steak pinwheels

recipe adapted from eatingwell.com

*note: photos were taken when i made half of this recipe.  this recipe will yield 4 servings while the photos show only two servings

ingredients:

  • 2/3 cup sun-dried tomatoes (not packed in oil)
  • 1 pound flank steak, trimmed of fat
  • 3 cloves garlic, minced
  • 3 tablespoons light herbed cheese spread, such as Boursin
  • 1 cup baby spinach
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper

directions:

  1. preheat grill
  2. pound flank steak out to 1/4 inch thickness
  3. cover one side of steak with garlic
  4. spread cheese down middle of the steak, lengthwise
  5. layer on sundried tomatoes
  6. layer on spinach
  7. roll steak, making sure to tuck in the filling while doing so
  8. salt and pepper the outside of the steak
  9. stick 8 skewers into the steak
  10. cut the steak into 8 pinwheels
  11. oil grill with paper towel+olive oil
  12. grill for about 3-4 minutes on each side for medium steaks
