chicken piccata.

it’s easy to create a delicious, lemony chicken piccata.  you will never want to buy jarred piccata sauce again!

ingredients:

  • 1 lb boneless, skinless chicken breasts
  • fresh ground black pepper & sea salt
  • 1/4 cup whole wheat flour
  • 1/2 TB poultry seasoning
  • 2 TB salted butter
  • 1 cup low sodium chicken broth
  • 1/3 cup fresh lemon juice
  • 2 ounce capers, with juice
  • 1 cup skim milk
  • 1/2 tsp xanthan gum (or corn starch–about 1-2 tsp)
  • 8 oz whole wheat linguine
  • chopped flat leaf parsley (optional)
  • sprinkle of parmesan cheese (optional)

directions:

put on a pot of water to boil for the noodles.

cut chicken breasts into thin pieces. i made six pieces clocking in at 2.5 oz each.  i like to do this because there is more surface area to coat. season breasts with salt and pepper on both sides.

mix your flour and poultry seasoning in a small bowl.

heat your butter in a large skillet over medium-high heat. let it get all nice & bubbly.

dredge your chicken in the flour mixture, one piece at a time, and set into the buttery skillet. it’ll sizzle.

meanwhile, roll out your lemons and squeeze your juice.

after about 2-3 minutes, flip your chicken.

immediately add your broth, lemon juice and capers.

get those noodles cooking!

once the chicken is cooked through, remove it from the skillet and set it aside in a covered pot (so it stays piping hot!)  you will be left with this:

tell your dogs to stay out of the kitchen and snap their photo when they pout.

add your milk. turn the heat to medium. there is nothing worse than scorched milk.

once the sauce is mixed well, add your xanthan gum, 1/4 teaspoon at a time. slowly stir, add, stir, add, etc.

your sauce will gradually thicken. be patient.

you will know it is done when the capers stick to the fork when held vertically.

once your noodles are done, drain them and add the chopped parsley, if using. i also added some hummus to these noodles below, but looking back, i wouldn’t use the hummus in the future. that is why i omitted it from the ingredients.

steam a veggie. it will make a great side. we did asparagus. it was perfect.

serve a bed of noodles, then one or two pieces of chicken, then a generous amount of sauce and a sprinkle of cheese. add your side dish and call it dinner!

Do you think that thickening with cornstarch would be ok? I have everything I need to make this but the xanthan gum!

YES. In fact, I have used it before and it worked great. Flour is also an option. :)
