a waffleless wednesday.

by Janetha on December 9, 2009

in meals,moves

top of the evening to you blogettes! congratulations, we have officially made it over the halfway mark of the work week.  hip, hip, hoofreaking rayyyy.

i have no witty banter to start my post with tonight.  sorry, i guess it is just one of those days.  how about i just dive right into the daily details and see what rambles come up?  good plan.

my morning started off with coffee in a snowman head, just the way any fine winter morning should start. PS: it was nine degrees on my way to work today!

IMG_9007 IMG_9008

this java had to tide me over for quite some time before i could sneak off to the kitchen. i was out of freezer waffles and didn’t have time to make some waffles from scratch. waffle wednesday FAIL.  instead i made…

IMG_9019

oats in a jar!

yes, the empty peanut butter jar bowl that HEABs made all the rage found its way into my breakfast today.

IMG_9011

said jar that was empty?

IMG_9017

the mightiest of the mapes.  OH. did you guys HEAR?! they are discontinuing mighty maple! i am wondering if this is a rumor or if it is legit.  anyone know? anyone??  i would die. it JUST found its way to the SLC and now it is goin to vamoose? sad story. i better go stock up!

mighty-mapley-protein-oaty goodness.

IMG_9020

hum. i wonder if i am going to die from BPA something or other. i guess you aren’t supposed to heat plastic containers up and eat out of them.. so, if i die.. someone can have my christmas countdown placemat :)

IMG_9013IMG_9014

sixteen days ‘til santa!

woah. that is getting a little too close for comfort considering the amount of christmas shopping i have left!

i spent the day running errands for my boss. i was out of the office for over three hours this afternoon! talk about a wasted day. ohh well. i did make it back to the office eventually and was so hungry, i thought i was going to eat my arm.

snack plate time!

IMG_9022

cucumbers, red peppers, mushrooms, sunflower hummus, garbz+cottage cheese & a few sliced of oven roasted turkey for good measure.

IMG_9024 IMG_9023

i need to get some more ranch seasoning. OH for those of you who asked, when i said i like my ranch salad dressing from scratch~i really meant i like to make my own ranch from the hidden valley ranch packet+1 cup of milk+1 cup of mayo.  needless to say, i don’t eat this very often. usually i top my salads with either cottage cheese, hummus or balsamic vinegar (or a combo of all three!)~i really liked some of the salad dressing ideas you guys mentioned in my last post. thanks for those!

after work i got my permanent crown put on.. hopefully no more dentist until next may.  but hey~my mouth is now the queen. i’ve got my crown.

i went up to my parents’ house after the dentist and saw my sister in law & niece~they live there right now. my niece made the dopest edible train on the block!

IMG_9030 IMG_9031

yes i had to post both photos because one showed you her super proud smile and the other showed you her ridiculous fashion sense. and she is only three!

check out this train!!

IMG_9036

IMG_9037

IMG_9065

not a huge fan. too artificial tasting. i don’t like the frosted bottom part. ick. won’t buy it again.

went home and made myself a proper dinner~

chicken nuggets and fries!

IMG_9075

well.. healthified of course ;)

i diced some chicken and sliced some sweet potato half moons~i breaded the chicken with italian panko bread crumbs & garlic powder.

IMG_9071

i baked it all at 425 degrees [f] for about 30 minutes.

side note: did you know that the formula to convert fahrenheit to celsius is: take the fahrenheit, minus it by 32 and then times that number by five ninths.  geez, we should all just be on the same system.  fahrenheit makes NO sense (32 is freezing? why not zero?!) plus it is hard to spell..

post baked!

IMG_9072

i paired the chicken with organic bbq sauce~ (even though i really wanted some annie’s honey mustard.. but did not have any in the house.. honey mustard is my fave for dippage of nuggets!)

IMG_9077

and paired the sweet potatoes with organic ketchup~

IMG_9078

this meal made me much happier than a happy meal would have! ;)

now i am watching the jazz game with my roomies and contemplating going out.. i don’t think it is going to happen..

OH! tomorrow morning i have an appointment with the business counselor at the university. yep, janetha b. is going to go back to escuela!

ok, i think this is long enough, don’t you? see you tomorrow everybody!

Qs~

1. what is your favorite dipping sauce? man there are so many.. ranch, bbq, honey mustard, sweet & sour, ketchup, hummus, salsa, guacamole.. i really don’t want to pick. but if i must, it would be hummus. as far as dipping for chicken goes, however, honey mustard wins. ha, i used to be so indecisive back in the wendy’s chicken nuggets days and would get THREE dipping sauces for my FIVE piece nuggets! hah. ridic. anyway.. moving on.. favorite dipping sauce para tu?

2. fill in the blank:  if (insert specific product here) was discontinued, i would be tempted to jump off of a bridge/out of a speeding car/into shark infested waters because i would be so sad. i am sad about mighty maple. but not devastated. i think if oikos discontinued the 0% plain greek yogurt i would die a sad slow death from being depressed.

Jenn N. December 9, 2009 at 11:34 pm

I love dipping sauces in general. Honey mustard and BBQ tie for chicken nuggets. Ranch is #1 for fries. I also love horseradish and sour cream together.

I REALLY REALLY love my Yogi super-antioxidant green tea blend. Who wouldn’t love something with “super” anti-oxidant in the name!

The last two days you’ve been posting the same time I’m checking my bloglines. Neato! :)

Tay December 10, 2009 at 12:22 am

OMG if they really are discontinuing it I’m so stocking up!! Or at least buying another before it goes bye-bye :-( That is the cutest train ever!! What a great idea to use that ice cream cone – I LOVE it!

1. BBQ sauce all the waaaaaayy. BBQ sauce love forever.

2. If YOGURT was discontinued I would not know how to live anymore. Ever. Again.

Sarah (Finding My Balance) December 10, 2009 at 1:06 am

your niece is so cute!! and her tights are awesome. i wanna be a 3-year-old with cool style…

1. just like on my salads, i dip all in honey mustard!! bbq is second. but since i HATE ketchup, i experiment a lot with side sauces and dipping devices :)

2. i can’t think of any products discontinuation (is that even a word?) that would devastate me. i’m adaptable?

mayapamela December 10, 2009 at 1:24 am

…peanut butter. Just all peanut butter. Like if there were a permanent salmonella peanut butter outbreak or something.

Your niece is adorable! I love her socks+boots!

Jessica @ How Sweet It Is December 10, 2009 at 4:34 am

Love your workout!! I don’t really like dressings and sauces, but I would have to say honey mustard.

Lauren December 10, 2009 at 5:49 am

WHaT?!?!?! Say it Ain’t So!!! Might Maple CAN NOT be discountinued!!!! THat is my absoulte favorite and my jar is getting depressingly low at the moment. Yikes, I better stock up as well.
I was sooooo sad when I heard that they discountinued Zoe’s Granola (it;s my favorite). I did manage to find it still sold in one really ghetto select store, so I pretty much bought them out. Now i have about 25 boxes of granola in my pantry. Hey, you gotta do what you gotta do! ;)

I adore the Amy’s Honey Mustard. I probably go through a bottle a week of this stuff. I am a condiment Queen! My fridge is overflowing with half empty bottles of ketchup, dressings, and the most random sauces.

Hope you have a great day girlie! Only one more until the weekend!!!! :)

Emily (The Experimentarian) December 10, 2009 at 6:02 am

OMG, what if they stopped making cottage cheese? I would die. Good thing I don’t think the dairy industry will let that happen.

How about I would still need three dipping sauces for five pieces of chicken. I love honey mustard, bbq sauce and ketchup all way too much to choose ;)

And guess what else? Eating oats in a jar rightthisminute!!! xoxo

Deb (SmoothieGirlEatsToo) December 10, 2009 at 6:29 am

OK love the dental humor of course- you ARE the queen! Must remember that for my next dental convention in January :-) My peeps will be impressed!

Your little niece with the uggs- ugh, kills me so cute. Oh and sign me up for THAT party train.

I like that you got 3 sauces for 5 pieces of chix. A girl has the right to change her mind!

So funny you talk about converting F to C and visa versa- I actually have it in my head. Only I always have it wrong in some way. So I’ve been trying to do all the conversions here in Canada and it takes me about 4 tries before I finally get the permutation right (was it 9/5 MINUS or PLUS 32???) So funny!

Sauces : BBQ.

Discontinued: Greek yogurt. I would chop off my arm. I’m not worried about maple- just add maple extract to your existing pb, boom, mighty maple- make your own!

Also, if you die of PBA poisoning I’ll take your mat. But that’s unless I die first of saccharine, splenda poisoning and then you can have my Vitamix.

Sarah W. December 10, 2009 at 6:52 am

0n an unrelated note, I tried the Light Chocolate Muscle Milk b/c they were handing it out for free at the race I ran last weekend – SO GOOD!!!! As you know too much dairy doesn’t make my system happy but I think I can dig the muscle milk once a week after my long runs!!! loooooooooved it!

hayleycepeda December 10, 2009 at 6:59 am

Me me me! I want the Santa countdown placemat! Of course I really don’t want you to die from BPA’s but if you do then so will I…I’m still drinking out of a reusable plastic water bottle. Honestly I feel like something else is going to kill me before that…but perhaps I will switch to the metal (??) ones soon.

That train is SO cute!!! A new twist on a gingerbread house. :)

It’s funny you said that about Oikos being discontinued – I have recently developed an addiction to plain Oikos + peanut butter + pumpkin butter all swirled together. Holy YUM…I’m going through Greek yogurt containers like there WILL be a discontinuiation!

ellie December 10, 2009 at 7:35 am

That train ROCKS! OMG. Fab + yum = winner.

Gah, I hate when stuff is discontinued or changed. I am still made that PB and Co changed their smooth operator recipe, but the original is still on shelves here. My favourite gum has just been discontinued so the past week has been a manic spree of rushing around to random stores grabbing the last packs while I can :(

1. what is your favorite dipping sauce? Yikes. Tough question. Ketchup is a MUST for me, but tzatziki is right on par with that. Honey mustard and hummus would make my list too. I could live off dipping sauces. Oh, how could I forget hoisin sauce and duck sauce?

2. fill in the blank: if the brand of sweetener I use, Amy’s meals or quorn products was discontinued, i would be tempted to jump off of a bridge/out of a speeding car/into shark infested waters because i would be so sad. Or the Joseph’s wraps I love.

Carbzilla December 10, 2009 at 8:09 am

Oh crap – I haven’t tried the Maple so now I’ll have to go find it. I’ll grab you an extra jar.

Hooray for going back to school. Allllll the cool kids are doing it, you know!

Graze With Me December 10, 2009 at 8:12 am

Living on the edge girl, eating out of hot plastic!!

Cute train, what a great idea. I love anything made from food…

1) Good question…I love hummus but homemade guac might top it. I could also put hot sauce on a piece of rotten food and make it appealing.

2) I would cry for days if they stopped making almond butter. Or Clif bars. :)

Quinn December 10, 2009 at 8:26 am

That train is AWESOME!

1. Ketchup would have to be my fave, but I love dipping in general.

2. I would be most sad if Laughing Cow were discontinued. I love that stuff on crackers or as a sandwich spread. Easy and low cal!

Jocelyn December 10, 2009 at 8:27 am

Good for you for going back to school. I have been toying with the same idea….but we’ll see!

I like dippiing most hot foods (pizza..) into ranch..so bad but so good

and not really sure about the second question…hmm…I’ll think about that ;)

I do wish we could get oikos in canada!

Emily December 10, 2009 at 8:31 am

1. I have a love affair with dipping sauces in general, but I really like 1000island dressing.

2. Cherry Coke Zero!

Michelle December 10, 2009 at 8:43 am

WHAT!? The better not be discontinuing Mighty Maple…it’s my absolute favorite!! We should start a petition!

Angharad (Eating for England) December 10, 2009 at 9:12 am

Fahrenheit completely baffles me. Agreed.
Your niece is 100% adorable and that train rocks!

1) Ooh. It has to be the magical combo of ketchup and mayo mixed together aka “fancy sauce” (step brothers, anyone?) aka “rosé sauce” aka FAVE.
2) If they stopped making TJ’s raw unsalted Almond Butter I’d be sad. I would be devastated if I could never eat Cadbury’s Dairy Milk Fruit and Nut again….
Oh and P.S. it was -4 on my way into work today and the wind chill is at -19. Yeah. Minneapolis loses at life sometimes.

VeggieGirl December 10, 2009 at 9:15 am

1.) guacamole

2.) Theo chocolate

julie December 10, 2009 at 9:38 am

i think that if they stopped making low sodium cottage cheese that i would go into cardiac arrest.

…slightly dramatic but oh so true.

i also feel that way about apples.

fav dip? wellll can i say scoop? SALSAAAAA :)

have a great day girl :)

HealthySDLiving December 10, 2009 at 9:42 am

WHAT?? Please tell me it’s just a rumor! :( That would be a sad sad day!

Your niece is adorable and that train…ROCKS!

Dinner looks great! I’d have to say BBQ is one of my fave dipping sauces as well as Annie’s Organic Ketchup!

Jenny December 10, 2009 at 9:46 am

oh my god, that train is straight out of “Food Network Challenge” — I am muy impressed!!

I vote that if it is below 10 degrees work and school become optional…agreed?

ciao bella!

Amanda (Two Boos Who Eat) December 10, 2009 at 10:14 am

I could seriously never pick a favorite dipping sauce. I love them all so so much! Those chicken nuggets look really good. I need to try making some of my own one day!

linds December 10, 2009 at 10:49 am

izz is super proud to have made it onto neefys blog! btw, her dad helped her get dressed.

Ashley December 10, 2009 at 10:53 am

Before my diet, my favorite dipping sauce was Helman’s Mayo!

I’m a bit of a freak I guess.

Dipping sauce now? One of the many BBQ sauces I picked up in St Louis. One is called Bandanna’s and it’s just heavenly.

Kristin (Kristin's Nibbles) December 10, 2009 at 11:27 am

Oh, no- not mighty maple! I have yet to try it, it still is not around here! I might need to do a switcheroo with you one of these days to get myself some before it goes! ;)

And I LOVE the idea of healthy chicken nuggets + fries! I recently made some nuggets with almonds + oats (recipe from Oxygen) and they were faaab!

I used to put ranch on everything as kid. Not so waist-friendly. Now for dipping I love honey mustard ANYTHING (but esp Annie’s), Organic Ketchup or BBQ sauce!

I think I almost cried when they discontinued Whole Food’s 365 BBQ sauce. I WOULD cry if they discontinued Annie’s Honey Mustard, Maranatha Almond Butter, 0% , pineapple or peach Chobani or Haagen Das Five ice cream. Obsessed? Just a little.

that train needs to make an express stop to my mouth.

cathy December 10, 2009 at 12:28 pm

You crack me up! Your neice is too cute. My 4yr and her daddy will be tackling a gingerbread house on Christmas. Should be interesting. My favorite dip is ketchup mixed with ranch. SO YUM!

holly December 10, 2009 at 12:29 pm

GOING BACK TO SCHOOL?!?!!?! I LOVE IT! congrats miss janetha b – that is amazing!

your niece = cutest thang on the block.

fave dippage probs equals BBQ sauce or ranch. heaven.

if greek yog/almond butter was discontinued, just call it all over.

LOVE YA

Erika December 10, 2009 at 12:42 pm

Congrats on going back to school! What are you going to be studying? I’m totally with you on the greek yogurt thing. I would be at a loss as to what to have for an afternoon snack. Then if Whole Foods had the nerve to discontinue their ground Vietnamese Cinnamon, get out the razor blades– this chick would call it a day. (if you’ve never tried this cinnamon, please do. it’s to die for… haha no pun intended… well maybe a little :)

Sarah December 10, 2009 at 12:56 pm

Back to school?!? That is so awesome! What will you be studying?

1. I LOVE BBQ sauce. And mustard. MMM. When I used to eat crap fast food, it was ranch ranch ranch all the way. Wendy’s ranch was the BEST

2. I think I also would die if 0% fat greek yogurt did not exist, or possibly coffee. OMG yes. And almond butter. And apples. Oh crap, the list goes on.

Stacy (Eating To Live Love Laugh Tri) December 10, 2009 at 1:32 pm

BBQ sauce is my all time favorite dipper but I love, love, love Annie’s Honey Mustard. Mmm!

traynharder23 December 10, 2009 at 1:47 pm

mustard is my fav dipper. seriously.

if quaker oat crack was discontinued…i would die a little inside. but if there was no more shredded oats either? shoot me now.

lisaou11 December 10, 2009 at 2:22 pm

I like dipping anything in sweet and sour sauce. Like chicken nuggets from mickey ds in their sweet and sour sauce! YUM!

Hmmm…
if carba-nada noodles were discontinued id be pretty sad!

Carla December 10, 2009 at 2:27 pm

I have to repeat, I owe you my life for inventing this garbz-ranch-cottage cheese mix…I just had some for a snack as I won’t be getting home until late tonight!

I could never, ever, ever pick a single dipping sauce! Although guacamole will always have my heart!

I would be super distraught if they discontinued turkey pepperoni…

Carla December 10, 2009 at 2:27 pm

Oh, and PB Puffins (oh, the HORROR…)

Andrea@WellnessNotes December 10, 2009 at 2:36 pm

For chicken I used to love peanut sauce, and since I can’t eat peanuts anymore, I now make a nice sauce with almond butter, sesame oil, soy sauce, etc. For anything else, I love fresh salsa (since I LOVE tomatoes so much).

I don’t think I have one food item I couldn’t live without. Now if they’d “discontinue” tomatoes somehow, that would be another story…

Andrea@WellnessNotes December 10, 2009 at 2:37 pm

Oh, and I forgot, I LOVE the train your niece made! And her fashion sense! :)

Katey December 10, 2009 at 2:37 pm

yummm.. that chicken looks so good! :)

snackface December 10, 2009 at 2:39 pm

WHAT!!!!!!!!!!! You’re going back to school!!! I can’t wait to see what for!!!

Ooooh fave dippage…hummus. Hands-down. And I would DIE if Sabra ever shut down. Die.

Sorry this comment is so short!!! I blame work!! LOVE YOU X 8947593847589347!!!!!!!!!1

lowandbhold December 10, 2009 at 3:18 pm

Your neice is SOOOO cute!

Can’t wait to hear more about the school sitch.

And hopefully the Mighty Maple rumer is just that… a rumor!

closet365project December 10, 2009 at 3:20 pm

MMMM. I want your dinner! I am totally making some sweet potato fries tomorrow night.

Today is free day, so whatevs, but tomorrow? SWEET POTATO FRIES!

Allison (Eat Clean Live Green) December 10, 2009 at 3:32 pm

I’ve wondered that about the BPA’s too….

1. what is your favorite dipping sauce? ranch. so bad but so good.

2. fill in the blank: if (insert specific product here) was discontinued, i would be tempted to jump off of a bridge/out of a speeding car/into shark infested waters because i would be so sad. peanut butter in general.

Averie (LoveVeggiesAndYoga) December 10, 2009 at 4:23 pm

“they are discontinuing mighty maple”–I’ve heard that too. About a month ago in the b’sphere. Not sure if it’s true, but it’s been goin’ around.

your niece is like a mini Janetha…alll blond and adorable!! I love her train! With the fluffy stuff! Reminds me of my 1st grade art projects!

And girl I am a condiment dipping sauce QUEEN. I used to have to ask for triple or quad the amt of condiments/sauce when I was a restaurant go’er. Nowadays I cook at home but yeah, I hear ya, I need alot. Of whatever it is that goes with the food!

We’re off. In like 6 hrs. If I am not as good with my commenting the next few weeks, please forgive :) You know Im reading and loving you..always!

mom December 10, 2009 at 6:15 pm

You crack me up!! I LOVE reading your commentary and you ARE the Queen!!

Izz is such a fashion queen and so dang cute!

The nuggets and fries look divine!! I prefer fry sauce, tartar sauce, amazing sauce, ketchup, salsa, you get it, it is ALL ABOUT THE SAUCE!!!

Let’s see……..they have already discontinued my favorite mousse hair product, my favorite dental floss and now changed up the creamy body wash we both love……in the food category it would probably be butter or mayo – you know the REALLY healthy stuff!!

xoxo

dorothy December 10, 2009 at 7:13 pm

your healtified vers of chicken nuggets and fries looks fab! love honey mustard with nuggets as well :)

Jenna December 10, 2009 at 7:31 pm

great eats!

Susan December 10, 2009 at 7:36 pm

Thankyou for recognizing the Fahrenheit ridiculousness!!! (that just took me three tries to spell right) I have to google what my celsius temps are for you American folk and it never makes any sense.

Love your healthified chicken nuggets and fries!

1. Tartar sauce!!!! I don’t eat it a lot because I like the heavy, creamy, mayo-ey kind.

2. Deep chocolate vitamuffins. There is no substitute.

Hillary December 10, 2009 at 9:29 pm

Cute snowman mug.

Where do you buy PB & Co???

~ Hillary @ Nutrition Nut on the Run

Angelina December 11, 2009 at 9:00 am

I did chix in Panko Italian bread crumbs the other day! Love! Gives me my “Psuedo Fried Chix” fix.

If I had to choose a fave dipping sauce– I would say the combo of Ranch + Frank’s Hot Sauce= GLORIOUS.
