hi, friends! how was your monday? mine has been jam packed.

my title refers to a recipe i just made up and pulled out of the oven.. and IT. IS. AMAZING. eureka! i can bake on a whim! i will share that experiment with you later in this post.

thank you, thank you for all the super nice comments about my first carrot cake baking experience and my easter feast .  i have had an absolute blast reading everyone’s easter recaps. it looks like several of you had visits from the easter bunny, went on egg hunts, ate delicious eats and sweets and had a great time enjoying the holiday with your friends and families. i genuinely love to see everyone having such a great time :)

today was off to a rocky start because i was only able to get five hours of sleep due to roomies having a late night easter party. that is definitely something that comes with the territory of having roommates, so i don’t really mind. i just was super tired the whole day through.

meals

the day started with my usual monday sales meeting meal at the original pancake house.  it was unseasonably (or i guess, for what utah is turning into, seasonably) cold this morning so i was craving a warm bowl of oatmeal.

meal 1: egg beaters & oats @ 8:00 AM

the restaurant always brings out an unreasonable amount of oatmeal, so i managed to eat about half of this. i wasn’t able to finish my eggbeaters, either.. i think i was still full from yesterday’s feast!

i downed about 4 cups of coffee during breakfast (which didn’t help my sleepy factor one bit) and i even snagged a coffee to-go. unfortunately for me, their to-go cups are the same size as a dixie cup that the dentist gives you to rinse your mouth with. coffee fail.

when lunch time rolled around, i was finally hungry enough to actually hear my stomach growl. while i was in my carrot cake coma last night, i honestly never thought i would be hungry again! my mom even mentioned how weird it is that we were all so full yet we would be ready to eat again in the morning! i am definitely my mother’s daughter.. i find the whole hungry/full process fascinating. call me weird, i already know that i am.

meal 2: stacked turkey sandwich + 1/2 luna bar @ 12:00 PM

i haven’t plugged my food into the daily plate today, so i won’t have any nutrition stats for you in this post. sorry to those of you who like to see that. i imagine this sandwich clocked in at about 275 calories, 25g protein, 25g carbs and 3g fat. just a guess.

the right side of the sandwich (i hate the word sammie, yet whenever i start talking about a sandwich i say it in my head thanks to blogger lingo. i seriously loathe the term. i am cursed.) had sprouts and columbus low sodium herb roasted turkey (you should all check out sami’s review of the turkey!).. the left side had mustard, nayonaise spread, cucumber, romaine and spinach.

i also ate 1/2 of a vanilla almond luna bar as lunch-dessert. slipped the camera’s eye!

my hunger is definitely off today, because by the time 3 o’clock rolled around i was not even close to hungry for my snack and i had a somewhat small lunch.  i knew i should eat a little something to power me through my upcoming workout, so i went with something small, simple and balanced.

meal 3: low fat string cheese + hard boiled egg + red pear @ 3:00 PM

get used to seeing those easter eggs! there are 10 more where that one came from. well, actually, there are nine. marshall stole one this morning.  this snack clocked in at about 230 calores, 16g protein, 26g carbs and 8g fat. why the fat, you ask?

i do NOT pass up a perfectly hard boiled yolk! yum!

i went home to change for my workout but i was still SO incredibly tired, so i snuggled with penny and randy for about an hour before heading out in the cold, rainy weather to make my way to the gym. it is so much harder to go to the gym when it is pouring down rain! i couldn’t do my insanity workout because roomies were watching TV, so going out in the elements was my only option.

today was a cardio high intensity interval training day. i was slow to get going but once i started running i really got into it! here is what i did:

whew! this was a heart pumpin’ interval workout. i maxed out at 182 BPM on the ol’ heart rate monitor. i logged 2.25 miles in the twenty minutes.

i wasn’t done yet. i felt like i needed some stairmill in my life so i did ten minutes on the stairmill @ level 8 on the fat burning interval pre-set program..

and then i finished up with 5 miles on the bike in 25 minutes while reading my latest issue of real simple. i received the issue in the mail weeks ago but haven’t had a moment to read it. i was so glad to finally take some time and enjoy reading it! i LOVE that magazine!

i did five minutes of stretching after the bike.  my total workout was one hour and i managed to burn 400 calories.. not too shabby. the funny part is 230 of those calories were burned in the first 20 minutes during my high intensity run. i am telling you guys, intervals work!!

i came home to LOTS OF FUN MAIL!!

woo! i received some fun items sent to me from mezzetta that i will be trying and reviewing this week (after some meal planning!), a new batch of lizzy’s POWWOW bars to sample and review, the winnings (cereal, cinnamon and nut butter) from clay’s giveaway (weird, it said he deleted his blog?), and last but by NO means least.. that ADORABLE heart box is from the lovely lauren! she was so sweet to snag me a couple trader joe’s goodies on her last trip!

THANK YOU EVERYONE, I LOVE MAIL! ha. it was a great day in the mail department. i am beaming with happiness.

after dinner i got to work on my project: mastering protein coffee cake!!

national coffee cake day happens to be this wednesday.. and i happen to LOVE coffee cake. however, it is not exactly the *healthiest* for you.

i perused a few coffee cake recipes and adapted one to become higher in protein, lower in carbs and BFL-friendly.

not gonna lie, i am pretty dang proud of myself! i will be posting a recipe page for this soon!

i am really impressed with the taste and texture of this coffee cake. i can’t wait to try different variations such as blueberry coffee cake or pumpkin spiced coffee cake… OHH or CARROT coffee cake! with fat free cream cheese glaze! yes.

the recipe makes six servings, each serving is 179 calories, 6g fat, 17g carbs and 14g protein which is pretty dang balanced when it comes to body for life! yes, a tad fat heavy (it is a protein/carb/fat ratio of 31/37/32) but the fat comes from olive oil~ so it is healthy fats!  i am sure i could tweak the recipe a bit in the future, omit some of the oil and up the egg whites to boost the protein.. but for a first attempt, i am pretty stoked with the results!!

i am now enjoying meal 5 as i type this.. which is pretty predictable..

i am one of those people who can go right to bed after drinking a cup of coffee. does that make me strange? probably.

but you guys. OH MY GOSH! this coffee cake is to die for! i could have easily eaten the whole batch.. but i will restrain myself ;)

i have a bunch of things i wanted to share with you, including goals, a product review, a fun quiz and some random facts.. but i am afraid this post is already long enough! oh well, at least i have plenty of writing material for the remainder of the week.

i will leave you with some food time saver tips i read in real simple magazine tonight!

  • use a lemon zester to mince garlic
  • keep a few marshmallows in your brown sugar bag to keep it soft
  • use a coffee filter to strain wine from a bottle with a broken cork
  • you can make a last minute lasagna by combining store bought ravioli with jarred marinara.. recipe here.

1. do you have any time saving or cooking/kitchen/food tips to share with the class? this one i learned from marshall, believe it or not. to prevent your pasta water from boiling over, spray it with some cooking spray or throw in a splash of oil.

2. how does caffeine affect you? do you drink caffeine or avoid it? does it keep you up, does it give you the shakes, or can you drink it by the gallon and hit the sack immediately after.. like me..

That protein cake looks SO good, can’t wait to see the recipe! I drink 1-2 cups per day but sometimes I can get super jittery from coffee if I have a particularily strong roast, other times it does nothing!

You are so much better than me! There was no way I was going out in the snow to run. Supposedly were getting a foot by the morning. If that really happens I’m moving!!

I’m like you I drink caffeine before bed all the time and have no problem sleeping. But it also doesn’t really wake me up in the mornings either.

I always love your post. One thing I have done is replaced all my oil with applesauce (same ratio) when baking. Unless my brother in law will be eating it (he is allergic to apples) the weirdest thing I have ever heard of. I can’t wait to taste this cake as soon as you post it. I’m excited to see that coffee cake recipe. I don’t think I’ve ever made coffee cake before, so it’ll be fun to try!

I used to be able to drink coffee and then go to bed without a problem. When I was working as a barista I would drink two large coffees and about six shots of espresso a day but I would still go to bed without a problem.

Caffeine affects me pretty randomly. Sometimes it doesn’t do anything, others it wakes me right up and keeps me up for hours. But most of the time it just makes me the perfect amount of perky. Yay caffiene!

Ok girl that coffee cake is one the best things i have seen in a long time in the sphere! I clicked on the edited to add link and still am not seeing it, and im sure there’s egg in it, but still, faboosh!

I rarely drink coffee. I do like it but since I’m not used to it and don’t wanna become addicted, when I do drink it it has a weird effect on me. It’s weird because it doesn’t happen until hours later. But yeah, I become super antsy and super talkative ahah

your not wierd at all! i am teh SAME with coffee…It seriously runs through my veins and I could happily drink it all day long (of course I don’t) but I can have it at night then hit the hay within an hour. BUT when I am hungover or not feeling well, that is when the coffee really effects me, i can feel my heart beating and not a fun feeling, so hungover and coffee don’t work for me, but thats ok since I don’t really drink!

i LOVE intervals and I am doing this working this morning I just printed it out, thanks Janetha you da bommmmbbb. I did a killer one yesterday as well that kicked my butt!!

i want that recipe NOW for the protein coffee cake!! let me know when you post it! oh and I have a smoothie stache pic for you i’ll be sending later!!

I wish marshalls tip worked for exploading oatmeal in the microwave which is exactly what happened to me yesterday!!

cooking tip—I always heat the pan BEFORE i put in the olive oil so when the veggies get added, you should hear a nice sizzle, this prevents the food from burning!

Hey Janetha!

Do you suggest that 30g of carbs per meal is the max for Body For Life? I’ve been trying out this new way of eating and really like it, but I find that I still eat a lot of carbs. My numbers for yesterday were: 28/52/20. However, I did get 90g of protein, which I never hardly get. I just find it hard to avoid mixing fruits with my other carbs..I think that’s where it is getting me. I like to have a half of a banana with oats, and I usually have some piece of fruit with lunch (but I also have another source of carbs like bread, a wrap, etc). What would you suggest? Or do you think that as long as I am getting enough protein, I will still see results?

I used to be like you, drink coffee and go to bed. but recently I’ve noticed that when I drink more than normal (1-2 cups) my heart races like crazy. according to a friend who studies medicine, it’s sign of caffeine over doses, so I keep it to the manageable range now. :(

I don’t really do caffeine, so I imagine it would keep me up all night/give me the shakes. I have things with large amounts of caffeine so rarely though, I have no idea.

Oh caffeine – I absolutely need it in the morning to wake me up but it’s totally all mental – because I could have a ton at night and still fall fast asleep!

YUM that coffee cake looks divine!

Kitchen tips… well, my biggest tip would be read the WHOLE recipe the ENTIRE way through- then you can estimate how long everything takes, get ALL your ingrdients out at once, measure, weigh and you’re good to go. So much easier that way!!

I don’t drink coffee often, but when I do I usually shake because the caffeine hits me so hard! Tea I drink every day so it isn’t as bad.

Hmm time saving cooking tips? I love the pasta one! I ALWAYS boil water over. I did it last night while boiling potatoes. The only tip I can think of is to not be afraid of aluminum foil! I don’t know why but I used to never use it, but its such a clean up saver! I’m going to start lining saute pans with it

I can’t have coffee unless I want to we wired for a few hours. Same thing with sodas that have caffine. Crazy thing is I once upon a time worked at starbucks but never got addicted! I love the taste though. I could realy go for one now…

With regards to caffeine…I am always always always nervous that I won’t sleep if I have it too late in the day. On the weekend I had black tea in the evening because I didn’t have any other tea, turns out it wasn’t a big deal, I still slept like a baby. On the other hand I’m not sure what would happen if I drank it right before bed. There used to be a time (in university) when I drank so much caffeine that it didn’t matter when I drank it I could still sleep well. Those days are gone (phew!)

I used to be like you on the caffeine but now I have it so infrequently that if I have it after two or so my night is royally screwed. Coffee cake sounds great, can’t wait for the recipe!

I used to love caffeine and it didn’t effect me too much. Then I had to stop drinking it because of my heartburn. NOW if I have any I am wired! It’s kind of hilarious haha.

I can drink caffeinated tea late at night and it doesn’t affect me one bit but I never really drink coffee that late.

I love caffeine, but only in coffee. I don’t like caffeinated sodas or teas and try to get decaf with those.

Caffeine makes me SO jittery if I have it in the afternoon, especially from coffee. I’m fine in the morning, but I seriously get shaky sometimes so I try to not have ANY caffeine after 11 am/ noon.

You know I’m a diet soda addict, but I try to stick with caffeine free as much as possible b/c I become addicted and if I don’t have it, I get massive headaches. When I was really addicted to caffeine though, I could totally drink a couple diet cokes before bed and sleep like a baby. Now that I don’t have it as much, I can’t fall asleep if I have to close to bedtime.

2. I too can drink coffee and then go straight to sleep. One of my FAVORITE bedtime snacks used to be a small handful of salty pretzels with a nice sweet cup of coffee. I’m WILD like that!

I can’t wait your coffee cake recipe. I never bake but I plan to try this one. I mean, I have to. It involves coffee!!

I always microwave my milk/water for oats before adding them to the pan. The oats cook so much faster when the liquid is already warm!! This is especially good for steel cut oats, which take FOREVER.

Caffeine doesn’t affect my energy levels, but it does affect my sleep. So basically, it can only hurt me, haha.

I find appetite so weird too- like I can be so stuffed, then hungry an hour later. Or I can finish a meal ‘satisfied’ and not want to eat again for hours. So weird. QUESTION: vanilla almond Luna? Is that the Sunrise one or are the new ones out? The vanilla almond sunrise is my fave- so sad they are discontinueing it. CAN’T WAIT FOR THAT COFFEE CAKE RECIPE…YUM.

K, sorry. Wee bit excited there.

I can drink tea right up until I go to sleep, but anything like coffee or soda after 3pm keeps me awake :(

I think how we can go from so full to hungry is weird too. It amazes me how appetites really do tend to balance themselves out. Except for those random times where the ravenous beast awakens.

The coffee cake looks delicious! I love all things coffee. Good thing caffeine doesn’t really affect me either. Although I have started buying and drinking decaf. Just in case my caffeine needs to be limited anytime soon. ;)

1. I buy jarred minced garlic. Seriously makes my life so much easier.
2. Lately I have become the caffeine queen. What scares me is that I think I have built up my tolerance so much that I’m hardly affected by it :/
