hey there! i want to start out by wishing my dad a happy birthday! we celebrated tonight with authentic chicago style hotdogs and, like always on my dad’s birthday, my mom is baked a red velvet cake.. i love tradition. i will recap the festivities next time.
before i dive into any honeymoon details, i want to share last night’s dinner! our good friends kristen & rory returned from costa rica late sunday night, so we invited them over for dinner last night. the last thing people want to do after a long day of traveling is cook for themselves. and, in all honesty, the last thing kristen wants to do no matter what is going on is cook for herself ;)
on the menu:
- seedy whole wheat bread
- olive oil & balsamic vinegar for dipping
- parma rosa garlic & herb pasta with artichokes & grilled chicken (mushrooms & onions on the side)
- green salad with a 3 lettuce blend, cucumber, red bell pepper, fresh garden tomatoes & avocado
- fruit salad with peaches, honeydew, strawberries & cherries
i am loving the teardrop appetizer plates we got as a wedding gift. they are from crate & barrel.
marshall knows how to do dippi’ right.. complete with oil, vinegar, salt, pepper & parmesan cheese!
i <3 my new pasta bowl! a hand-me-down from my sister.
you guys, here is another wedding gift we got that i have to rave about! everyone should go get one.
a cutting board & colander all in one! makes for easy veggie washing & chopping.

the pasta was delicious. i devoured the leftovers for lunch. leftover pasta is one of my favorite leftovers.. the flavors meld together overnight and it’s just fantastic.

also, this morning i decided i am not sure i like raisins. i hated them, then declared that i like them (finally, after 27 years of hating them) and now i am not so sure. i will keep you posted.
time for honeymoon recap #1!
we had to leave for the airport at 5 AM sunday morning! considering we didn’t get to sleep until almost 2 AM the night of the wedding, it was a really rough experience to get up and go to the airport. we did make it there on time and i snagged some starbucks oatmeal & a grande americano. no photos.. it was WAY too early.
we flew to phoenix and had a 3 hour layover, we napped on the floor. that was nice! and then it was off to cabo san lucas!
here we are at the airport, waiting for our transfer to the resort. exhausted but happy to be there :)
we stayed at the riu palace all inclusive resort. it was beautiful! i don’t prefer all inclusive because the food is usually bad and gets really old & repetitive. but, it was actually cheaper than some of the non-inclusive resorts. we booked the room and decided that we could eat wherever we wanted when we got sick of the food on the resort.

we were definitely starving by the time we checked into the suite. so, naturally, the first item of business was to find some food! we wandered around the resort and found a snack bar open. i have no photo of what i ate because most of my food photos were taken on my point & shoot camera.. which, in case you missed it, i lost on the way home from mexico :( almost certain it was a huge plate of chips & guacamole.
sunday night was pretty mellow. we relaxed and walked around. it was so humid and the temperature was perfect. marshall & i love humidity.. but utah is a desert so we never get to enjoy it! at home, my skin is always so dry. but in mexico i didn’t have to put lotion on the whole time. fantastic!
the next morning we woke up around 10 AM and went to grab some breakfast.
we also wandered around the resort.
after that we decided to book some excursions! you will hear more about what we picked as i recap the trip. after booking the excursions it was off to the beach for some sun basking time.
i got a virgin pina colada..
and proceeded to spill it all over myself. it was cold!

after beach time it was.. parasailing time!
we snagged a cab to downtown and made our way to the boat to go parasailing. i’d done it before (when i was 12) but marshall never had. we decided to go up together. it was such a blast! 
the sad thing is the point & shoot photos that we took while in the air are forever gone :( those photos are the ones i am probably the most sad about losing.
after parasailing, we walked along the beach, all the way back to the resort. this became habit.. i am not sure of the distance but it was a 20 minute walk. definitely got several miles of walking in on the trip! 
i LOVED all the pups on the beach! made me miss penny & randy.

that night, we went to town and ate dinner at cabo wabo. i got a massive lobster burrito.. it was gorgeous. i took a photo with my point and shoot. sigh. hope you can imagine.
when we got back to the resort, we hung out and watched the entertainment. the cocktail waitress snapped our photo..
and that, my friends, is the end of recap #1.
i have to go pack for arizona! i will be gone wednesday to sunday. kristen is graduating from physical therapy school! she is gonna be a doctor! i am sooo proud of her. anyway, we are leaving tomorrow, right after work. it is a LONG drive.. 600 miles or something. at least i will be in good company :)

1. what is the farthest you have traveled via automobile? we used to drive to my mom’s hometown, kennewick, WA, a lot when i was little. i am not sure how many miles it was, but it usually took around 12 or 14 hours. gotta love those long road trips!

We used to drive all over for road trips when I was a kid. Once we drove from southern Florida to Maine. Another time I drove from Indiana to Texas to California. Love being on the road!

I am not a fan of car trips, but most summers my family drives out to our condo in colorado and the only reason we drive because there arent any direct flights into the town during the summer so we make a 22 hour drive out there and I want to DIE each time we make the trip, but when we get there it is SO worth it.
I can either take or leave mushrooms. If they are cooked/grilled then I am all for them, but if they are raw… no thank you!! :)
P.S. I agree wit Katie and I think you look great in your swimming suit! :)
Love the photos so far! They make me so excited because I am going to be stopping in Cabo on a cruise at the end of August. Your pasta dinner looks wonderful, I love all your dishes. That cutting board + colander looks awesome – where did you get it?! I chop so many veggies it seems, that would be so convenient! Longest car ride = Vancouver to Mexico as a kid!

We drove cross country in a rented RV to move out here! 3000 miles in 5 days.

I drove from Austin, TX to San Francisco. It was long, but we stopped at the Grand Canyon, Las Vegas, and Yosemite along the way, so I enjoyed it.
moved from IL to NC and NC to SC and from SC to CA. From CA to AZ and back again. Suffice to say not only am i the queen of road trips, but i do them w/ 24 foot semi’s and my life’s possessions in tow! No more moving!

The farthest I have traveled by car was a two day trip from Louisiana to Maryland. Not that fun to be crammed up, but we did get to see some beautiful scenery that we wouldn’t have caught from a plane.
And I love mushrooms!

Myself included, I have driven 12 hours to Canada…. but my parents, sister and I went to Alabama from Rhode Island when I was 11… THAT was a long ride!!

Ps: I can handle mushrooms SOMETIMES. Raw are alrighhht. I hate it when they are all slimy!!! If they crisp up on a pizza and they don’t taste really strong, I can handle ’em. Otherwise, no mushrooms for me! Brad loves them. Ugh.

As a 14 year old, I rode with my family from Indiana to Yellowstone – that’s definitely over 24 hours, but we stopped, too. I’ve also driven to Florida – about 17 hours.
We stayed at the Riu Cancun last year and our room looked exactly like yours.
I used to drive from Vermont to Maryland a lot, which is 10 hours. And I’ve driven from Maryland to Atlanta which is 11.
There is a fungus among us! I love mushrooms and pretty much add them into anything I can at all times. Did that pasta have a sauce that I completely skipped over? It looks creamy and delicious, but that might just be from the sauteed shrooms and onions (I don’t enjoy onions, by the way, so you would have to pick those out for me.)
I also don’t enjoy long car rides unless that car is supersonic and can get me there in under an hour. Happy Birthday to your dad! Leo’s rock (as my birthday was Sunday, so I can legally say that.)

I think I mentioned that my sister stayed here for her honeymoon too. I stayed at a Riu Palace in the Mayan Riviera and loved it. It pretty luxurious
We went to Cabo via cruise ship a few years back… loved it! Always wanted to take a land based vacay there.

Love all the pics and recap of part 1. Parasailing is so much fun. We went on our honeymoon too and it was awesome. And I have to say – you look awesome! All your hard work paid off.
Longest I’ve driven in a car. It WILL be tomorrow overnight. We’re driving the 12-13 hours from GA to Philly for my friend’s wedding. I love my frugal husband but I have a feeling this will not be one of those loving moments. LOL

And, I think that’s funny about the humidity thing, considering I live in it in FL- make me chuckle because I love getting out of it! But, I can imagine quite the difference between the dry dessert & very humid temperature- quite drastic! I’ve really thought of it, but I don’t use lotion everyday- except on my face. Typically just when I shave. I didn’t even seem to put two & two together with the humidity. It’s the little things you learn while reading other blogs :)

I am having a tricky time with mushrooms at the moment because of the food poisoning I got in June in Baltimore…after a certain portabello mushroom wrap (*shudders*) but I LOVE mushrooms so I’m trying to make myself get past it.

The farthest I’ve ever driven on a road trip was when I was little… Orange county, Ca to Portland, OR to visit family. Long, LONG drive… I think it was around 16-18 hours UGH! My ass still hurts thinking about it. haha

Growing up, my brothers and I were fortunate enough to have our parents take us on two separate 4-week cross country road trips (two years apart). We drove from MD to Southern California (and back) and from MD to WA (with a stop in Canada too)! Awesome experiences. I have seen sooo much of this beautiful country!

Furthest traveled was Seattle to Vancouver, BC to Whistler and back. I’m a flying kidda girl but there is potential to be making a cross country move to PA soon. I know exactly where your Mom is from, have been there a few times.
I’m still working on the veggies so no mushrooms for me.
BTW – your teardrop bowls look similar to ones i picked up the other day, they look more like a comic strip bubble where you read what character are saying. I think it’s so you can put your thumb in the pointy part and carry, either way they were only $1 each at Big Lots.
