well, allison was all about the clueless references today and so i figured i could teleport you all back to 1995 as well with my title ;) more on the baking extravaganza in a bit.

a lot of you were wondering about the recipe for the mango chutney as well as the almond crusted chicken i made sunday.  i made a recipe page for the chutney, you can find it by clicking here.  as far as the chicken goes, all i did was throw some almonds in the blender and then mixed that with some bread crumbs, then dipped the chicken in some egg whites, in the bread crumb+almond mixture and then into some slivered almonds (more for show) and then threw the chicken in a pan with some olive oil for about 3 minutes on each side. super easy! and super tasty.

thanks for the kind comments on last night’s post. i am ok, just was in some kinda funk and i think i have snapped out of it now :D

today is a totally different story.  even though i was back at work, i had a great day, so let me ramble about it!

since monday was a holiday we had our sales meeting at the original pancake house today. i got the usual suspects. except the coffee was brought to my by the boyf this morning (we work together) and so i took my coffee with me in my boss’ truck and proceeded to accidentally allow the lid to pop off and it spilled allllll over his truck! woops! sorry boss.

i had a hair appointment at 10 (hi lisa!) and so i bailed, went to that, forgot to take before and after photos (woops!) and by the time i was done around 12:20 i was starving my face off.  it was back to the office for lunch!

my legs are SO SO SO sore to the maxxx from my lower body workout yesterday! it was a doozy and i have super bad (or good?) DOMS! so i knew i had to run on the treadmill for my HIIT to stretch out these sore muscles. please pronounce muscles like “musk-els” because that is how i just did in my head. ok thanks.

notice how slow i was, that is a direct result of the sore legs. also notice the lowered average HR and lowered max HR. i need to work on kicking it up a notch and making that average HR during HIIT be at least a 155. next time.

i mixed the tuna with some cottage cheese and annie’s dijon and threw a few diced pickles in for the ride and then laid it all atop a sandwich thin then put the goat cheese on top and put it in the toaster oven until it was melty and fantastic.

i also had some carrots with a side of 4 dogs…

the people over at nunaturals contacted me asking me if i would like to try their products.  i am not usually one to use artificial sweeteners because i haaate the bad aftertaste, but then i saw that april said this stuff doesn’t have the afterfunk like most sweeteners do! so i was stoked. i used this in my baking adventures tonight along with another sample i received from greens+, some chia seeds!

almond chiaseed protein muffins!

i LOVE almond poppyseed muffins, so i replaced the poppyseed for chia seed and used the nunatural baking blend as my sweetener. beefed the protein content up with a few protein faves: egg whites, greek yogurt & protein powder, and i was in business!

i will be making a recipe page for these bad boys as soon as i calculate the nutrition info, but here are the ingredients i used (you will notice i don’t measure everything when i bake..oops):

dry:

  • 1/2 cup whole wheat pastry flour
  • about 2/3 cup oats, give or take
  • 2 scoops vanilla EAS premium protein powder (54g worth of protein)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp nunaturals baking blend
  • 15g greens+ chia seeds
  • big handful of almonds that i chopped up in the vitamix beforehand

wet:

  • 1 cup 0% fage
  • 3 egg whites + 1 whole egg
  • 1-2 tsp almond extract.. just eyeballed that one

mixed the wet with the dry and then divided them out into 12 muffins, placed a whole almond on top for good looks.. oh and i grabbed a handful of almonds to do the garnish and i just so happened to grab 12! i love it when that kind of thing happens, i am a numbers geek :P

of course, i had to try out my finished product ;)

i guess i should count that as meal 5? i am off to calculate the stats… and try not to eat another one!! i will have the recipe page & stats posted tomorrow, for those of you who care about that sorta thang.

oh and i am so thirsty today. i think i’ve had nearly 2 gallons of water. whoooaaahhtshahnfjekwcndw. thirsty times infinity plus sixteen!

OH yeah remember how i was going to a concert tonight? i told marshall to get tickets a month ago, and then 3 weeks ago, and the 2 weeks ago, and then last week. and yesterday. it sold out. ugh.. i am pretty bummed. but at least i made a delicious creation in lieu of the concert.. still bummed though.. boys boys boys. oh well, life goes on!

I like to make “grown up” grilled cheese sandwiches with all sorts of “interesting” cheeses & tomatoes & spinach… However, the toddler loves them, so I’m not sure how “grown up” they really are… ;)

I try to stay away from artificial sweeteners as I think I ingested about a lifetime worth of them when I had my diet coke addiction…

Ugh! I’m still trying to break the artificial sweetener addiction…it’s my only vice. But, I find it counterproductive to eat whole, natural foods all the time and then kill myself with packets of yellow poison. I guess it’s a process.

Grown up version of kid food- I guess PB&Js have become more swanky (sorta) with other nut butters.

such a bummer that you didn’t got concert ticket but as you said you got some good food and bakings there! That muffins look sooooo perfect, just like those that you see in stores.

Woo…lucky you getting to sample NuNaturals Stevia, I’ve been wanting to try those for a while because I began to use stevia, although it sweetened pretty well, I still can taste the bitterness at the end. So, I wonder how these are.

I love the muffins. The whole almond accents make them look so gormuet! :)

I try to limit artificial sweetners but I really love using Stevia or Truvia (Truvia is so much cheapier)

I try not to use sweeteners. A few years ago, I used them like they were going out of style but now I can go weeks without using them.

Hooray! I’m so glad you get to try the stevia! Those muffins look awesome and I fool myself into thinking my muffins have poppyseeds too LOL!

In my oats this morning + my coffee I use 1 dropper full of the vanilla extract stevia and it is to die for YUM! I need to see if my Nature’s Pharm sells this stat!

Woooot! I just had a fab plate of french toasted waffles, celebrating in style ;)

I’ve never had the coconut cream Larabar because my lame city doesn’t carry them. The chocolate coconut however is quite good!

Chris has an endearing habit of pronouncing things phonetically, including “mus-kles.” My favourite if “ghime” instead of “jim” for gym :)

1. Vegan Mac n’ Cheese :)

2. I put a couple drops of stevia in my plain yogurt, but that’s about it. I used to be all over the splenda, but it gives me tummy issues. So now I just use the real stuff (especially honey and maple syrup) to sweeten instead.

ughhhh – still trying to kick the diet coke habit – it’s getting less and less but we have no officially broken up yet!

i dont really make grown up versions of thing (well, I suppose my rendition of a grilled cheese with brie and gruyere is more grown up then american cheese ;)) but i always feel like a grown up when i have a glass of wine with a meal. beer doesn’t make me feel grown up, nor mixed drinks really .. but wine is more .. sophisticated i guess, and i always feel like a grown up :)

I don’t have a sweet tooth, so I don’t use sweeteners. However, those muffins sound delicious, as I love almond!

Anyway, I guess my food isn’t very grown up, except I add a ton of veggies to everything and prefer “fancy” nut butters to JIF. However, adding a glass of wine with even a freaking grilled cheese would make it a bit more grown up, no? :)

I am currently doing my EAS protein powder research because I ran out of Designer Whey. hmph. I hope I can find in stores near me :)

I used the TJs Soy Pro powder in my cabinet that I have yet to finish the oh-so-large and in charge tub for my first batch of pro muffins and they turned out “too proteiny”

I’m about to try with the Rice Protein that I will never use and pray that works haha. If not then I will be using Whey.

I will openly admit that I’m addicted to Splenda. IT’S GLORIOUS!

Instead of burgers I like to make breaded eggplant “burgers” topped with feta cheese that I bake in the oven. Tasty tasty……

Tuna melt! I haven’t had one of those in a long time, it’s making me hungry.

I guess the coconut larabar is lost on me, I don’t like coconut though….now cashew cookie, that’s a different story.

1) That’s a hard one, I’d say that I make a pretty damn good pb and j but I also like to add tofu to a bowl of chocolate pudding.

2) I use stevia in my tea but I use regular sugar for baking. Sometimes I use agave or honey…I justuse less than what the recipe calls for.

i also don’t really measure when i bake…when i write a recipe, it is usually just an approximation. ya heard it here.

WOOWOO for coconut lara. also my fave flav. cinnamon roll is #2. tropical fruit tart = #3.

i don’t know if i am grown up enough to make a grown up version…hmmmm…does an AB+J sammie count as a grown-up version of a PB+J?

sweeteners are sweeteners aka i love them all. i like to vary and mix em’ up!

I’m suprised that you don’t taste the bad after taste of stevia. The only thing that I can put it in is smoothies, but other then that I cant stand the after taste – though I do think that it is a great alternative to artificial sweeteners which is why I stick with it.

I want to try the coconut cream larabar soo bad but I can’t find it anywhere :(

I never add sweeteners or crave a lot of sweet because I eat a lot of fruits which I think supply my body with more than enough sweet because I never crave dessert. 4) I am obssessed with goat cheese. It has been far too long since I’ve had some.

As far as sweeteners I used to be hardcore addicted to Splenda. After trying NuNaturals stevia I really liked it and could have easily made the switch if I had more $ to spend on it. Now I just swipe a handful of splenda everytime I buy a starbucks…which isn’t that often (yes I know this is ghetto but I am poor and I just paid $2+ dollars for coffee…)

i try to eat “grown up” candy ahaha! what a joke that is. basically instead of shoveling down hershey’s cookies n’ cream bars i eat dark chocolate… counts right? but i have to say your grown up tuna melt looks all sorts of legit!

annnd i’m not a big fan of artificial sweeteners, but i’ve never tried the ‘natural’ kind. so hey, who knows?

I used to use artificial sweeteners in a lot of things. Now, I never do and my stomach feels so much better. I try not to eat much sugar, but when I do I go for the real stuff!

Coconut cream lara bars are awesome right!?! A lot of people don’t like the chocolate one but I love it. It doesn’t compare to the coconut creme, but it’s great when I’m craving chocolate.

Your grown up tuna salad looks fab. I like to make grown up mac and cheese a lot… I bake it with veggies + breadcrumbs and sometimes fun stuff like sausage. Mmm…

I am making those muffins this weekend for sure!! Yum!!

Andd I don’t like artificial sweeteners, except when it comes to Stevia. I love it. Super sweet, so only a bit is perfect in coffee or unsweetened iced tea.

I am totally trying that muffin recipe out!! Those look pretty “grown up” to me, with the sophisticated almond placed on top. ;)

As for sweeteners, I usually stick with fruit (bananas) for sweetness, but I also occasionally use stevia or xylitol. Good stuff.

Coconut Cream Larabar is to die for. It feel so wrong, but so right.

I have made grown up versions of grilled cheese using more aged cheeses. Amazing how the palate changes as you age!

hmmm grown up versions… i guess pb&j is one – i have it with almond butter and preserves on a sandwich thin. does that count? or oats of course – we all do that grown up style. and green smoothies :)

i dont touch artificial sweeteners if i can help it anymore, but i will use stevia based ones because stevia is basically a sweet herb, much like basil but sweet instead of .. basil-y. lol. i don’t necessarily love it yet but i’m not used to it nor do i need it often either.

I know sweetners are bad, but if it’s stevia, I’m inclined to say ok and diet sodas are a vice that’s difficult to give up…

My smoothie is sorta grown-up (it does have Flax Seed).

I use Truvia in my coffee and sometimes on my oatmeal, but try to avoid them everywhere else.

The muffins look so good. Did you just make the recipe up? That’s so impressive! Baking scurrs me.

1. Hmmm…. I like a grown up grilled cheese – add tomatoes and use swiss + cheddar + provolone. Yum!
2. Not a big artificial sweetener person. Hurts my tummy. I go with real sugar in baking most often or apple sauce, pumkin, etc.

1. Pizza? Quesadillas? Brie nachos?
2. I use them occasionally, but try not to add them to things in excessive amounts. I’ll usually just have them in occasional drinks.

Can I just say I love your “smorgasbord” method of meals.. aka, throwing a bunch of delish things in a bowl and making a bangin’ creation.

1. my grown up version of hamburger helper is annie’s mac and cheese with a crumbled veggie burger and I have graduated from oatmeal packets to stovetop oats (though I still do hit up mister quaker when i’m short on time.. sue me!)

2. I <3 Truvia … 2 packets a day does the trick para mi!

Hi Janetha! Thanks for stoppin by my bloggie lately and for entering my cha cha chia seed contest!

I too just recently got the NuNat’s stevia thing goin’ on. Previously, I hated anything other than white sugar. In the last year or so agave has been my new BFF, but it’s also not exactly low cal at like 60 cal in a little spoon, I was feeling a bit overboard with it. Enter stevia about 3 mos ago. However, the WF brand of stevia is a little nasty. I like the Nu much better and although it still has a faint aftertaste to me, it’s much much better. I need to try PBJEnny’s Truvia she is always mentioning…right above me…actually

I am in the middle of eating the last of my mock tuna and I read that you put goat cheese.. AND I HAVE GOAT CHEESE! lol thank God I read surf the interwebs while I eat. So I’m about to get up and grab some goat cheese, girl. Moreover, those muffins look so freaking cute with the little almond on top. I made some poppyseed muffins last week actually ;) Great minds think alike. First it was tuna, and then the poppyseed muffins. What next?

1. Ohhh girl. Grown up PB sandwiches are awesome – like grilling real fruit with it. Also grown up grilled cheeses are my specialty (mango chutney+cheddar cheese+pumpernickel bread)

2. Well I don’t think sweeteners are really necessary for the most part. I’m not one for super sweetness, but I think sometimes a little bit of added sweetness can help the natural flavors of certain foods shine.

Hi Janetha! Okay, just getting all caught up because I’ve been gone for awhile. Everything you’ve eaten looks so good (as usual). Those muffins look bomb – I want to make them right now.

I used to use a ton of artificial sweetener, but in the past few weeks I quit them all cold turkey. Even stevia! I’m not sure if it’ll stick or not, but for now, I’m enjoying my sweetener free life…

1. that is a good question. I think I was kinda spoiled in that I grew up eating “grown up” food, ie we never got take-out, fast food, prepared meals, snacks, stuff. which also means I’m kinda a snob about some things, like I won’t even allow my hub to get jarred tomato sauce. has to be homemade!

2. no artificial sweetener. if I bake, I use palm sugar or agave or yacon syrup. I’ve tried stevia and I don’t think I like it. there is something funky about it, to me. other than baking, I just don’t use any sweeteners, really. my sweet tooth mainly just has a taste for fruit. and chocolate, but if it’s bitter chocolate, do you think that counts as a sweet? hm.

now I am going to continue to tackle the google reader! I missed some good stuff this weekend.

You are brilliant for coming up with those muffins! They sound incredible and healthy. You da boss.

I’m not sure if I make a grown up version of anything…I think my salads have grown up in the past year though, as in from romaine to kale, flax to chia, cheese to parma, no hot sauce to hot sauce. Oatmeal has grown up too, from pre-packaged apple cinnamon to homemade stove top.

And sweeteners…I don’t really add sweeteners to anything, which I’ve just noticed because I bought a bottle of agave nectar and still haven’t used it. However, I love me some 10-calorie vitamin water with truvia and I definitely have been drinking diet soda lately. So bad, I know. But I have been trying to drink more water like you!

Those muffins are the cutest lookin’ things ever. Way to get your samples in that recipe!! I usually use stevia extract from TJ’s. No filler, no nothin’. I avoid artificial sweeteners including splenda but sometimes a packet or 2 slips in if I am at a coffee shop and didn’t bring my crack stash (aka tube of stevia) with me.

YAY for Clueless refs! I always loved this one:
“Cher, I don’t want to do this anymore. And my buns: they don’t feel nothin’ like steel. ” Sometimes I feel like that too, Tai.
1.Grilled cheese! I dress it up with sundried tomatoes and onions:)
2. I use stevia and agave but occasionally Splenda when I am at a restaurant.
