Hey lovely readers of Meals and Moves! It caught me by surprise when Janetha asked me to do a guest post! I know how much exposure is her blog and I’m excited to get new people to know my blog. My name is Coco and I write Balance, Joy and Delicias. My philosophy of life is follow the intuition, be passionate about what I do and add joy to life in a daily basis. It could be as simple as a good walk with a friend, a warm bath, a sweaty yoga session or few bites of your favorite food.
However, I haven’t been always like that. I had weight/food struggle in my early twenties (I’m almost 29 now). It took me several years to establish a healthy relationship with self-image and food. Nowadays, I eat simple, clean food by preference rather than keep track on calories. My cuisine is a fusion of Asian, Argentinean and Italian. I love exploring new combinations of flavors and creating yummy recipes which is also healthy.
Meals: Since breakfast is my favorite meal of the day, I’ll share some of my favs with you
Green oat bran topped with nut butter and raspberry
Steel cut covered by a strawberry mousse and greek yogurt
Green oat bran covered by chocolate mousse made with chia gel and cocoa powder
Homemade Chocolate soy yogurt covered by dragon fruit and apple
Mix of dairy free chocolate mousse, blueberries, greek yogurt and wheat berries.
Moves: Yoga is my favorite strength training. I practice 3-4 times a week, either by my own with Dave Farmer’s podcast or in a yoga studio. I do 2-3 times of cardio, which could be a spinning class, a long walk with a friend or Elliptical while reading magazines.
