if you think my title is eluding to me finally posting my wedding photographs, you are dead wrong. my procrastination station self still hasn’t picked them up. i think that should be added to the list of october goals!
what my title is eluding to is two of my meals today: lunch and dinner.
breakfast wasn’t worth mentioning.. so let’s skip straight to lunch. something old!
recognize that pile’o’somethin?
oh yes, it is my old favorite combo!
for those of you who are new readers, this combo is cottage cheese, garbanzo beans & hidden valley ranch seasoning. i threw in a tomato for fun.
and veggies on the side for added full factor.
i cannot tell you how great it was to be reunited with my old favorite! no idea why i stopped eating this on a daily basis.
here’s a story. after i made my lunch, i was carrying it upstairs (i usually eat lunch at my desk while browsing the internet or typing a post) and my co-worker (hi, havalah!) said, “you always eat so healthy!”
my immediate reply was, “i like to eat healthy.” true.
she replied by saying that she, too, likes to eat healthy, but today she was being “bad” and got take out chinese.
i replied with, “i just eat what i feel like eatingt.. and today it happens to be healthy.” true. i also told her that i eat out plenty, usually on the weekend because then i can enjoy meals out with marshall. i eat plenty of meals that are by no means healthy. i explained that if i grabbed take out chinese, i wouldn’t be a happy camper. my plate of cottage cheese, beans and veggies was honestly what i wanted to eat for lunch.
i don’t want people to think eating healthy is something i do because i think i have to. sure, it has its benefits, but i eat the way i eat because i want to. i used to be a fast food junkie but these days, my stomach doesn’t agree with that sort of diet. but just because i eat the above meal for lunch doesn’t mean i eat strictly healthy food 24/7. when i eat ridiculously caloric mexican food or eat a whole loaf of cinnamon burst bread with butter (true story), i don’t say that i am being “bad”. and when i eat the meal above i don’t say i am being “good”. that is not a good mentality for me and i can’t classify my meal as me being “bad” or “good”. sure, the food itself can be bad for me or good for me, but the action itself is not me behaving bad nor good. i just consider it eating what i feel like.. not good, not bad, just eating. i also wanted to mention to my co-worker that there is nothing wrong with getting chinese take out. she wasn’t being “bad” or “good”—she was eating what she wanted to eat for lunch. i know she has been trying to eat healthier foods and i give her props.. but i also give her props for eating what she craved today. that is how it should be.. i would never eat anything that doesn’t please the taste buds.
awhile back, i did classify my actions as being “bad” or “good”—but now i don’t think of eating as something that should be graded. it should simply just be done.
end of story ![]()
(woah! I just downloaded the update of windows live writer and I did a smiley face and look.. it did an actual face! ha! I wonder what other faces I can do?!)

oh this could be dangerous…
I also should say that the latest version of windows live writer capitalizes the letter “I” for me automatically. I have been having to back space and change it to lowercase, because that is how I blog.. all in lowercase.. but it is kind of a big pain in the butt so I think I will just let the “I” be capitalized. all about convenience, no?
WOW, where was i?
my workout!
I had upper body on the agenda today but I really wasn’t feeling very peppy. lack of sleep will do that. here is the simple circuit I did:
5 minute warmup on treadmill
circuit: back to back moves (twelve reps each, three times through)
- dumbbell biceps curl
- overhead dumbbell triceps extension
- side dumbbell raise
- front dumbbell raise
- bent over dumbbell row
- incline pushups
- around the world dumbbell raises (side raise that keeps going and goes all the way up to above your head)
- bench dips
- dumbbell chest press
- dumbbell hammer curls
kind of boring but it did the trick! it took about 25 minutes. I wasn’t going to force myself to go any longer because I wasn’t into it.
I was, however, into my dinner: something new!
roasted garlic parmesan pasta with tofu.![]()
nasoya sent me a few coupons to try their new tofu plus tofu. it is just like regular tofu but has added nutritional benefits! it is fortified with vitamins B2, B6, B12, D and calcium.
I pressed and diced the tofu, then marinated it in a sauce of olive oil, two cloves grated garlic, salt, pepper, italian seasoning and a bit of water to get it all flowing.
it marinated for about 15 minutes.
I prepped a bulb of garlic to be roasted.
I put the tofu on a baking sheet and popped the tofu and garlic in the oven at 425 degrees.
meanwhile, marshall cooked some noodles.. a mix of thin spaghetti and linguine. after all, today was national noodle day!
I made a sauce with the juice of a lemon, 3/4 cup homemade hummus, salt, pepper and italian seasoning.
poor penny and randy.. they kept getting in the way so we had to block the little beggars out of the kitchen with a barricade. don’t they look sad?!
when the tofu and garlic were done (I flipped the tofu about 15 minutes in and then let it bake for another 10 minutes) I took them out of the oven.
next, I smooshed the super hot, roasted garlic in my garlic press.. directly into the sauce.
the whole bulb. roasted garlic is not as pungent or strong tasting as raw garlic.. you can easily throw a whole bulb into a recipe without worrying about it being overpowered with a garlic flavor. just don’t try to kiss anyone later. unless they ate dinner with you.. so in my case, I’m good to go
I poured the roasted garlic sauce on the pasta..
topped it with the tofu..
and then tossed it all with an unruly amount of shredded parmesan cheese ![]()
add some steamed veggies and call it a meal!
this was so flavorful and delicious! I have got to add roasted garlic to things more often.
the garlicky tofu marinade really worked well with the rest of the dish. we have a winner, folks!
I have to say I was pleased to know that the tofu was more nutritious than the tofu I typically buy. special thanks to nasoya for supplying me with the coupon to try the tofu plus. if you would like to get a coupon to try nasoya tofu plus yourself, sign up for the tofu pledge here! you can also find all sorts of information about how to prepare tofu and great recipes using tofu.
well, I gotta go. I have garlic breath in my mouth and a husband on the couch. you do the math.
Qs~
1. what is your favorite shape of noodle? how about your favorite sauce to top noodles with? I love thin spaghetti and penne.. my favorite sauce is pesto. I also really like thai noodle dishes—which is a whole other topic!
2. what food behaviors have you let go of? I could talk about this for days, but here are a few. I no longer consider my eating choices as me personally being “bad” or “good”. I no longer shy away from eating two carbs at the same meal. I don’t sweat it if I don’t have enough protein at breakfast.. I make up for it the rest of the day. say I am eating french toast– I used to always pair it with protein.. but sometimes I just want french toast, dangit! and now I will do that without worry. for more on this topic, check out tina’s recent post on food rules. it’s great.

Just roasted two head of garlic for a recipe yet to be blogged about yesterday evening and the house smelled so good for so long. We love roasted garlic! Can’t wait to share the recipe ;)
My favorite shape of pasta is penne and spag, depending on what I am making. I’m really digging Barilla’s pasta plus these days in addition to my classic whole wheat options.
Really want to find that tofu you used… I recently had a full panel done just to make sure I’ma ll healthy and I am low in B12 (even though I take a multi vit & eat nooch almost daily) and that would be a great way to get some more in my diet.
can’t wait to see the recipe! YUM.
1. Fav noodle shape varies by mood, odd I know but I lean towards a penne or rigatoni. If I’m taking pasta e fagioli is has t be ditalini. I have a handed down recipe of my sauce that has been modernized but i’m a marinara girl.
2. Food rules..such a thing exists? No really, I have found that fast food is finally not agreeing with me and i should have rules. But i enjoy food so I doubt I will ever limit myself truly restrict myself.
that is a great attitude to have! and you definitely shouldn’t say that you should have rules.. that’s such a good thing that you DON’T. i know a lot of people (myself included) who work/ed hard at letting go of rules. so good for you.
The “good” vs “bad” is something I definitely relate to. I used to think that way, but I don’t so much anymore. Occasionally I find myself slipping back into those thought patterns, but I remind myself to let it go.
I used to think meals had to be a certain number of calories. Like breakfast was 350, lunch was 350, etc. and if I went over it was “bad.” I let go of that, too.
By the way, I used your method for searing and stuffing chicken last night for dinner. We filled ours with bacon and cheese. It was awesome! :)
I really like penne. And the spirly kind.
I’ve gotten so much more lax on eating. I’ll now be okay eating things that aren’t whole wheat. I’ll eat real cheese, ice cream, treats, etc. If there’s oil in something – I’ll eat it and not freak out about how greasy it might be!
My favourite type of noodle is penne. Definitely penne. So much fun to eat. I always stick my fork right through the hole. Very juvenille, I like to play with my food.
I’m trying to let go of the “good food, bad food” mind setting, but it’s tough! You are definitely an inspiration.
a) welcome to live writer – its amazing
b) great commentary on the of “good” and “bad” foods…hate that its so commonly thought of as an all or none thing…(i could go on and on about remarks from coworkers, etc about my diet being “so good” – perception perception perception)
c) ive eaten an entire loaf of bread many a time…sometimes i just cant stop. if youve ever tried dave killer bread’s “sin dawg” you may know what im talking about
I’m SO happy noodle day was my birthday! very appropriate!
I used to be a fro yo addict! I ate it every day and LOTS of it. I dont care for it much now, I like gelato and a little goes a long way! I also used to go to bed a 4 am and wake up around 11. Now it more like midnight and 7am. WAY better. In my ED days, I’d also do cardio for at least 2 hour a day and NO weights. What was I thinking? I yea, I wasnt!
call me cheap, but I love me some ramen noodles!
I don’t think I can use Live Writer on my Mac??
Penne is my favorite noodle! And fusilli, too!
I never ever would of thought to use hummus as a sauce for pasta! So genius! Boooookmarked :)
mama pea gets credit for that one!
I love hummus as a sauce. My fave noodle is my brain. I use it a lot ;)
Great response to your coworker.
This post just made me smile. I love you, Janetha. And I’m so glad you no longer feel controlled by these unreasonable food rules, and hey, you STILL eat healthy! That’s the way our body works…we naturally really DO want healthy, wholesome food. And I used to worry a bit that you overdo on the protein, but I’m glad you’re now embracing carbs, too! :-)
i’ve always embraced carbs, making sure to eat them at every meal (i need my energy!) but now i will eat, say, three carb sources and one protein source rather than balancing it out. balancing is good for weight loss.. that is how i lost weight when i was overweight. but then that mentality was not needed for maintaining.. so i let it go. much nicer to have a big plate of pasta with bread and fruit all in one meal! :)
thanks for your comment and for your smile–always so good to hear from you! are you going to the festival this year?
I hate when people try to make you feel guilty for eating healthy. I think this is just their own insecurities. I think the biggest pet peeve I have is when someone says to me “I know you like all that healthy junk, but I’m being bad today.” What the heck does that mean? So if someone sees me eating a cookie, I’m automatically “bad?” Ughhhh, I hate labels!!!! I eat what I want too! :)
WOw girl, that dinner looks amazing. I love the roasted garlic sauce! So fancy and delicious.
My favorite pasta is anything stuffed! :)
AMEN! I hate when people make comments about you eating healthy almost in a way to make you feel BAD about doing it and make themselves feel more OK about what they are eating. I love eating it healthy- it makes me feel good and I like the flavor of fresh healthy food! Ok, rant end ;) Great job on din din. I still am wishing I liked homemade tofu
1. what is your favorite shape of noodle? how about your favorite sauce to top noodles with? I like orzo pasta a lot. Tiny & cute. I like regular pasta noodles topped with a peanut sauce and orzo pasta topped with olive oil/bread crumb/pasta water/lemon juice combo
2. what food behaviors have you let go of? I grew up eating meat every night for dinner (some form- chicken, beef, seafood, etc). It seemed to be a dinner requirement. Now I have come to realize I can get plenty of protein without it (although I will not say “I will never eat meat again”- if I fee like eating meat, I will eat meat)
I’m not a huge pasta fan, but I like penne or orzo the best!
I agree with your concept. I think as long as we listen to what our body wants, we won’t gt so fixated or OVER fixated on being healthy or not healthy. It took me a long time to realize this.
I love vermicelli noodles…..so good to slurp! So Marshall like tofu but not seafood? I guess its not a texture thing, haha.
luckily he LOVES tofu! i already have it bad enough with him hating mushrooms and all seafood. and pizza. that boy…
Hmm im not the BIGGEST noodle girl- bc they are so boring to me on their own! But I do love me some good ole home made alfredo from time to time. I LOVE the bowties! they are so cute!!!!
Yum, I LOVE roasted garlic. My favorite type of pasta is angel hair, I also love orechiette (ear pasta!) pesto is my fave as well! Vodka sauce a close second.
I love what you told your co-worker. I am at the same point you are- foods are no longer “good” or “bad”. My body TELLS ME if I should only eat something once in a while, by the way I feel. So I only crave foods I used to consider “bad” every so often, but now, I don’t stop myself- I indulge. I am much happier, and healthier, I feel, this way. I posted about having “food rules” for my intolerances a while back… and people took it as “i want to restrict myself” and I was like, you know what? Away with the rules. I just won’t eat what makes me feel sick! So much better.
xoxo
Kris
same here. there’s really no good or bad behaviors…. all in moderation is the good ;)
favorite pasta = gn0cchi, noodles, rice noodles, well… all of them. Sauce? tomato sauce with basil or that tofu sauce that you made :)
Oh that pasta sounds and looks delish. Yum. I always want to roast garlic. Silly, but for some reason that intimidates me. Makes no sense I know. My coworkers always make a big deal out of how healthy I eat, like I’m no a diet. They don’t get that that is just how I eat. It’s what I prefer. How do you explain that to people..
A TO THE FRICKIN MEN JANETHA. I genuinely prefer lots of veggies with my meals and frequent salads. Some people around the dorm comment on the “healthiness” of it, but I just like my veg!
ohh if I had a nickel for every person taht always commented on how I eat and tell me “you eat so healthy all the time, do you ever indulge” its like…why do you care if i indulge what I eat, I eat what I like and what gives me proper fuel for my body, it tastes good and this is what I LIKE to eat…seriously i would be one rich lady!
that tofu pasta dish is OUT OF CONTROL! one of my favorite things in this entire planet is roasted garlic (roasted WHOLE in the bulb itself) I make at least one every 2 weeks. I can eat it like pieces of candy! I swear, something about the roasted flavor and the way it makes the garlic taste less intense is $$ to me!
I love that workout! fast, effective and out of there :) thats what I am all abotu these days!
favorte shape is definately bow ties! i love how the middle can stay aldente and a bit crunchy!
my coworkers are forever commenting on my lunch. every.single.day. it’s like a circus at my desk. they can’t figure out that i don’t want to eat free cake or a donut out of the conference room. um it makes me feel crappy! i always say, that i enjoy eating this way and it makes me feel good inside and out :)
1. fave noodle is spaghetti squash
2. sauce? i like evoo, salt and fresh herbs or something with tahini mmmm
You know, it’s unfortunate I married into an Italian family, because if I never had another slice of bread or bowl of pasta for as long as I live, I’d be just fine. I should have married an Asian, because I’m a “rice” gal HAHA! However, if I had to choose my favorite pasta, it would be penne because at least it’s thicker and easier to pierce with a fork. As for sauce, I have to go with Alfredo or something UBER-fattening, buttery and creamy!
LOVIN’ that you don’t think food is “good” or “bad”. I don’t like how so many of us (including myself, from time to time) get so caught up in an inanimate object–food. Food should not have control over me or my emotions. I should have control over it. It’s taken many years to undo the silly lies I’ve told myself regarding food.
omg! toooooo weird that you would bring back this old combo….wait til you see what i packed for my lunch today…seroiusly WEIRD.
that garlic press is something i never knew i always wanted :) great lookin’ tofu dish, jg! <3
I have let go of many food behaviors! Like Tina, I never used to eat a fat and carb together. No idea why. I considered peanut butter to be a “B” list fat and would stick to putting flaxseed oil or udo’s oil into my protein shake because both of those were A list fats. Pretty crazy.
Also, I love eating whenever I want, regardless of time of day. I always feel so naughty when I eat a piece of toast, with peanut butter and banana at like 9pm. I’m breaking all kinds of rules and it’s feels so good.
Hahaha I love the last line.
Pasta is o-kay, I mostly eat boring penne though.
I’d say the biggest food behavior I’ve let go of recently is certain foods at certain meals. If I want vegetables for breakfast or dessert, or pancakes for dinner it’s all good!
Oof! Why has it been so long since I’ve had that combo. I LOVE it! Thanks for the reminder.
Totally know where you’re coming from with the healthy eating convo. I have the same one with my office mate and other various coworkers far too often. I HATE it when people say refer to being bad for something food related. Food is not the enemy. It drives me crazy!
I completely agree with your characterization of food not being “good” or “bad” – I will admit that I do sometimes think “this is definitely not good for me” but instead of feeling guilty I just balance it out later with meals that make me think “this must be amazing for me” because like you said, food should be enjoyed and not obsessed over. I think the problem comes of course when people don’t EVER enjoy healthy items, but I feel that once you do – you’re golden! Now I crave my morning smoothie that’s packed with spinach and flax, but I don’t feel guilty if I happen to eat a piece of pizza at lunch time because I’m probably eating a bunch more vegetables at dinner. The reaction my body has after numerous days of eating greasy or heavy foods is enough to keep me from doing it every single day! :P
Wow, that noodle dish looks amazing! Can you come over and make me some, please? :)
My favorite noodle is ziti or penne. I love a simple marinara with lots of cheese!
Oh gosh, I want to roast garlic now! I love it, but Pea D, not so much, which means no lovin’ for me.
That sauce looks right up my alley, though.
GO PICK UP your wedding pics!!! ;)
yep i have you to thank for the hummus-as-a-pasta-sauce idea! it’s addicting.
i know. i need to go get them. i am bad.
we can roast garlic in san fran and then make out. or just eat the garlic.
I actually don’t have a problem with “rules” although I can’t say I have many myself. This may come from dealing with a true sugar addiction. I don’t want to go back to where I was and this means so clear cut boundaries. The whole intuitive eating language is too mushy for my personality. Sometimes I may want a plate of pasta but often I’ll pass and opt for something I don’t necessarily want because I don’t like what pasta (or whatever) does to my body in regards to nourishment. If I choose an unhealthy food I don’t have a problem saying, “I’m choosing a bad choice”. It doesn’t make me a bad person just human. :-)
“It doesn’t make me a bad person just human.” YES love that sentence.
Great minds think alike. I’m just going through my reader and I talked about that same sort of scenario that you had with your friend in my post today. :)
And thanks for the link love. :)
Is it sad I can’t remember the last time I ate pasta (just not a huge pasta person)?? I am pretty sure pesto and pinenuts are my favorite toppings though.
With those puppy dog eyes how did you manage to keep them out? I can keep my 92 lb beast at bay – he figured out how to get past the baby gate on the stairs by not jumping over it, but just pushing himself up against it. Yes, he needs a walk…or two…or three
um yeah. we didn’t. they came on in about 10 min later. pushover.
I think its been 1 week since I had tofu and I’m already craving it after looking at your dish!
Such a great dinner! I love this idea but I am not a huge pasta person. This would be good on spaghetti squash though. Also, I need more weights in my life…. :)
mmmmmmmmmmmmmmm that din din DOES look like a winner! And I am all over full fat dressings like ranch, ceasar, parmesan, etc…………. maybe i should try the hidden valley packet thing-ma-bob. Sounds bomb with cottage cheeze.
love your outlook on food and life.
My favorite type of pastas would have to be penne and gnocchi. I just love how stuff and chewy gnocchi is. And definitely in pesto sauce, although I love the hummus as sauce idea. I’m going to have to check out mama pea’s blog to see what other genius idea she has!
PS… your puppies are just too adorable :-)
First, that meal looks delicious! I recently used hummus as a sauce for a quinoa dish and it was awesome!!
Answers to questions:
1. Depends on my mood…sometimes long thin angel hair is fun to slurp!
2. I stopped being using as much of a quantity over quality mentality..now I can include guac and PB in my meals and just eat less!
gahhhhhhhhhhh i have the SAME conversations with my coworkers everyday! i whip out my salad and they go “ugh you’re being so good..” and i’m like um i love this haha like i WANT this salad right now. i crave it. and i remember the good ole cc&banzo days! i also remember when i had your cc&banzo combo out of a giants martini glass hahahaha deej was so proud that day :)
i love tube-shaped pastas…i like to stick my fork tines through the tube holes. that’s what she said. hahahaha :) (sorry, i’m a little inappropriate today!)
Mmm, that pasta is right up my alley! My favorite shape- IF I have to choose- is fettuccine.
Apparently I need to stop ignoring that Windows Live update! Looks like fun with all those smileys!
Your cottage cheese, garbanzo beans & hidden valley combo was the first recipe of yours I ever tried – and I knew I loved you instantly. :-)
I like angel hair pasta the best, and I don’t think I really have a favorite sauce – maybe a vodka sauce, I can always do that.
I used to be obsessed with counting calories – and that’s so exhausting and life consuming. I’m glad that habit is g-o-n-e.
Read the guest post over at Danica’s and LOVED IT! Great job! So glad I stopped by too! :) You have a wonderful blog filled with great ideas! THANKS! :)
-oh one of my fav lunches, cottage cheese, cucumbers, tomatoes w/S&P. Now I gotta try adding the garbanzos to that mix! YUM! :)
tofu recipe looks great! I am still getting into experimenting with it. I know that Dan would flip out though if I tried to serve him anything with tofu in it. I may try this when he’s out of town..
Behaviors…I let go of quite a few. No deprivation. I try not to makeup workouts if I miss something, but I try to plan ahead to avoiding missing.
#1 thing I NEED to break is grazing while cooking. No idea why I can’t stop it. Completely mental I know. I even made a promise not to do it during lent last year and that didnt last :-(
Man that garlic looks wonderful! I can’t remember the last time I had roasted garlic.
