WOW you guys want to win some kombucha, dontcha?

it’s been awhile. i thought i would bring some search engine terms to your attention, because they are fun and, let’s face it, sharing the search terms provides blog content for me and i don’t have to think of something else to ramble about. enjoy.

  • “boys wearing bras”.. sorry, no man boobs or drag queens on meals & moves

you may have heard about a new phenomenon sweeping blog land, pancake sunday, which was so lovingly started by HEABs.. my favorite tennessee dwelling, pancake loving foodie.

i don’t need a reason to eat anything, but i really like waffle wednesday because it is fun.. and so is pancake sunday!

when sunday rolls around, i usually whip up my own protein pancake recipe (here) but today i wanted to give a different recipe a whirl.

enter: allie’s low carb, life changing protein pancakes!

i omitted the berries, basically because i had none, and i did up the flour by just 1/2 tsp in the end because the batter was a tad runny. here is what went into these:

  • 2 TB + 1/2 tsp bob’s red mill coconut flour
  • 1/2 packet stevia in the raw
  • 1 egg+2 egg whites
  • 1 TB unsweetened almond milk
  • pinch of salt
  • 1/2 tsp baking powder
  • love

i blended all ingredients in the vita, poured the batter into a cup (where i added the additional flour) and cooked at medium heat on the stove.

    i can only fit two pancakes on my skillet at a time, unfortunately. i really need a griddle so i can cook a bunch of pancakes at once. this recipe made SEVEN pancakes~ i had to nuke them by the end of the cooking process because pancakes number one and two were cold. but still.. amazing!

i topped the pancakes with trader joe’s almond butter with flax which was so generously sent to me by the lovely lauren. what a babe.

the pancake recipe alone is 115 calories, 5g fat, 4g carbs and 14g protein.  AWESOME, right?! you can lower the fat content by omitting the whole egg and upping the egg whites, i am sure, but i need a little yolk in my life every now and then!

after my sunday flapjack fuel, it was time to hit the gym for some strength training. i also received the new issue of oxygen in the mail on saturday, so you can bet i squeezed some reading time in there as well. fun fact: a lot of people in utah say “squoze” instead of “squeezed”.. it was not until very recently that i learned “squoze” is NOT a real word!

*i did 25 ball crunches while holding a 10# plate above my head between the first four sets for a total of 100 weighted crunches.

*i did 100 butt kicks between the first four sets for a total of 400 butt kicks.

*i did 25 bench tuck crunches between the first four sets for a total of 100 crunches.

    • 20 minutes on stairmill:

i came home and refueled with a green really weird colored smoothie.

      in the mix:

    • 1 cup almond milk
    • 1 scoop vanilla whey protein powder
    • 2 handfuls frozen blueberries
    • 1/2 frozen banana
    • ice
    • xanthan gum
    • spinach

although this didn’t look appealing, it tasted fantastic!

after downing this i had to hurry and make the dessert for the BBQ marshall & i were headed to for his dad’s birthday.

his dad requested something “with chocolate and strawberries” and marshall wanted fruit pizza. well, i am never one to let anyone down.. so i combined the two requests!

there is nothing healthy about this dessert, folks. but.. i get a lot of requests asking how i make it, so i took photos this time.

first, spread two rolls of premade cookie dough onto a greased cookie sheet, i used pillsbury.

next, poke it.

bake the dough according to the package directions, but you may have to poke it a few more times while it is baking. check on it to make sure it is not one gigantic bubble that looks like the parachute you used to play with in elementary PE class.

let the crust cool.

for the “sauce”, mix 12 ounces whipped cream cheese with as much sweetened condensed milk as you need to make it just sweet enough, but not too sweet. the choice is yours as to how sweet you like it.

mix well, add a splash or two of vanilla extract.

refrigerate the sauce while the crust cools. it will firm up a bit.

frost the crust.

slice your fruit.  usually, i do a mix of berries, bananas, pears, apples, kiwis and peaches. you can use whatever you’d like. apples and pears do tend to turn brown once they hit the air so only use them if you are serving the pizza immediately.  today, i only used strawberries.

place your “toppings” on your pizza.

and it’s as easy as that! you’re done! but today, i took it a step further and added some chocolate ganache.

i mixed a bag of hershey’s milk chocolate chips with about 2/3 cup of heavy cream in a saucepan on medium/high heat.

be sure to stir it constantly so it doesn’t scorch.

when all the chocolate has melted, drizzle the ganache over your fruit pizza.

let the fruit pizza bask in the sunshine until you are ready to head to your party. or.. you could keep it in the fridge.. that is probably smarter.

okay! that was fun. it is a super delicious dessert.. but it is also ridiculously indulgent. now you know.

next we went to marshall’s dad & stepmom’s house for a BBQ!

sandy (marshall’s stepmom) had prepared a deeeelicious meal of pork chops, salad, pasta salad, baked beans & mashed potatoes.

i had a boatload of salad (sans dressing), some baked beans and a pork chop. the pork chops were marinated in a slightly spicy and very flavorful sauce, i really liked it!

we just got home from the BBQ and marshall is laying on the couch with a killer headache. poor bear. i am going to shut down the technology and keep him company. i haven’t read blogs all weekend, but i will catch up with everyone tomorrow.

No word of a lie, my smoothie was the same colour as yours today. I added a little cocoa powder at the end to it to make it look better while drinking. It tasted great though!!!

1. I don’t think I could pick a favourite item to grill… pretty much everything tastes great on the BBQ.

2. Did my taxes last week :)

Just a heads up… if you have a dish that has a lid, you can put the dish in the oven at a low heat and put your pancakes in there till you are ready to eat them all, so that they are all warm when you chow down on them!! :)

That strawberry pizza looks delicious! And I’m sure it is since it has my favorite sweetened condensed milk in it. Did you know you can buy leche condensada on the Mexican aisle and it is lots cheaper than Eagle? Also, Target has it for cheap… I know these things for making my hot fudge…

Taxes done and done! I always do mine way early. I want my refund! I love a good BBQ but I think my favorite thing to grill are vegetables… zucchini and asparagus especially. Oh but my boyfriend makes the BEST BBQ sauce, so anytime I can get him to make grilled chicken with his sauce, I am in heaven!

Yay for the pancake recipe! I cant believe it makes that many pancakes AND all of them for 115 calories?!? Am I reading that right LOL. I’m definitely going to try these but I dont have any of the coconut flour; I wonder how they would taste with oat flour oat bran..

Oh those pancakes sound fantastic! I can’t believe that little bit of ingredients makes all those pancakes?? No way! Do you think it would work with normal whole wheat flour?

1. Corn?! Actually, I’ve never bbq’ed anything on my own. But I’m planning to buy a grill soon and change that!

I love your fruit pizzas, they’re so beautiful. And who wants to bring a super healthy dessert to a BBQ?? Indulge!

Oh, ick, taxes. My husband took all my info and had his CPA do them to see whether we would make more filing together or separately. PAIN IN THE ASS. I would have gotten $2,000 back but my business-owner of a hubby owes around 6 grand. Buh bye tax refund. :(

Oh it’s national grilled cheese day and I not-on-purpose packed an english muffin, turkey and some slices of cheddar to melt on – does that count? Kinda?

Fave thing to bbq? Asparagus is wonderful but I also grilled peaches last year and they were fantastic!

Taxes were done months ago! Return was spent in england! HA!

I will grill anything, we have that puppy running year round. Grilled Cheese is my favorite…totally celebrating for lunch today! We owe for taxes because I am self employed. Tax time is buh bye saving account time. Not fun. But any money hubs earns overseas is tax free, so that is a huge bonus. There are some perks to getting shot at ;)

Okay this is crazy…I make almost the exact same dessert every year for the 4th of July. I have been making it since I was a kid with my aunt. The only difference is we do strawberries + blueberries to make the flag design and no chocolate.

Oh man, that strawberry thing looks UNREAL. I have such a weakness for sweetened condensed milk. My mama and I used to eat it out of the can by the spoonful when I was little. :-)

I love grilling vegetables, corn, asparagus, tomatoes (wait, that’s a fruit), zucchini…yum, I can’t WAIT for grilling season to officially start.

That pizza looks delish and I REALLY need to get on board with pancake Sunday’s, every week I say I’m going to do it but I end up waking up hungry and I don’t want to wait to eat! This weekend, I gotta.

We just got our first grill this weekend, so exciting – the hubs got to grill his first steak and I got turkey burgers and grilled asparagus, he was in his glory out there.

OMG, I forgot all about those parachutes. They were so much fun! That dessert looks amazing- I didn’t know you can get condensed milk there. I need to send you the banoffee pie recipe to try. OMG, best dessert ever. Those pancakes look great too- I am on the hunt for coconut flour so I can make stuff from my Babycakes cookbook!

Fave BBQ item: my dad’s homemade burgers back in the day. Now, chicken and vegetables. Oh, and bananas kept in the peel and wrapped in foil and BBQ’d = amazing.

taxes- don’t need to. BUT, if you don’t OWE money, you have three years to do them. They only need to be in on time if you aren’t getting money back.
