i am glad everyone has a plethora of reasons why they are lucky.  it was awesome hearing about what you are grateful for. it’s always best to remind ourselves about the things that ARE going our way rather than dwell on the not-so-rad things that AREN’T going our way.

i’ve had a busy monday, so i think this post is going to be pretty ho-hum~ in the “this is what i ate and this is what i did” format.  hopefully the creative juices will get flowing before the next post ;)

but first…

a few things from sunday.

meals

banana blueberry protein shake.

that looks disgusting. but it sure tasted amazing!

  • 1 serving tera’s whey blueberry protein powder
  • 1/2 frozen banana
  • 1/2 cup frozen bloobs
  • 1 cup almond milk
  • ice
  • spinach

the vitamix always makes WAY more than the glass can hold ;)

sunday afternoon we took the dogs for a walk.. it was a beautiful day! penny & randy made a new friend~ kristen’s dad’s dog, harley :)

a list of wedding things that need to be done and, more importantly, deadlines and assignments for each thing on the list. here’s hoping we can get it all handled before the big day! only 2 months away!!

EEP! i have a lot to do.

oh.. so i didn’t workout saturday OR sunday. i woke up today and i had a recharged feeling~ i think i was just burnt out and needed a break.  don’t be afraid to take some time off from your workout routine, folks. it could be the best thing you do. 

let’s talk about monday!

meals

meal 1: eggbeaters & oatmeal & black coffee @ 8:30 AM.

270 calories, 31g carbs, 29g protein, 3g fat

nothing new about my monday morning meal. i debated switching my carb up and having fruit instead of oatmeal.. but at the last minute when our waitress asked if i wanted “the usual” i quickly agreed. i am an oatmeal addict, what can i say?

i ate the eggs first and then the oats. savory then sweet.. that’s how i like to eat.

meal 2: baked sweet potato + 1 cup lowfat cottage cheese + 1 TB sunflower seed butter @ 12:30 PM.

385 calories, 38g carbs, 34g protein, 10g fat

i baked 4 sweet potatoes last night so i could eat this meal all week. better get used to it, i am in love with the combo and don’t anticipate tiring of it anytime soon. sorry in advance for the upcoming repetitiveness.

this afternoon i spent a lot of time preparing interview questions for the applicants i have coming in to interview for the position as my assistant.  i really hope i can find someone as good as the girl who is leaving me. she is just the best!  some of the interview questions i came up with are pretty tough.. i am glad i am the interviewer and not the interviewee!

meal 3: isopure plus protein drink + 2 fiber wasa crackers + 2 tsp mighty maple @ 3:15 PM.

190 calories, 20g carbs, 20g protein, 5g fat

this may be random, but it worked. you will notice the ratios are right where they need to be and i was able to take this snack on the go.

where was i on-the-going, you ask?  well, after work i had my wedding dress fitting!!

it finally came in so i went to try it on…and they have to chop like 8 feet off the bottom (i exaggerate) because i am so dang short :P  but i love it! and i am stoked.

after the fitting it was time for the gym. i wasn’t sure where i left off (or where to pick back up) because i took a couple days off, so i just decided to do HIIT because you can never go wrong with a good HIIT session, right? right.

i did my 4×5 HIIT which can be found here.

meals

i came home from the gym and didn’t feel very creative so i threw together a simple dinner.

meal 4: meatballs + veggies + marinara and WATERMELON to the  max @ 6:30 PM

for the savory side of things, i used 4 spinach & fontina chicken meatballs (from costco~ 110 calories for 4) + 1 cup sunflower market brand marinara (40 calories per cup! way good stats!) + 1 cup normandy style veggies (from costco).. deeelicious and nutritious!

and for the sweet side of things i ate the butt end of the watermelon that marshall picked out at costco yesterday. it’s a good one!

all together: 285 calories, 37g carbs, 21g protein, 6g fat

just polished off the watery watermelon. yum. so watery.. it must be eaten outside :)

and now i am going to get to work on that to do before the wedding list. so pardon me, i’ve gotta get busy!!

meal 5 will probably be protein ice cream or a protein cake or protein of some sort.. nothing new, nothing exciting, you aren’t missing out.

I like the sweet and savory combo on the breakfast…I have to say that I most always want some sweet for breakfast and then savory for lunch and dinner. I’m ALWAYS craving sweets in the morning!

I’m just catching up on your posts, forgive my tardiness, but I’m so sorry you’re so busy and stressed!! I had a week like that last week, too…I left work in tears ever.single.night. It’s just no fun to live like that. Sometimes I hate being an adult…but hang in there!! You are SO loved and inspiring.

Also, I love that 4×5 HIIT of yours…it has quickly become my fave little speed workout.

And I’d eat sweet, sweet, sweet. I would eat sweet for the rest of my life if I could.

Heyyyy! owww – I can’t wait to see your whole wedding dress! They had to chop like 8 ft off the bottom of mine too. Hilarious. Sweet potatoes! I should totally roast a bundle ahead of time- great idea. I always pre-prepare a lot my meals, but I never thought to pre-cook my potatoes! And they’re so much better when done in the oven vs. the micro. I want to hang out with Randy, he is just so darn cute

Love the wedding dress sneak-peak!

I ALWAYS try to have both sweet and savory components in my meals. I usually eat one bite of savory, then one bite of sweet, then savory, then sweet…yeah, you get the idea. And sometimes I pile both on the fork and spoon it in. Mmmm.

I’m in love with the Costco meatballs! I had them in a salad today (meatball salad? a bit unconventional, yes, but quite tasty) with ranch dressing. To die. :-)

Aww, don’t just give us a SNEAK PEEK and leave us hanging like that! So far the train looks beautiful. Can’t wait to see the whole thing! I prefer savoury meals. Sweet meals just seem like dessert overload to me… even if it’s not a totally dessert thing like cake. Or candy. But sweet potatoes cut it pretty closely! I also don’t mind having savoury oatmeal in the morning. Is that weird? :P

I love sweet meals. I’m not a savory gal and I think I have a sugar addiction. I love the sweet potato and cottage cheese combo. Have you tried putting a little balsamic on the sweet potato. It’s tasty!

hey girl!! loved seeing the sneak peak of the wedding dress…I am obsessed with weding dresses, I dont know why! have you even seen the show “say yes to the dress?” i love it and could watch that ALL day! i cant wait to see you in it!

love that meatball/sauce/veggie combo that is my #1 go to meal! I have those fontina balls from whole foods, wonder if they are the same ones..and SCORE if they sell them in bulk!!

i am totally a sweet person!! i am also having that sweet potato cottage cheese for a snack tomorrow, i already have it planned out and cannot wait!! i have the sun buter and everything!!! it looks so darn good!!

I am SOOOO excited about your wedding dress!!! Get used to the fittings – I remember having a lot! Then again your wedding is in 2 months so you should be good to go. We had to wait a year for Chris to finish his fellowship before tying the knot. :)

I do exactly the same thing with my eggs and oats! That’s probably why it’s one of my most favorite meals…I enjoy the eggs, but I always feel like I’m saving the best for last.

Rats – I KNEW there was something I forgot to buy at the grocery store yesterday – sweet potatoes!! Do you put sunbutter on your concoction before you eat everything up or after? It looks nice and creamy..

I always like to eat my savory first, that way the sweet is like dessert. Those meatballs from costco are so good! I sampled them a while back and have been wanting to pick them up! I just always forget when I get there if it’s not on my list.

It’s funny – I had to order my wedding dress extra-long and then had to get 2 inches hemmed off the bottom of it. I just can’t win…

I got confused with that first smoothie- I was like, where are the egg beaters and oats?!!! Have you tried mixing them together or would your coworkers think you were cuckoo? Love the Natalie Dee cartoon, though BOO to being stressed…ack. Love the dress sneak peek and the links to checkout! Wahey!
