steak pinwheels
recipe adapted from eatingwell.com
*note: photos were taken when i made half of this recipe. this recipe will yield 4 servings while the photos show only two servings
ingredients:
- 2/3 cup sun-dried tomatoes (not packed in oil)
- 1 pound flank steak, trimmed of fat
- 3 cloves garlic, minced
- 3 tablespoons light herbed cheese spread, such as Boursin
- 1 cup baby spinach
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
directions:
- preheat grill
- pound flank steak out to 1/4 inch thickness
- cover one side of steak with garlic
- spread cheese down middle of the steak, lengthwise
- layer on sundried tomatoes
- layer on spinach
- roll steak, making sure to tuck in the filling while doing so
- salt and pepper the outside of the steak
- stick 8 skewers into the steak
- cut the steak into 8 pinwheels
- oil grill with paper towel+olive oil
- grill for about 3-4 minutes on each side for medium steaks
