ingredients

  • 1/2 cup whole wheat pastry flour (i used bob’s red mill)
  • 2/3 cup old fashioned oats
  • 2 scoops EAS vanilla premium protein powder (or the equivalent to 54 grams of protein)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 15g (weight) chia seeds
  • 1/4 cup chopped almonds
  • 2 tsp nunaturals baking blend or the equivalent with another sweetener
  • 1 cup fat free greek yogurt
  • 3 egg whites
  • 1 egg
  • 1-2 tsp almond extract
  • 12 whole almonds

directions

1. mix dry ingredients together besides almonds

2. add wet ingredients to dry ingredients, mix well

3. add almonds , mix well

4. spray 12 cup muffin pan with nonstick cooking spray

5. divide batter equally among 12 cups

6. place whole almond atop each muffin cup

7. bake at 350 degrees [f] for 15 minutes or until toothpick inserted comes out clean

I love almonds! And I always try to get a good amount of protein into my snacks…I will definitely be baking these.

Hi may i know is it alright to substitute the whole wheat pastry flour with almond flour or 100% unbleached wholemeal wheat flour?
