do you guys know what today is?

i will give you two guesses. because today happens to be special for two reasons.

i’ll wait….

go on, guess.

and now your second guess?

okay. answer time.

today is national white chocolate cheesecake day!

was that your first guess? oh, it was?! good job!

today is also oreo’s 100th birthday!

i bet that was your second guess, right?

you know what all of this means?

it’s time for a celebration!!

IMG 2524

in honor of national white chocolate cheesecake day and oreo’s birthday, i decided to combine the two so you could celebrate with a party… in your mouth.

IMG 2560

[pinit]
makes 12 individual cheesecakes
prep time: 10 minutes; bake time: 30 minutes; cooling time: at least 2 hours

adapted from my white chocolate cheesecakes

IMG 2405

ingredients:

  • 12 oreo cookies
  • 8 oz plain cream cheese, softened
  • 4 oz plain greek yogurt, such as chobani
  • 3 oz white chocolate (chips or baking chocolate)
  • 3 TB salted butter
  • 1/2 T cornstarch
  • 1/2 T vanilla bean paste or extract
  • 1 large egg
  • 12 miniature oreos for topping (optional)

directions:

  1. preheat oven to 325 degrees.
  2. line a muffin tin with 12 liners. place an oreo in each liner.
  3. combine cream cheese and yogurt in a mixing bowl and mix on high for about two minutes, until light and fluffy.
  4. meanwhile, melt white chocolate and butter together in a small bowl. heat in the microwave at 50% power for 30-second increments, stirring after each increment. you could also do this using a double boiler, but i am lazy.
  5. pour white chocolate mixture into mixing bowl and mix on high for one minute. mixture will be a bit thinner.
  6. turn mixing speed to low and add the corn starch, vanilla, and egg one at a time, mixing well between each one. mixture will be thin enough for pouring.
  7. pour mixture over oreos, distributing all of the batter evenly. *see optional remark in #10
  8. bake at 325 degrees for 30 minutes.
  9. remove cheesecakes from oven, let cool for about 15 minutes and then transfer to refrigerator for at least two hours before eating.
  10. optional: you can place a mini oreo on each cheesecake either prior to baking or immediately after baking. see photos below to see both variations. you can also leave this part off.. it’s totally up to you!

step-by-step photo tutorial:

preheat oven to 325 degrees.

line a muffin tin with 12 liners. place an oreo in each liner.

IMG 2412

combine cream cheese and yogurt in a mixing bowl and mix on high for about two minutes, until light and fluffy.

IMG 2421

meanwhile, melt white chocolate and butter together in a small bowl.

IMG 2418

heat in the microwave at 50% power for 30-second increments, stirring after each increment. you could also do this using a double boiler, but i am lazy. repeat this process until mixture is melted together, stir to combine.

IMG 2426

pour white chocolate mixture into mixing bowl and mix on high for one minute. mixture will be a bit thinner.

IMG 2428

turn mixing speed to low and add the corn starch, vanilla, and egg one at a time, mixing well between each one. mixture will be thin enough for pouring.

IMG 2431

pour mixture over oreos, distributing all of the batter evenly. *add miniature oreos here, if using.. see optional remark below!

IMG 2457

the cups will be nearly all the way full.

IMG 2462

bake at 325 degrees for 30 minutes.

remove cheesecakes from oven, let cool for about 15 minutes and then transfer to refrigerator for at least two hours before eating.

optional: you can place a mini oreo on each cheesecake either prior to baking or immediately after baking. you can also leave this part off.. it’s totally up to you!

IMG 2471

if you add the mini oreos before baking, it will look like this pre-baked:

IMG 2484

and like this post-baked:

IMG 2504

if you bake the cheesecakes and want to add the mini oreos after, simply insert an oreo into each cheesecake immediately after you pull them out of the oven:

IMG 2493

this is a cute way to get a little more oreo love into your cheesecake. totally optional, totally encouraged!  either way, they will still be tasty. and there will be that whole, big oreo at the bottom.

IMG 2576

by the way.. this recipe is easy to double. that’s what i did tonight because i wanted enough to take to work. my co-workers are gonna love me.

happy birthday, oreo! wow, 100 years? you’re real old. and you’re real good.

Dang. If I was in to gluten, white chocolate, and extreme stomach pain, I would for sure eat these. These look freaking amazing.

it’s a compliment, I promise!

Sarah @ The Healthy Diva March 7, 2012 at 2:14 am

Oh janetha….creative as always! Can i come to your office and nab one too?!?!? We are a day ahead of you guys so I’m already celebrating national cereal day. I had oatmeal for breakfast and for dinner made ‘fried’ (baked in oven) chicken with corn flake crumbs. If only every day were national cereal day!

Erica March 7, 2012 at 2:18 am

What an adorable dessert! I didnt even know they made mini oreos! Perfect way to celebrate both events.

These are so cute and look amazing! My fiance would LOVE these. He is obssessed with Oreo cookies. We must have them in our house at all times. I’ve never seen someone love Oreos as much as he does. I definitely need to make these for him. He would be in heaven :)

Lauren March 7, 2012 at 5:51 am

Calee March 7, 2012 at 8:14 am

Hey, where do you find out about these random holidays? I work for the college of Agriculture at Iowa State University and I’m partially in charge of our social media stuff. Sometimes when I’m strapped for news, I try to do an interesting food, plant or animal posting. Random holidays would be good.

Also … these look awesome!

Brittany @ GOtheXtraMile March 7, 2012 at 8:36 am

These look to DIE for!

Lauren @ Oatmeal after Spinning March 7, 2012 at 8:52 am

I’ll be completely honest- I will never actually make these, but if you gave me one, I’d eat it.
They looks awesome!

Laura @ Sprint 2 the Table March 7, 2012 at 8:55 am

Heather @ Better With Veggies March 7, 2012 at 9:10 am

I’m not really a fan of white chocolate, but I have to see the photos make this look amazing!! =)

emily (a nutritionist eats) March 7, 2012 at 9:21 am

I don’t really love oreos, but LOVE oreo desserts or ice cream! I wish I worked with you!!

Ananda March 7, 2012 at 10:13 am

Those are so cute! Have you had the Birthday Cake Oreos?? They’re pretty darn good and smell amazing as soon as you open the package. I made Birthday Cake Oreo Stuffed Brownies for a coworkers birthday (yes, inspired by Pinterest) on Monday and they were a huge hit!

Meg March 7, 2012 at 10:14 am

Holy crap this would last about 2.3 miliseconds in my house. Seriously. Everything tastes better with Oreos. It’s a fact.

Abby @ Abz 'n' Oats March 7, 2012 at 10:16 am

I need these! lol. Double Stuft Oreos take me straight back to childhood!

Annette@EnjoyYourHealthyLife March 7, 2012 at 10:21 am

Claire @ Live and Love to Eat March 7, 2012 at 12:02 pm

You’ve done it again. At least they are portion controlled. :)

meggi March 7, 2012 at 12:12 pm

Yum! I sadly didn’t participate in Oreo’s bday but I sure wish I would have!

Destini March 7, 2012 at 12:14 pm

WOW very adorable and looks delicious. In fact I wish I had one to follow my salad right now!

Amanda March 7, 2012 at 5:17 pm

I want this right away. I wonder if someone makes a gluten-free oreo. If so, I am making these TONIGHT!

Deb (SmoothieGirlEatsToo) March 7, 2012 at 5:23 pm

This is why you are a blogging rockstar. Genius. Where are the stats- you don’t want me to blow out any circuitry in my brains trying to add it up do you?

Deb (SmoothieGirlEatsToo) March 7, 2012 at 5:24 pm

Brain. I think I just have one. I think.

Yes, I checked. Only one.

Charlotte March 7, 2012 at 6:01 pm

Heather March 8, 2012 at 3:33 pm

Oreo’s are seriously my favourite “cheat” food! Yummmmmm! I love how they always have them at the blood donation clinic!

jessiker March 9, 2012 at 6:29 am

I’m not a huge fan of oreos, but I love oreo cheesecake!!!! Num.

Paige July 18, 2013 at 6:14 pm

I made these last night and could not wait to try one for dessert tonight. And it was absolutely fantastic! I had some mini oreos, but not enough to top all of them, so instead I crushed up some of the extra regular-size oreos and sprinkled them on the tops before I put them in the oven. Amazing!!! And with some calculations I figured out that they are 194 calories each. Not too bad for such a decadent dessert! Thanks so much for this recipe, I know I will make it often! :D

Janetha July 19, 2013 at 11:57 am
