wedding.

let’s rewind to last night’s dinner.

meals

because i made something particular every single day last week, i really just wanted to eat something i had on hand and that would be simple. it turned out totally random, but totally delicious!

i roasted some diced sweet potatoes, broccoli and purple cauliflower. IMG_1438IMG_1446 i had served purple cauliflower at the party last saturday. my friends thought i had actually tinted the cauliflower with food coloring to make it look pretty. when i told them that is how it grows, they didn’t believe it! they asked how it grows purple, but i didn’t have a reason. i just knew that it did. i decided to turn to google and find out what exactly was up with this purple colored cruciferous veggie. here is what i found:

[The purple color is] the result of traditional selective breeding – where different strains have been cross breed and cross bred until these strains have been created. While traditionalists may baulk at the unusual colours, it is not the first time that plant breeders have changed the appearance of vegetables. Until the 17th century most carrots eaten Europe were white, yellow or purple. The orange pigment was added by Dutch plant breeders looking for a way to celebrate Holland’s royal family. The last few years has seen the introduction of purple carrots to supermarkets in Britain, along with yellow tomatoes and purple potatoes. In America, where colour cauliflowers have been available for several years, they have been a big hit with foodies. The purple colour comes from anthocyanin, which may help prevent heart disease by slowing blood clotting.

i scrambled 2 eggs whites and one whole egg, then topped the eggs with parmesan cheese. i forgot (and then remembered) how awesome parmesan cheese is on eggs!

i was out of ketchup (i know, isn’t that horrible? we ran out at marshall’s birthday party. i blame jessica.) and so i topped everything off with trader joe’s peach salsa. a close second. IMG_1454 i don’t know what it is about roasted veggies that makes them so delicious.. i really love the flavor that you get out of a nice, slow roast!   IMG_1455

to keep me from nibbling on the leftover bread pudding, i made a batch of april’s pumpkin protein bread.

my nutrition statistics came out a little different than hers. that is a small pyrex pan, and i split the cake into 4 slices.

per slice: 125 calories, 16g protein, 12g carbs (9g net carbs) and 1g fat. pretty stellar. april is notorious for high protein quick breads! IMG_1469

here is the recipe with my adjustments in bold:

Ingredients:

  • 3/4 cup liquid egg substitute
  • 3/4 cup pure pumpkin
  • 2 servings tera’s whey vanilla bean protein powder
  • 1/4 cup whole wheat pastry flour
  • 2 TB wholesome organics zero calorie sweetener
  • Dash of vanilla extract
  • Pinch of baking powder, cinnamon, ginger and pumpkin pie spice

Directions:

  • Preheat oven to 350. Spray a muffin tin or baking pan with nonstick baking spray.
  • Mix all ingredients. Pour into pan.
  • Bake for about 25 minutes, or until a knife inserted into the center comes out clean.

i topped my slice with maranatha natural peanut butter. IMG_1476

it was no bread pudding, but it did the trick!

i have to be honest, i took friday, saturday and sunday off from working out. social life, family time and birthday fun wins over a workout more often than not in my world. but i will tell you this: taking three days off from working out just made yesterday’s workout amazing! i was craving a good sweat session and i definitely got one.

here are the details:

30 minutes on the treadmill

this was a fun new routine i made up. after a 5 minute speed/incline warm up, it has an overall increasing incline and 6 minute blocks of speed intervals with a 1 minute recovery (for a total of 4 blocks). one minute cool down.

total distance was 3 miles and some change.

i hopped on the stairmill because i had my new issue of oxygen just begging to be read. i stayed on the mill for 30 minutes. i just set it to level 8 intervals and let the machine do the speed changing. sometimes that is easiest!

after a nice stretch, my whole workout ended up being 1 hour 10 minutes with a 532 calorie burn. that’s unheard of for me! i guess i really worked hard.

when i got home from the gym yesterday, there was a package waiting for me.

well, receiving my bottle of tripleflex reminded me of my october goals, one of which is to remember to take my vitamins and supplements. it’s like the world was telling me to REMEMBER to take them.. because i’ve been failing at that one lately! i thought i would go ahead and check in on all of my october goals.

eating, etc.

  1. drink a gallon of water a day. doing really well with this one! have only missed two or three days, and on those days i was close to a gallon. i feel much better when i am hydrated.
  2. eat more protein. i have upped my protein ratios and am eating close to 40% of my calories from protein each day.
  3. remember to take my vitamins! kick me in the face, i need to do better at this one! i need to bust out my pill keeper.

exercise

  1. increase mileage. i got 5 miles in yesterday. i have been doing good at this but i really need to ramp it up if i want to hit my end of year goal. also, i need to update my mileage page. i have been keeping track on paper but i need to put it on the blog.
  2. be consistent. aside from the whole 3 days off last weekend, i have been very consistent at hitting my workouts. birthday weekends are a definite exception. and i got right back on the workout wagon, so no harm, no foul.

organization

  1. flipping finish unpacking!! getting there. we have unpacked quite a bit this month and also made a lot of progress on making our house a home. i hope to be totally unpacked by the end of the month, we’ll see.
  2. put things away. doing better at this one because of penny. she ate a couple pairs of shoes and now i’ve learned my lesson!

knowledge

  1. read a book. i should probably start one so i can finish it…
  2. look into going back to school. i talked to my boss about this. they are paying for me to go to school but want me to hold off for now. so this one is on the back burner, unfortunately :(

and that’s that!

two thirds of the way into the month, i think everything is going pretty good for the most part! i will do a month-end review in a couple weeks.

well, we are going to dinner with marshall’s grandparents tonight for his birthday. i guess birthday week has been extended just a bit. oh well, at least i don’t have to make him dinner! just kidding, i really love making him dinner. or making anyone dinner, really. come over to my house, i will make you dinner!

Right now I don’t take any vitamins, but I do take plenty of protein powder and soluble fiber. And of course I have a giant bottle for vitamin C for when I’m getting sick.

And I love the idea of peach salsa on eggs. I love salsa on everything but not my eggs for some reason (I too am a ketchup girl) but I could totally be game for some peach salsa.

I had to revise this comment twice because I kept typing peace salsa??! I found that amusing.

I take vitamin d because well in Washington we like to lack sunshine. Doctor’s orders! I haven’t been very good about following orders :/

I take vitamin C, B complex, D3, calcium, and fish oil every day. I was taking a probiotic but ran out, and I need to get back on that because my tummy cooperates much more that way.

My favorite roasted veggies are brussels sprouts, but honestly it is the only way I really cook veggies, so it’s hard to pick just one!

Right now I only take a multivitamin (a gummy one) each day :)

OOOHHHh Good luck on the Mushroom recipe. I am definitely voting for you, but good luck!!

Roasted veggies deserve their own spot on the food pyramid. I think my favorite is brussels sprouts and squash, together.

Your goals are always to wonderful. I swear I have goals but I never think to write them down like you do. I think I will start. It’s really a great way to keep everything in check.

Oh and ps- Not taking any vitamins at the moment, just my stomach pill aka, magic drug that helps me live my life and forget about my stomach disease.

I don’t take any supplements currently, except a multi-vitamin which I should be better about taking.
I’d love to hear more about the glucosamine supplement, because I think I’ll be needing one after all this running. I’m sure my joints would appreciate it.

I used to take multivitamins but couldn’t stomach always getting that nausea feeling! So I routinely take Vitamin A, B complex, C, D, Biotin, as well as fish oil complex and of course some Adora calcium chocolates for dessert..I mean, for the calcium ;)

I’m trying to take Adora calcium disks daily – they are so good but expensive. I also semi occasionally take Biotin which is supposed to make your hair and nails strong I believe!

I like almost anything roasted (except for maybe cucumber…). But I;m so impatient I usually microwave it. but roasting always delivers better flavor. Your roasted plate looks gorgeous! So colorful, like a gay pride flag.

I take calcium because i used to have osteoporosis (eating poorly and being a cardio junk will do that) and a multi. I actually eat two childrens vitamins! I know, its pathetic, but I think they taste good!

yay to supporting breast cancer! my mom sadly died from that horrible disease so I’m all about promoting the health of our “ta tas”.

I LOVE roasted broccoli!! I also don’t take any vitamins as of late. I just can’t justify spending the money when I’m broke! That’s one thing I can’t wait to have money to spend on because I feel SOOO much better when I take my fish oils!

I currently take fish oil (enteric coated for NO FISH BURPS yuck!), a women’s daily multi, and vitamin C during the sicky season. I need to start taking calcium during marathon training to keep my bones strong, I’ve been thinking about getting the Adora chocolate disks to make calcium fun. ;)

I love roasted vegetables too. Yum. I don’t really have a favorite (though I do probably roast sweet potatoes the most, and lately broccoli too). I love most of them, but this week I’ve also really gotten into roasted carrots for some reason. Mmm.

I’ve also semi-recently become kind of a vitamin whore. I take a multi, d3, b12, extra strength biotin, hair/skin/nails (my nails keep peeling! it’s freaking me out), glucosamine/chondroitin mix, a separate msm (haven’t been able to find all 3 together–see, I NEED that supplement *wink wink*), umm….magnesium, CLA, & fish oil. Phew. Oh, and a probiotic too.

Guess my Dad has rubbed off on me, he calls himself “Mega Vita-Man” LOL and takes ridiculous amounts.

I take pre-natal vitamins. I’m not trying to have no chillun though so don’t get all freaky. A few rando’s told me it’ll help my hair grow faster so I started taking them. They work and my nails are super strong! Yay baby pills!

favorite roasted veggie? that’s a tie between squash (bnut usually), sweet potatoes, and brussels sprouts. ooook and broccoli. i guess i really like roasted veggies!

favorite quick bread? love all quick breads but really really love my mom’s famous banana bread with nuts & chocolate chips!

I take adult’s chewy mulit vitamins, fish oil and just started taking a vitamin D/calcium supplement that the doc gave me to “help” with my leg.

Fave quick bread: cranberry orange
Fave roasted veggie: broccolini

I take a mulit, vitamin D, fish oil, a b-vitamin suppliment and two calcium/magnesium suppliments at night. (For anyone out there having trouble sleeping, take a couple of calcium/magnesium suppliments at night! They help relax the body, which helps relax the mind.)

Geesh, that’s a lot of pills. Fortunately my company just introduced a “wellness” spending account that covers suppliments. (And protein powder! How cool is that???)

2. i don’t eat bread but when i did it was sourdough
3. i take fish oil, calcium, vitamin D and probiotics since i don’t eat dairy.

i loved all your birthday posts for marshall! you are the sweetest spouse ever, and i definitely considered proposing marriage to you after reading it all as well. maybe in san fran. who knows?

the potatoes are horrible. horrible and delicious. Boil 10 russet potatoes. Let them cool completely (can stick them in the fridge or freezer to speed it up). Process potatoes through an electric grater (My food processor has an attachment) Mix potatoes with 12 oz organic cream of chicken soup (cream of mushroom if you’re vegetarian), 1 bunch diced green onion, 16 oz sour cream and 10 oz each of shredded medium Cheddar and Monterey Jack cheeses. Pour into baking dish and bake at 350 until warm–about 30 min. :)

Vitmans and supplements I too need to work on taking are Viactiv and Dim-Plus. An old man at Sams Club walked over to me and had me try the Viactiv chews and I asked him if my mother had sent him. Dim-Plus because my doc said that it helps suppress pre-cancerous issues I just can’t seem to stray from.

Only veggies I have roasted are bell peppers so I will stick with that one and quick bread..I’m going to say a vegan blueberry muffin. That still counts right?

Oh AND I have a tentative plan to do the Las Vegas Santa Run, we have to dress up like santa for it. If its cheesy then it gets my attention. So in order to check off my Run a 5K goal on my 2010 bucket list I have some work to do.

These days I’m taking a Nature’s Made multi for women. It’s been great so far. Other multis seem to give me stomach problems, but not this one! I used to have such a hard time remembering to take them so I’ve found that if I leave them on the kitchen table, I’ll never forget. I mean how could I when they are staring me in the face during dinner?!

Right now I’m loving roasted sweet potatoes. I can’t seem to get enough. Last night I roasted one up and then threw it in with my chicken curry dish. So good!

2. I love banana bread, esp. with a heavy slatering of butter. What a treat!
3. Oh, man, I am taking a ton of stuff right now. I’m struggling with migraines and I’ve been told that a few supplements can help minimize migraines so I was on that in an instant. I’m currently taking:
– whole food multi-vitamin
– licorice root
– a B vitamin power mix
– Omega 3 + Vitamin D fish oil
– magnesium
– cranberry supplement (to try to prevent those nasty UTI’s)
– Folic Acid
and a few that I can’t remember the names of off the top of my head. I feel like a druggie!

favorite roasted vegetable?!?! ummm so many iots hard to choose! i love roasted brussels and cauliflower and red onion the most I think1 but then again I also love roasted green beans! YUM

that protein bread looks awesome, april’s recipes are awesome! i def need to try that one soon!! my favorite quick bread would DEF be any protein loaf like pumkpin or banana protein loaf! the BSN banana nut bread protein is SO good in baked goods!

currently i take fish oils and multi (try to remember everyday!)
