spinach turkey muffins.

ingredients:

  • 20 oz lean ground turkey breast
  • 3 cups fresh spinach, chopped
  • 1 cup salsa
  • 1 medium red onion, chopped
  • 4 egg whites
  • 1 package knorr vegetable soup mix
  • 1/4 cup ground flax seed
  • cumin, thyme, salt & pepper to taste (eyeballed it all)

mix ingredients together with your hand.. classy ;)

once it is mixed:

plop 1/12 of the mixture into each one of my silicone baking cups. LOVE this muffin tray. no cooking spray necessary. i highly recommend silicone mats/baking cups/etc!

baked at 350 degrees [f] for 45 minutes.

each muffin works out to be about 90 calories, 12g protein, 4g carbs and 3.5g fat. not bad!

these were so yummy. i replaced spinach with collard greens, because that’s all i had, but i couldn’t tell the difference. the boyfriend loved them too, so this recipe is definitely a repeat :)

Awesome, they were so good! I am doing BFL and these were great. I just needed some extra protein and carbs to make these into a meal. Basically they are mini meat loaf :) They tasted MUCH better then I thought they would. I used a fork to eat them as they were a tad greasy but thats expected as it has meat in it….

Would these be something that would freeze well? Thinking it would be great to have them on hand to just defrost and eat when in a rush!

Nina,

They freeze wonderfully! Make sure you let them cool completely before freezing. also, it’s best to wrap them individually so they do not freeze together.

how long do you think these would need to bake if i did a traditional loaf? (i have no muffin pans!)

Making these this week! Of course a google search for turkey muffins would lead me here. Mark’s on vacation and I’m not going grocery shopping. I have 1 lb ground turkey and wanted to make muffins. I’m debating on using the spinach for the muffins or for smoothies. Might use frozen spinach for my muffins.
