easter was delicious.

last night, marshall & i went up to my mom & dad’s to prepare and devour a delicious meal.

i will spare you lots of wordy details and hop (yes, like the easter bunny) straight to the food photos.

the easter dinner menu:

  • grilled mahi rubbed with garlic peppercorn seasoning
  • asparagus spears
  • mixed green salad with raspberry vinaigrette
  • baked chipotle sweet potato fries + baked garlic parmesan sweet potato wedges
  • deviled eggs
  • carrot cake

you all know the story behind the fish.  i unwrapped it, covered it in olive oil and rubbed it with garlic peppercorn love.


i turned the fish over to my dad and he grilled it to perfection.


we served it with peach mango salsa (from costco).


momma b was in charge of the salad. it had spinach, yellow and red bell peppers, cucumbers, slivered almonds, dried cranberries and a whole lot of love.


i made the deviled eggs—an easter favorite! i healthied them up a bit this time around.  first i peeled the eggs, sliced them in half and put the yolks into a bowl, setting aside the whites.


i mixed the yolks with a small spoonful of low fat mayo, a big spoonful of fat free plain greek yogurt, a squirt of mustard, a heavy shake of mustard powder and some fresh ground salt and pepper.


i filled the whites with the yolk mixture and finished them off with a sprinkle of paprika.


the asparagus is pretty self explanatory.. although marshall and my mom did let it get a little oversteamed. when this happens, marshall and i refer to it as “asparaGOO” because it gets a little slimy and gooey.

i need to make deviled eggs more than once a year! this bite (and yes i ate it all in one bite) may have been the highlight of the meal!


while the deviled egg may have been the highlight of the meal, the highlight of the whole day was the dessert. hands down. no doubt about it.

side note.. i just read last year’s easter recap and it was a whole lot of fun. it was also eerily similar to this year. i coincidentally had the SAME breakfast two easters in a row (protein pancakes) and i did an insanity workout last easter, too! even though i wasn’t even doing the insanity challenge—i just randomly did one. weird. and both easters ended with a carrot cake coma. moving on.

we i used this same recipe again. um. yeah. it was just as good this year! if not better.. actually.. no wonder it has a 5 star review! i will be posting a recipe tutorial this week.. but here are a few photos of the carrot cake shenanigans.

after we had all eaten our fair share of cake, it was a battle to the finish line as we all took more forkfuls straight from the serving dish.


oh man. i love carrot cake.

by the way, i went home with a giant headache. i took an ibuprofen 800 before leaving my mom’s because my head hurt so bad!  then i woke up today with a sugar hangover. yes, folks, it’s true.. they are possible. i had never had one until recently (the day after my ice cream social).. and now i am finding if i eat a whole bunch of sugar i feel like absolute garbage right after and the next day.

but that doesn’t mean i am going to stop eating ice cream and carrot cake. i will just have to keep an ibuprofen 800 with me at all times.

1. what food can you eat more and more of—no matter what–even if you are stuffed to capacity? my answer to this is always ice cream and cereal.. but apparently carrot cake needs to be tacked onto the list.

2. do you like egg yolks? i love the yolks. i am not quite sure how people can say they taste gross.. but to each their own!

Your mom is so cute!! And that carrot cake looks sooooo yummyyyy. I’m not a fan of liquid egg yolks, but I like them cooked!

Strawberries. Strawberries are one thing I can eat no matter if I’m full. :)

I could also eat ice cream with no limit. It’s one of my absolute favorites. I also agree with what you said about deviled eggs. They need to be made more than once a year! My one time a year is usually a summertime picnic but, man, they’re too good to serve so rarely.

Can’t wait for the carrot cake tutorial :-)

I drooled over every single picture. You could sell that cake for a lot of money! I LOVE the yolks and I can fit ridiculous amounts of ice cream, candy and pizza! I am going to use your deviled eggs recipe….much healthier! You look gorgeous and your mom is the cutest thing in the world licking that frosting. I love your Hawaii shirt in that picture! I can pretty much always eat dessert. I wish I didn’t feel like I needed to have it EVERY night, but it’s so hard to resist! And crackers. Those are the devil. Thank goodness for snack sized ziploc bags! um…..dinner next week? xoxo

i LOVE LOVE LOVE your posts. And I love that you do the “lipstick” with your Robin’s Eggs too. :-)
There are a few things I can (but don’t anymore…well not often anyway) eat way past full: pasta, potatoes, salad, gravy biscuits, deviled eggs, crusty bread and dessert. I don’t overeat dessert, but I will eat it even if I am full.

I love the whole egg together. And deviled eggs are divine. I am gonna go make some based on yours with our Easter Eggs!

I’m a plate licker, too – well, more of a bowl licker with ice cream! Which is totally the one food I can always eat more of no matter how full I am. Ice cream and cake are my kryptonite. :)

I could eat hummus/crackers or pita chips until it comes out of my ears I’m pretty sure – and cheese.
I love egg yolks in any way, shape, or form! My favorite is runny though. :)

Oh man I love carrot cake!

The same thing happened to me on Easter with brownies and ice cream. I could not stop cutting more and more slivers of brownie out of the pan. Afterwards I felt like crap too, but I’m pretty sure it was worth it :-)

Everything looked so good then you brought out the carrot cake! I died! My favorite cake!
As for food I can eat even when full = BREAD!
As for egg yolks, I try to avoid them and go with EggBeaters or Whites.

Carrot cake is the best. It was going to be a tier on my wedding cake until I tasted red velvet for the first time. Red velvet kicked carrot cake’s arse. But I had a carrot cake for 2 warmed up on Friday night at a restaurant. My fiance doesn’t like it, so I inhaled the entire thing on my own – I totally feel ya on the sugar coma thing! It was quite the rush!

And you just can’t go wrong with deviled eggs. My family devours them by the dozens! I always add a bit of Worcestershire sauce to mine to give it extra kick.

What a great Easter celebration! That carrot cake looks so tasty! My birthday is coming up soon so I may just have to make that! :P I can always eat ice cream and trail mix if I’m full to the max. I only like the egg yolks if they are hot, like scrambled eggs, poached eggs, or an omelette.

I love egg yolks in all of their forms (except raw, I suppose). Lately, however, I’ve been eating less of them – I almost feel like I was getting too much fat in my breakfast, and so they don’t sound good to me. I’m sure that’ll change though – as I switch up my breakfast.

I love sweet things – which is my “problem,” but I can eat unlimited amounts of ice cream and dark chocolate – and have!

I love egg yolks, it adds some depth to a food that I would otherwise find a little bland.

Also, since you just did a Nature’s Path giveaway, I have to tell you how much I LOVE their peanut butter and chocolate granola bars! This is the first bar I’ve tried from them and it’s the perfect blend of crunch, chew, peanut butter and chocolate flavors with no artificial tastes. I can even taste the granola, which I’ve never really found stands out in other bars. I find them quite sweet but they made for an excellent dessert tonight with extra nutrients! I only bought these bars because of your post, otherwise I don’t buy granola bars, so I thought I should let you know how happy I am that I bought some!

i effing LOVE asparagus, i do not love how it makes my pee smell. i can eat coconut milk vanilla ice cream by the pint no prob. so so good. i love egg yolks, i NEVER EVER throw them away. i buy liquid egg whites as well to supplement with my egg-cession but seriously nothing beats a slightly creamy yellow center of a perfectly hard boiled egg. ina garten taught me well.

Carrot cake is my favourite cake!! You cannot go wrong with something cinnamon + nutmeg spices covered in cream cheese frosting.

I always have room for bread. I know it’s usually the most forgotten part of any meal, but I could munch of freshly baked bread slathered in melted butter for days.

And yolks all the way! Even better – runny yolks!!

Finally, I unpacked the elephant S&P shakers you gave me the other day. I wonder what holiday they would be good for? :P

It was a spectacular meal and I am still dreaming about that carrot cake and oh my that frosting…………….holy yum (i just typed hum, that would work too!) We had a terrific day even if Suni did kick our butts in rummikub haha!

I LOVE runny eggs, deviled eggs, scrambled eggs, etc, etc.

Chocolate – the cheap kind the expensive kind, I don’t care as long as it is chocolate… I would like to enter a contest and see how many pounds I could eat!

Haha! Love the pics of everyone running to get the scraps! Everything looks delicious! I love fish and I think it’s cool that you guys had something other than the traditional Easter ham…borrrrring!

I could eat my way out of a cookie dough ice cream factory…I might be about 100 pounds heavier by the time I get out, but I’d be happy! ;)

LOVE egg yolks any way you cook them! And deviled eggs are the best! Why is it that they only show up on special occasions? I need to make them more often too!
