farewell summer.

in meals

hey there!

thanks for all the well wishes on my eyes.  i was prescribed some drops and i am A-OK now.

last night, marshall, kristen, rory & i decided to head up the canyon and camp overnight.

since it was spur-of-the-moment, we didn’t do any grocery shopping before hand.  we made tin foil dinners from ingredients we had in the fridge.

IMG_1292

mine had potatoes, bell peppers, mushrooms, broccoli slaw, red onion and one chicken artichoke sausage.

after snagging some wood from my parents’ wood pile, we were off!

IMG_1307 IMG_1301 IMG_1302

it was a gorgeous drive up the canyon as the sun was setting.

IMG_1325 IMG_1315 IMG_1320 IMG_1338

IMG_1339

i am proud to say i started the camp fire all by myself! IMG_1354

well, with the help of a lighter and some paper towels, that is. ;)

IMG_1358IMG_1359

although it was cold, it was lovely.  i was happy to spend one last night camping this year.

IMG_1366 IMG_1369

there were chips.

IMG_1380

and veggies+hummus.

IMG_1377

and there was wine.

IMG_1392 IMG_1390 IMG_1393

i think penny is a closet booze hound. she kept trying to get my wine!

IMG_1395

don’t worry, she didn’t have any. she is underage, afterall!

once the fire had enough coals, we put the tin foil dinners on to cook.

IMG_1385

about 40 minutes later, dinner was served!

IMG_1398

necessary condiments:

IMG_1406

delicious tin foil dinner!

IMG_1407

we let our meals digest and had good conversation by the fire.

IMG_1371

IMG_1415

IMG_1427

eventually that sweet tooth kicked in and it was time for s’mores!

IMG_1448

roast the ‘mallow.

IMG_1459

sandwich between two keebler fudge stripe cookies.. because it’s way easier than using graham crackers and chocolate.

IMG_1470

yum!

IMG_1479

times two.

IMG_1480

good times had by all!

when it was time for bed, things went downhill. IT. WAS. FREEZING!

IMG_1438

marshall & i had decided to sleep in the back of the truck rather than in a tent.  bad idea. it was super crammed with the two of us and the two pooches.  probably the worst night of sleep in a long time.  but once morning came, it didn’t matter. we had fun.. THAT is what matters!

with that said, i think last night’s camping trip was an official farewell to summer.

and this morning’s beverage was an official hello to fall!

we stopped at starbucks on the way home and i had my first pumpkin spice beverage of the season!

IMG_1481

side note: wow my hands were dirty from camping!

this isn’t a regular pumpkin spice latte.  it is actually an americano with a pump of pumpkin spice and some skim milk.

i gave the dogs a shower (as well as myself!) since everyone smelled like a campfire.  now i am finishing my coffee and eating a greek yogurt bowl before i head up to hit the outlet malls with my best friend: momma b!

hope you all enjoy your labor day and do something fun or relaxing.. and if you are at work, hang in there!

Qs~

1. do you like marshmallows? the only way i like them is toasted over a fire. i hate them in things like lucky charms. marshall doesn’t like them at all, he didn’t even have a s’more!

2. which do you prefer: summer or fall? i <3 fall.

Jessica @ How Sweet It Is September 6, 2010 at 11:13 am

Marshmallows are ok, but when they are toasted over the fire I absolutely LOVE them!

The Hot and Fit September 6, 2010 at 11:36 am

I LOVE Summer!!! Cant stand the cold.

lindsay September 6, 2010 at 11:42 am

well, its still 95F here and doesn’t fee like fall until November. Kinda sad but can’t wait for the gingerbread lattes! They need to make a smore latte, love those toasted marshmallows!

Erica September 6, 2010 at 11:54 am

What a fun adventure ya’ll had! The foil packet dinners look yummy and you can’t go wrong with smores! Pumpkin spice!!!! I never get the latte either- I get a skim misto with 2 pumps of the syrup=perfection! I am a summer baby

Erika September 6, 2010 at 11:58 am

As much as I love summer and no school I love fall that much more. I think it’s because the fall months are soooo cozy. <3 Your bonfire looked amazing! I never thought of doing foilpacks over the fire though – great idea! :-)

Kristin (Cook, Bake and Nibble) September 6, 2010 at 12:09 pm

The ONLY way to eat marshmallows is toasted over a fire :D

I LOVE fall and I love how cool & falllike it has been lately.

Looks like a fun camping trip!

I do like marshmallows. In fact, I went out on the Strip last night to go to the Revolution Lounge and beforehand we ate at a burger place..we had s’mores for dessert! Yours look much better and I’m sure didn’t cost $6. Ps- I’m jealous of your camping..i’m so not a club go-er.

I’m going to have to say that I am pretty excited for the fall. I’m usually a summer girl but times are changing and the heat of the sun isn’t always appealing, 105 degrees is a bit hot. I’d like to hide under a hoodie for a few months.

homecookedem September 6, 2010 at 12:15 pm

I have got to try out your keebler smores method!! Looks awesome!! I love marshmallows in any form, but my favorite is roasted.

Fall is my favorite season!!!!!

emily September 6, 2010 at 12:28 pm

1. I am obsessed with marshmallows! ‘Smores, fluff, bring it on!
2. I like late summer, when it’s not so hot but it’s not cold yet either.

paijery September 6, 2010 at 12:28 pm

Camping trip looks like so much fun! I’m the same as you with the ‘mellows…only in s’mores! I am totally a summer person but there is something about fall that just makes me feel all warm and fuzzy inside. Happy September!! xx

Angharad September 6, 2010 at 12:39 pm

SUMMER!!! I love summer with all my heart.

You’ve just convinced me to go and make a big bowl of greek yoghurt yumness. Thank you…

And yes, love marshmellows (don’t know why we spell/say it that way instead of with an “a”) and have a big bag leftover from camping in the cupboard…mmmm. Want.

Carbzilla September 6, 2010 at 12:42 pm

I do love fall and not just because it reminds me of our wedding. :)

THANKS so much for reminding to go buy s/f pumpkin spice Torani’s! My fall is now set! Smoothies and coffees galore!

(It’s FREEZING here today – may 59 high. Thursday it was 80! WTWhat?)

Texas Gunslinger September 6, 2010 at 12:49 pm

Marshmallows are amazing- always and forever- in my opinion HA! I truly cannot believe anyone who doesn’t like s’mores. WOW!

And, I’m ALLLLLLLL all about Fall! This past weekend my Hunk and I went to the season opener for the Penn State vs. Youngstown State game and I had to actually buy a hoodie because it was so brisk and chilly! But, I LOVED it! We bought coffee to watch the game and I’m thrilled it’s cooler weather again! Bring it, Fall! :)

Leianna September 6, 2010 at 12:55 pm

What a perfect way to end summer, love foil dinners and camping! Fall definitely takes the cake in my book as well, pumpkin, apples, squashes and football:)

Shannon September 6, 2010 at 12:57 pm

love the smell of campfire :) i miss camping, i haven’t found any new camping friends since i moved up here!! gotta work on that. and what a fabulous idea with the fudge stripes! after toasting the mallow and putting it between graham crackers with a smear of PB and little dark chocolate, I like putting them in foil and back on the fire to get all toasty. yum. i also took to adding chocolate to bananas and roasting those in the fire, another winner :)

Gabriela @ Une Vie Saine September 6, 2010 at 12:58 pm

This looks like such a fun little getaway!! I have a science to the way I eat marshmallows: roast them till golden brown, pull off the top, and repeat. So deliciously gooey. And summer definitely trumps fall in my opinion…I’m so sad to see it go!

April September 6, 2010 at 1:05 pm

I’m ready for fall!

Toasted marshmallows for me :)

Faith September 6, 2010 at 1:32 pm

I love fall, if only for the cooler running weather and the football season!!!

Mama Pea September 6, 2010 at 2:20 pm

So fun! Not really a marshmellow fan…unless they are perfectly toasted/melty throughout.

I’m so excited for fall and pumpkin spice lattes are only 95% of the reason why!

Enjoy the rest of your day, J!

Mary (A Merry Life) September 6, 2010 at 2:20 pm

Those cookie were a good idea. I’ll try that next time. ;)

I love marshmallows!

Fall is best. Summer is okay but it’s my least favorite season because it’s always so hot and humid in Memphis which makes me miserable. But now that I live in New Zealand maybe it will be better. ;)

lowandbhold September 6, 2010 at 2:33 pm

I rarely eat marshmallows, but I do enjoy them every now in them. I like them in my hot cocoa!

I adooore summer but I’m sort of ready for fall this year.

lowandbhold September 6, 2010 at 2:33 pm

Oh, and I’m so glad to hear that your eyes are better :)

Marie September 6, 2010 at 2:44 pm

I only like marshmallows melted over the fire.

I LOVE, LOVE, LOVE fall in Houston. :) Summer is hot as heck. I love the holidays and can’t wait for the cooler weather, Halloween, my twins’ b-day, Thanksgiving, x-mas, and my b-day! :) Last year, we made a pair of dices out of cardboard for their costumes. Gotta figure something out for this year’s costume. Glad you had so much fun on your camping trip. Your dogs are such cuties!

andrea September 6, 2010 at 2:47 pm

I love americanos…never tried it with skim and pumpkin spice…how was it?

Ashley September 6, 2010 at 3:07 pm

I love your smores idea! We went camping and had them last night– they are messy

BroccoliHut September 6, 2010 at 3:51 pm

I am a marshmallow hater–I’d much rather have double the chocolate in my s’mores without the marshmallow action.
FALL.

fittingbackin September 6, 2010 at 4:18 pm

Great pictures – looks like an awesome time!

I love marshmallows – and definitely prefer fall!

Deb (SmoothieGirlEatsToo) September 6, 2010 at 4:32 pm

Beanie! So glad your eyes are better! Fun that you went camping! Did you see I have a photo identical to yours on my Iceland trip- taking a photo of myself in the wing mirror? heeee!

So clever to bring foil dinners! Very much smarter than bringing stuff then assembling/cooking. Love the headlamps- so practical. I keep meaning to buy one.

Marshmallows are one of my favorite food groups. In any shape, size or condition.

Once we car-camped…had a station wagon (still do actually) and boy were we happy- everyone else roughed it in tents and apparently our ‘neighbors’ had a HUGE screaming match in the middle of the night- oops. We slept like babies ;-)

Love me a good hot dry summer. Fall is meh- too cold even though it’s pretty. Remember in LA we don’t get real ‘seasons’ so no changing of leaves :-(

Miss ya. <3

a taste of health with balance September 6, 2010 at 4:42 pm

I rarely eat marshmallows. Only if toasted golden over the fire.. with a chocolate covered almond in the middle (try that-delishhh). Fall is my favorrrriteeeee. I love sept-jan1. Just the weather, leaves changing, and atmosphere. Such a happy girl around this time.
Don’t you love the sleeves with the thumb holes?! they are the best!

Lauren September 6, 2010 at 5:42 pm

Girl you are so much more of a trooper than me. You just described the three most miserable conditions for me….Cold, Dirty, and Uncomfortable. LoL, but you always make it look like such a good time. Must be because you’re always smiling and making the best of everything! That is why I love you so!

Hmmm, I’m with you. Not a marshmallow person unless its in the form of a s’more or a rice krispy.

I love summer, but I don’t hate fall. Now, winter and I are enemies.

Holly at Greek Yogurt and Apple Slices September 6, 2010 at 6:22 pm

Love your purple houndstooth shirt! So cute, so you! :)
And, that is so awesome that you guys can just jump in the car & go camping- and it looks SO beautiful!
The pups are adorable, and I happened to notice right before you mentioned Penny was a ‘boozehound'( <–haha) that she was trying to get at your wine in the photo above the close up of Penny & the wine :) She's too funny.
Love your take on s'mores- that's such a good idea!!
Hope you got a bunch of good finds at the outlets :)

julie September 6, 2010 at 6:33 pm

awwww love your spontaneous camping trip! haha and using fudge stripes for s’mores is genius!

i’m seriously loving this fall weather right now but i do love the summer SO much! americanos are my faaaaaaaaaaaaaaaaaaaaaavorite!! let’s have a pumpkin spiced americano date okay?!

Errign September 6, 2010 at 6:51 pm

Yes, I like marshmallows! I used to like my s’mores with peanut butter AND chocolate! I was a gluttonous little child.

Fall is my favorite too! :)

runningaroundnormal September 6, 2010 at 7:38 pm

What a trooper starting that fire! Nice:)
I’m not a big marshmallow fan. Only if they’re toasted and sandwiched between a piece of chocolate and a graham cracker ;)

Jessica (electropositive) September 6, 2010 at 7:58 pm

Hi Janetha (I don’t think I’ve ever commented before! I’m a total dedicated lurker). I just wanted to say I’ve really been enjoying your blog lately. I think it’s because you seem so happy! (probably having something to do with living with the man of your dreams…). I was a little sad when you said you were going to deviate from your “usual” older posts, but you know, I’m enjoying this format more!

And as for the fall/summer throwdown, I am so very Fall. Despite all of it’s charms (summer food, flowers, water) , I really really dislike hot weather. :) Bring on the scarves!

Laura @ Starloz September 6, 2010 at 8:10 pm

you know what i’ve never had a pumpkin latte at starbucks, i’m going to try one next year!

I’m a summer gal, winter makes me madface!

kelsey@snackingsquirrel.com September 6, 2010 at 9:57 pm

if only my summer was as fantastic as yours. i love that you went exploring and have a blast! camping is the best part.. well campfires in particular..and smores :)

xoxo

mom September 6, 2010 at 10:46 pm

Mmmmm good, I’m going to make a tin foil dinner and throw it in the oven – it’s a sure sign of fall, that crisp cool feeling where you have to actually wear closed in shoes and maybe even socks, horrors, no more REALLY warm 98 degree evenings!

Can only tolerate marshmallows in smores oh and of course heavenly hash, haha!

Summer and Fall seasons are a toss up for me, LOVE both of em!! xoxo

Averie (LoveVeggiesAndYoga) September 6, 2010 at 11:38 pm

glad your eye is better!

yes i love marshmallows and yes I love summer. And pumpkin spiced anything is just meh to me. Oh I am bucking the “popular” crowd of food bloggers, I know :)

That heinz reduced sugar ketchup…is there any sacrifice in taste w/ that bad boy? I should try it, but only if it tastes the same. I adore sugar…hah!

Naomi(oneFF) September 7, 2010 at 4:05 am

ohh so fun!! i love the camping pics! can you beleive I have never acutally been REAL camping??

the marshmellows and fudge swirl cookies are the most brilliant idea!!!

never tried the pumpkin spiced coffee either! BUT at work they are brewing up some pumpkin spiced coffee which ROCKS!!

i’m a summer gal :) xoxox

Di September 7, 2010 at 6:06 am

I love marshmallows and especially s’mores! Your idea with the Keebler cookies is brilliant. Fall is my favorite season…I’m so excited that it’s here!

Andrea@WellnessNotes September 7, 2010 at 8:09 am

Your camping pics are beautiful! Makes me realize that it’s been WAY too long since I have been camping… I really want to take the toddler next year, though!

I love summer since I work less and get to spend more time with my family. In fact, I always get a bit sad after Labor Day… But this year, I have decided to just enjoy fall… :)

Freckled Foodie September 7, 2010 at 9:51 am

i’m actually not a huge marshmallow fan, but i do love me a good fluff & almond butter sandwich now and then. haha.

i used to think i was a summer girl, but as of late, i’m LOVING this crisp fall like weather!

looks like you had a blast this weekend! i love the pic of you and penny in the chair. TOO adorbs.

coffeeandthepaper September 7, 2010 at 10:53 am

Haha I’m with Marshall. I just eat the chocolate and grahams seperately.

That sunset looks gorgeous! I miss camping. I could never make a fire like you though missy!

Claire C September 7, 2010 at 11:07 am

I love the Fall!! I really don’t like extreme tempts in any direction so Spring and Fall are my seasons. That is such a good S’mores idea!! I like to burn my marshmallows:-)cc

Heather @ Get Healthy with Heather September 7, 2010 at 11:21 am

I’m going to miss summer :( its so rainy here this morning. I don’t really like marshmallows but if I was going to eat them it would have to be in smores form for sure.

Jenna @ Healthy. Happy. Well. September 7, 2010 at 11:44 am

I LOVE spur of the moment trips like that! Especially if it includes sleeping under the stars. What a gorgeous night you had. Complete with girl scout style tin foil dinners. Fantastic! Have a lovely rest of the week Janetha! You have me craving starbucks now!

inmytummy September 7, 2010 at 8:38 pm

I am jealous of the freeziness. It’s still 95 degrees here!

Susan September 8, 2010 at 7:44 pm

Ha!! Do I like marshmallows? Silly Janetha. Marshmallows are second only to chocolate when it comes to my sweet tooth. So essentially s’mores are the greatest food invention… ever…

Fall all the way. Well, this year I am because my bedroom doesn’t have windows and it’s nice not to slow roast while I sleep at night. Even though summer may be gone, I’m determined to make this one stellar fall as well :)

hayleycepeda September 8, 2010 at 8:45 pm

Those pictures are gorgeous!! Looks like you had a great time…I cannot believe summer is coming to an end! Before you know it you’ll be snowboarding again. Time certainly flies…seems like not too long ago you were showing snowboarding pics and talking about the upcoming summer! Generally summer is my favorite, but moreso when I lived in CA. Now that I’m in NC I’d have to say I prefer fall – I miss being able to run outdoors!
